➤ EVENTS AROUND THE REGION

What’s on this month

Notes from the editor G’DAY all, Richard Coombs here. I’m filling in as Thirsty Work editor this month after the former editor Lisa Machin finished up. There are a few exciting things happening in the Surat Basin in the coming months and hopefully we can all get out and enjoy some of them. Next week there’ll be some tough, tough men walking through the region. That’s not exciting you might say? Well it is when they’re walking from Brisbane to Birdsville. The Walking Warriors are a charity that has been set up to secure funding for the care and support of our vets and their families; it’s a great cause. In and around Dalby I’ve seen donation tins and information flyers; so go on, dig into your pockets and chuck a couple of bucks in, you know it’s going somewhere useful. For sport lovers, and in particular cricket lovers, not only do we have the Ashes to keep up awake at night (actually, let’s not talk about that), but we’ve got a couple of Queensland’s best coming to our part of the world. Reardon and McDonald will tour our region as a part of the Wanderers cricket tour this season. They’ll be here next month so flick to page 21 to find out the dates and locations of when they’ll be around. Get out to the game if you can, it’ll be a heap of fun and a good way to spend an afternoon. But otherwise, keep working hard; Christmas will be here in no time and another year will be gone. Until next time, keep reading Thirsty Work, play hard and be good to your mother.

Know your rights about unfair dismissal

UNDER the Fair Work Act a person has been unfairly dismissed, if the commission is satisfied that an employee (who is protected from unfair dismissal) has been dismissed and the dismissal was either harsh, unjust or unreasonable, and was not consistent with the Small Business Fair Dismissal Code (in the case of employees of a small business), and was not a case of genuine redundancy. The Fair Work Act at s.381 states the objects of the unfair dismissal provisions are: to establish a framework for dealing with unfair dismissal that balances the needs of business (including small business) and the needs of employees. To establish procedures which are quick, flexible and informal and address the needs of employers and employees. The Act also has a means to

provide remedies where a dismissal is found to be unfair with an emphasis on reinstatement. If there is no contract of employment, a person cannot be considered an employee. A contract does not have to be in writing. It may, for example, be completely oral, completely written or a combination of the two. There are several groups of people in the workforce who do not have a contract of employment with an employer, and are therefore not considered to be employees, for example, independent contractors. These workers are excluded from the national workplace relations system. If an employee is dismissed an application must be lodged with the Commission within 21 days after the dismissal takes effect, the Commission may allow a further period for lodgement

EARLY MARK: Queensland’s bottle shops could be opening from 9am.

Bottle shops may open early THE Queensland Government is considering opening bottle shops across the state from 9am each day, as part of proposed changes to liquor laws. Under the proposal, the 789 takeaway licensees in Queensland would extend their opening hours from 10am-10pm to 9am-10pm. All bottle shops could also apply for an extension to open until midnight, in line with existing regulations. The government is considering the changes as part of a red tape reduction discussion paper detailing wider reforms to liquor and gaming laws in Queensland. Department of Health acting chief health officer Dr Stephen Lambert said the state was taking the issue of alcohol-related harm seriously. He said the government was working with both the Common-

wealth and Australian National Preventative Health Agency to address “harmful drinking culture”. “There is a role for everyone in changing our drinking culture, including governments, workplaces, communities, families and individuals,” he said. “Research evidence supports creating environments that support low-risk drinking as well as encouraging and supporting individual responsibility.”

His comments came after a report last week revealed an alarming 31% rise in alcohol-related presentations at emergency departments around the state. Released by the Foundation for Alcohol Research and Education, the report also showed a 57% rise in alcohol-related hospitalisations across the state in the 10 years to 2011-12. Foundation CEO Michael Thorn said the results were “extremely troubling”. Despite the criticism, Dr Lambert said the government was working on drink-driving, early intervention and treatment and various other policies to stem the flow of alcohol-related harm. State government figures also show there are about 30,000 hospitalisations associated with harmful alcohol consumption each year around state.

NEED FOR SPEED: Telstra Support manager Kalota Naare with a 4G wi-fi dongle, which will provide the Surat Basin with blistering mobile broadband speeds.

UCG is not a threat PROPONENTS of a $1.4 billion gas plant for central Queensland have welcomed a decision by the Queensland Government’s Independent Scientific Panel on final recommendations for the state’s Underground Coal Gasification industry. Perth-based low cost gas and fertiliser group, Liberty Resources Limited said the industry overseas had well demonstrated safe engineering techniques at depth for UCG operations and there was no

reason the findings should an hinge the industry’s progress to develop new energy streams for Queensland. In releasing the panel’s findings, state minister for Natural Resources and Mines Andrew Cripps said the peer reviewed panel’s report made a contribution towards government making an informed decision on the potential for a commercial UCG industry to develop. The panel’s report, which recognised Queensland is possibly

leading the world in developing UCG technology, recommended the single most important risk mitigation is selecting a site with coal at depth; the current operators can continue their trials; a planning and action process be established to demonstrate successful ‘decommissioning’ of the underground cavities used as part of the UCG process; and until decommissioning can be demonstrated, no commercial UCG facility should commence.

