KATHRYN’'S "NO - ACCIDENTS - IN - THE - UNIVERSE"

Quiche Muffin Surprize

I know it’s a really long name for a recipe, but it proves there are no accidents in the universe! You see, the other day my next door neighbour, Sue, much to my delight, came over with a huge bag of fresh spinach (I love spinach) and I thought to myself, I would like to make something “really good” with all this beautiful viridian of healthiness. I could not find any recipe on the internet that sounded truly scrumptious enough for my liking, so I decided to take my own advice— use your imagination—and create my own special recipe! This is what I did:

FIRST: In a little olive oil, I browned about ½ a purple onion, a couple sticks of celery and about 10 of those small sweet yellow and red

peppers. Then, using the same pan, I added a little more olive oil and a tiny bit of water and cooked the fresh spinach– approximately one of those BIG bags you purchase at the grocery store—just enough to make it wilt, which I had to do a couple of times. (It is amazing how one huge bag of spinach ends up being such a small amount.)

SECOND: I broke 8 eggs into a large mixing bowl and added salt and pepper, ¼ tsp. chili powder, 1 tsp. Italian seasoning, 2 cups cheese, chopped spinach (FIRST, squeeze ALL the liquid out of the spinach – I was actually shocked how much there is in fresh spinach) and the sweet pepper, onion and celery mixture and mix. I then used a ¼ cup measuring cup (which is the perfect amount to fill a muffin cup) and had the perfect amount to fill all 12 of the cups in the muffin tin.

THIRD: I baked these beauties at 375°F for 30 minutes and what came out was a complete and succulent delight.

I can taste the hint of chili powder and the Italian seasoning with the peppers, spinach, and egg—a culinary delight (if I may say so myself). I promptly ate three and I know what I will be heating for breakfast until they are all gone!! I might share a couple with Sue (who also helps edit the magazine at the end of the month); after all, she did give me the spinach and lent me a few eggs, too!! These are sooooo easy and so incredibly, perfectly delicious I have no idea why I never came up with this idea before. Think about it—you could use absolutely any type of vegetables or seasonings of your choice - use your imagination.

Two elderly women were out driving in a large car. Both could barely see over the dashboard. As they were cruising along, they came to an intersection. The stoplight was red but they just went on through. The woman in the passenger seat thought to herself, "I must be losing my mind, I swear we just went through a red light." After a few more minutes they came to another intersection and the light was red again, and again they went right through. This time the woman in the passenger seat was almost sure that the light had been red, but was really concerned that she was mistaken. She was getting nervous and decided to pay very close attention to the road at the next intersection. Sure enough, the light was definitely red and they went right through. She turned to the woman driving and said, "Mildred! Did you know we just ran through three red lights in a row?! You could have killed us!" Mildred turned to her and said, "Oh, am I driving?" 10 •

I Am A... Jicama

“Hola, como estas?” (Spanish, Hello, how are you?) My name is Adrian and I am a Jicama. Not very many people know who I am or where I come from, but I have been around for a very long time in Central America and Mexico. I’m also known as a yam bean, Mexican potato, or Mexican turnip. I have been eaten in Central America for many centuries, and I am now a common commodity all across North America. But, I have heard that some distant relatives of mine have ventured to Southeast Asia, Hawaii, Puerto Rico, the Caribbean and even the Andes Mountains (I did not know it was that hot there!). I am a sweet root, very similar in texture to a turnip with a taste closer to an apple. I taste mildly sweet and I’m crunchy like a crispy water-chestnut. My skin is thick and tough and you do not want to eat my skin or my vines and leaves because they contain an organic toxin called rotenone. Just peel me and you will be alright. I only grow where it is warm and wonderful; I don’t like frost. I am a very happy vine and grow to be 20 feet long or more. My friends in Mexico recognize me as one of the four elements used for “The Festival of the Dead”, celebrated on November 1st. The other foods are sugar cane (from southern Asia), tangerines (from eastern Asia), and peanuts (from Bolivia), so this is not a strictly native festival.

