Unusual Wildlife - The Christmas Elf We are taking a Christmas twist on our wildlife section this month and are taking a look at one of the most important Christmas creatures of all - the Christmas elf. A lot of the literature surrounding Christmas elves is yet to be scientifically confirmed. Elves are very busy people who don't have the time to commit to lengthy scientific research. Let's not forget that they are also magical creatures and that a lot of what is involved in an elf 's life is magical (and science doesn't tend to like magic very much).

These are one of the most important creatures involved in Christmas. Without the help of his elves, Father Christmas would not be able to deliver all of the toys around the world to all of the good boys and girls. So what do we know about elves? Most elves are rather small, with the majority of them being under 4 feet in height. Some elves are believed to be small enough to fit in to the palm of your hand! One of their most defining characteristics is their very pointy ears. Now, there is some belief that the large size of their ears in relation to their head size is beneficial to the elves. Apparently, their large ears can help them localise sounds

This is all very useful to Father Christmas and to the smooth running of Christmas Eve. Father Christmas needs to be made aware straight away if anything is wrong with his sleigh as he can't risk running behind on the most important night of the year. So the belief is that the elves can help to alert him as the night progresses to ensure that any potential errors are avoided.

Elves live in a very cold climate, where there is always snow and ice so they need to be able to stay warm. They do this by wearing warm suits with a white, fluffy trim, thick, pointed boots and a nice warm, pointed hat. The elves live in tiny colourful cottages throughout the North Pole.

Again, scientists are yet to be able to fully study the Christmas elf, but their diet would have to be nutritious enough to be able to sustain their high level of activity and concentration levels.

Everybody knows that elves love to eat sweets and foods covered in sugary syrups; but if they just ate sugary foods then they would not be able to concentrate for long periods of time and their energy levels would constantly be dropping. Therefore, they must also eat a wellbalanced diet like most of us, with lots of fresh vegetables and water.

The lifespan of Christmas Elves is not clearly known, but many say that they live for a very, very long time and that it is the happiness and Christmas belief of children that keeps them alive and well. We must remember to never lose the spirit of Christmas.

The elves come from all different ethnic background to represent all of the children from around the world.

There are many jobs at the North Pole that require the elves. Many work in Father Christmas’s workshop making toys, some take care of the reindeer and others bake cookies.

There are schools in the North Pole for all of the elf children, so some elves are teachers. And then of course there are the elves who work in the postal room. Their role is very important as they need to read all of the letters that the children send to Father Christmas to ensure that nothing and no one is missed.

The conservation status of the Christmas elf is not listed but they are most definitely not an endangered species. Elves are very rarely seen, although you may be lucky enough to spot one in the next few weeks. If you see one, be sure to say hello!

As we approach the end of another year, I can’t help but get a bit reflective. I spent the first 28 years of my life living in Sevenoaks and its beautiful villages. In the later years, I began to set up a house with my husband and we noticed that something was missing from the free magazines and newsletters coming through the door. The concept was great, but the content wasn’t there for us. Coupled with not being able to find any reliable advertising in Sevenoaks for my husband’s company, we began to research and design our own monthly magazine. I wanted something that people would pick up and want to read each month; something bright and clearly printed. I wanted my readers to keep the magazines on their coffee table or desk, rather than just adding to their recycling bin. I wanted - Stress, Anxiety and Depression educated articles and challenging puzzles and I wanted local companies to be able to find local work. I made a few calls to some local companies to see if they would be interested in joining - Child and Adolescent Issues us in advertising in this new magazine, and with a handful of new clients, we released our Giving You - Confidence, Self-Esteem and Exam Success Freedom to first issue in December 2010. It was scary. I had never been self-employed before. I knew that Live the Life You Love.

- Fear, Phobias and Addictions it took a lot of hard work and dedication but I didn’t truly appreciate how much hard work it would actually take. But I am so pleased to be able to say, 7 years down the line, that we Angela Mercer Rapid Transforma�onal Therapy and Clinical Hypnotherapy are still here. Recipe - Braised Red Cabbage Serves 4 - 6

Cleaning Company

A classic recipe for red cabbage braised with apples, this makes a wonderful accompaniment to game and roast meat. It’s worth making a big potful as it reheats very well; try the leftovers in a baked potato with a dollop of crème fraîche and some horseradish.

• a good knob of lard, duck or goose fat, beef dripping or butter • 1 large onion, finely chopped • 1 red cabbage, quartered, cored & shredded

• 2 tbsp dark brown sugar • 3 tbsp cider vinegar • 250ml chicken or vegetable stock • 1 tbsp flour • 4 tbsp creme fraiche • 1 tsp English mustard

Heat the oven to 150°C/Gas 2. Heat the fat in a heavy casserole, then gently sweat the onion for 10 minutes, until softened. Add the red cabbage, sugar, vinegar and stock, season with salt and pepper, cover with the lid and cook in the oven for 1½ hours. Sift the flour and mix with the crème fraîche and mustard powder in a large bowl to a smooth paste. Remove the casserole from the oven, add the apple, then spoon in the crème fraîche mixture, a ladleful at a time. Return it all to the casserole and cook on the hob for 10 minutes over a low heat, stirring regularly to heat the crème fraîche. Check the seasoning. The fresh acidity of the grated apple should come through.