DALBY and surrounds will soon reap the benefits of the zooming 4G mobile network. Telstra is set to extend their coverage to the Western Downs by Christmas, which means for compatible mobile phones. Dalby, Kingaroy and Goondiwindi are amongst the 200 regional towns and holiday spots across Australia who will have access to the service. 4G has been a staple in metropolitan cities across the country for a number of years, and the speeds in Dalby are set to match what is currently available. Telstra country wide area general manager for southern Queensland Nigel Beaman said it was important to extend 4G coverage to rural areas. “We really want to keep the region pumping so it’s important to do what we can to support locals and local business in this area,” Mr Beaman said. “Telstra 4G offers an exciting new era of communication, allowing local customers to use their phones in ways they never knew they could, offering a world of convenience and opening up access to smart new technologies.” The roll out is part of Telstra’s plan to provide 4G coverage to 85% of the Australian population by Christmas. Telstra currently supply 66% of the Australian population with 4G coverage, a target that was reached in June.

Passion for fitness Amanda is a wealth of knowledge

A BORN and bred Kiwi, Amanda Bell made the bold move to Chinchilla in September 2010 to work as the Community Nutritionist for the Northern Downs and has not looked back. For the three years prior to moving to Australia, Amanda was based in Wellington as a personal trainer and nutrition consultant. In those three years she also taught nutrition for the New Zealand Institute of Sport, led outdoor bootcamps and completed a Sports Nutrition internship, whilst maintaining nutrition and personal training clients. She is a nutrition graduate from the University of Otago, New Zealand, a member of Sports Dieticians Australia and a Registered Exercise Professional. Amanda said she is very aware that you can not achieve your goals without combining nutrition with exercise. “I have written plans for people doing events such as the annual New Zealand Coastto-Coast, Lake Taupo Cycle Challenge, adventure races, body building as well as body bulking plans, weight loss plans and general tips for those who want to stay healthy,” she said. “A lot of people lead busy lives so I tailor my programmes around their schedules, making their lives more enjoyable and full of energy.” Amanda has competed at a national level in sprinting, relays, hurdling and javelin and at an international level in 400m hurdles so understands the pressures and intensity of training. She said she loves working in the health and fitness indus-

➤ BATTLING THE BULGE By AMANDA BELL DINNER meals - think about your portion sizes every time you eat Your main meal should be made up of ¼ carbohydrate, ¼ protein and ½ veggies (low carbohydrate variety), or another way to look at it is below: You want to have a palm size portion of meat/protein so the smaller you are the smaller hand you will have and the less protein you will need, the bigger you are the bigger hand you will have and hence you will need more protein. ■Choose from red meat, white meat such as chicken and fish. ■Try to get a variety of each throughout the week. ■When it comes to mince, only buy premium mince and drain off any fat after cooking, before eating. This does end up being the cheaper option as well. ■Also cut any fat off meat such as chicken, beef, bacon and ham before cooking. ■You want to have a closed fist size portion of carbohydrates. ■Carbohydrates are things like rice, pasta, bread and noodles options. ■Potatoes, kumara, sweet corn and yams are high carbohydrate vegetables, which should be regarded as your carbohydrate portion, instead of the vegetable portion. ■Potatoes are mainly starchy carbohydrates and provide little fibre or benefit in comparison with pasta or rice. ■You should try and eat brown options of carbohydrates if you can as they are a lot better for your digestive system and helps things to be regular and in turn helps you lose weight. ■Brown rice will add bulk without added calories to a meal and help you feel fuller for longer. ■You will also be able to have a smaller portion size of brown rice compared to white in order to make you full. Lastly you want to fill the rest of your plate with salad or vegetables. ■Some low carbohydrate vegetables are such things as asparagus, beans, broccoli, brussel sprouts, cabbage, capsicum, carrots, cauliflower, celery, courgettes, cucumber, leeks, lettuce, mushrooms, spinach, silverbeat, tomatoes and turnips etc.

Not just about fellas Mentoring key to more women

A RECENTLY announced Queensland Government campaign will see women making a bigger impact on the site over the coming years. Minister for employment JohnPaul Langboek announced a strategy earlier this month to increase female participation in the resources sector. The government has partnered with the Queensland Resources Council to deliver the mentoring program, which will involve four months of face-to-face training each year. 20 mentors and 20 mentees will be involved in the training program. Mr Langboek said the program had been in the works since the election last year. “The resource sector is one of the Newman Government’s four pillars and a key Queensland industry that has traditionally experienced difficulty engaging and retaining female workers,” he said. The government will contribute $100,000 annually over three years to attract women to the resources workforce. The Queensland Minerals and Energy Academy’s Gateway Schools Program will also be given a helping hand from the strategy, and will run an additional 12 workshops annually.

