repair holes in plaster DIFFERENT METHODS The repairing methods for plaster holes differ due to the size of the holes or cracks.

Making these repairs is made even easier today with a range of modern lling compounds. Most of these compounds are pre- mixed and come in a range of sizes and colours to suit all jobs.

SMALL CRACKS OR HOLES Firstly you need to prepare the area by removing any loose plaster with a utility knife and any dust with a damp sponge or vacuum. Now mix your plaster cement following the instruction or simply use a pre-mixed product. Apply the rst layer with a lling knife, clean with a damp sponge and allow 4 hours drying. Now apply a second coat if necessary, clean with a sponge and then sand to a fl ush level with the wall. ig 1. When plastering, it is recommended to wear safety goggles, along sleeve shirt and work gloves for eye and skin protection.

LARGE HOLES The main difference when repairing larger holes is that you will need to cut around the damaged hole and use a supporting backing due to the larger repair area. Here are the steps.

Removing damaged plasterboard Cut out a piece of plaster, of the original thickness that will t over the damaged area and then mark its outline.Using a screwdriver punch a hole in each corner of the marked area and then diagonally

cut toward each corner with a keyhole saw. Take care not to puncture plumbing or cut electrical wiring.Breakaway and remove the pieces carefully.

INSTALLING NEW PLASTERBOARD Find a piece of timber and screw it behind the existing wall (countersunk) to act as a backing for the replacement board (Fig 2).Clean the area of any dust and apply adhesive to the timber board.

Position the replacement plasterboard into the hole and secure with joining tape - don’t overlap tape.

FINISHING THE JOINTS sing a lling knife, apply a thin layer of lling compound over the oints until the tape and screw holes are covered ( g 2).Allow to dry and then sand (medium grit).To make the repair less visible, apply a second layer of lling compound with a broader spread.Allow to dry, sand with a ne grit paper and then paint.

AUSTRALIAN REPTILE PARK December – January 2014

WATER SLIDE FUN & BABY ANIMALS GALORE! The Australian Reptile Park is bringing the beach to the bush these summer holidays with a giant water slide in operation from Boxing Day through to January 27th 2014. The Tropical Slide will operate between 10am – 4pm daily and is free after Park entry. It s the rst time the Park has featured a water slide and along with the theme of baby animals,

these holidays are sure to be a winner with local and visiting families.

Our baby animals are our feature during summer and it’s a great time to introduce our baby koalas (there are three, all approaching one year in age), our orphaned ring tail possum Poppy, who was found by a dog, rescued by its owners and bought to the Reptile Park where she’s being hand raised by our dedicated keepers. Our baby wombat Ruby is a bundle of fun and follows keepers throughout the Park and our Tasmanian devil joeys are growing by the day. Various new animals (Bilby, Komodo dragons) and babies will feature in our new Animal All-Sorts show that’s running every day of the summer holidays. You’ll never know exactly who you’ll meet, but each show is sure to be special!

Our crowd pleasing creatures will be active and on show – Elvis the monster crocodile will leap for his lunch at 1.30pm daily. Hugo the beloved Galapagos tortoise will take his daily walk through the Park and we’ll be feeding the American alligators from the jetty in the lagoon every day at 12noon. Keep an eye on our website to see when we’ll be doing the spectacular annual alligator nest raiding!

Inviting you to explore the idea that all human life is the result of chance, Christian Boltanski presents his rst ma or Australian installation, Chance. History of Pacific Hills Pacific Hills Christian School was founded in 1979 as Pennant Hills Christian School. It started with eight students and one teacher in two rooms rented from Lutanda Children’s Home, Pennant Hills.

PLANNING AND SHOPPING Wine and cheese parties are a great way for guests to mingle and try new things.

6-10 people is the ideal number for a cheese and wine party – big enough to spark interesting conversation, but small enough for everyone to sit around a table later on in the evening.

Buy three or four different wines and cheeses (see pairing suggestions right).

You’ll need 300-500 grams of each cheese and two or three bottles of each wine.

Buy cheeses a day in advance so they ll be fresh and flavourful.

Chill white wines for two-three hours before the party (too cold kills the flavour), red wines about 30 minutes prior.

Have labels for each cheese that states the name and general flavour you can expand on that by adding the origin and maybe some history if you feel ambitious.

You could also have notepaper and pens on the table so guests can jot down their thoughts and impressions.

SERVING IDEAS Use the right type of wine glass with each wine. Red wine should be poured into a round ball shaped glass and a white wine glass is more fluted, but not as narrow as a champagne flute.

You could use wine themed plates, or go with an eclectic mix of little antique plates. Make sure you have plenty of little plates to encourage guests to try small samples of cheese with each wine.

A cheese and wine party needs more than just wine and cheese! Sliced red peppers, celery, and cucumber add variety and refresh the palate.

