The BITRI Centre for Material Science The Botswana Institute for Technology Research and Innovation (BITRI) is a parastatal under Botswana’s Ministry of Ter tiary Education, Research, Science and Technology, established with a Mandate to identify, develop and/or adapt appropriate technology solutions that provide sustainable innovative solutions through co-creation and collaboration in line with national priorities and needs of Botswana. The technologies will as much as possible maximize the use of local materials to ensure efficiency and affordability. BITRI has established a world-class Centre for Material Science (CMS) with state of the ar t laboratory facilities, such as XPS, XRD, XRF, SEM, high resolution GC-MS, LC-MS and ICP-MS. The CMS has synthesis capabilities for metal nano par ticles, electrospun nano fibres and materials characterisation that will serve the research needs as well as the commercial materials analysis needs of Botswana and Africa across a variety of sectors.

Q & A WITH BONGANI TSHABALALA

In our continued effort to learn more about the many dedicated people who work tirelessly behind the scenes to make SA Express fly, we recently chatted to Bongani Tshabalala, General Manager: Technical. Text & Images Š SA Express

Indwe: Please tell us a bit about your working background and your current position. Bongani Tshabalala (BT): I started out as an aircraft instrument mechanic after completing my apprenticeship at SAA, and transitioned to Aircraft Simulators. I performed hardware and software maintenance on aircraft simulators to ensure that the systems were in sync with the training requirements for the pilots. This gave me exposure to the operational dynamics of the aircraft because I had to understand how the aircraft operated before working on the simulation software. I was also exposed

to the thorough processes and training requirements that the pilots undergo. I then moved into aviation compliance, where I was part of the team that ensured aircraft airworthiness and regulatory compliance with all regulators in the regions that SAA operated. I became a post holder for maintenance at SAA, a regulated position approved by the South African Civil Aviation Authority (SACAA). I then joined SA Express in November 2018 as the General Manager: Technical. Indwe: Please share with us a brief description of your position? BT: I oversee the entire Technical Department, including maintenance,

repairs, and all personnel related matters in the department. My duty is to ensure that that the aircraft are safe to fly, are on schedule, and are cost-effective to operate. Indwe: What are the challenges that you face on a daily basis? BT: On a daily basis we ensure that all the maintenance activities are concluded timeously. Very often, we have to delay an aircraft because the technical team has to ensure that the aircraft is safely dispatched as per the manufacturer’s specifications and the SACAA regulations. Safety is paramount to all of us.

Indwe: What types of hobbies do you enjoy outside of work? BT: I like working with my hands so I tinker a lot. I have a workshop where I try to restore old motorbikes. I also read a bit and I enjoy listening to music. I listen to a variety of music from classical – the likes of Strauss Junior – to our own local music. I also enjoy watching stand-up comedy shows as they provide a comedic interpretation of our otherwise complex culture. Indwe: What is your favourite destination that SA Express flies to, and why? BT: I like Port Elizabeth. I love the sea and I find the people to be very friendly there – not taking away from the other destinations that we fly to. PE stands out for me because it was the first destination that I travelled to for leisure. Indwe: Do you have any words of encouragement to young people, especially those who aspire to pursue a career in the aviation industry? BT: I would encourage our youngsters to study hard so that they are better positioned to pursue a career in aviation. This is an industry which caters for a wide variety of career choices. One can be an aviation medical doctor, maintenance engineer, technician, asset manager, pilot, aircraft performance analyst, marketer, route and network planner and more. In Southern Africa, aviation is an enabler for the economy. Indwe: What is your parting message to our passengers? BT: At SA Express, we are humbled by the support that our passengers have given us over the years. When we open up our tool boxes in the morning to start maintenance on our aircraft, we don’t see the customers or business people that fly with us – we see brothers, sisters, mothers, grandmothers and so on. Being tasked with keeping our aircraft airworthy, we would not want to risk putting our family members at risk by performing substandard work. /

The fifth annual Zakifo Music Festival lands on Durban’s shores over two consecutive weekends from 24th May to 1 st June, bringing with it a series of intimate concerts in venues around Durban. Zakifo offers a wide-ranging line-up of cutting-edge musicians from across the African continent and beyond. To keep Zakifo fresh, contemporary and relevant, the festival format is refreshed every year in response to the evolving audience and concert trends, and to introduce new and unusual venues to Durban music lovers. Local and international performers will include: Sho Madjozi (ZA), Eme (Nigeria), Dope Saint Jude (ZA), Lindigo (Reunion), Ben Harper (USA), Maia & The Big Sky (Kenya), and Grammy-winning, multi-platinumselling American artist Ben Harper.

Athletes from across South Africa and beyond will be assembling at the much anticipated 17th annual FNB Magalies Monster MTB Classic returning to ATKV Buffelspoort. This event is an excellent breakaway for families who enjoy the outdoors and tackling some of the very best off-road routes on offer in the North West Province. Mountain bikers can choose between a Fun Ride (about 15 km), Half Marathon (about 33 km), and the Marathon (about 65 km). Kids can participate in a 2.5 km race. Families can look forward to experiencing spectacular trails complemented by magnificent scenery and a vibrant festival atmosphere. Entry fees start at R200 per adult and R100 per child. The first 1,000 mountain bikers to enter (and pay) will receive an official event T-shirt.