FKG caters for worker mothers BY LAURA HUNT

GIRL POWER: A mentoring program is aiming to get more women into the resources industry. “The workshops are accessible to female Gateway and non-Gateway school students, opening up opportunities for more students to participate,” Mr Langboek said. The academy ran two workshops as part of the expansion earlier this year. “The expansion program aligns with industry requirements and school curriculum and provides

students with industry engagement, career guidance and networking opportunities,” Mr Langboek said. “In this way we can generate solid career pathways into the resource sector for young women.” QRC chief executive Michael Roche said the program was an effective way to recruit women to the industry.

“I'm certain that by matching quality mentors with up and coming women in our resources sector we will see even more women rise through our ranks,” Mr Roche said. The QRC is currently on the lookout for interested professional industry mentors and applicants. The mentoring program will kick off in September – for more information visit training.qld.gov.au.

ONE of Toowoomba’s largest construction companies is hoping an onsite childcare centre will attract more families and women to join its workforce. FK Gardner & Sons Group recently opened its first on-site early learning centre, Building Blocks, at its Toowoomba office. The service costs about 50% less than the national average, with space for 18 children. FKG managing director Nick Gardner said the decision followed a successful parental scheme introduced in 2012 that offered incentives for parents to return to the workplace after starting a family. “It worked really well and got the thought process started on the childcare centre,” he said. “It’s a bit left field for a construction company to be setting up a childcare centre, but we’re a family-based company and our values are to provide a family atmosphere. From our perspective, attracting and retaining good staff is difficult, so it’s a good incentive to offer current employees and also future employees. “We’re certainly trying to set ourselves apart from others in the industry.” Contracts administrator Alex Williams’ seven-month-old son Harrison was one of the first to be taken in. “It’s great and so convenient. You know everybody’s parents and you can go down at lunchtime and visit them,” Mrs Williams said.

Walking across state for veterans A NEW Australian charity is set to start with a massive walk across the state next week. Wandering Warriors has been set up to secure ongoing funding for the care and support of our veterans and their families, and for selected other charitable causes. Wandering Warriors executive officer Quentin Masson said the charity would start with a major fundraiser when military veterans plan to walk 1600kms from Brisbane to Birdsville starting on Saturday. “There will be 12 guys doing the walk ranging in ages from early 20s to 74,” Mr Masson

said. “We plan to arrive in Birdsville for the races 33 days later.” Mr Masson said they would be stopping at many major centres on their way. “We’ll be staying in Dalby on the 5th, Brigalow on the 6th, Miles on the 7th and Dulacca on the 8th of August,” he said. Mr Masson, a former squadron leader in the SES with 19 years service, said he was honoured to organise the walk. “The older generation of Vietnam vets have done a lot of work,” he said.

“Now there is a whole new generation of veterans and I feel morally obliged to lend a hand.” Mr Masson said the RSL and Legacy were on board but they were always on the lookout for more corporate sponsors. Visit wanderingwarriors.org.

In the early stages of planning, the Capricorn Business Alliance hopes to celebrate the formation of the new Livingstone council, which will take over from the Rockhampton Regional Council on January 1, 2014, with a bang.

Back on the controls GEORGE Ruddick spent four months looking for work in the local area, but no one was willing to take the stay at home dad on board. But thanks to a new Ostwald Bros training program, George’s career in the mining industry is stronger than ever. The company, in conjunction with QGC, unveiled their heavy machinery operator training simulations, aimed at up skilling indigenous people and other underrepresented groups in a safe environment. George said it was the ideal training ground for him, who looked to reenter the workforce after a 10 year break. “It’s quite fun – but safety is number one with these,” he said. “With these, you don’t hurt anyone of break a $1000 machine. “It gets rid of your jitters.” The intensive three-week program, designed by JT Workforce Connections, is aimed at delivering skilled plant operators to the resources industry. Participants graduate from the program with two completed units of competency that provide a pathway into a range of full qualifications. Queensland senator John Hogg was on deck to check out the new simulators, and said it was wonderful to seek the workers’ sense of pride from completing the program.

EXRoma-ites Mick and Marion O'Brien recently travelled to Singapore for the naming of a multimillion dollar drilling rig. But this was no ordinary rig. This rig was built and dedicated to Mick for his 50 years of dedicated service to one company, Noble Drilling. The rig will be named "Noble Mick O'Brien". Noble Mick O’Brien is a jackup rig of 14623 gross tonnes capable of drilling to 10km under a water depth of 120m and the company expects it to begin operations in the second half of the year. The real Mick O’Brien is the third eldest of nine sons and one daughter, born in Roma to John (Jack) and Veronica O'Brien. Sadly, Jack passed away several years ago but proud Mum, Veronica, now 98 years of age, lives in Cooroy with son Noel. Mick started work in the oil fields near Roma at the age of 17 years. The family home is now Tewantin but Mick still works out of Doha. So, take a leaf out of Mick’s book and continue to work hard.