Fig and pear paste is a really good side dish to serve in small ramekins on the individual cheese tables.

Give a choice of water biscuits and crispbreads. If you want bread, choose a dense, crusty loaf, but not the type with sesame seeds or other flavourings.

Don’t forget the water! Serving water as well as wine isn’t just sensible for guests who will be driving home. Water also helps to cleanse the palate, especially a lightly y water.

And don’t forget dessert – a cheesecake would be in keeping with the theme. And nally, coffee is a must after all that wine! Make sure that no one drives after having too much wine.

wine glass: when size (and shape) matters

othing ruins a great ‘wine and dine’ experience more than a poorly shaped and sized wine glass. As restaurant consumers become more and more sophisticated in their dining requirements so too does their choice of stemware.

The days of drinking wine from margarita glasses with the pelican stems are well and truly gone as serious diners look for appropriate stemware to support their much loved wines (for BYO restaurants) or when ordering that special wine from the menu.

There is no doubt whatsoever that glassware can, and does, have an effect on the taste of wine. Claus Riedel was the rst person in the long history of glassware to design its shape according to the character of the wine. He is thus the inventor of the functional wine glass.

The shape and size of the bowl will impact on the nose (aroma or bouquet), the flow and ultimately the taste and texture of the wine. It is for this reason that different shapes are ne-tuned to enhance the characteristics of different grape varieties. Glasses with larger bowls, for instance, allows the wines surface to breathe more oxygen and come to its full flavour potential and so such glasses are ideal for red wines whereas white wines prefer a mid-si ed glass whilst flutes are the best option for champagne.

So in effect a high quality wine glass will perfectly harmonize the wine’s aroma and flavour and the shape of the glass will greatly emphasize the distribution of the aromas. brilliance, glare, resonance and purity and the material is porous which allows the wine to breathe. Frosted, coloured or worse, metal glasses are to be avoided at any cost. The best guide is to choose a glass according to its simplicity. It must be colourless and relatively thin so as to not alter the taste of the wine. As a general rule restaurateurs should follow some basic rules in serving wines, so remember: • No decorations to allow the alcohol to show off its colour and brilliance, •The wine glass must be thin to avoid altering the bouquet, and • The shape must be adapted according to the wine’s traits.

As there are many types of wine glasses the best bet is ensure that the wine glass holds an average of 100 ml. and has a bowl that allows for a circular movement to aerate and reveal the subtlety of the bouquet, without being too wide to allow some blending of the flavours or spillage.

Finally, every restaurateur should have at least a number of Decanters on hand.

The purpose of decanting is to separate a wine from any sediment. In order to do so, the wine must be transferred from its original bottle to another container, a decanter. There are two main reasons to decant a wine: • In an old wine, particularly red, wine must be separated from any sediment that has formed at the bottom of the bottle over the years, and • In a younger wine it must be exposed to oxygen to ripen its tannins (which gives texture, colour and some taste to the wine).

Ideally, and if possible, at least one day (24 hours) prior to serving and decanting the bottle must be placed in an upright position. This will allow the sediment to settle at the bottom of the bottle. If decanting is not possible it is necessary to take care when pouring into glasses to avoid mixing any sediment with the wine.

A nal word of caution please do not clean wine glasses by twisting the cloth and glass in the opposite direction.

aving the best for last These delicious desserts are the perfect way to satisfy even the most demanding sweet tooth

APPLE PIE INGREDIENTS 250g flour Pinch salt 125g butter 100g sugar 1 medium egg 500g cooking apples 50g ground ha elnuts Juice of 1 lemon 50g sugar 1 teaspoon cinnamon Icing or caster sugar for dredging METHOD Sift together the flour and salt. Cut the butter into small pieces and rub it lightly into the flour, using your ngertips. Add the sugar and mix with egg to make a stiff paste. Put all the ingredients in a large bowl and beat with an electric mixer until well mixed. Wrap in greaseproof paper and refrigerate for several hours or place in the free er for an hour. Pre-heat the oven to 200 C Peel the apples, cut each in four pieces, and remove the core. Cut the quarters into thin slices.

In a bowl mix together the apple slices with the ground ha elnuts, lemon uice, sugar, and cinnamon. Cover and set aside.

Roll out two-thirds of the pastry on a well-floured work surface and use to line a buttered 22 cm (9 inch) diameter deep pie dish. Place the apple mixture in the dish. Moisten the rim of pastry to make a good seal with the lid.

Roll out the remaining pastry, prick all over with a fork, and cover the pie pressing lightly around the edge to seal.

Bake in the middle of the oven for 40 minutes. When cool dredge with icing or caster sugar. Serve with vanilla ice cream.

Pour into the little cups you re serving in, and put them in the refrigerator for 5 hours or overnight. Remember to take them out of the refrigerator a good 20 minutes before they are to be eaten the chill will interfere with their silky richness.

