Amber Room, located within the Sobański Palace on inspiring Av. Ujazdowskie, is both an architectural and culinary gem with an interior that spells class. The menu is modern Polish created by Chef Robert Skubisz; his creativity has been honored with a range of prestigious awards. The á la carte menu, seasonally inspired, is prepared using the highest quality ingredients sourced as much as possible locally. Items such as the tuna tartare with avocado, ginger and lime; the duck breast with pumpkin, spinach, figs, and Porto sauce; and the lemon soufflé with Earl Grey ice cream, are all delectable.

A special private room called the Krug Room can be reserved; one simply has to order Krug Champagne! Recommended by the Michelin Guide, Amber Room is the only restaurant in Poland to have received each consecutive year the 4 Forks and Spoons award, designating it as a luxurious restaurant!

Located in Warsaw’s center, along the Royal Route leading to the Old Town, Akademia Smaku imparts its own culinary education on what excellent contemporary cuisine should be all about. A sophisticated French bistro-type interior reflects elegant simplicity and refinement, which may well be the reflection of devoted owner Iwona Gietka herself! The menu with its array of flavors is well thought out; with strong influences of Polish and pan-European cuisines it truly delights with authenticity, quality, and freshness. Outstanding items here include the pumpkin soup with chilli and cardamom; the sous-vide prepared goose breast served with red cabbage mousse and baked apples; and the halibut fillet with black lentil and cream sauce.

With stellar service, a wide selection of wines, sparkling wines and Champagne, the invitation here is indeed to a true culinary celebration!

BEEF N’ PEPPER

Located in the center of town, Beef N’ Pepper has quickly established itself as leading steakhouse in Warsaw’s culinary landscape with a menu that is direct and to the point. Mostly used here is the finestquality Polish beef, matured and aged for 28 days which makes the meat juicy, crisp and immensely flavorful. Items such as the T-bone, Black Angus, top sirloin, and rib- eye are exhilarating indeed, each bite conveying to the palate that this is truly outstanding! Further completing the equation here menu-wise are items such as the chicken salad with seasonal vegetables and sous-vide eggs; and the beef tenderloin soup with cheese and chilli. The excellent dining experience at Beef and Pepper is significantly enhanced by the place’s well-equipped bar, affording guests a rich array of interesting whiskeys, bourbons, wines and cocktails that combine exceedingly well with the menu.

The word brasserie implies a relaxed, upscale setting, professional service, white linen, a simple yet comprehensive menu. Brasserie Warszawska is of course more than that, and is reflective of the combined traditions of Warsaw and Paris, suffused perhaps with elements of the new European modernity. The dishes on the menu, such as the beef fillet with dauphine potatoes and spinach, emphasize simplicity; yet simultaneously reinforce the focus on quality of ingredients, methods of preparation, elegance of appearance, and heavenly flavors. The staff here is passionate about what they do; there is an implied guarantee of service and genuine hospitality. The restaurant has an outstanding bar with original-design stools, champagne and fine cocktails; there is a private room ideal for groups of 12 to 24 guests as well. Brasserie Warszawska is surely an uptick on Warsaw’s culinary map!

BUTCHERY & WINE

Butchery & Wine has become the only restaurant in Poland to be awarded the Michelin Bib Gourmand, which implies good value for money and which represents a favorite of the Michelin Guides.

Speaking to owner Daniel Pawelek it is abundantly clear that his objective is for Butchery & Wine to be known as a place in Warsaw’s center where guests can enjoy outstanding food from a thankfully short menu—this aspect is extremely uncommon and intelligent. Appetizers and dishes such as the roast bone marrow, a classic; seared scallops with boudin noir; Bavette steak with shallots; and cote de boeuf, are all outstanding, perhaps to be followed by dessert such as the spiced pear and apple crumble with vanilla icecream. Borpince, a piece of Hungary in the heart of Warsaw, has at its owners who hail originally from there and who attach enormous importance to authenticity. This is evident as one descends the stairs into this sublime, bricks-and-arches basement setting. The backdrop of Hungarian music, genuine dishes with original names, and a wine list which draws from Hungary’s wine regions, offer insight into the unfolding of a true dining experience. Many of the ingredients are imported, put together with care in traditional recipes, usually well seasoned with garlic and red pepper! The goulash soup; the halaszle, a spicy river fish soup; and the traditional pörkölt, a stew with boneless meat and vegetables, are all outstanding. For dessert the Gundel pancake, made with ground walnuts, and served flambéed in a dark chocolate sauce, is an apt high-point to perfect dining!

Daniel Wasilewski’s Dekant WineBar & Restaurant combines the dual ideas of a wine bar and restaurant so completely, that this place stands out as an example of how this union must be achieved!