DIGITALDOWNTIME APP REVIEWS

Microsoft’s Star Trek smart watch coming MICROSOFT employees are reportedly testing a prototype smart watch constructed from aluminium oxynitride – an expensive material known as ‘transparent aluminium’ that’s three times harder than glass. Technically a ceramic rather

than a metal, transparent aluminium is stable at temperatures up to 1200 °C and is so futuristic that its first public mention was in Star Trek, where a time-travelling plot saw the then-fictional 24th-century material traded with incredulous humans,

circa 1980. This sort of future-proof gear doesn't come cheap, with manufacturing costs of around $20,000 per square metre. Whether Microsoft has managed to improve upon these production methods is unknown. How exactly a new smart

watch might tie in with Microsoft’s range of hardware is unclear, though the device is said to include fast mobile connections via Long Term Evolution (LTE) to provide much of its services. – THE INDEPENDENT

Apple fixes wi-fi glitch but not before review of otherwise impressive MacBook

It’s an Air-borne bug MARK FURLER APPLE is well known for products that work. Switch them on they connect. Plug them in, they play. So when you get one in which something doesn’t work, it’s surprising, especially when you are reviewing it. But judging by the number of visits to Apple support page, I’m not alone. Some of the super lightweight, go-all-day MacBook Air’s have a wi-fi bug. Apple is aware of the problem and is furiously trying to fix it. At the time of writing, there were more than 83,000 views on the support page where users were discussing the problem and possible fixes. Users are universally reporting that their wi-fi connects for a bit and then drops out. Mine did it all the time. I reported my problem to Apple and they sent me a replacement machine. The same thing happened, even though it was apparently working fine at Apple’s office. I could connect the MacBook Air via the personal hotspot on my iPhone and found it did not drop out hardly at all. But that is a pain and no long-term remedy. It’s a pity because the MacBook Air is a great machine – one which will no doubt be used by many business people, students – and journalists wanting an everyday notebook that can last all day. The super selling point is battery life. The 13 inch boasts up to

Time Capsules – you have a setup which offers super-fast data transfer and storage. New Intel HD graphics promise up to 40% faster performance for gaming and graphics, while the new flash storage is claimed to be 45% faster. According to reviews conducted by The Australian, the 2013 Air reads data from its drive at almost 800 megabytes per second. Last year’s clocked around 480MBps. The Oz’s review also found the laptop lasted 12 hours and 15 minutes – on a 75% screen resolution. What I loved particularly was

the super-light aluminium enclosure. It’s tough enough that you could slide it in with your other gear without feeling the need for a dedicated laptop bag or sleeve. The new AirPort base station also just released includes highpowered radios and a six-element beam-forming antenna array to maximise range and performance. With setup built right into OS X and iOS, Apple says users can create a high-speed wi-fi network with just a few clicks. That wasn’t my experience given the problems with wi-fi on the Air. Overall, the MacBook Air is one to put on your shopping list.

HOLIDAYDESTINATIONS

BLISS: Byron at Byron Spa and Resort offers 92 luxurious suites nestled among sub-tropical rainforest.

Heaven is...

Closer than you think S

A five-star resort in harmony with its surrounds ■■■ ▼ JOHN FARMER

ORRY for those who couldn’t locate me for a few nights recently. I was lost in paradise, immersed in ultimate relaxation, in love with a place and time. I hadn’t left Australian shores; I didn’t travel too far at all. I was on the northern New South Wales coast spending two nights at the five-star Byron at Byron Spa and Resort. And what a special two nights they were. Located just minutes outside of Byron Bay, the resort – owned by Gerry Harvey and opened in 2004 – optimises its natural surroundings without compromising its five-star rating. Byron at Byron Spa and Resort doesn’t fail to amaze from the moment you arrive to that dreaded moment when it comes time to check-out and depart. You are greeted by an open-plan reception area – complete with restaurant, a 25m pool and day spa – framed by sandstone, timber and glass features. Whether you decide to dine, swim or just relax, the tranquillity and seclusion is never compromised. While impressive, the setting is just one attraction to dining at The Restaurant at Byron at Byron Spa

and Resort. The main attraction is head chef Gavin Hughes, who has been at the resort since its opening. Gavin’s aim is to showcase the region’s local produce – the reason he has adopted a paddock-to-place philosophy –

your privacy and comfort remain a priority and to adapt his menu to the seasons to reflect the diverse regional offerings. “The food is of a light Mediterranean style and based around the best of what’s available locally at the farmers markets. We use Bangalow sweet pork, Alstonville chicken, Yamba prawns, Hervey Bay sea scallops … the fish we get is second to none,” he said. The backdrop to The Restaurant is 18 hectares of lush, sub-tropical rainforest in which the resort’s 92 luxury suites are harmoniously located. Each suite is creatively

designed, bringing the natural surrounds inside, yet your privacy and comfort remain a priority. They offer king-size beds, kitchens, separate lounges, luxurious bathrooms and decks that capture the feeling of being nestled in a rainforest. Despite the five-star comfort, don’t make the mistake of spending too much time inside. Despite the decadent reception area and modern suites, Byron at Byron does not ignore its stunning natural surroundings. Visitors can experience the lush, low-lying rainforest via timber boardwalks that meander their way through the property, passing delicate, endangered ecosystems and the resort’s natural inhabitants such as wallabies, echidnas, bower birds and even the rare Mitchell’s rainforest snail. You can even access Tallow Beach following the boardwalks out of the resort. Relaxed enough yet? No? Well, we’re about to take it up a level. A feature of the resort is the Spa and Wellness Centre. I didn’t have to travel far to get to Byron at Byron Spa and Resort, but once there my day-to-day stresses felt a million miles away. * The author was a guest of Byron at Byron Spa and Resort