The beautiful Lowveld will come alive with an exciting mix of music, art, theatre and literature at the annual Innibos National Arts Festival. The central festival terrain will offer several music stages with performances from popular artists such as Karen Zoid and Bobby van Jaarsveld. Patrons can also expect an open-air theatre venue, a film festival, children’s entertainment and more than 300 original craft stalls. Foodies will be spoilt for choice with a wide selection of food, ranging from traditional roosterkoek (braaied bread), to German sausages, seafood paella and more! / “If we speak each other’s languages, whether it be through singing or the actual language, we come closer, we understand more, and that is what builds humanity,” Van der Merwe says. The Stellenbosch University Choir is currently rated as the best amateur choir in the world by the Interkultur World Rankings system – a position held since October 2012 – and is blowing audiences away with its moving harmonies and musical excellence. The choir has won critical acclaim across the globe for its stellar performances. Creative self-expression through the performing arts is an important part of a well-rounded education. Stellenbosch University in the Western Cape has, since the inception of their world-renowned choir in 1936, always nurtured the sense of community and harmony that the choir provides for students. The choir brings students from all walks of life and vastly different backgrounds together with a sense of purpose to communicate in ways that words simply can’t. Performing now for over 80 years, the Stellenbosch University Choir has a glowing reputation. Its performances have been viewed over four million views on YouTube, and it has a whole host of

worldwide tours and festivals, not to mention accolades, under its belt. Just last year, the choir took top honours at the prestigious Llangollen International Music Eisteddfod in Wales, winning all three categories they participated in – Youth Choirs, Mixed Choirs, and Open Choirs. Van der Merwe walked away with the Jayne Davies Prize for Best Conductor at the Eisteddfod, putting Stellenbosch University on the map once again as a musical force to be reckoned with. The ensemble, consisting of 80-100 singers, are not all music students at the university. Luthando Siboya, a fifthyear medical student and current choir member, as well as Heleen Meyer, a Stellenbosch University alumnus who studied a Bachelor of Consumer Science, have both been personally moved by the choir’s impact on their lives. Siboya, who was born in Langa township in the Western Cape, moved with his family to Mitchell’s Plain on the Cape Flats where he was exposed to crime, drugs and violence from a young age. “The hardest part of growing up was quickly realising when I went to Wynberg Boys’ High School at the age of nine years, that there was a marked difference between

‘us’ coming from the township and people living in the suburbs,” he recalls. “I would go to school and I would see this beautiful life of libraries, computers, and access to information. Then I would go back home and see gangsterism, violence and poverty,” Siboya says. Following in his parents’ footsteps, Siboya went on to pursue a career in medicine, and his application to study at Stellenbosch University was approved. His passion for music, innate singing capabilities and desire for the kind of creative expression he just couldn’t get in his medical studies led him to audition for the choir. “The audition was nerve-wracking,” he recalls. “After the first line, André smiled, and I didn’t know whether it was a good

smile as in I’m doing well, or he was laughing at me. But I soon realised that he really liked my voice. Music is powerful. Watching the Stellenbosch University Choir sing is an out-of-body experience. It’s the closest thing I can attribute to heavenly. It’s powerful,” Siboya elaborates. Despite their vastly different backgrounds, Meyer shares his sentiments. “It’s something that fills your soul. It can calm you, excite you, [or] make you sad. It’s a wonderful thing to be part of it,” Meyer says. Her grandfather, Philip McLachlan, was one of the very first conductors of the choir. He was considered the father of choral music in South Africa for a very long time, and music played a critical role in her life from a young age. “I didn’t consider going anywhere other

than Stellenbosch University because I wanted to sing in the choir,” she says. “The choir, throughout the years, allowed us to be part of a team – part of a group that had one goal in sight, with everyone coming from different backgrounds. They are far more than just the best choir in the country – they are definitely one of the best in the world,” Meyer says. The standard of choirs at last year’s Llangollen International Music Eisteddfod in Wales was exceptionally high, with each of the four finalists for the Pavarotti Trophy as Choir of the World 2018 performing at their very best. Stellenbosch University Choir’s performance was an aweinspiring tribute, where they shared the soul of South Africa on an international stage, deepening their connection to the



music and each other and sharing it with the world. Talking to the choir prior to their performance, Van der Merwe’s passion was palpable. “What does the first note do?” he asked. “It shatters oblivion. It creates light. And doesn’t the world need that?” Despite their best performance yet, however, it was the National University of Singapore Choir that walked away with the trophy, but that did not deter the team in the slightest. “We shared our hearts and souls, and that’s what counts,” Siboya says. “I am proud, I am overwhelmed, and I am grateful. The team did their best, and in the end, the music won,” Van der Merwe adds. Having the unwavering support of Stellenbosch University’s close-knit community of staff, students and alumni – or Maties – is what makes dreams like these come true, and keeps the trajectory of passion and success alive. Being part of this community is something that remains embedded in each of the students that pass through the doors of this world-renowned establishment. “I am proud to be a Matie,” Meyer says. “It’s a wonderful thing knowing that the

University of Stellenbosch is striving to keep up with what is expected of us in this country, and the world.” True to the spirit and ideals of Ubuntu (humanity), being a Matie was also described as being a catalyst for more than just personal growth. “Being a Matie is acknowledging other people, respecting others, and working for the greater good of mankind,” Siboya concludes. Singing their way to success, the Stellenbosch University Choir is the perfect example of how working together in harmony can make big changes in our world. /

/ Our stay at Shumbalala started with an exceptionally warm welcome: friendly smiles, hot towels, and warming sherry to drive the cold from our bones. We were ushered to the Presidential Suite where a fire was already lit in the fireplace, resulting in a soft orange glow across the walls. The suite is decorated in what I like to call relaxed luxury. The king-sized beds in the two en-suite bedrooms are framed by mosquito nets, resembling something from a fairy tale – the kind of bed that Sleeping Beauty would lay her head upon. The bathrooms boast glossy white, standalone bathtubs. Relaxing in the tub was one of the ways I recharged my batteries after a long

day in the sun or out on a game drive, and the other was indulging in the extensive selection of gin on offer. Both bedrooms also include a veranda, an indoor and outdoor shower, large windows, and sliding glass doors to the deck that allow for light to stream through. The stone walls give the impression of a cosy cottage, and while the rooms cool down at night, the sunlight makes them bright and warm during the day. Being able to wake up, open the curtains and look out onto the seasonal Monwana River and the wildlife that wanders past the lodge was a truly memorable experience. We saw

various animals quenching their thirst at the watering hole on the other side of the dry river bed. These were mostly elephants, but we also noted a cheeky vervet monkey taking a sip right next to a kudu bull, plus a young male lion, and plenty of nyala. A SPECTACLE OF WILDLIFE The wildlife on the Thornybush Reserve is incredibly diverse, and Shumbalala offers their guests one of the best viewpoints from which to enjoy the sights. During the game drives, the guide and tracker worked tirelessly to ensure that guests were comfortable and safe

