Our Noire Kitchen PREMIER PERSONAL CHEF & CATERING SERVICES

By James Coulter Photos by Laures Dockery Kadean Dockery and his wife, Laures, took a leap of faith when they started Our Noire Kitchen, but it was by no means a blind leap. Kadean served more than 13 years of culinary experience at Walt Disney World. He also had plenty of experience and exposure from his grandparents, who had owned and operated their own popular eatery. Upon being furloughed last year, Kadean decided to team up with his wife and start their own business. What began as a startup at Catapult Lakeland has quickly evolved into a pop-up kitchen that appears at farmers markets and other events throughout the county. With an innovative menu of items with big, bold flavors prepared by top-rated culinary professionals, their chef and catering service, along with their food photography, offers great food you cannot find anyplace else. "Our Noire Kitchen is the best personal chef and catering service between Tampa Bay and Central Florida, and we’re ready to spice up your life with our bold, innovative menu," their website states. "Hiring a personal chef means taking the pressure off of you to have a delicious, well-prepared meal. Offering top-rated meal prepping and catering services at the best prices, we promise every occasion will be something worth celebrating with food as amazing as ours." We recently sat down with Laures, who works with the marketing, booking, and photography while her husband serves as the chef. We asked about her and her husband’s business. This is what she had to say Q: Tells us about Our Noire Kitchen. What does your service have to offer? For example, you offer a pop-up kitchen. What exactly is that? A: Initially, we were attending a farmer's market and community events. We

decided to start participating and collaborating with other small businesses in Winter Haven and Lakeland, at other venues like coffee shops and other places that did not have a food element. We knew it would be a positive addition to offer our services while they offered what they are good at. Together, we can combine our clientele and create a bigger, better event by being there together. We have done pop-ups at Haven Coffee Roasters and the Poor Porker. We have some new ones in Lakeland we will be working on in the months to come like Swan Brewing and Yard on Mass, as well as a bar in Winter Haven that, once we have permitting figured out, we will be popping up there, too. The main point of that is to offer our menu options because, a lot of the time, people are always looking for something new and different. It is like I have been here before and had the same thing plenty of times, and people want to try different things. We offer new menu items based on where we are and what time of day we are serving. Q: How did you and your husband get started with your business, and how has it been going since then? A: I would say it was time which played a big role in [our business]. My husband was furloughed from Disney. He had worked there for 13 years. And I was wrapping up grad school when the pandemic hit. We were both home with time we had never had before, and I always told him we should start our own business and buy our own food truck. It was a dream of his. He is an amazing chef. I was wondering how I could get people to believe what I was saying [about him and his cooking] and actually book us for events to turn this dream into a reality. I took a food photography class because I believe people eat with their eyes. I really wanted to capture what he did very well. I invested in the class, and we started a food blog page. From there, the following January, we started doing public events with our smoker, and it grew from there. So we did farmer's markets and community events. We started to appear at chef events. Business has been growing and becoming very steady. Especially the last year. The community has come to recognize our name and what we offer. Q: What do you have to offer that sets you apart from other catering services? What makes your business unique and sets your food apart from other similar eateries? A: It is the flavor combination that we come up with. We did not want to do the norm because you can get that anywhere. We tried to be creative in the additions that we offer. The flavor is number one. When people taste it, they are like, "Oh my goodness!", and they try to guess what is in it and how it comes out the way it does. Closely after that is presentation, how we put it all together to [make it look appetizing].

Q: For as long as you and your husband have owned and operated your business, what allowed it to be as successful as it has been? A: I would say being flexible and the opportunities that have been presented to us. We never want to put ourselves in a box in that "this is what we do and this is the only way we do it." Trying to understand what people's vision is as far as our clients. Is it possible to accommodate them? How can we do it? How can we offer our own unique twist to it? Also, just being a