Body and soul REJUVENATE AT BYRON A FEATURE of the resort is the Byron at Byron Spa and Wellness Centre, which is home to an array of spa treatments and massages inspired by the magic of the surrounding rainforest and the invigorating essence of the nearby ocean. The centre offers the perfect environment for body and soul rejuvenation, healing and stillness of mind, with treatments encompassing native Australian ingredients and rituals. Don’t leave without experiencing the Rainforest Body Ritual, an invigorating body scrub and scalp treatment. Byron at Byron Spa and Resort is a place of utter indulgence, whether you choose to enjoy the nurturing spa treatments, daily complimentary yoga or simply a relaxing afternoon on the wide, open verandas (may I recommend all of the above).

the stylish way Italians like to live: admiring beauty, mindful of proper image and correct behaviour

ON THE beautiful Isle of Capri some years ago, when we had just begun travelling after rearing children, we found ourselves staying in a luxe room in a boutique hotel perched on Capri’s cliffs overlooking the Faraglioni, the two giant rocks that rise so grandly out of the sea, and appear on every postcard of Capri. Capri is one of the most alluring and expensive destinations in the world. It was a rare treat not used to luxury after years of domesticity, to visit the gorgeous island. Our room was of dazzling loveliness: a handsome wrought-iron bed, a pretty antique

table and desk, comfortable chairs and, to our delight, a large blue-tiled terrace to reflect the piercing brightness of the sky, looking out to the best views on an island where all views are breath-sapping. It was an

unprecedented reward to be there. On a sunny, flower-filled balcony below our room, breakfast was elegantly served each morning by a dignified waiter named Carlo: sugary croissants, tiny triangles of cream cheese, little pots of jam, big cups of milky coffee. Other couples joined us each morning and they were all formidably glamorous. Capri crawls with beautiful people in the summer and they all have that “bella figura”, which translated means “the beautiful figure”, but in reality is applied to the stylish way Italians like to live: admiring beauty, mindful of proper image and correct behaviour. One morning as we sat at breakfast , Carlo nervously approached our table half a dozen

times, obviously wanting to say something, but unable to get it out. Finally, he spoke up: “Scusi, Signora,” he said to me, hesitantly. “Yes?” I encouraged. He seemed very nervous, perspiring a little. “Are they yours?” he asked, his face showing suppressed revulsion as he pointed to a tub of red geraniums upon which, draped and flapping happily, were my big knickers. They had fallen from our balcony above where I had hung them out to dry the night before. I rushed to the geranium pot, picked them up, shoved them under my sweater while the beautiful people raised eyebrows and Carlo hunched away with embarrassment. I haven’t been back to Capri since.

On a well-floured surface roll out dough to desired thickness (anywhere from 1cm to paper thin). Be sure to rotate or move the dough between each pass of the rolling pin to keep dough from sticking. Sprinkle with flour as necessary to keep from sticking. Use a sharp knife or pizza cutting wheel to cut noodles. You can make them narrow or wide, but cut them as evenly as possible to ensure uniform cooking time. Lay noodles on a cooling rack and let sit until ready to cook. Repeat rolling and cutting of remaining half of dough. Boil noodles in well salted water until tender to the bite.

From humble beginnings, a culinary genius is born JOSHUA Okorn grew up in Maleny and started his career in 1998 in King Ludwigs German Restaurant. In 2005 he travelled to France to Lille to expand his culinary knowledge. He worked in restaurants and luxury hotels and stayed two years at Olivo, the fine dining restaurant of five-star hotel Crowne Plaza. He has been Chef de Cuisine for the multi-award-winning Prive249 since January 2011. Here is one of his dishes to impress your toughest food critics.