Because the reserve is privately owned, Shumbalala vehicles can go where game vehicles in the Kruger cannot: off-road. I do not just mean on dirt tracks – this was proper bundu bashing. This allowed us to get as close to the animals as anyone should get to a wild animal. We heard the crunch of

bones as two female lions made short work of a young wildebeest. FOOD BACKED BY “POPULAR OPINION” Dining is the icing on the cake that is the Shumbalala experience. Their menu changes daily and Chef Danielle prides herself on making classic dishes with local ingredients, and serving them looking as stunning as the lodge’s natural surroundings. On the first night, we dined in the main area by the fire, and as we tucked into our starter, a lone hyaena wandered past the open door – even the hyaenas want a taste of the delightful menu crafted by Chef Danielle!

On the second night we dined al fresco, and tucked into one of the best lamb shanks anyone there had ever tasted. Their dessert selection was also delicious, and you could get your sweet tooth fulfilled twice a day – once at high tea and again after dinner. Our stay at Shumbalala left a mark on our hearts and smiles on our faces. We dined in style, saw some of the most beautiful creations in nature, and enjoyed warm South African hospitality. As we drove away from Shumbalala and the Thornybush Reserve, we said to each other that we would simply have to return – and this time keep a closer look-out for hyaenas. THE POWER OF EDUCATION Prof Mamokgethi Phakeng It took the cooperation of people on no less than three continents to make this interview come to fruition. That’s what happens when your subject is an internationally acclaimed leader and a captain of industry in her own right. / Perhaps it is her robust strides in uplifting African women and ushering them into the science, technology, engineering and mathematics (STEM) fields, or how she leads from the front by pledging a portion of her income towards funding black postgraduate students. There are so many untold facets about this scientific mastermind with her heart for humanity, that her story cannot be told by any other but herself. Indwe recently caught up with Prof Phakeng to hear her views in this exclusive and unfiltered interview.

INDWE: What tips do you have for women attempting to penetrate male-dominated fields? MP: Be who you are, do not take nonsense, work hard, don’t apologise for being fabulous and stay the course!

INDWE: How do we get women into science? Mamokgethi Phakeng (MP): It starts with advocacy and how we do it. People, especially other women, must stop telling us how bad they were in mathematics or science, because the more they do that, the more they normalise the perceived difficulty for women to succeed in STEM. Nobody ever tells us how bad they were at history but for some reason being bad at STEM subjects is seen as a badge of honour. We can never get more women into STEM if we keep making them believe that STEM subjects are hard, special or impossible to pass. INDWE: Is the market ready for women in the sciences? MP: It has to be, because the market needs women, not only in science but in many areas of our economy. This world is in the state that it is because women have

I experienced and saw a lot of poverty in my young life and my dad made us aware that the only way out of it was education, and I believed him.

INDWE: What three things can you say contributed to your success? MP: Determination – I experienced and saw a lot of poverty in my young life and my dad made us aware that the only way out of it was education, and I believed him. So, all my life I was determined to do whatever it took to succeed. There were many times when I could have easily given up, but I did not because I was determined

to achieve my dream of not living in poverty. Even when I failed, what got me back on track again was the fact that I was not willing to give up on my dream. Hard work – I convinced myself a long time ago that I am not one of those people who was born smart, and so I would have to work hard to succeed at anything. I know I have to put in the time, otherwise I will fail. People talk about

working smart and not hard, but my view is that smart work only works when you have already done the hard work. Humility – accepting that people can never achieve success on their own is very important. It is the reason why I have been able to ask for help when I do not know something, to get a mentor and accept when I have gone wrong. There is no growth without humility.

INDWE: Why did you pursue a career path in mathematics? MP: Because it was the only thing I could do without the need to memorise! INDWE: What does the world not know about you? MP: I like and enjoy raising boys. Perhaps this is because I have never given birth to a girl. I find my connection with my sons, biological and not, authentic and strong. I feel very blessed. INDWE: What is the most important lesson you have learned? MP: Never fight evil with evil. Fighting evil with evil is never the solution – in fact, it creates problems or more evil in

the world. The reason why we have so much turmoil and war in the world is because of fighting evil with evil. There is always a different and smarter way to handle things. INDWE: What are the biggest challenges that you face (work-related or otherwise)? MP: The racialised nature of our politics worries me. People make assumptions about you, your political ideology and what you believe in simply because of your race. Many of our youth are losing their curiosity in all of this polarisation. They no longer ask questions; they just make assumptions and thus stop learning from people they do not know

or have never had conversations with. If your bank manager is a young black woman, it does not mean they are an employment equity appointee and do not know what they are doing. Ask questions and find out! If a white boy likes rugby and prefers to speak Afrikaans it does not mean they are racist. Ask questions and find out! We make ourselves ignorant by sticking to labels. INDWE: What do you want to be remembered for? MP: I want to be remembered for my selflessness in leadership and service, my resilience and my sense of humour. /

THE CEDERBERG The Cederberg is a rock art questor’s dream come true. Located just a few hours’ drive from Cape Town, the mountain ranges offer an assortment of over 2,500 San rock art sites. This area also offers the Sevilla Rock Art Trail, which stretches for just under 5 km. While in the Cederberg, also make sure to visit Open Africa’s West Coast Rock Art Route. There are many more opportunities to get up close and personal with rock art while engaging in day trips or overnight hiking opportunities. What makes this extra special is that you can join in with community-based initiatives such as the Living Landscape Project, to get grassroot guided tours to key rock art sites close to Clanwilliam. This offers unmatched experiences with locals who have an in-depth cultural understanding of rock art and what it means to them.

