HEIDI COOKING TIPS

Don't Over Cook It  When fish is overcooked, it

dries out and loses flavour. To cook fish perfectly, remove it from the heat source before it appears fully cooked, while there is still some translucency in the middle. Fish keeps cooking for several minutes after being removed from the heat. If you wait until the fish looks done, it will be dry by the time it reaches the table.

How Long Should Cook It?

 When pan frying start out with a base line of 3

minutes on each side and adjust from there depending on the thickness of the fillet and cooking method used. If it is a small tail piece then reduce the time to 3 minutes on one side and 2 minutes on the other side. For thicker pieces you may need to increase the cooking time to 3 minutes on one side and 4 minutes after flipping.

The Butter Knife Method  After roughly 6 minutes of

cooking quickly insert a butter knife into the thickest part of the filletremove it and touch the knife to your bottom lip. If the knife feels lukewarm then it still needs a bit more cooking. The temperature you are looking for is medium warm.