Veal carpaccio, parmesan ice and marinated mushroom PARMESAN SAUCE Ingredients: 150g butter 300g golden shallots 300ml wine 750ml chicken stock 750ml cream 150g parmesan Method: Dice the shallots and sweat off with the butter. Add the wine and reduce to a glaze then add the stock and reduce by two thirds. Add cream and parmesan. Mix, then pass through a sieve. PARMESAN DOMES Liquid nitrogen must be used under strict safety regulations. Training must be undertaken before use. Reserve 1L of parmesan sauce at 4 degrees in a container15cm square. Dip a ladle around 12cm in diameter into the liquid nitrogen until the liquid ceases to boil. This means the ladle has reached minus 196 degrees. Then dip the ladle into the chilled parmesan cream sauce for 12 seconds. Let the ladle rest for about a minute. The frozen parmesan ice dome can then be removed from the ladle and stored in the freezer until needed. MARINATED MUSHROOM

PHOTO: CONTRIBUTED

Ingredients: 1 king brown mushroom 200ml red wine vinegar 200ml white balsamic vinegar Rock salt Rosemary Thyme Garlic Olive oil Method: Slice the mushroom into 1cm thick slices. Spread some rock salt in a tray then put the mushroom slices on top and spread more salt over them. Leave for 2-3 hours until most of the moisture has leaked out of the mushroom. Brush off the salt then boil the mushroom

slices in a pot with the two vinegars for about three minutes. Reserve the vinegar. Close the mushrooms in a sous vide bag with the olive oil, herbs and garlic. Leave in the fridge to marinate for at least two days. Because of the low moisture content, the low ph levels (due to the vinegar) and the lack of oxygen in the bag, the mushrooms will have a very long shelf life. VEAL CARPACCIO Roll the veal fillet in crushed pistachio crumb and then roll in cling film to create uniform rolls. Freeze the rolls. Slice the veal very thin on a meat slicer, and arrange on a piece of greaseproof paper in a circle. PLATING UP: pistachio crumb, fine leaf

salad mix, mushroom vinegar, parmesan ice dome, veal carpaccio, parmesan sauce, marinated mushroom slice, parmesan shaving and sea salt. 1. Place the pistachio crumb on the plate in a circle the same diameter as the parmesan ice dome. 2. Dress the salad leaf with a mushroom vinegar then place in the pistachio circle. 3. Lay the carpaccio on the parmesan, remove the paper, then place it over the salad. 4. Warm the parmesan sauce and use a hand blender to foam the sauce. Spoon around the dome. 5. Finish with the parmesan shaving, the mushroom slice and sea salt.

Mustang’s on the way BLUE Oval fans mourning the Falcon’s impending death can rejoice in the likely arrival of a true muscle car replacement. While yet to be confirmed by the car maker, industry sources say the Ford Mustang will be launched Down Under at about the same time as the final Falcon rolls off the Broadmeadows production line in 2016. Ford is expected to make the official announcement next month. It is expected an entry-level Mustang with a twin-turbo V6 will start from about $40,000, while the range-topping V8 will be in the vicinity of $60,000. Meanwhile, it is also forecast the Ford Performance Vehicles division will be killed off as early as next year. Insiders have revealed FPV will be phased out but the XR8 badging will be resurrected for those who still want bent eight power – using the current GT’s 335kW supercharged powerplant. FPV currently produces five Falcon performance variants in Australia: the GT, GT-P, GS and F6 sedans, and a GS ute.

WHEN people share common interests, it’s human nature to try and segregate into smaller groups to maintain our identity. The goodies, (us) and the baddies (them). It’s a thought that came to me just last week as I exchanged playful insults with friends south of the border during State of Origin, only for the Ashes to unite us against a common enemy the very next day. These tribal rules also apply to road users, where we separate ourselves into motorists and cyclists with a rivalry as fierce as any State of Origin or Ashes test. Sadly, it’s a one-sided and bloody contest, with an average of one cyclist hospitalised every day in Queensland. To help bring the two tribes together, RACQ has released a fact sheet and FAQ to clarify the road rules cyclists and motorists must adhere to, in order to avoid conflict on the roads. With so many cyclists being injured, it’s clear that we all could benefit from a refresher on some of the rules of engagement. Playing by the rules is the key to ensuring all road users share the road in the safest and most efficient way possible. RACQ’s fact sheet and FAQ can be viewed at http://www.racq. com.au/sharingtheroad.

NEW CAR Mazda3

Fuel focus in top seller

M

ISERLY fuel consumption will be among the features of the new Mazda3 when it hits showrooms early next year. The small car, which has been Australia’s best-selling model for the past two years, will be overhauled for 2014. Two petrol Skyactive-G engines will be available at launch. Prices have not been confirmed, but with extra technology expect the range to start about $1000 more than the current range. The Mazda3 had been retailing for $20,330 plus on-roads, but latest deals have seen it start from $19,990 drive-away to maintain sales momentum. The all-new Mazda3s equipped with the 2.0-litre petrol engine with automatic transmission will use 5.7 litres per 100km (combined average), while those with the larger 2.5-litre petrol engine and auto box will consume 6.0 litres per 100km. The 2.0-litre petrol engine produces maximum power of 114kW and 200Nm of torque, while the larger 2.5-litre alternative has an output of 138kW and 250Nm. Mazda has also confirmed several i-Activsense safety technologies including blind spot monitoring and smart city brake support will be made available. VOLKSWAGEN has moved a step closer to joining the junior SUV ranks with the recent tabling of production plans for its compact Taigun. First shown in concept car guise at last year’s Sao Paulo motor show, the front-wheel drive Taigun has been conceived to slot into Volkswagen’s line-up, two classes below the existing Tiguan SUV in a market segment that is booming and, buoyed by strong demand in economies across Asia and South America, shows no sign of slowing.