DRAKENSBERG, KWAZULU-NATAL For those who are still not convinced of the importance of rock art, then mull over this: There are over 20,000 individual rock paintings between the Royal Natal National Park and Bushman’s Neck in the Drakensberg, most of it protected within a World Heritage Site. Most rock art in this region is found in about 500 caves and overhang sites. This offers tourists the opportunity to “search” for this world-acclaimed cultural treasure and, in some cases, learn about the sacredness of this form of expression. It is never just art. Battle Cave – which can be approached from Injasuti Camp – offers spectacular depictions of “fighting” paintings. These are rare finds and not often seen in popular mainstream depictions. Local guides also show tourists around at Ebusingata in the Royal Natal National

The depictions tell a story that no words ever could. They are immovable, and immortalised in the sacredness of Mother Earth’s rock. GLOBAL INTERPRETATIONS OF ROCK ART “Every medium carries symbolism and meaning. It depends on where the rock comes from, the type of rock,

whether something is painted on it or the rock is shaped and represented into something else. For example, taking a piece of land and turning it into an art object is a political act,” explains Zohra Benzerga, playwright and theatre director in New York. While sitting on an airport bench in Madrid, Spain, waiting for our connecting flights, the conversation drifted away from what we ate on the plane, towards what I am typing now. Benzerga is passionate about rocks and art and opens my eyes to a somewhat “modernised” rock art form of expression that is taking the theatrical

and artistic worlds by storm. I can’t help but be reminded of the African women who grind stone and sell handmade rock art depictions at flea markets or crafty stalls along the side of the road as you travel along South African gravel roads in search of your next adventure. While traditional rock art is filled with the most beautiful and triumphant tales of our ancestors who walked the unmarred earth, modern artists, fellow countrymen and artists throughout the world have found a voice using rock art. It is never just a rock and a depiction. There is so much more to it than that. /

/ Suddenly, we smelled popcorn again. It meant we were close, as this is what a leopard’s scent marking smells like. Nic radioed another nearby game vehicle, who told us that he heard a leopard vocalising. We were close. Reaching a fork in the road, Dyke scanned the ground and eagerly told us to continue on the left path after spotting the unmistakable print in the soft sand. A short drive down, Dyke raised his arms in the air in satisfaction, gleefully turning towards us. He didn’t need to say it – he had spotted Nyeleti on an adjoining road. Nyeleti, meaning “shining star”, was wandering along, his coat full of rich black spots and an ombre of gold

and orange. Every few metres he’d stop to smell a bush, run his body and tail along its leaves to make other leopards aware of his presence. Nyeleti stood still to watch the animals within his territory. Impalas were alarmcalling with a loud, deep screech. He kept moving though, not quite ready to hunt. As we followed him, the smell of popcorn remained, and while we marvelled at his majesty, the sun dipped past the horizon. This was Nic and Dyke’s third time today being the first to spot an animal. Dyke had an incredible eye, and Nic was able to involve everyone in the game-drive vehicle in the action, telling interesting stories and sharing snippets of information. It was

clear that we were riding with the dream team, and that they are the ones you should ask for by name during your visit. Game drives in the Dulini Private Game Reserve happen twice a day. There is an early-morning wakeup call just before sunrise, and then another game drive in the late afternoon. You’re destined to see many animals during your stay, from buck, crocodiles and hippos, to families of elephants, giraffes, all sorts of birds, and – perhaps most exquisite – the big cats, known fondly by their Shangaan/Zulu names of ngala (lion) and ingwe (leopard). During your game drive, you’ll find a quiet spot to stretch your legs, while the team set up drinks and snacks. While a G&T might


go down well at dusk, we recommend the “mocha-locka-choca-vula-vala”, a mocha hot chocolate with a dash of Amarula. MAKING YOUR MONEY TRAVEL FURTHER Face-to-Face with Bongiwe Gangeni There is never a shortage of rumours concerning changes within the banking sector. It is a competitive industry, and with the introduction of new banks, the wheels of modernisation are rolling faster than ever before. Indwe recently sat down with Bongiwe Gangeni, Deputy Chief Executive Officer for Absa Retail & Business Banking – and an avid traveller whose most memorable trip was on an Alaskan cruise – to discuss the latest innovative banking strides that tourists should know about. Tourists must also know that their cards are exposed to new potential risks and must, therefore, keep a close watch on their cards and transactions even after the trip. “For your safety, get travellers’ insurance to cover unforeseen travel mishaps. Most banks offer travel insurance cover. Always be aware of your surroundings. Don’t accept help at an ATM from a stranger and always guard your PIN when entering it at an ATM or Point of Sale (POS) device when travelling. Importantly, never let your bank card out of sight when using it to pay for goods or services,” Gangeni advises.

