hen “Diners, Drive-Ins and Dives” visited Sal’s Gilbert Pizza a few years ago, a guest said, “It’s a slice of New York in the middle of the desert.” That was Sal Cuffaro’s simple business plan 11 years ago, and it always will be whether the cameras are on or off. Sal built his loyal following because of the ingenious way he combines marvelously foldable pizza with pastas such as spaghetti and meatballs, ziti and lasagna. Busy workers stream through for a wide slice at lunch, and at dinner, families take home boxes of extra garlic knots and pizza slices to savor the next day.

If you can make it in before 5 p.m., seven days a week, wines by the glass and pitchers of beer are just $5. Night owls drop in after 8 p.m. on Mondays and Tuesdays, when they can order a house bottle of wine and bruschetta for $20. The $15 bruschetta allows revelers to choose four of 12 toppings, including Brie and apples with fig spread, smoked salmon with pesto and almond hummus with chopped tomato.