The Human Machine Interface

features several new features including the head-up display. The heads-up active driving display is mounted on a clear panel above the meter hood and presents vehicle speed, turn-by-turn directions from the navigation system and other driving information. A further HMI improvement in the

All-New Mazda3 is a new connectivity system allowing the driver more intuitive access to several features including phone, navigation, audio and social media. Information is clearly displayed on the centrally located touch-screen and the driver can interact with the system using the HMI Commander.

A 59-YEAR-old Mercedes-Benz Formula One car has blown away expectations and set a new record for a car sold at auction, fetching more than $32m in England last weekend. Tipped to sell for more than $5m, the unrestored 1954 Mercedes W196R, driven by the legendary Juan Manuel Fangio, sold for $32,634,421 at the Goodwood Festival of Speed auction last week. The sale surpassed the $16.79m paid for a 1957 Ferrari 250 Testa Rossa in 2011.

Mazda seeks partners

DESPITE its recent financial difficulties Mazda wants to remain independent. But the Japanese car maker is looking for more partners to join forces to bolster its place on the global automotive map. Mazda has endured some financial struggles since Ford sold its stake in the brand in 2008 but the company has now stabilised.–drive.com.au

The next generation

Which games machine will win when the Xbox One and PS4 are released? Steve Polak

Turn over a new leaf

TO the uninitiated Animal Crossing: New Leaf is one of those games that just doesn’t seem to make sense. You spend your time doing things that we find are chores in the real world. You must build your house, your economy, pay the mortgage and trade at the market and eventually manage the urban development of your town. None of this is that exciting and the game very much follows a ‘slow-burn’ approach, with small rewards being meted out as you incrementally improve your surroundings. This time around you wander into town and become mayor almost by accident. From here on in your responsibilities grow, as your constituents continue to harass you as they seek assistance. Again this almost sounds annoying, but Animal Crossing turns these mundane management challenges into engrossing tasks, as you gradually get paid and grow your empire. However, the game has an overly more social element than its predecessors, with more characters in the town. Animal Crossing: New Leaf Format: 3DS Rating: G Price: $59.95 Score: 8/10

However, the PS4 might have some advantages too. The Sony console will be $100 cheaper when launched in the US this year (at $US400), so it should be cheaper here as well. The PS4 has a controller with a screen on it, while the One doesn’t. Some pundits are also claiming the PS4 has a slight edge when it comes to hardware specifications. The PS4 features GDDR5 memory, which is arguably faster (176 gigabytes or “Gig” per second) than the Xbox’s DDR3 RAM at 68 gig per second. Both consoles will have 8GB which will be plenty. The PS4 also has the

LIKE Ford vs Holden or Queensland vs New South Wales, the battle between rivals in the world of games consoles has been hot and heavy. It looks like getting even more intense soon too, as new machines are lobbed lovingly our way. Which will win? We have has a look for some early clues.

Both machines are smaller than today’s consoles when they first arrived and both will include substantially more powerful processors and some neat new abilities. The Xbox One has a few tricks up its sleeve features wise when compared to the PS4. The One will ship with a Kinect motion sensing system with every console, and more significantly the One will also offer voice activation too. This could lead to some interesting game developments and help the One also claim ground as the console more capable of playing the role of “general entertainment hub”. The fact that the One also supports live digital TV from launch and will allow you to seamlessly switch content and play games during TV ad breaks is hardly a bad thing either. Microsoft wants their console to be all things to all people.

Can U ignore WiiU? Of course if you don’t want to wait, one of the next generation consoles is already here! Released last Christmas the WiiU is Nintendo’s plucky offering and while yet again (it seems like a tradition with Nintendo) the WiiU won’t be the most powerful console on the market, it does have some strong points that should help it remain a contender. Apart from the WiiU’s very clever motion sensitive controller (complete with on board game screen), the reason we reckon the WiiU is likely to still have appeal, even when the new machines are released, is simple. It is from Nintendo, and those guys just know how to make some of the most downright clever and addictive games on the planet. If you have kids, or like that peculiar but charming style of game that Nintendo is known for, you should definitely play the WiiU at least. Games like ZombieU are brilliant.

potential to have a little more processing power. Both machines feature the new AMD Graphics Core Next architecture. This new system is divided into working blocks (called Complete Units) when measuring power and the PS4 has 18 CUs while the Xbox One has only 12 CUs. However, this doesn’t necessarily mean the PS4 will be more powerful, as it depends on how the processors are integrated and a number of other factors. It is still interesting, if you are geeky enough to care about that sort of thing.

Games

This is probably the crucial battle ground for both games machines. Both brands have popular games franchises and developers lined up to support them and this is where the struggle will be most interesting. After all you only buy these hunks of black plastic for the games. Xbox will feature exclusive launch titles like Forza Motorsport, Dead Rising 3, Killer Instinct, Kinect Sports. Huge names Halo and Minecraft will not be far away either.