SAFETY FIRST “When travelling, be it locally or internationally, proper planning, research and attention to detail are imperative. You need to make sure that you have an understanding of the country you’re visiting, the proliferation of Point of Sale (POS) devices, and the accessibility of cards should be top-of-mind. In addition,

it is important to be mindful about guarding against fraud wherever you are in the world,” Gangeni says. According to Gangeni, tourists need to officially inform their banks and/or credit card companies before departing about their intentions to use their banking cards overseas. Failure to do so may result in the possibility of having your card

While speaking, it quickly becomes apparent that she is a highly qualified professional, as well as an individual with the practical experience of being a local and international traveller – be it for business or pleasure. For example, even though she is security conscious and aware of the perks of online payments, she acknowledges that cash is still widely accepted in many African countries, including South Africa. It can therefore not be ignored because “cash is growing every year in this country”. She cautions tourists to tread upon this area with caution. “Depending on your needs, we always advise travellers to take a combination of notes and bank cards to make payments while travelling. Bank cards enable you to budget smartly and manage your spending. Cash is also widely accepted and is a convenient way to pay for those smaller items, like a taxi or a purchase at a market,” Gangeni explains. INDUSTRY BREAKTHROUGHS FOR TOURISTS “Tourism is a vital part of the economy and an overseas holiday is a milestone for many people. As the conversation progresses, Gangeni tells us that travel payments are becoming increasingly popular and are driven by disruptive technology platforms. Tourists can take comfort in knowing that many places in South Africa – and across the world – accept card payments. Credit and debit cards are also widely accepted at most hospitality establishments. “We pride ourselves on doing our bit to ensure that travellers – whether departing or visiting South Africa – have a positive experience. By simplifying the foreign exchange and banking process, we aim to give travellers one less thing to worry about,” Gangeni says. Generally, tourists visiting South Africa can exchange foreign currencies across several banks, and use ATMs, mobile technology and the digital payment infrastructure to reduce their need of carrying cash. “Pay in Your Currency (PYC) is a service that is designed to provide international cardholders [with] the clarity, convenience, and choice of seeing and settling their bill in the currency they know best – their own,” Gangeni explains. Tourists also need to conduct some research before travelling so that they can better protect themselves and

their hard-earned money. Even small acts such as placing a sensible daily transactional limit on your accounts and considering a prepaid travel card can make all the difference. “For South Africans travelling, Absa’s Cash Passport is a prepaid travel card that allows customers to carry multiple foreign currencies safely and on a single card. It is available in four currencies: US dollars, Australian dollars, British pounds and Euros,” Gangeni says. She lists peace of mind and convenience as some of the perks of having a Cash Passport. She says that if a tourist loses their Cash Passport, it can usually be replaced within 24 hours. If you need cash, their partners, MasterCard, will ensure that you receive physical cash as soon as possible. FOR THE LOVE [AND APPRECIATION] OF TOURISM “Absa recognises the vital role of tourism in the development of the South African economy, and we have prioritised serving the needs of travellers. Above and beyond those mentioned already, we also offer foreign exchange solutions – [where] we accept 22 of the world’s most active currencies and have one of the country’s largest physical footprints for this. “We are [also] proud to offer the Western Union service to our customers.

Western Union is a person-to-person international payment service for the banked and unbanked. Absa is the only Western Union partner to offer the international cash send payment service via online and cellphone banking. Absa customers are now able to make Western Union payments on our banking app, which is a banking first for South Africa,” Gangeni says. Gangeni is unapologetic about her love for travel and how it opens up the mind and gives her a better insight into South Africa. As she speaks about travel, her face lights up, and her smile grows wider. It is uplifting to note the passion she has for banking and travel. She continually reiterates the importance of the tourism industry and of being a tourist, even on a personal level. We conclude by talking about to her trip to Alaska, which is once again a reminder of the need to have financial control and access to funds as a tourist – wherever you may be. /

FOOD LIKE YOUR MAMA MADE, BUT BETTER! LesDaChef

Soweto-born chef, Lesego Semenya, fondly known as “LesDaChef”, shatters a lot of illusions when he talks to young students at cookery schools. He doesn’t tutor them on the finer points of patisserie or which cuts of meat work best on the braai, rather, ‘I tell them how hard it is. I talk about the reality of the industry.’ Text:Lesley Stones Images © Supplied has become a local bestseller, and is sold internationally on Amazon. “With my book. I’m trying to promote South African cuisine like makipkip,” he says. “That’s coloured popcorn that used to be sold on the streets as a cheap snack during apartheid when we didn’t have any money. It has a very distinctive taste that I’ve turned into a white chocolate mousse.” Another dish deserving wider appreciation is ting, a fermented sorghum porridge that was an African staple before maize was introduced. “It’s fermented for three days, and you can eat it as porridge in the morning or make a stiff porridge like pap that’s served at funerals and weddings,” he says. “Young people don’t know how to make it any more.”

/ Watching celebrity chefs strut and swear their way through TV shows makes the industry look terribly glamorous, but that’s not the reality. “When I was at chef school, it was sugar-coated – nobody told us this industry is hell and that 80% of students quit within the first two to three years. So I talk about the reality of what they are going to face,” he says. SURVIVING THE CUT Unless, like Semenya, you actually become a celebrity chef, of course. Under the name LesDaChef he pops up on TV, runs monthly cooking classes, promotes food brands that

he believes in, and has a cookbook that he’s promoting internationally. The renowned celebrity chef hopes the next chapter in the global food movement will be African fare, as, “Everything else in the world has been tried and tasted.” He’s keen for authentic ingredients and techniques to be honoured, so African dishes don’t become a diluted or expropriated fad. RAISING THE BANNER FOR AFRICAN FOOD His cookbook Dijo: My Food, My Journey (“dijo” means “food” in Sesotho)

