Shack continues to make a name for itself across Polk County.

You may have heard of the Brack Shack’s famous egg rolls stuffed with pulled pork, slaw and barbeque sauce or perhaps you’ve attended an event catered by the Auburndale restaurant. Either way Brack

wanted to be a part of it. “I instantly took to it. I love the competitiveness and the people.” He even enrolled in a few classes to receive more training. His famous egg rolls were born at the Smoke on the Water BBQ Festival in Winter Haven which takes place each February

and more than 80 teams compete from across the country for the Florida State Grand Champion Title. Funds raised from the competition benefit the Boys and Girls Clubs of Polk County. Although he won’t be able to continue participating in Smoke on the Water, he wants to support them in some capacity. “I feel a loyalty to them and to my egg roll fans,” he says. For Smith, he thrives on the idea of taking a piece of raw meat and turning it into something “decadent”. His catering business has had a large following with consistent referrals, and he knew it was time to finally take the next step. Timing is everything. After 10 years of branding at competitions and catering, Smith decided to open a brick and mortar restaurant. A long-time Auburndale resident, he felt it was important to stay in his community. “Our customers got us to where we are,” he says. And Smith feels Auburndale is a safe and wonderful city to raise children. “The recreation department cares about the community and the kids,” he says. “And it’s right in the middle of two large cities. This is where I need to be.” The Brack Shack, at 231 E. Lake Ave, Auburndale, is in the heart of downtown in a renovated building. It’s the old VFW building. He loves being in this building and feels it was a perfect match since his company colors have always been patriotic as well! When you stop by, Smith continuously experiments so be on the look-out for new specials. If it ends up being a hit, they add it to the menu.

“We always want to have something cool or different on our menu,” he says. As far as egg rolls, the menu features the A-dale Cheesesteak with beef, BBQ ranch, peppers, onion and mozzarella. The Cuban egg roll has pulled pork, ham, swiss, pickles and a signature Cuban sauce. The Hibachi has lo mein noodles, grilled chicken, fried rice and yum yum sauce or dig into a Collard Pig if you are a collard greens fan. “It all revolves around the egg rolls,” he says. And now fans can grab one more often. But Brack Shack offers much more than just egg rolls. Brack Shack also has BBQ tacos and

nachos, chicken and BBQ sandwiches, wings, burgers and sides. Then finish it off with a dessert egg roll named after Elvis with banana, peanut butter, powdered sugar and caramel drizzle or grab some banana pudding – always a crowd favorite! On Saturdays, Brack Shack serves up breakfast. The breakfast egg roll is stuffed with bacon or sausage, cheese and eggs. The menu also has Texas toast French toast, biscuits and gravy and more. If you are a coffee fan, order the Brackuccino – a 20 oz homemade iced coffee. It took time before he and his family were ready for the type of commitment it takes to open a restaurant. Smith and his wife have an 11-year-old son and two 7-year-old twin girls. His son is involved in competitive soccer (Smith is an assistant coach) and the twins are enjoying gymnastics and recreational soccer. “It’s hard to do what I do and still have time to be the dad I want to be,” he explains, adding that being able to spend more time with family is the reason Brack Shack is only open certain days of the week. “I’m not going to miss their childhood.” While focusing on the restaurant, Smith continues to run his catering business for weddings and other events. And even offers DJ services, something he’s been doing 27 years for weddings, bars and parties. He offers catering prices for drop off/pick up or a full 10 AUGUST 2021