QWOP The hardest game ever created is now an app. If you can make your runner last the full 100 metres, you’re a rare person. Did I mention that this is the hardest game ever created? Price: $0.99 SCORE: 8

2

The PS4 will have exclusives like Drive Club, Killzone, Knack and the next Gran Turismo will follow shortly. Both consoles will feature big name games such as Call Of Duty, Assassin’s Creed IV, Fifa 14 and Watch Dogs.

Which machine?

Well you still have plenty of time to sit back and think about it, as we probably won’t see either machine in Australia before the end of the year. The prospects are pretty exciting though as we’ll get games that will far surpass what we have seen to date.

Coolmunda Dam Golden perch are being caught on bait, soft vibes and blades around the timber. No change this week. The fight must continue Aussie Fahey steps down from WADA

AUSTRALIAN Olympic Committee president John Coates wants Stuart O’Grady to resign from his position on the Olympic Games Athlete’s Commission. Just three days after announcing his retirement from the sport, the 39-year-old, who completed a record-equalling 17th Tour de France this year, revealed he had used the banned blood-booster, EPO, before the 1998 Tour. The admission followed the release of a French Senate report into that Tour which named O’Grady, and also found the top three finishers,

“Every athlete in the world is responsible for what goes in his or her system – that’s the start and finish. Every athlete has to make sure they know what they’re doing. “My take is that no matter how big or great you are as a

star and whatever your sport you’re not beyond the capacity to be found as a cheat through the methodology adopted. The Gay and Powell news has followed widescale failed tests in Turkey and Russia, where this year’s World Cham-

pionships will be held, many of which were the result of retrospective testing. This, in Fahey’s eyes, is particularly key as it sends a message “to those that think you’ve got away with it, we will catch you”.

Marco Pantani, Jan Ullrich and Bobby Julich, all took EPO. AOC secretary-general Craig Phillips said he had contacted O’Grady to ask for his resignation. Coates supported the report, which looked into drug use in other sports as well as cycling. “This was a shameful period for the sport of cycling which has been well documented - that is no excuse for the decision taken by Stuart O’Grady,” Coates said. “One can only hope that cycling is cleaner as a result of (the) revelations and the Lance Armstrong saga.”

Stuart O’Grady confessed to drug use in the TDF.

WORLD Anti-Doping Agency president John Fahey says the fight against doping will never be won but also said “we must continue the fight”. The Australian ends his reign at the end of the year after taking up the role in 2007. Athletics is currently central to that tussle having made headlines in recent weeks with the five positive tests at the Jamaican National Championships in June – which included former Olympic gold medallists Asafa Powell and Sherone Simpson – plus Tyson Gay’s recently revealed positive sample from a test in May. Fahey says he will not discuss individual cases while ongoing but says: “What’s occurred in that sport tells us that we haven’t solved this problem. It’s still alive and well.” Gay, Powell and Simpson had all argued they had unknowingly taken banned substances. But Fahey hit back, saying:

Ashton the second ASHTON who? No, not Ashton Agar, the 19year-old spinner who was plucked from obscurity to play for Australia in the first Ashes Test against England at Trent Bridge, and responded by scoring a world record 98 batting at No.11 in the first innings. Ashton Turner is the new name that has cricket fans scratching their heads. The 20-year-old, also a spinner and also from Western Australia, is the latest left-field selection, named in the Australian team for its three-day game against Sussex before the Third Test. Agar, and the spinner who missed out on playing in the first two Tests, Nathan Lyon, were all been named in the team that was captained by Ed Cowan in the absence of Michael Clarke. While he could have been forgiven for not enjoying the excitement of seeing Agar rescue Australia’s innings at Trent Bridge after missing out on selection himself, Lyon said he had no ill feelings. “I was as excited as everyone in Australia and being here on the tour with the boys to see Ashton make his debut as a 19-year-old for Australia, that’s something

Moto stars ready

REIGNING Australian Supercross champion, Monster Energy Kawasaki’s Jay Marmont and new MX1 team mate Adam Monea are fit, fast and ready to do battle in this year’s 2013 supercross and motocross season. Mining services company Easternwell have come on board as sponsors this year and proudly presented the Monster Energy team with their Kawasaki KX450F bikes as a highlight of this

Wollongong-born Jay is a four-time Australian motocross champion and one of our greatest motocross riders while Adam hails from Koo Wee Rup in rural Victoria and is sometimes described as the prodigal son of Australian motocross having had a stellar debut year in 2008 until injury kept him away for two years. When Thirsty Work

caught up with Adam, the pair were midway through the season having completed five rounds. Adam said this was his first year in open class and both riders were doing well. “Jay is sixth and I’m just outside the top 10,” Adam said. Adam said that outside racing he liked to spend time with his buddies and his dog Izzi but the reality was there was not really that much time spent outside the sport.