really big believer that God will provide for us because our faith is what got us into this, and we felt there was so much more for our talents and other unique ways to blend them together. We are really leaning on that faith and see that it will turn out awesome. We don't know how it will get there, but we will show up and do our best. With every opportunity that we get. From there on out, the word of mouth has been tremendous. Q: What have customers enjoyed about what you have to offer? And what can new customers expect from what you offer? A: Because they are following us, we have some unique items that people have been looking for, but they can know they can expect something different just because we can change things up pretty awesome. I tell them that, too. You may see something at this event, but you may not see this particular dish for another few weeks because we rotate things out and want to try different ideas. Q: What motivates you to do what you do at Our Noire Kitchen? What is your reason for getting up in the morning and doing your job? A: I love the flexibility of doing what we want. We have full creative range to come up with dishes and come up with how we want things to look. We get to partner with the businesses that we want to partner with. There are no limitations on these things, it is a manner of other businesses and events and what we want people to experience, and it is exciting we can push forward and make it happen. I just love that. Q: What are your big plans for the future? A: Our next goal will be to have a food truck. Eventually, we will have an event space at our own kitchen area after we leave Catapult Lakeland. It would be a space to host events and markets and things like that. It will be a different experience than what is normally offered in Polk County. Boys & Girls Clubs of Polk County Opens Their 9th Unit Special to T&T Magazine The Boys & Girls Clubs of Polk County (BGCPolk) is proud to announce the grand opening of their 9th Polk County Unit. The new club will be housed at the Fort Meade Community Center located at 10 3rd St SW, Fort Meade, FL 33841. The grand opening was May 31, 2022. Members of the community where invited to attend and learn about the impact BGCPolk will have by providing enriching programming for Polk County children, particularly those who need us the most, during the non-school hours. The unit is scheduled to open on June 1st for the summer and will begin serving the children of historic Fort Meade. BGCPolk’s summer program will provide members with high-quality, high-yield academic programming aimed at combatting the summer slide. When students EXPECT MORE... GET MORE... WE DELIVER!

Students from low-income families lose an average of 2 months in reading achievement over the summer. BGCPolk recognizes the importance of providing our members with the tools to stay sharp and be prepared for the 2022-23 school year, especially given the struggles students are still experiencing due to school closures and virtual learning during the last two years with COVID-19. In addition to academic programming, BGCPolk provides members with sports, fitness and health programs, arts programs, resiliency skills and workforce readiness for teens. Finally, a vital component of the Boys & Girls Club program is the provision of breakfast, lunch and a snack each day during the summer program! BGCPolk is excited to be able to offer valuable, high-yield programs to enrich the

lives of Fort Meade kids! The 2022 Miss Florida Scholarship Pageant Be a part of the grand tradition as the annual Miss Florida Scholarship Pageant and Miss Florida’s Outstanding Teen Pageant returns to the RP Funding Center’s Youkey Theatre on June 22-23 & 25, 2022. The Miss Florida Scholarship Pageant is a preliminary competition to the Miss America Pageant, the world’s largest provider of scholarship assistance for young women and one of the nation’s most significant achievement programs. The reigning Miss Florida Leah Roddenberry won her title in June 2021 when she competed against other young women from throughout the state for the opportunity to represent the Sunshine State at Miss America. The Miss Florida Outstanding Teen Preliminaries and Miss Florida Preliminaries take place June 22-23, 2022 at 7:00 pm. RED, WHITE & KABOOM 2022 INDEPENDENCE DAY CELEBRATION – JULY 3RD

Red, White & Kaboom along the Frances Langford Promenade on Sunday, July 3rd from 6:00 p.m. – 9:15 p.m. with Andrew Luv & the Franchise Players entertaining the crowd before a dazzling firework display at 9:00 p.m. We are asking that everyone who is attending to please bring at least one nonperishable food item. There will be volunteers collecting canned food items that will be donated to Volunteers in Service to the Elderly (VISTE). VISTE is a community based nonprofit organization serving Lakeland, Bartow, Mulberry, and Ft. Meade. Established in 1983, the primary goal is to enable elderly persons to continue living independently and safely in their own homes. The festivities will start with a live concert featuring Andrew Luv & the Franchise Players. Andrew Luv & the Franchise Players will bring their unique blend of Soul, Pop, Smooth Jazz,

and Hip Hop to the Red, White & Kaboom center stage. The group promises a refreshing musical experience. They play an eclectic list of popular hits lead by an energetic front man with a velvet voice who knows how to command a crowd. Abolish Student Debt! Defund the Pentagon! Summer’s here! By now, millions of college graduates nationwide have accepted their diplomas. They’re ready to take their first step into the real world, get a job, and start paying off their student loans. According to the Federal Reserve, 46 million Americans have student loan debt. Collectively, they owe a total of $1.75 trillion. On average, they spend $300 per month in loan payments. Many of them are unable to pay, as 11.1% of loans “were 90 days or more delinquent or in default.” With so many young people spending their income on their loans, their debt not only financially burdens themselves but also the overall