SOCIAL COMMENTARY OF COOKING His cookbook dares to challenge and uncover socially constructed norms and fads regarding food. The hilarious comments and questions posted about his cookbook on Twitter, and other social media platforms, highlight that many people barely know how to cook at all. In his role as a culinary consultant, he’s often approached by companies that want him to become the face of their products and take them to a young township audience, including Nestlé, which manufacturers Worcestershire Sauce. “The market sees it as an old-school product that young people don’t use, so they are asking me to showcase how it can be used. It’s about reimagining old brands that aren’t in the happening scene with young people,” he says. But he’s picky about which brands he’s

associated with. “Consumers are getting more concerned about the ingredients in their foods. They’re understanding that you can’t be putting a million things into one product, and I’ve turned down work that doesn’t fit with my personal convictions,” he says. BACKED-UP BY SOLID CREDENTIALS His street credentials as a chef from Soweto are supported by solid professional qualifications. He graduated from Prue Leith Chef’s Academy with a Grande Diploma in Food and Wine, and has five other diplomas in wine and patisserie. He’s worked at the swanky Westcliff Hotel in Johannesburg and at Richard Branson’s private game reserve in the Sabi Sand. In 2010, he won a competition run by the British High Commission to design a World Cup pie, earning the chance to cook in Corrigan’s of Mayfair, a Michelin-starred London restaurant. His pie was based on a township kota, with chips and sausage in a loaf of bread like a bunny chow, reflecting his passion for African food. FUTURE PLANS This year, two TV series are in the offing – if he finds some sponsorship. One will feature him chatting casually to celebrities as they rustle up something in the kitchen. More ambitious is a panAfrican show where Semenya will be one of four presenters travelling the continent to discover the flavours, history, fashion and cultures of other countries. His ultimate ambition is to run his own restaurant, which is why he has his finger in so many pies. Building up his brand and winning a large following who like his style should ensure a restaurant in his name draws the crowds. “The goal is to serve end-to-end cuisine,” he says. “I’ve always wanted to be on a farm so I have cattle and chickens and pigs and can make my own sausages and cheese. The only logical place for that would be Muldersdrift in Gauteng because that’s still relatively near civilisation.” I point out that the best restaurant in the world, according to the 2019 World Restaurant Awards, is Wolfgat, owned by Chef Kobus van der Merwe in Paternoster, and that’s miles from anywhere. “Western Cape people are weird!” Semenya laughs. “That wouldn’t work here. convenience. They want to jump in a car and get there now.” Recently, Semenya had to change his diet and pace of life after being diagnosed with hereditary type 1 diabetes. He needs insulin injections and must eat regularly throughout the day. To keep his blood sugar level under control, he avoids white maize, processed sugar, processed meats, bananas, grapes and dried fruits, and steers clear of beer and cider.

“I’ve learned to slow down and take things a bit easier with my work and business. That crazy superman level of doing things has had to be changed and altered to fit into this new lifestyle,” he says. The upside is that he’ll be experimenting with ways to make diabetic-friendly food more interesting, so his misfortune may make life tastier for other diabetics. Nombreux sont ceux qui postent des commentaires et des questions cocasses à propos de son livre sur Twitter et sur d’autres plateformes sociales, ce qui met en évidence le fait qu’un grand nombre d’entre nous ne sait absolument pas faire la cuisine. Dans son rôle de consultant culinaire, il est souvent sollicité par des compagnies qui veulent qu’il représente leurs produits et qu’il en fasse la promotion dans les townships, ceci incluant Nestlé qui fabrique la saucecondiment « Worcestershire Sauce. » « Le marché la considère comme étant un produit démodé que le jeunes n’utilisent pas et on me demandent donc de leur montrer comment elle s’utilise. Il s’agit de donner une image nouvelle aux anciennes marques qui ne sont pas tendance avec les jeunes, » dit-il. Mais il choisit les marques avec lesquelles il s’associe avec soin. « Les consommateurs deviennent de plus en plus exigeants pour ce qui est de leur alimentation. Ils réalisent que l’on ne peut pas mettre des millions d’ingrédients dans

un produit et j’ai souvent refusé de faire du travail de promotion qui ne cadre pas avec mes convictions, » dit-il. SOUTENU PAR DE SOLIDES RÉFÉRENCES Sa crédibilité en tant que chef de cuisine de Soweto est sanctionnée par des qualifications professionnelles solides. Il a obtenu un diplôme de Gastronomie et d’œnologie de l’Académie de cuisine de Prue Leith, ainsi que cinq autres diplômes en œnologie et en pâtisserie. Il a travaillé au luxueux Westcliff Hotel à Johannesburg ainsi qu’à la réserve animalière privée de Richard Branson dans le secteur de Sabi Sands. En 2010, il fut lauréat d’un concours organisé par la Haute Commission britannique pour son design d’une tourte « Coupe du monde » qui lui donna l’opportunité de cuisiner au Corrigan’s of Mayfair, un restaurant londonien étoilé au guide Michelin. Sa tourte était basée sur une recette de kota de township c’est à dire une miche de pain fourrée de frites et de saucisses comme un « bunny chow » (recette typiquement sudafricaine) - qui reflète sa passion pour la cuisine africaine. PROJETS FUTURS Cette année, il a deux séries télévisées de prévu – s’il arrive à trouver des offres de parrainage. Au programme de l’une d’elles figureront des conversations décontractées en cuisine avec des célébrités pendant qu’ils préparent des petits plats rapides. Son autre projet un

peu plus ambitieux serait de devenir l’un de quatre présentateurs d’un programme panafricain, ce qui conduirait Semenya à voyager à travers le continent pour y découvrir les saveurs, l’histoire, la mode et la culture d’autres pays. Mais son ultime ambition est d’ouvrir son propre restaurant, ce qui est la raison pour laquelle il entreprend tellement d’activités. Le renforcement de son image de marque et le grand nombre de fans qui aiment son style devraient assurer qu’un restaurant portant son nom attire les foules. Suite à un recent diagnostic de diabète héréditaire de type 1, Semenya a dû modifier son alimentation et son rythme de vie. Il doit s’injecter de l’insuline et manger régulièrement au cours de la journée. Pour contrôler sa glycémie il doit éviter de consommer maïs blanc, viandes transformées, sucre raffiné, bananes, raisin et fruits secs, et s’abstient de boire bière et cidre. « J’ai appris à ralentir mon rythme de vie et à tempérer mon travail et mes affaires. Il a fallu que j’arrête de me prendre pour Superman et que j’intègre de nouvelles habitudes à mon nouveau mode de vie, » explique-t-il. Le côté positif est qu’il va se consacrer l’experimentation de nouveaux moyens de rendre la nourriture pour diabétiques plus attayante, ainsi sa malchance rendra-t-elle peut-être la vie d’autres diabétiques plus savoureuse. DOING THE BEST THEY CAN WITH WHAT THEY HAVE Being a successful farmer does not necessarily mean becoming a mega farmer who features on a TV programme. Not all farmers are meant to become mega farmers or, for that matter, huge commercial farmers. “Successful” farmers are also those who are doing the best they can with what they have. / Such are the farmers participating in Grain SA’s farmer development programme, called Subsistence to Abundance. Most of these farmers farm on 1- or 2-hectare plots of communal land in rural areas. The heart of this programme lies in educating the farmers on good farming practices, while making some of the best agricultural technology available to them. To take this knowledge and information to these farmers, Grain SA appointed development coordinators and mentors throughout the country. These people travel long distances on often

