Pita Jungle, Fired Pie welcome spring with new menus SANTAN SUN NEWS STAFF

The Pita Jungle at 1949 W. Ray Road, is marking the 18th anniversary next month of the Pita Jungle Jazz Jam Band, the Valley’s longest-running jam session. The Thursday-night jam began in April 2000. The band features Pete Gitlin on guitar and bass, Dave Ihlenfeld on keyboards, Andy Ziker on drums, and a few surprises that make every Thursday night a unique experience. Singers and musicians are invited to join the fun on stage. Pita Jungle’s new Seasonal Kitchen Crafts Menu features eight dishes that include some old and new favorites. Offerings include dishes like the Curried Spinach Potato Pizza, Philly Steak Lavash Wrap, shrimp tikka masala, and red quinoa-taboule salad with avocado hummus. Salmon Spinach Salad Recipe

1-2 Cups - Raw spinach leaves 2-3 Sliced strawberries 1/2 – 1 oz. - Feta cheese Small handful of sliced toasted almonds 1/4 Cup - Sliced fennel 3-4 oz. - Grilled wild salmon 1-2 tbsp. - Balsamic vinaigrette • In a large bowl, combine the spinach, strawberries, toasted almonds and fennel. • Pour your preferred balsamic vinaigrette dressing over the salad mix and toss to combine. • Sprinkle the feta cheese over the salad and add the grilled wild salmon. • Makes one serving.

Chia Seed Protein Ball Recipe 2 cups - Oats 1 cup - Peanut butter 3-4 tbsp. - Chia seeds 3 tbsp. - Ground flax 1/4 cup - Raw honey 1/3 cup - (Melted) Coconut oil

Chill mixture in the fridge for about half an hour to ensure the balls will stick together.

• After chilling the mixture, roll tablespoon-sized spoonfulls into balls. • (Optional) Roll protein balls in coconut flakes. • Store protein balls in an airtight container in the fridge for up to two weeks, or freeze for longer storage. • Makes 20-30 protein balls.
