Where Horses Heal: The Story of Cactus Rose Ranch and the Man Behind Its Mission
If you drive just far enough outside of Waco—far enough for the noise to fade and the air to shift—you’ll find a place that feels different. Peaceful. Purposeful. Alive. This is Cactus Rose Ranch in Valley Mills, home to premier riding lessons, horse training, and something even more powerful: a space where horses help transform lives.
But the real story of Cactus Rose Ranch begins long before 2018, long before the first lesson was taught, and long before six daughters ran barefoot across ranch land.
It begins with a young boy on a farm, a Marine Corps recruit searching for purpose, and a man named Dave Welch, who would one day discover that horses weren’t just his passion—they were his calling.
From Farm Kid to Marine to Horseman
Dave grew up the way many Texans dream of: on a farm, surrounded by animals, believing he understood horses better than most. Life seemed straightforward— until it wasn’t.
After high school, Dave joined the U.S. Marine Corps, serving more than eight years with multiple deployments to Iraq. Combat changes a person. Coming home changes them all over again. Dave’s mindset, attitude, and understanding of communication—human and animal—shifted dramatically.
When he returned to Texas, he found his way back to horses. But something unexpected happened:
“I realized I didn’t know nearly as much about horses as I thought I did.”
So Dave started studying. Watching. Traveling. Learning from world-class trainers. He read the books. He attended the clinics. He absorbed everything he could.
Then came a life-altering opportunity: a veteran program at Monty Roberts’ Flag Is Up Farm in California, where he was personally mentored by Monty’s team. It changed everything about the way he trained.



Piece by piece, experience by experience, Dave built his own training style—one rooted in trust, communication, and a level of respect between horse and human that people feel the moment they step onto the ranch.
The Birth of Cactus Rose Ranch
In 2018, Dave and his wife Erika turned their dream into a living, breathing reality: Cactus Rose Ranch – Premier Riding Lessons & Horse Training
Their purpose wasn’t just to teach riding. It was to teach true horsemanship—the kind that connects mind, body, and heart.
Not pulling reins.
Not “controlling” a horse. But communicating with intention.

“Horsemanship brings peace, healing, confidence, joy, and adventure,” Dave says. “And we want people to feel that, whether they’re 5 or 75.”
On any given day, you’ll find 10–15 horses on the property, along with cattle, pigs, goats, turkeys, chickens, and three loyal working dogs who take their job very seriously. It’s not just a ranch. It’s a home—one shared with Dave, Erika, and their six beautiful daughters, who help in every part of the ranch’s daily rhythm.

The Moment That Changed Everything
One story has become ranch legend—one Dave has never forgotten.
A father brought his young special-needs son for riding lessons. The child only spoke to his mother… never to anyone else. Not siblings, not teachers, not even his father.

But during that very first session, something unbelievable happened.
The child spoke. First to Dave. Then to the horse. And then—miraculously—to his father.
“It was the third time in the child’s entire life he had spoken directly to his dad,” Dave shares.
The father stood there overwhelmed, tears in his eyes, witnessing a breakthrough he never imagined possible.
Over the next few visits, the child’s speech grew. At home. At school. With family.
“Horses may not cure every problem in the world,” Dave says, “but with the right trainers, they certainly change lives for the better.”

Meet D. Scott Smith: The Man Behind “The Waco Experience”
A storyteller, a servant leader, and a man who followed a call all the way from Oregon to the heart of Texas.
If you ask D. Scott Smith how he ended up in Waco, he won’t give you a quick answer— because his story isn’t a straight line. It’s a winding, meaningful path mapped by faith, curiosity, and an undeniable call to community.
Scott and his wife, Christine, celebrated their 40th wedding anniversary in 2024 by taking a Texas road trip. They had no plans to move. No intentions to uproot their life in Independence, Oregon. They were just visiting—meeting longtime clients, speaking at events, sightseeing, and catching the April 8th eclipse from the banks of the Brazos. But somewhere between Dallas and San Antonio, between the Gulf Coast winds and smalltown conversations, something shifted.
Christine says she felt drawn. Scott says he felt called. And within 18 days, they knew: Waco was home.
Today, they live off Bosque, just a couple of blocks from the river and a short walk to downtown. And Scott—who has lived a thousand lives in one—is now one of the loudest, proudest storytellers of Waco’s people.