rough roads to deep rural areas, where most of the Subsistence to Abundance participants rely on agriculture for a living. They mentor, convene, educate, and, most importantly, act as ambassadors for the members of the different study groups under their wings. The people from Grain SA are quick to point out that an upliftment programme of this magnitude wouldn’t have been possible without the help and support of their loyal partners. These partners are Bayer, Kynoch, The Sasol Trust, SA Lime and Gypsum, Syngenta and the National

Department of Finance through the Jobs Fund Project. However, Subsistence to Abundance is not a hand-out programme. It is the responsibility of each participating farmer to have access to land, attend study group meetings, and contribute R3,500 per hectare planted annually. This will cover more or less half of the required input costs per hectare. Even though it sounds easily doable, one needs to understand that the only steady income most of these households can rely on, is their monthly government grants.


Recently, Bayer SA and the Grain SA farmer development team took a media group on a tour to visit a couple of the programme participants in the rural areas of KwaZulu-Natal and the Eastern Cape. I was privileged to be invited along and just as two years ago, when I visited these farmers for the first time, the sheer joy of success and their passion for agriculture were tangible at each of our stops. It was clear to me that Subsistence to Abundance is still changing lives. Farmers are praising Grain SA and their partners for eradicating hunger in their villages. We took part in a study group meeting at Oliviershoek, where Mr Khoza is the leader. He stood up with passion and pride to tell everybody how taking part in the Subsistence to Abundance programme has changed their lives. In his

own words: “We are so thankful to Grain SA, Bayer with its DEKALB hybrids and the rest of the partners for bringing us where we are today. In this community, nobody goes to bed hungry anymore. We produce enough to feed our families all year round and sell our surplus. The money we earn makes it possible for us to buy other essentials and send our children to school.” Legacy Monsanto has been an important role-player since the inception of the programme. They have been sponsoring some of the coordinators and mentors, and help the farmers with access to the latest seed technology. They are doing the best they can with what they have – and what they have is access to an excellent knowledge pool, continued support and high-tech inputs to produce the most they can from their limited land. /

ALL YOU NEED TO KNOW ABOUT SHINGLES Many of us will remember our encounter with that irritating childhood illness chickenpox – the one that left you covered in blisters and scabs, that made you itch like mad while your mom told you repeatedly not to scratch. / Chickenpox is caused by an infection of the varicella-zoster virus (VZV). The bad news is that once infected, your body is never able to rid itself of the virus. VZV sets itself up in a root of one of your nerves and hibernates there for the rest of your life. If you are fortunate and your immune system maintains good control over the virus, it will never bother you again. But unfortunately, millions of people every year suffer because their dormant VZV becomes active. When VZV reactivates, it causes a disease known as herpes zoster, commonly called shingles. The virus travels down the nerve and infects the skin cells along that nerve. This leads to pain and a blistering rash in the area supplied by that nerve. Shingles most commonly occurs on the chest or the face, but can affect any part of the body. The rash usually clears within seven to 10 days’ time of

re-activation and may leave some scarring. The most important complication of shingles is post-herpetic neuralgia (PHN). This is chronic pain along the affected nerve that can be excruciating and may continue for months to years after the rash clears. The pain can have a severe impact on the sufferers’ quality of life. WHO IS AT RISK FOR DEVELOPING SHINGLES? Anyone who has been infected with VZV is at risk – that is about 90% of us. It is estimated that one in four adults will develop shingles in their lifetime. The risk increases greatly with age, and 60% of cases occur after the age of 50. Any form of immunosuppression such as HIV infection, cancer, autoimmune diseases, diabetes or medication that affects the immune system, increases the likelihood

of developing shingles. Physical trauma and stress are also important risk factors. IS THERE TREATMENT? Antivirals are available for the treatment of shingles and should be started as soon as possible, together with sufficient pain medication. IS

A WAY TO PREVENT SHINGLES? A vaccine is available for the prevention of shingles. It is recommended for individuals over the age of 50. The vaccine boosts the immune response to VZV. It reduces the likelihood of developing shingles and if shingles occurs despite the vaccine, it reduces the chances of PHN. Speak to your doctor or pharmacy clinic about this simple measure to prevent an unpleasant and potentially life-changing disease. /