Food and wine are in complete step --a wine selection of almost 300 has brought awards by Wine Spectator, and the kitchen, under Chef Arkadiusz Janczarek who emphasizes quality of ingredients, their organic and native source, emanates a refreshing Slow-Food menu that ascribes to seasonality and freshness.

The inspiration for Dekant may well lie in places such as New York, yet the place feels very much of its own breed, inviting and complete. Each Saturday there is live music, unique wine tastings, and ongoing wine and cooking workshops as well. A fine menu and a wide wine choice advised on by sommeliers at hand, makes Dekant an absolute joyous experience!

The last secrets of communist cuisine

Czerwony Wieprz, or the Red Hog was in its historical past a restaurant for the communist party elite, where surrounded by chandeliers, portraits, and flags, once feasted the likes of Lenin, Breżnev, Fidel Castro, and Mao Tse Tung! The walls are replete with portraits of old communists, and the dishes have names such as Delicacies of the Polish People’s Republic, a selection of pate, luncheon meat, blood sausage, and kielbasa; varied pierogi “made from rationed flour”; and Baltic herring and game pate for the “Dignitaries and Bourgeoisie”. This is Polish cuisine in fact at its very best, with main dishes that are outstanding--examples include the oven roasted duck, served with cherry sauce, roasted apple, and beetroot. The restaurant’s fame continually attracts celebrity guests; important government leaders, various sports personalities, and of course you!

Located within the charming Zamoyski Palace with its exquisite large garden, this is where history comes alive to be seen, felt, and even tasted as Chef Adam Kowalczyk has suffused this ambience into a sophisticated menu that seems to perfectly belong here.

His emphasis of using quality products, from select suppliers bears fruit in creative dishes with an abundant use of fragrant herbs, fresh seasonal vegetables, and regional products. With a wine list sourced from the top producers, the advice by the sommelier is helpful to match selections with items on the fine international menu.

With the mystical garden where one can stroll in when the weather approves, and organized-on-order night entertainment in the club, Endorfina is indeed a magical place!

Get a taste of polish tradition

The word Gospoda means “inn” and Folk Gospoda is one of the oldest and more treasured restaurants in Warsaw with a history going back to the 18th century.

Having won numerous awards for its traditional Polish cuisine, within its warmly illumined, rustic interiors the mind is most definitely transported to a rural Polish setting. The menu of course is replete with country wholesomeness with the use of fresh and local produce, confectionery, and even home-baked bread. Joseph’s Bistro & Wine is located in the heart of Warsaw’s Muranów, once the outskirts of the former Jewish ghetto.

Joseph Seeletso, its founder and celebrity chef was born in Botswana where he inherited the idea of gastronomy from his father; in 1998 he graduated from Westminster College in London and received his Professional Chef’s Diploma.

In Poland since 1998, he is known for his characteristic modern and informal style, blending international culinary themes with African cuisine, and an emphasis on local and seasonal products. His bistro has an open kitchen where one can watch the team compose unique outstanding creations such as the prawns with bananas and wholemeal blinis; the duck breast with parsnip mousse and roasted carrot; and for dessert, the chocolate gateau with garlic sauce. An evolved wine list, interesting drinks, and top quality service ensure Joseph’s continued success!

Bonerowska Gourmet Steak & Fish brings to mind many things; foremost among them is redefining the idea of an enjoyable eating experience. This is a restaurant pulsating with a rare vitality.

Located on a corner in the Main Square, its warm earth interiors and crisp whitelinen draped tables all come together in highlighting a menu which is illustrative of the tremendous thought and effort that has been put in by the Chef whose underlying mantra, first and foremost, is a focus on fresh ingredients. There is grilled or steamed fish, variety of seafood, and steaks with meat imported from the US, Argentina, Netherlands, and New Zealand. Alongside this, select traditional Polish and Italian dishes are all incredibly outstanding. Completing the equation is an elaborate wine list, and desserts such as the home-made chocolate scuffle, or the Bonerowska tiramisu. Truly outstanding!

SENSES - DINING IN THE DARK: KRAKOW

When one’s sense of sight is lost, all of the other senses are heightened. Senses, Krakow’s first true dark restaurant, is thus patterned in line with famous restaurants of its type in the world. Guests are greeted with an aperitif in a lightly illuminated foyer, familiarized with the dining-in-thedark concept, choosing from the varied menu courses designed by Chef Paweł Kucharski --from molecular, to sea food, to vegetarian-- each set with an appetizer, soup, a main entrée and dessert. After warming up, perhaps with drinks from the Lounge Bar one descends into the dark for this remarkable dining experience.

Aromas smell all the more richer, taste buds open up experiencing purer flavors, one feels what is on the table, and the presence of one’s partner on the table feels more cherished. This is a true feast for the senses, emotions never heretofore experienced, all due to the dark!
