Coming Full Circle It’s hard to believe that we are coming up on a one year anniversary for the beginning of the pandemic crisis; shutting down businesses, product shortages, the wearing of face masks and many people across the nation, and the world, being sick or dying as well as the quarantines and confinement of friends, families, and co-workers to their homes. In my fifty years I would never have dreamed of such craziness happening in a year, or at all. It still seems like a bad movie. Who would have thought a year later we would still be in these maskedup quasi-dark days?

I think back over the year for the good, the bad and the ugly. And a lot of ugly there has been... but there has also been good with a lot to be thankful for. It’s the yin and the yang. The light and the dark. The two work hand in hand. For me personally, I try not to dwell on the negative of what the past year has brought but be thankful for being able to survive and thrive in this new day. We were forced to down-size our business and our home, but this allowed us to re-evaluate our needs versus wants. With down-sizing comes less space which means less “stuff”. We sold

off items that were not needed nor being used. This in-turn also gave a small much needed income stream. It hasn’t all been rosy that’s for sure but it shows that we can buckle down, live on less money and with less “stuff”. Being in a new smaller home also gave way to new projects to fill the time. Instead of spending money going out, it’s spent on staying in, paying down debt, and saving money for uncertain times. One of the best parts of 20202021 is finding your close circle of family and friends, knowing who you can count on, share times of happy and sad with, and develop those closer ties that bond. What do I miss? Going to concerts. We love listening to live music. I also miss all of the events we attended on a weekly basis, even though at times it got to be all consuming with trying to make appearances and support as many as possible: beer & wine tastings,

galas and charity events. February we are usually looking forward to lots of BBQ events, chili cook-offs and music festivals with March hosting many art and gardening festivals as well. Socializing and being a part of our community has been a huge part of our (Today & Tonight Magazine) identity for the past 16 years. Now hope is emerging for a better 2021-2022. People are getting vaccinated and feeling more secure. Hopefully businesses will be on the rebound and we will all feel more financially secure. A few outdoor events are moving forward for the community to help raise (much needed) money for charities. Baby steps to getting our lives and livelihoods back on track and hopefully stronger than ever. We are all like the caterpillar in its cocoon ready to emerge as the butterfly. People cooped up and now dealing with a “new normal” however ready to get back out into the world and start fully enjoying and engaging in life again!

If you’ve ever visited a barbecue competition, you’ve most likely eaten pulled pork or barbecue ribs. But have you ever tried barbecue pizza? Or brisket bao buns? Or drunken pickles? You can try all of these unique barbecue delicacies and more at Eggfest. The fourth annual Chain of Lakes Eggfest will be hosted at the Boys & Girls Club Citrus Center in Winter Haven on Feb. 20. The annual Eggfest festival will feature dozens of vendors from across the country serving unique barbecue dishes prepared on Big Green Egg grills.

The Big Green Egg is a ceramic Kamado-style cooker. Its unique egg-shaped design heats food to 200 to 700 degrees. This versatile, simple-touse outdoor cooker can prepare anything and everything, from burgers and steaks to pizzas and baked goods. The Eggfest showcases a diverse selection of barbecue recipes, including pulled pork eggrolls, brisket bao buns, barbecue pizzas, and “drunken pickles”—large pickles that have been cored and filled with pork, ham, and cheese like an inside-out Cuban sandwich. Such unique barbecue dishes attest to the Big Green Egg’s cooking versatility.

“You can grill, smoke, bake, braise, you can even put a wok in it and fry...Pizzas are amazing. It is basically turning your grill into a brick oven, so pizzas and steaks are amazing. You can bake cookies and pies and bread. There is nothing that you can’t cook on this grill,” said BJ Mannix, owner of Mannix Pools and Grills. Mannix Pools has been in business for 22 years this April. His company has grown in leaps and bounds since then, much larger than he ever imagined. He owes its success to his dedicated staff who remain devoted to their customers and their needs. “We have the best group of employees in this town, and every single day, we try to provide our customers with the absolute customer service, and it has proven that these customers keep coming back,” he said.