A Life Built on Experience—and Service
Spend just five minutes with Scott and you’ll quickly realize: storytelling is his second language.
Before becoming an entrepreneur, before building his digital advertising company, before launching a radio show heard across Texas, he lived a career path that reads like a novel:

Scott studied Korean at the Defense Language Institute in Monterey, CA, and spent time in South Korea intercepting North Korean military communications. It was a role defined by discipline and service—threads that still run through everything he does today.


The Waco Experience: An American Story
When Scott and Christine made the move official, he asked himself one question:
How do I want to show up in Waco?”
The answer came quickly: He wanted to tell stories that matter.
On October 5, 2024, The Waco Experience:
An American Story released its first episode—a radio show and podcast highlighting leaders in business, government, and nonprofits across the Greater Waco area. Scott’s belief is simple but powerful:
“Waco is doing a pretty good job. And if we tell our stories well, maybe we can inspire other communities too.”

It’s not just a podcast. It’s a platform. A bridge.
A weekly reminder that behind every organization, every initiative, every headline, there’s a human story worth hearing.

Finding Community in Crisis

Like the floods in Kerr County this past July.
Scott and Christine walked into church that Sunday knowing they’d meet someone who had lost something—or someone—to the devastation.
It started with their pastor.
Soon after, friends gathered donations and prepared to drive supplies to Kerr County. Scott picked up diapers to contribute but took a wrong turn following Google Maps. He ended up at North Crest RV Park instead.
A misdirection—but not a mistake.
The park owner listened to what he was doing, reached into her own pocket, and handed him a $100 bill.
No hesitation. No questions. Just heart.
Scott later interviewed her for his show. Her story, he says, is a picture of what community really looks like—people who don’t just live together, but lift one another.
Rooted in Waco, Connected to the World
Scott and Christine have three adult children still living in Oregon. Christine hosts “Aspects of Aging,” a video podcast that features unscripted conversations with experts about aging well. Together, they’ve written books, built businesses, and traveled the country.

But here in Waco, they’ve found something deeper:
A network of friends.
A church family at Pleasant Olive Missionary Baptist Church. A business ecosystem that feels collaborative instead of competitive. A community eager to share stories—and listen to them

“I genuinely love helping people feel better, build confidence, and find success in their health journeys,” Chelsea says. “There‟s nothing more rewarding than seeing someone realize just how capable they really are.”
Chelsea has always been drawn to movement. Growing up active, she understood the power of discipline and perseverance—but it wasn‟t until she stepped into a gym as an adult that her true calling became clear. “There‟s just something special about connecting with others who are working to better themselves too,” she explains. “It fills me with joy, pride, and motivation—it‟s truly contagious!”
That contagious energy led her to Anytime Fitness Waco, which first opened its doors in 2019. From day one, Chelsea and her team have made it their mission to create a place where everyone feels welcome, encouraged, and empowered to reach their goals. “Our mission is to help people thrive through a fit and active lifestyle,” she says. “We‟re not just giving access— we‟re giving accountability.”

Outside of the gym, Chelsea‟s life is filled with faith, family, and adventure. Married to her husband, Daniel, she recently celebrated the joy of buying their first home in the heart of Texas. The couple shares their home with their beloved dog and spends free time exploring Waco, planning trips, and connecting with their church family at The Potter‟s House. “I have a strong faith in Christ and believe that He gave us our bodies as a temporary home that we are called to care for,” Chelsea says. “As it says in 1 Corinthians 6:19, our bodies are a temple, and honoring them is part of honoring Him.” That belief shapes the way she leads—not through pressure, but through encouragement, compassion, and grace.


Chelsea’s passion for helping others is rooted in her own experience. Over the past few years, she’s lost 55 pounds—a transformation that reshaped not only her body but her confidence and outlook on life. “Traveling has always been one of my favorite things to do,” she shares. “But for a time, it was a real challenge. My body ached after simple walks, stairs felt nearly impossible, and flying was uncomfortable.” Those struggles became her motivation to change. Through consistency and perseverance, Chelsea regained her strength, confidence, and sense of freedom. “Now, every step feels like progress,” she says. “Beyond the physical improvements, I’ve gained so much mentally and emotionally—pride in my accomplishments, confidence in my body, and gratitude for the resilience I’ve built along the way.” Her story serves as living proof that small, consistent efforts truly add up—and that transformation is possible for anyone willing to take the first step.
Looking ahead, Chelsea hopes to see Waco become a city known not just for its charm, but for its commitment to wellness. “I want to help people break through the barriers that hold them back from living an active life,” she says. “We all get tired, feel selfconscious, or struggle to find motivation—but for Waco to see real change, we have to push past those obstacles and break free from a sedentary lifestyle.” Her dream is clear: to see a stronger, healthier community—one person, one workout, and one victory at a time.