Don’t let me scare you off because I am low in calories but high in a few vital nutrients, I tend to be a bit of a contradiction when it comes to my starch content. I provide one-quarter of what's needed daily in fibre per serving. But not just any fibre – my fibre is infused with oligofructose inulin, which has zero calories and doesn't metabolize in the body. Inulin, a fructan, promotes bone health by enhancing absorption of calcium from other foods, protecting against osteoporosis. such as jicama, lower colon cancer risks in several ways, which include reducing exposure as well as the toxic impact of carcinogens in the gut, and inhibiting the growth and spread of colon cancer to other areas of the body. Scientists concluded that inulin-type fructans may reduce colorectal cancer incidence when given during early stages of cancer development. Last but not least, the most interesting health benefit related to who I am is the inulin, studies have shown, in addition to having a positive impact on colorectal cancer, it can also protect against osteoarthritis. Studies are increasing on me every single day and finally I am no longer being overlooked. Most people use me in salads or prepared as strips, like carrots, but, in Mexico my ivory-coloured flesh is marinated with Mexican lime and then served topped with chili powder. If you cannot find Mexican lime, you can also marinate me in sour orange, to achieve approximately the same flavour—chili powder optional! Listen, I’m easy to get along with and can be chopped, cubed, sliced into fine sticks, raw or cooked. I’m great in stir-frys, salads, slaw, soup, and with other veggies and fruits like oranges, apples, carrots, and onions, as well as meats and seafood. I am your friend and here to help you with some “muy bueno” (very good) recipes because I want you to love me and also I want you to eat healthy!

Spicy Shoe String Jicama Fries 1 large jicama 2 tbsp Olive oil to drizzle Salt, to taste 1 tbsp onion powder 2 tsp cayenne pepper 2 tsp chili powder

Preheat the oven to 400°F. Cut your Jicama similar to shoestring fries. When done, lay your fries onto two large baking trays, drizzle with olive oil and toss together to combine and coat. Season with a generous amount of salt and then evenly season with onion powder, cayenne pepper and chili powder. Toss again to combine and then lay them out, trying hard not to crowd them. Bake in the oven for 15 minutes, turn over and bake another 10-15 minutes or until they reach your doneness preference. Divide onto plates and enjoy as a snack or a side dish!

Aren’t weddings fabulous, fun and fantastic? Just the thought of a wedding brings a tear to my eye; the whole idea of spending the rest of my life with the man I love sometimes is a bit daunting, but it truly is the most wonderful concept, don’t you think? You see, I am the luckiest girl in the world because I have had the opportunity to spend 5 months in Arizona, one of the most beautiful states in the USA. The private park in which I live is an over-55 place and I am most definitely the youngest in the park. What I am getting at is every single day, I watch “older” couples walking or swimming or just sitting on a bench chatting together and they seem as in love as the day they were first wed. Many of these couples have been together 50 years or more! It gives me hope and should give us all hope that there really and truly is love in this world. Like the immortal words of John Lennon – “All we need is love,” or Petula Clark – “What the world needs now is love, sweet love, that’s the only thing there is just too little of.” We are really in a turbulent time in the history of the world and I think it is just too important not to forget that a little kindness, thoughtfulness and love can go a long way and if you are a karma believing person, at all you know is what you give out in your thoughts and actions – you get back. So once the honeymoon is over and you hit a few bumps in the road (you will), just remember, “All you need is love” dat-da-da-da-da, All you need is love dat-da-da-da-da, All you need is love, love. Love is all you need.

But what is love? I think it is a profoundly tender, passionate affection for another person. Love is a force of nature. However much we may want to, we cannot command, demand, or take away love. Love is bigger than you are. You can invite love, but you cannot dictate how, when, and where love expresses itself. The wedding venue can be costly, but you can save a lot of money by getting married on a day other than Saturday and by finding a place outside the city limits.

Reception Food and Drink Menu - The best way to

save on food, drinks and desserts for your wedding is to provide your own. Enlist your friends and family to help, and make sure that you don’t overextend yourself with complicated fare. If you don’t want to make your own, consider serving heavy appetizers instead of a sit-down meal.