/ Multiple sclerosis is an autoimmune disease which causes the body to mistakenly attack the brain and spinal cord. It does this by damaging myelin, the protective coating around the nerves. When myelin is damaged, messages can no longer be clearly transmitted from the brain and spinal cord to other parts of the body. The resulting symptoms include extreme tiredness, loss of concentration and memory, numbness, sensitivity to heat and cold, difficulties walking and balancing, spasms, dizziness and depressed mood. Blair, aged 46, is one of 400,000 people in the United States with MS. The

prevalence is similar to that in Australia, where around 25,000 people live with the disease. The average age of onset for MS is 30, and around three-quarters of those affected are women. There’s still a lot we don’t know about the causes, but so far, the research indicates our genes and environment each have a role to play in driving susceptibility to MS. GENETICS Genetics plays an important role in the development of MS, with more than 200 genetic markers implicated in the

disease. Collectively, the identified genes may account for up to 25% of the genetic component of MS risk, but each gene in isolation carries only a small risk. Because of this, it’s not possible to generate a “genetic risk score” that accurately conveys the risk any given person has of developing MS. So we cannot single out the individuals who are at greater risk, even if we know how many of them might exist in the community. Researchers are now trying to adopt a more sophisticated genetic approach to help identify individuals at risk by focusing on families who have more than one

relative with the disease. We know, in some instances, family members who don’t have symptoms could still harbour asymptomatic disease. This could mean the MS is either at an earlier stage, less severe, or “blocked” before it has become clinically overt. Identifying mutations common to affected family members could help understand the genes likely to be directly relevant to the cause of MS. The unanswered question is whether findings in families can be extrapolated to the general population. VIRUSES There is a strong association between the Epstein-Barr virus, which often results in glandular fever in young adults, and the development of MS. If you have not been exposed to the virus, you will likely not get the disease. There are many theories for how the virus may be implicated in MS. The virus infects a type of white blood cell important for the immune system. Infection of the cell could then cause corruption of the immune response, which could lead to the autoimmunity of MS. But the Epstein-Barr virus is not

sufficient on its own to trigger MS, as more than 90% of people who aren’t affected by MS have been exposed to the virus. SUNLIGHT Sunlight, or more specifically exposure to ultraviolet (UV) radiation, decreases with increasing distance from the equator. The further away from the equator you live, the greater your risk of developing MS. In Australia, those living in northern Queensland are seven times less likely to develop MS than those in Tasmania. Ultraviolet light is known to have many effects on the immune system and our synthesis of vitamin D. In particular, UV appears to have an impact on immune activity, making immune cells more tolerant and in some instances suppressing immune activity. HORMONES The fact that women are more likely to develop MS than men may be related to hormonal changes. We know disease activity drops during pregnancy. We also know women who have multiple children

LIFESTYLE Smoking significantly increases a person’s chances of developing MS. Smokers, and people exposed to secondhand smoke, are almost twice as likely to develop MS. In particular, they are more likely to develop progressive forms of MS. For people who already have MS, there is good evidence that quitting smoking reduces the severity of disease progression. Although the subject of ongoing research, it would appear that smoking influences the production of certain proteins in the lungs that may trigger immune cells to become more alert. At the extreme, this could set off the immune response. WHAT WE SUSPECT There is a great deal of interest in the role nutrition and diet could play in the development and management of MS. These studies are complex due to the many potential nutritional components found in our diets. It is possible that keeping cholesterol and fats in a healthy range could help MS symptoms, such as reducing levels of fatigue. However, this is an ongoing area of research. There is stronger evidence when it comes to body weight and obesity and the risk of MS. Studies have shown that being overweight or obese, particularly during adolescence, is associated with an increased risk of developing MS. It is also associated with worse outcomes in people who have MS. But not much is known about the mechanisms that may be responsible for this. The results of physical therapy for people with MS are varied but have been associated, at least in the short term, with some benefit, such as improved balance and coordination. /

As we celebrate Worker’s Day this month, we also take the time to celebrate some of the many people who do their part every day to make SA Express the airline it is. Safety has to be your number-one concern in everything you do. You get to learn new things daily, which expands your mind. Lessons that I learned in my position are to never assume anything, always ask if you are not sure or do not understand. Always face unpleasant situations headon, and do not compromise your morals and integrity. Walvis Bay is my favourite holiday destination. It is very intimate, peaceful and at the same time you can still enjoy the entertainment side of it. Recommendations that I have for people visiting the airport is to stop over at the viewing deck to enjoy the view of the planes taking off and landing.

The values that I require in this position are punctuality, discipline, attentiveness and patience. I have learned that consistency can make or break you. The fulfilling part about being a part of this family, is that we never say die! This amazing group of people has inspired me to tackle my personal struggles with the same zeal, and perseverance.

Gaborone is my favourite destination. It’s beautiful, and a breath of fresh air. My word of advice for passengers is that, when visiting the airport, be prepared for anything – mentally, physically and emotionally.

Special services Special Meals Passengers with special dietary requirements are provided for through the following special meals: kosher, halal, Muslim, Hindu, low-fat and vegetarian meals. Passenger Letters Dear Sir/Madam I was scheduled to fly from Bloemfontein with SA1014, departing form Bloemfontein at 17h00 and arriving at Johannesburg O.R. Tambo International Airport at 17h55. Then I had to transfer and catch my next flight departing for Cape Town at 18h55. Mr Joseph Makgetla checked me in at Bloemfontein. I requested his help to check in for the Johannesburg to Cape Town leg, as I was afraid that it would be a tight transfer. When I was already through the security check point and waiting for my flight to depart, I received a phone call from my office. Mr Makgetla had called my office, as that was the number indicated on the ticket. He realised that there was a good chance that I may miss my connecting flight to Cape Town. So he arranged for me to take an earlier flight to Johannesburg (at 15h00). He also booked my luggage straight to Cape Town. This arrangement left me with ample time to catch my connecting flight. It also reduced my stress. Mr Makgetla went beyond the call of duty. Once he checked me in, I was no longer his concern. Mr Makgetla is a worthy ambassador for your airline and should be commended for his outstanding work ethic. To whom it may concern I would like to express my sincere thanks for the great service that I received from SA Express recently. I left my driver’s licence on the plane after I disembarked in Joburg from a flight from Hoedspruit. I received a call within minutes of getting off the plane from a gentleman in your office to let me know that my licence had been found. Unfortunately, I didn’t get his name. He arranged for the licence to be delivered to the door of the arrivals hall and I was easily able to get it back.