INGREDIENTS 8 tablespoons 5 dark chocolate, chopped 5 tablespoons unsalted butter, cut into pieces, plus more for baking dishes 1 tablespoon cornstarch cup granulated sugar 2 large eggs 2 large egg yolks Icing sugar, for serving Serves 6

INGREDIENTS 80g best quality bittersweet chocolate (minimum 0 cocoa solids) cup heavy cream Âź cup whole milk teaspoon vanilla extract teaspoon allspice 1 egg 8 ramiken pots or custard cups METHOD Crush the chocolate using a food processor. eat the cream and milk until ust about boiling, then add the vanilla and allspice and pour over the chocolate using a funnel. Let stand for 30 seconds. Process in a food processor

Butter 6 small ramekins and coat the insides with granulated sugar, shaking out any excess. Divide the chilled batter evenly between ramekins and place on a baking sheet. Transfer baking sheet to oven and bake until cakes are just set (they may still be a little liquid), 12 to 15 minutes.

Dust cakes with icing sugar, and serve.

CARAMEL CROISSANT PUDDING INGREDIENTS 4 stale croissants 1 cup sugar 4 tablespoons water 1 cup heavy cream 4 tablespoons bourbon 1 cup whole milk 4 eggs, beaten 2 ml vanilla essence Serves 4-6 METHOD Preheat the oven to 180°C. Tear the croissants into pieces and put in a medium gratin dish.

Put the sugar and water into a saucepan, and swirl around to help

dissolve the sugar before putting the saucepan on the stove over medium to high heat. Caramelise the sugar and water mixture by letting it boil until it all turns a deep amber colour (this will take 3 to 5 minutes).

Take the pan off the heat and add the cream - ignoring all spluttering - followed by the bourbon and milk. Whisk to mix, then still whisking add the beaten eggs, and the vanilla essence. Pour this quickly over the croissants and leave to saturate for 10 minutes.

Place in the preheated oven for 30 minutes. Serve hot with ice cream or cream.

IRISH CREAM TIRAMISU INGREDIENTS 350 ml espresso coffee, made with 350 ml water and 9 teaspoons instant espresso powder, cooled 250 ml Baileys cream liqueur 2 x 200g packets sponge nger biscuits 2 eggs 75g caster sugar 500g mascarpone 2½ teaspoons cocoa powder Serves 12

METHOD Mix the coffee with 175ml of the Baileys in a shallow bowl.

Dip the biscuits into this liquid; let them soak on each side enough to become damp but not soggy. Line the bottom of a 22cm square glass dish with a layer of biscuits.

Separate the eggs, but keep only one of the whites. Whisk the two yolks and the sugar together until thick and a paler yellow, then fold in the remaining 75ml of Baileys, and the mascarpone to make a moussy mixture.

Whisk the single egg white until thick and frothy.

Fold the egg white into the yolky mascarpone, and then spread half of this mixture on top of the layer of biscuits.

Repeat with another layer of soaked biscuits, and then top with the remaining mascarpone mixture.

Cover the dish with clingwrap and leave in the fridge overnight. When you are ready to serve, sprinlke the cocoa powder through a small strainer to dust the top of the tiramisu.

On show in the main Gallery are the works of twenty-nine visual artists, across various mediums including photography, painting, moving image and installation.

Outside of the main Gallery visitors can relax in Ancher house and view the community slide show, a celebration of the Australian holiday as experienced, primarily, between the post WWII and the 1970s period. Responding to the Gallery’s public call-out for fun holiday snapshots, over 200 photographs were submitted.

High on the list of moments captured on lm were the times when family and friends were simply relaxing together or engaging in recreational activities.

Trips to the beachside and bush retreats offered respite from the usual daily routine. Activities such as lazing about on picnic rugs or larking about in the surf or river, the road trip itself or the location of the camp-site, all came to symbolise a sense of freedom and ‘time-lessness.

SYDNEY Sydneys favourite Beer Gardens THE BERESFORD HOTEL - DARLINGHURST Small bars leaving you claustrophobic?

Time to show this big-scale oldie-butgoodie some love. Synonymous with weekend pre-gaming drinks and birthday get-togethers, the Beresford’s massive beer garden remains one of Sydney’s quintessential bar experiences.

Weekend afternoons are still jampacked with big groups of blokes guzzling the cold stuff (there’s a typical range of brews) while ladies order jugs of Pimms or mixes of vodka and apple juice (known as the Group Hug jug), St Germain and lychees (called the Secret arden) or a bottle or two (or ve) off the bar’s extensive wine list.

Big earthy-hued couches crowd the leafy outdoor area, which is completely enclosed from the madness of nearby Taylor Square.

These guys do great Italian-inspired pub grub to help line stomachs for a big one, so get stuck into the menu.