service buffet. Now customers can also rent his building for gatherings. “I love the reaction and feedback from customers,” he says. “We focus on putting out good food with good service. It’s quality over quantity. We get ‘Kiss the Cook’ love from our customers. Without them we are nothing.” “And, Smith says, I could not do this without my staff!” He is so thankful for his hard working staff. “They have the same passion and commitment for the food, and our customers, as I do.” Brack Shack will soon get its beer and wine license, and then will open on Friday nights for steak dinners and fish frys. All Hail Our Space Overloads “Those who attack space maybe don’t realize that space represents hope for so many people.” - Elon Musk Last month saw many bold steps forward in what is now known as the “billionaire space race.” On July 11, Richard Branson made a successful space flight with Virgin Galactic. A few days later, on July 20, Jeff Bezos made his own flight with Blue Origin. Bezos, Branson, and Elon Musk are competing hard to see who can be the first to break another boundary in private space exploration. Only time will tell which entrepreneur will become the first to fund the first private moon landing or Mars colony. Truly, the sky is the limit, and space is the final frontier. Normally, most people would be excited to further one small step for man and one giant leap for mankind. Sadly, with the world literally on fire and continuing to suffer a pandemic, many folks remain pessimistic about scientific innovation and exploration. “It will never sit well with me that Billionaires are rushing to be the first in space vs. the first to end world hunger,” one person wrote on Twitter. “The symbolism of a billionaire-owned, for-profit space company launching astronauts high above the heads of thousands of people protesting state brutality and oppression amid a global pandemic and economic collapse should not be lost on anyone,” another person tweeted. Well, I, for one, welcome our new space billionaire overlords. For the record, I am defending the private space industry. I am not stanning for these billionaires. These men are shady businessmen who have done shady things. Bezos, especially, has been most egregious. Amazon has reaped billions in government subsidies and paid zero taxes while his employees work with cut pay and benefits and in poor conditions, to the point where they have to pee in

bottles because of limited bathroom breaks. However, this need not be a zerosum game. I can criticize these men for their corrupt corporate business practices while also commending them for their bold achievements. Yes, Bezos should pay his workers more fairly. Yes, he should pay his fair share in taxes. And, yes, Blue Origin has accomplished great things. Likewise, we don’t need to choose between going to space and solving problems here on Earth. Too many people assume money spent on a rocket launch is wasting resources that could have helped end world hunger, poverty, or climate change. Again, there is no reason we need to choose. We can tackle all of those problems and still set our eyes to the stars. When we went to the moon in 1969, we left behind plenty of issues here on Earth like the Vietnam War, Cuban Missile Crisis, and Civil Rights Movement. Yet despite all of that, we still landed on the moon, fought the Commies, and gave people equal rights. If we could do all of that then, why do we have to decide between colonizing Mars and ending global warming now? Despite what Twitter contrarians say, these private launches aren’t merely billionaire “vanity projects” any more than the 1969 space launch was vain posturing against the Ruskies. From insulin pumps to cochlear implants, to GPS and the internet, many technologies we use today were created through space exploration. No doubt more scientific and technological innovations will be produced as space travel shifts from NASA’s government monopoly to the free market. All we have to do is choose to boldly go where no man has gone before. Veterinarian of the Month Dr. Vargas received her DVM from Tuskegee University in 1994. In 1996, she established her AAHA accredited Orchid Springs Animal Hospital in Winter Haven, FL. In 2009, she began her studies at Chi Institute, eventually garnering certifications in Acupuncture, Chinese Herbal Medicine, Food therapy and Tui Na. She is also a fellow of the American Academy of Veterinary Acupunture. Dr. Vargas is pursuing her Master’s Degree in TCVM at Chi Institute, where she works as a Teacher Assistant and as a Lecturer for the Chi Latin America. She has also worked as a consultant for Disney Animal Kingdom. Dr. Vargas is also a Certified Veterinary Journalist and a prolific author of both scientific and motivational articles. Dr. Vargas has lectured at the World TCVM Congress (2015, 2016, 2017), AAVA Conference (2017), AVMA (2011), and the CbVMA (2017). She is a guest blogger for www. allthingshealing.com and a writer for Woman to Woman magazine and the Lakeland Ledger newspaper. Last year she contributed a chapter for Jack Canfield’s Amazon Best seller book “The Soul of Success”. QUARTERLY MUSIC SERIES WILL HIGHLIGHT LOCAL MUSICIANS LAKELAND, FL - The City of Lakeland will be hosting a new live music series called the Canned Tuna Concerts that will take place in Munn Park starting September 17th from 6 p.m. – 8 p.m. Local favorite Dan Signor will start the quarterly music series that will highlight local musicians. Those attending the music series are invited to bring a can of tuna or another non-perishable food item to benefit Volunteers in Service to the Elderly (VISTE). 45th Annual Pioneer Days Festival Historical Demonstrators, Craft Market, Festival Food, Live Music, Pumpkin Patch Special to T&T Magazine LAKE WALES, Florida – The Lake Wales History Museum will host the 45th Annual Pioneer Days Festival on Saturday, October 23 & 24, 2021 from 9 AM – 5 PM each day in Lake Wailes Park. This event is a heritage celebration for the whole family with free admission and parking on both days. This year the festival will feature the same great old-fashioned fun and new offerings for the whole family.