Founded by local owners Tyler and Jordan Martinez, One and Done was built on the idea that waste removal doesn’t have to be complicated. They saw a need for reliable, hassle-free dumpster rentals in Central Texas and decided to create a business that could serve homeowners, contractors, and local businesses with honesty and care. What started as a vision to make cleanouts and construction projects easier has quickly grown into a trusted name in Waco and the surrounding towns.
Jordan, who also serves as the Director of Marketing for Women of Waco, brings her natural gift for building relationships to the business. She has a passion for connecting people and lifting up other small business owners, which shines through in the way One and Done interacts with their customers. When people think of catering, they often picture trays of food and neatly set tables—but for Brittany Miller, it‟s about something much deeper. For her, catering isn‟t just about serving meals; it‟s about serving people. With her business, Catering by Brittany, launched in 2024, she‟s bringing heart, creativity, and faith to every event she touches.
Brittany‟s journey began in the most natural way— through people asking for her help. Friends and acquaintances constantly reached out for advice: how to set up for an event, what food to serve, how to make a space flow, or simply where to start. What began as friendly guidance turned into something bigger. “Brainstorming, planning, and taking that stress away came so naturally to me that I finally thought, maybe this isn‟t just something I‟m good at—maybe this is what I‟m called to do,” she says.
That spirit of service is what gives Catering by Brittany its heartbeat. The word “cater” means to provide food—but it also means to provide what someone needs or desires. “That second definition is the heartbeat of my business,” Brittany explains. “Yes, I cater food—but more importantly, I cater to people. I listen to their vision, their worries, their hopes for the day, and I build everything around that.” Whether she‟s working on a wedding, business event, or community gathering, her goal is to create something that reflects each client‟s story. “I always say, „I cater to more than your menu—I cater to your vision.‟ And I mean that.”
Clients who work with Brittany quickly realize her service goes beyond what most expect. “It‟s about so much more than food,” she says. “I don‟t just drop off trays and call it a day. I help with the entire experience—the flow, the setup, the timeline, the details that no one else thinks about but make all the difference.” She loves blending event coordination and catering because it allows her to see the big picture and make sure every element fits together seamlessly. Her ultimate goal is simple: to let clients actually enjoy their event instead of worrying about it.
Brittany calls Waco, Texas, home and loves the strong sense of community the city offers. “Waco has a way of feeling like home no matter where you are—it‟s a place where people genuinely care about each other,” she says. Her loyal companion, a King Charles Cavalier named Henley, is by her side through it all, even sneaking her way into the occasional photo shoot.
Before starting her business, Brittany spent over a decade as an elementary teacher, including four years living and teaching abroad in China and South Korea. “Teaching taught me organization, communication, and how to meet people where they are—all skills I still use every day,” she says. When she returned to Waco, she transitioned into real estate, where she learned the importance of relationships, attention to detail, and keeping calm when things don‟t go as planned. Faith is at the center of everything she does. “My faith guides the way I work,” she shares. “I pray over my events, over my clients, and over the people who will be gathering around those tables. I see every opportunity as a way to serve with excellence and joy.” For Brittany, success isn‟t measured just by how beautiful a table looks or how delicious a dish tastes—it‟s about the feeling her clients carry home with them. “My hope is that people walk away not only saying, „That was delicious,‟ but also, „That felt special.‟
Looking ahead, Brittany dreams of growing her business in a way that honors God and creates meaningful work for others. She hopes to expand the event coordination side, helping more people design events that are beautiful, organized, and full of heart. “Long term, I just want to keep showing up for people, using the gifts God gave me to make their lives a little easier and their celebrations a little brighter,” she says.
Her ideal client is someone who wants their event to feel meaningful but doesn‟t know where to start—someone who values quality, creativity, and faith in the process. “They want someone who can take their ideas and make them come to life—so they can relax, be present, and enjoy the moment,” Brittany says.