Wedding Photographer- Consider ways to save, like hiring someone that’s just getting started in their career or someone who shoots weddings on the side. Six to Seven Months Before

• Shop for bridesmaids dresses. Just like the bridal dress, you will need time for fittings. • Meet with the officiate. Plan out the ceremony, what everyone is going to say and confirm that you have all the official documents for the wedding. • Order you invitations. There are countless options when it comes to invitations. They can also be very expensive. Do your research before deciding who to order them through. • Arrange transportation. Consider limos, buses and town cars. • Start planning a honeymoon if you plan to take one right after the wedding. Make sure that your passports are up-to-date. • Reserve structural and electrical necessities. • Book portable toilets for outdoor events, extra chairs if you need them, tents, an altar, lighting components, etc. • Book a florist. Florists can serve multiple clients on one day, so make sure to find a florist now and book your date. • Start composing a timeline. Do up a schedule of how you would like everything to play out that day like cake cutting, first dance, late night snack, etc.

Nine to Twelve Months Before • Start a wedding folder, box or binder. Something you can keep all your ideas and inspiration in. Magazines and Pinterest are a perfect place to start. • Work out your budget. • Book your officiate. • Pick your wedding party • Start the guest list. Make a list to use throughout your planning process, make sure to include contact info, RSVP s, gifts, and any other relevant information in your list. (Want to keep costs low? It may be tough to do, but the best way to save money is to reduce your guest list.) • Reserve your date and venues. Do you want to have separate locations for the ceremony and the reception? If so, factor in travel time between the two places. • Research photographers, caterers, florists and bands/DJ’s (there are a few great suggestions in this issue!) • Throw an engagement party, if you wish. Make sure to only invite people that are also going to be invited to the wedding.

• Schedule hair and makeup artists. Make a few appointments with local salons to test them out. Take a look at their portfolios and it wouldn't hurt to snap photos at each trial so you can compare results. • Send your guest list to the host of your shower. Tell her who you would like at the shower and let her send out the invitations. • Book the rehearsal and rehearsal-dinner Venues. Negotiate the cost and the menu. Take into consideration the day-after brunch for guests, and the gift opening. • Check on the wedding invitations. Are they getting close to being done? Did you get a sample of one before they were ALL printed? • Select and order the cake. Some bakers require a long lead-time. Remember to book some taste tests. • Purchase wedding shoes and start dress fittings. Bring the shoes along to your first fitting so the tailor can choose the appropriate length for your gown. • Choose your music. What should be playing during the ceremony? During dinner? To kick off the dancing? Keep a running list of what you want—and do not want—played.

• Purchase a dress. If you are ordering a dress, it’s fairly standard for it to take 3 months to come in. Plus, you’ll need to schedule time for fittings. Veil shopping can be postponed. • Book the entertainment. Attend events of potential entertainment to see if you will like them before you hire them. • Hire the photographer and the videographer. • Meet caterers. If your wedding venue doesn’t offer its own catering service, look for one right away. Booking them this far just takes one less worry off your plate. • Reserve a block of hotel rooms for out-of-town guests. Pick hotels at different price points close to the reception venue. See if the hotels will give you a discount for booking multiple rooms. • Launch a wedding website or blog. Create your personal page through a free provider – there are so many online. Make sure to include the date of the wedding, travel information, and accommodations. Then send the link to everyone you are inviting.

Three Months Before • Purchase the rings. This will give you time for resizing and engraving if you desire. • Finalize the menu and flowers. You’ll want to wait until now to see what will be available, since both food and flowers can change with the season. • Order favors. Wedding favors are small take-home tokens that will help your guests celebrate and cherish your special day. • Finalize speeches and make a list of the people giving toasts. What would you like your speech to say? How do you want to thank everyone for supporting you on this special day? Which loved ones would you like to have speak at the reception? • Purchase your undergarments. Want to wear something special for the night of the wedding? Start thinking about that now. • Schedule another dress fitting. • Finalize the order of events for the ceremony and the reception. • Print menu cards and programs. You can easily create these on your computer at home. You could also get these designed to match your invitations. • Send your event schedule to the vendors. Giving them a first draft now allows time for changes and feedback from your vendors.

Two Months Before • Send out the invitations. Four weeks’ notice is best for simple, in-town weddings. If it is going to be an out-of-town wedding, then at least six weeks’ notice is best. Make the RSVP cut-off at three weeks after the postmark date. • Touch base again with all the vendors. • Meet with the photographer. Discuss specific shots and ideas, and walk through the locations and start planning now. • Review the playlist with the band or DJ. You probably don‘t want to dictate every single song played, but you should come prepared with a list of songs to play and NOT play. • Submit a newspaper-wedding announcement if you wish to do so. • Enjoy a bachelorette party. Arranging a night out with your girlfriends generally is the responsibility of the maid of honor. But if she hasn’t mentioned one to you by now, ask her about it and get a date settled that works for you. Start getting excited! This pre-wedding celebration is just about YOU (...and him)!