There are pizze (seafood marinara as well as less complicated options are on there), a cured meat plate with pickled veges, some pastas, steaks and even less overwhelming bites, like arancini with aioli, to snack on. Visiting on a weekday?

Score a pizza, pasta or salad for $10. It’s a steal because portion sizes are fairly enormous.

Warning: after a few here, it’s hard to leave – but that’s OK because hey presto, there s a dance floor.

Just climb the stairs to Upstairs Beresford on Friday and Saturday nights to keep the good times rolling. Trust us – they always do up there.

COURTHOUSE HOTEL - NEWTOWN They’re a pretty relaxed bunch in Newtown, but if anyone ever tried to refurbish the Courthouse Hotel we suspect there’d be rioting in the streets.

This old pub is like a well worn jumper – warm, comfortable, and big enough to t anyone and everyone.

The Courthouse is the nucleus of the Newtown community. The outdoor space is at least twice the size of the indoors, and the beer garden is where you want to be when the sun is shining.

On tap they have Carlton, Reschs and New for those too set in their ways to branch out. or everyone else there s Stone and Wood, at Yak, White Rabbit and Young enrys.

The Courty is always good for a feed too.

You can stay the course with schnitties, steak, sh and chips or a Courty burger, or order a bowl of green beans with fetta and almond for a health-conscious beer snack.

There s no Wi- i here, and they don t have a website, so it s all about the local knowledge when it comes to the specials.

Monday nights are free pool and ukebox night, they do a tight-arse Tuesday happy hour from 5- .30pm with 3.20 schooners. On Wednesdays there s crab racing and to really get a run-up on your weekend they do 15 ugs of Long Island Iced Tea .30-9pm on a Thursday.

Sydneys Best Wine Bars ASH ST CELLAR – SYDNEY It s a Parisian wine bar, but not as you know it. This little laneway bar has been keeping Sydney wined up for a good few years now and while they lost chef Lauren Murdoch to neighbouring bar and restaurant Felix (who, in turn lost her to the call of the wild - she’s taking six months off to travel), they gained Omerta s Al e Spina.

This was all almost two years back now, and the place has settled into a groove of its own. The wine list, still overseen

by Merivale s group sommelier ranck Moreau, now has a highlights section.

That means on any given day, ranck s latest discoveries might be a warm, soft County Line pinot noir from the Sonoma Coast, or maybe a buttery soave from Veneto. Course, the regular wine list is still on offer with a big emphasis on interesting stuff by the glass.

And if you go for a sherry, they ll served it with complimentary tapas. We stupidly didn t, so we re relying on you to go and do it and report back. By the bottle, hit the 2009 Puffeney Arbois Sacha chardonnay savagnin from the Jura and order a mixed plate of green olives, hunks of bitey, creamy reggiano parmesan and silky fronds of prosciutto.

LOVE TILLY DEVINE – DARLINGHURST Named for the infamous gang maiden who once ruled the streets of Darlinghurst and Surry ills, Love Tilly Devine is a pocket-si ed bar with an extraordinary wine list run by sommelier Matt Swieboda.

Head upstairs to the little landing where black banquettes sit under a huge, swirling floral mural.

Or (our personal favourite), prop up in the front window and catch a breeze in the warmer months. The Black eys are playing in the background on our visit, and the dark corners by the entrance are taken up with media bigwigs from the surrounding of ces intent on slashing budgets rather than rival gangs, but we like to think it’s a surreptitious nod to the area s shady past all the same.

While drinking by the bottle can be immensely pleasurable here (it s a list broken up into flavour groups like salt, shells and citrus fruits, flowers and herbs butter, toast and roasted nuts and dry, sleek and entertaining ) there s a lot to be said for the glass options, opening up a world of possibilities.

Try the Tournelle L va Arbosiana Poulsard from the Jura and be rewarded with 13 worth of ripe, uicy, sweet freshness, or wake up that sleepy palate with a glass of the Immich-Batterieberg C.A.I. abinett riesling. Not feeling it Order a Badlands pale ale from Orange or a glass of French cider instead – the world is your oyster (and yes, you can order those too).

Vedder s solo exploits were rst heard as soundtrack contributions to the lms of friend Sean Penn — to Dead Man Walking in 1995 and to I Am Sam in 2001 — before penning the entirety of the soundtrack for Penn’s 2007 adaptation of Into The Wild, which received a rave critical reception.

Following the release of the Into The Wild soundtrack, which won a raft of awards, including a 2008 Golden Globe Award for the song Guaranteed, Vedder embarked on multiple solo tours across North America, Europe and Australia, garnering positive reviews from fans and critics alike.

Vedder followed his last Australian tour with the release of a sophomore album, Ukulele Songs. The man will have songs from both of his solo records as well as some choice Pearl Jam cuts when he launches his Australian solo tour at the Riverside Theatre in Perth on Friday, 7th February.