Six years ago, they became a Big Green Egg dealer, and their eggs have sold hotter than hotcakes. To help promote the grill, Mannix decided to start Eggfest, modeling the event after other eggfests hosted throughout the country, including the main staple event in Georgia. More than merely serving as a commercial for the signature green ceramic cooker, the Eggfest also serves as a local fundraiser, with proceeds split between the Boys and Girls Club of Polk County and Girls Inc. of Winter Haven. “Here at Mannix Pools and Grills, we absolutely love helping out with local organizations and charities. It was a big fit for our brand as well as the Big Green Egg brand,” Mannix said. “At the end of the day, we want to raise as much money for as much as we can for two great organizations in our community.” For $25, attendees can have a full day of food, fun, and live music. They can sample every food item served at the event at no further cost. All the while, they can enjoy craft beer, live musical performances, and fun-filled activities for the whole family. Especially during these uncertain times, the Eggfest is expected to receive a welcomed comeback. To help accommodate in these uncertain times, special precautions have been made to ensure public safety and health, with mask requirements, social distancing of at least

six feet, and hand sanitizer locations throughout the event. “Our expectations are for people to get out of the house,” Mannix said. “Everyone is tired of sitting at home. We want everyone to come out and join us for the day and get out of the house for fresh air and to have a good time.” Mannix loves the different food served at the event and how they all showcase the Big Green Egg’s versatility. He especially loves how far many of the barbecue teams travel to attend the event, with many of them coming from across the country from as far as California. “We love to see who travels the furthest...not just come out to enjoy the team, but the teams who come across the country to help raise money for the organizations, and the fellowship that is gained from it,” he said. “Though they may not share their secrets and recipes during the event, they will gladly write it down for you and hand it to you in a heartbeat the day of.” Demo eggs are currently on sale at a discount price. Those who purchase a demo egg can pick one up on the day of the event and attend it at no extra cost. Regular tickets are on sale for $25. This Has Gone Too Far! On Jan. 6, 2021, hundreds of protesters descended upon Washington, D.C. Their protest devolved into a violent mob and breached the U.S. Capitol. They stormed both chambers of Congress. They carried guns and wore tactical gear. Some brought zip ties, handcuffs, and bombs. They broke windows. They erected gallows. They took down the American flag and hoisted a Trump flag. Nearly five people died that day, and hundreds have since been arrested. This wasn’t a protest. This was the most direct attack on our Capitol since 1814. This was an insurrection. This was an attempted coup by farright militias and white supremacists. Let’s be clear about who’s to blame.

These people were incited by our former president, Donald Trump. They were his followers. They arrived to show him their support. They wore his red hats. They carried his flag. They were whipped into a frenzy by his speech, and they had been fomenting with hate by his rhetoric and conspiracy theories ever since he took office. During his speech earlier that day, he told them they were “going to walk down to the Capitol” to “fight like hell” because otherwise “you’re not going to have a country anymore.” Afterward, Trump tweeted: “These are the things and events that happen when…great patriots…have been badly & unfairly treated for so

long.” That’s why they stormed the Capitol. That’s why they desecrated a national landmark, destroyed property, and nearly took lives. Because their “dear leader” lost the election. Let’s get one thing straight: there was no voter fraud. No evidence was found by any level of our government. None! Not by state officials. Not by the attorney general. Not even by the Supreme Court, with three of the justices appointed by Trump himself. He lost fair and square, and he and his supporters threw a tantrum over it. Worse is how law enforcement reacted. Capitol security did little to nothing to quell the violence committed by armed thugs. In fact, officers opened gates for protesters and even posed for selfies with them. Meanwhile, at last year’s Black Lives Matter protests, the National Guard was deployed to stand guard at the Lincoln Memorial, ready to unleash lethal force on otherwise peaceful protests. The difference, literally, is black-and-white: if you protest police injustice, you get tear gassed; if you attempt a violent coup over a fair election, you get a selfie! Ever since the election, and especially following this chaos, politicians have called for “healing” and “unity.” They have urged Americans to

“reach across the aisle” and “heal the divide.” Sure. Under normal circumstances, Americans should set aside their political differences and work together for the greater good of the country. These are not normal circumstances! This was a violent coup attempt, attended by white supremacists and fascists, instigated by far-right militias and domestic terrorists, and organized to overthrow the decision of a lawful democratic process. Worse, there are still people who still support Trump, even after his words and actions provoked such an attack. This is no longer a difference of politics. This is a difference of morals. Trump did not cross a line that day. He crossed that line long ago. After violating so many norms, he traveled so far across that line you’d need a supersonic jet to reach him. As for the rest of us, we Americans should stand together, but not with the likes of Trump. We need to stand together against lies and conspiracies, against fear and hatred. Because as another president once said: either you are with us or you are with the terrorists. Veterinarian of the Month Dr. Vargas received her DVM from Tuskegee University in 1994. In 1996, she established her AAHA accredited Orchid Springs Animal Hospital in Winter Haven, FL. Dr. Vargas has lectured at the World TCVM Congress (2015, 2016, 2017), AAVA Conference (2017), AVMA (2011), and the CbVMA (2017).