economy. A 2020 survey revealed half of respondents were unable to start their own business due to their debt, while a 2019 survey showed half were unable to buy a house for the same reason, according to Education Loan Finance. Releasing these young people from debt would not only give them more money to spend in the economy, but also buy their own homes and start their own businesses. In short, student loan forgiveness would encourage consumer spending, home ownership, and entrepreneurship. It would be the biggest economic stimulus ever! According to the Brookings Institution, overall federal loan forgiveness

would cost $1.6 trillion. Most politicans have offered more modest proposals. Sen. Elizabeth Warren has proposed forgiving $50,000 per borrower (which would cost $1 trillion), while President Biden has proposed $10,000 (which would cost $373 billion). How would we afford to pay all that debt? The obvious solution would be to increase taxes, especially on the ultra-wealthy. The GOP would hate that! But an alternative solution would be to cut government spending. The GOP should love that. They always complain about government waste. And our government undoubtedly wastes a lot of money. However, the GOP often neglects to mention the biggest waster of our taxpayer money: the military! Since 2000, America has spent $13.34 trillion on its military; including the $3.18 trillion for the Veterans Administration, that amounts to a yearly average of $826 billion, as calculated by Scientific American. America spends more on its military than the next 10 countries combined, with its budget three times larger than China’s and ten times larger than Russia’s, Scientific American reported. Some people would argue we need to spend that much money to “protect our freedom.” But more often than not, the military wastes our taxpayer money on elaborate yet frivolous projects that do nothing of the sort. The F-35 Joint Strike Fighter is the most

notorious example. The experimental jet is expected to cost $1.5 trillion over its lifespan, yet despite having nearly 900 software defects and half of its fleet grounded for maintenance, the Pentagon insists on buying 2,400 more over the next 25 years, Scientific American reports. Among the other overpriced “poor performers” on the Pentagon’s “$1.8-trillion shopping list” include “the $22-billion Zumwalt destroyer, a warship without a mission; the $30-billion littoral combat ship, which the Navy is already mothballing because it is virtually unusable; and the Air Force’s problem-plagued $43-billion KC-46 refueling tanker, which offers little improvement over current refuelers.” As Elliott Negin wrote: “If the Pentagon were a private corporation, gross mismanagement would have forced it into bankruptcy years ago.” There’s no reason our military needs to waste so much money on so many failed boondoggles. We could slash military spending by 90 percent and still have the largest military on Earth! Meanwhile, we could use the rest of that money to free young people of their debt. Undoubtedly, they would do a better job of spending money than the Pentagon! Veterinarian of the Month Dr. Vargas received her DVM from Tuskegee University in 1994. In 1996, she established her AAHA accredited Orchid Springs Animal Hospital in Winter Haven, FL. In 2009, she began her studies at Chi Institute, eventually garnering certifications in Acupuncture, Chinese Herbal Medicine, Food therapy and Tui Na. She is also a fellow of the American Academy of Veterinary Acupunture. Dr. Vargas is pursuing her Master’s Degree in TCVM at Chi Institute, where she works as a Teacher Assistant and as a Lecturer for the Chi Latin America. She has also worked as a consultant for Disney Animal Kingdom. Dr. Vargas is also a Certified Veterinary Journalist and a prolific author of both scientific and motivational articles. Dr. Vargas has lectured at the World TCVM Congress (2015, 2016, 2017), AAVA Conference (2017), AVMA (2011), and the CbVMA (2017). She is a guest blogger for www. allthingshealing.com and a writer for Woman to Woman magazine and the Lakeland Ledger newspaper. Last year she contributed a chapter for Jack Canfield’s Amazon Best seller book “The Soul of Success”. She served as an AVMA Spokesperson for Hispanic market and has recorded many PSA’s and radio interviews promoting responsible

pet ownership. Her love for Traditional Chinese Veterinary Medicine manifested in her book: Alt-Vet: The Revolutionary Pet Care and Longevity Solution. Her passion for helping animals and her voluntarism has awarded her state and national recognition including the Purina National Pet Care Award, Bay News 9 Medical Hero Award, and The FVMA Gold Award. She was honored by the American Veterinary Foundation as “America’s Favorite Veterinarian” in 2015. She lives in sunny Winter Haven, Florida, with her husband, two daughters and a menagerie of pets.