Celebrating 100 Years of Storytelling at Waco Civic Theatre
The Waco Civic Theatre has been a cornerstone of the arts in Central Texas for nearly a century, but if you ask Executive Director Kelly MacGregor, the heart of the theatre has always been its people. “Everyone who comes to see a show is blown away by the level of talent that’s right here in Central Texas,” she says. “We’ve been in our current building since 1958, and yet, I still meet people who say they didn’t even know we existed.” For Kelly, that discovery—watching audiences experience the theatre for the first time—is part of the magic.
The Waco Civic Theatre traces its roots back to 1925, when a group of passionate thespians founded what was then called the Waco Little Theatre. They dreamed of creating a place where the community could come together through a shared love of performance and storytelling. Nearly 100 years later, that vision is thriving. As a nonprofit organization, the theatre’s mission is to provide quality live productions, foster education and participation in all aspects of theatre, and build community pride and ownership in the arts.
Kelly herself is perfectly cast for her role. A graduate with a Bachelor of Fine Arts in Musical Theatre and a Master of Music in Vocal Performance, she understands the technical precision of performance as well as the emotional depth it requires. Before leading Waco Civic Theatre, Kelly and her husband, Jason—a Baylor accounting professor—often combined their unique skill sets to help others share their stories.



“We worked with accounting and EMBA students on their business pitches, helped ministries and nonprofits communicate their message, and taught continuing-education courses for professionals,” she explains. “It’s all about helping people connect.”
For Kelly, that’s exactly what theatre does. “Did you know everyone in the audience of a live play will synchronize heartbeats? Isn’t that wild?” she says with a smile. “A group of strangers can harmonize so completely that their heartbeats link together. That shared experience is unlike any other form of entertainment. The excitement of a live performance is tangible— you can feel the electric crackle of energy between actor and audience. It’s impossible to repeat or replicate.”


She lives in nearby Woodway with Jason, their two gifted children—one of whom is studying math and physics at the University of Toronto—and a lively household that includes three Cornish Rex cats and two Scottish Terriers. “They look like a vintage Christmas card,” she jokes. When she’s not working, Kelly loves to play the cello, make costumes, and bake cheesecakes. She’s also a big fan of mac and cheese and is thrilled with Waco’s ever-expanding food scene.
Kelly’s vision for the future of Waco Civic Theatre is ambitious but full of heart. She dreams of a fully renovated and modernized space—one that is more accessible, with updated dressing rooms, classrooms, and improved lighting and sound.

Major renovations to the roof, stage, lobby, concessions, and restrooms are already underway and expected to be complete by early 2026. “We’ve had incredible support,” she says. “Compared to other building projects in Waco that require staggering budgets, ours can accomplish so much with a reasonable amount of money. We’re used to making magic happen within these walls.”

From our Director of Operations with her powerhouse opera voice, to our Technical Director who can sing, dance, and play multiple instruments, and our Director of Education who welcomes every student with open arms—we are blessed beyond measure.”
Kelly’s passion for storytelling extends beyond the stage. She recalls a funny, slightly reckless story from her college days in Canada, when she and her roommates decided on a whim to hitchhike to Toronto to see their favorite band. “It was a terrible idea—but with three of us, we felt invincible,” she laughs. “We ended up getting rides all the way there, stumbled upon a random carnival in an industrial park, rode the ferris wheel, and eventually met the band. Later, they came to see me perform in my own show—but they drove in their tour bus instead of hitchhiking!”
That sense of adventure, humor, and connection is exactly what Kelly brings to Waco Civic Theatre. Whether it’s a laugh-out-loud comedy, a soul-stirring drama, or a musical that leaves audiences humming as they leave, she and her team strive to create moments that move people. “Anyone in Central Texas who wants to have fun and be moved—that’s who we do this doing our jobs if you leave this place the same per in. Between running a business and raising three kids, most of Michael’s free time is happily spent at youth sports games, exploring the outdoors, or enjoying some good home cooking. “I’m a meat and potatoes kind of guy,” he says with a grin. Like many Central Texans, he loves time outside—hunting, fishing, camping—and cherishes the beauty of God’s creation. The family often visits the Cameron Park Zoo and the Mayborn Museum, soaking in everything Waco has to offer.
Raising the Standard
When asked about his hopes for the future, Michael doesn’t hesitate. “I want to change the standard for outdoor event restrooms. I think every event should have, at a minimum, a restroom trailer. We should leave those plastic portapotties in the past.”

She and her husband, Blake, have been married since 2008 and are raising two boys, ages 10 and 12. While her warmth and confidence shine through in her work, she admits it wasn‟t always easy to put herself out there. “I was a shy middle child,” she says with a laugh. “This article was actually scary to say yes to. My mind often tells me, „You can‟t do that,‟ or „They‟ll laugh at you.‟ But my heart says, „Go for it.‟ If I help just one person, I‟ve done well—one at a time.”