One Month Before • Write vows, if necessary. • Get your hair cut and coloured, if desired. • Finalize RSVPs. Phone people who have not yet responded. • Get your marriage license. If you are changing your name, remember to change it on your Canadian passport, social insurance number card, with the Canada Revenue Agency, your health card and your driver's license. • Mail the rehearsal-dinner invitations or send the emails. • Purchase bridesmaids’ gifts. There are so many great ideas online of the perfect gift to remind your bridesmaids how grateful you are. • Visit the dressmaker for your last dress fitting. For peace of mind, you may want to also schedule a fitting the week of your wedding. You can always cancel the appointment closer to the date if you feel it is not needed. • Stock the bar. Now that you have a firm head count, you can stock the bar accordingly. • Send out as many final payments as you can. • Confirm times for hair and makeup and all vendors. • E-mail and print directions for drivers of transport vehicles. This gives the chauffeurs ample time to navigate a route. • Assign seating. Draw out table shapes on a layout of the room to help plan place settings. Write the names of female guests with pink and the names of male guests with blue. Sticky notes are great, as you can move people about without re-sketching the entire setting.

Week of the Wedding • Pick up your dress. Do a final fitting JUST to make sure. • Book a spa treatment. Make an appointment for a manicure and a pedicure the day before the wedding. (You might want to get a relaxing massage, too.) • Reconfirm arrival times with your wedding party, parents and vendors. • Delegate small wedding-day tasks. • Choose someone to be in charge of gifts (especially the enveloped sort), someone to hand out tips, and someone to be the point person for each vendor. • Send a timeline to the bridal party. Include every member’s contact information, along with the people you’ve asked to deal with the vendors and other things. • Check in one last time with the photographer. Make sure you have all your locations and times set up and agreed on. • Set aside cheques for the vendors. And put tips in envelopes to be handed out at the event. • Send the final guest list to the caterer and all venues hosting your wedding-related events. Typically, companies close their lists 72 hours in advance. • Break in your shoes. On March 17, 2007 I got married to my best friend. We tried to keep costs low because we were essentially paying for our wedding ourselves. I bought a dress off the rack, my bridesmaid dresses were standard dresses from a store in the mall and they were on sale (score!). My flowers were done from a family friend, we had minimal decorations, and our wedding favours were shot glasses (classy!).

What we did splurge on was the reception venue (the Strathmore Travelodge!), food (the Strathmore Station!) and a DJ. For the record, when the topic of our wedding comes up, people still mention how delicious the food was!! Now, when I got married, I was not part of the Newsy Team… in fact, the Newsy Neighbour wasn’t even in publication yet! Also, 9 years ago was just the start of Facebook and most of the people I knew weren’t even on Facebook yet. The DJ we used was recommended to us by a random person at Extra Foods (see? That’s how long ago it was – Extra Foods was still in Strathmore!) and, incidentally, trusting a random person at a grocery store should have been a red flag.

“Will you Marry me?”

Our DJ cancelled the week of our wedding. The. Week. Of. (Also, I don’t believe he’s in business anymore!). And since there was no emergency Facebook post asking, “WHO DO I USE?” I was left stranded. So I called my friend and asked if her husband would DJ our wedding… with his iPod. And I mean, an old school iPod. Like iPod version 1. The huge one. Now, there are a lot of things about our wedding that I would change if I were to do it now. For example, I wish I could change my dress. And my makeup. And definitely one of my bridesmaids. Maybe 2. Thankfully, I’m still happy with the man I chose!

But I really, truly wish our iPod Reception Dance was not actually a memory about our wedding. Even with current technology, the idea of using a family friend with downloaded music makes me cringe. There were spaces between each song. People kept requesting songs, and… well… some of the songs were not good. FYI, Snoop Dogg’s “Gin and Juice” may seem like a good idea, but it shuts down a dance floor… a DJ would know this. An iPod downloader… not so much.

a song would bring everyone onto the dance floor, but honestly, sometimes songs just don’t. And they have a plethora of songs. I’ve been to a lot of weddings, and I can honestly say that the iPod dance we had at our wedding was disappointing. My sister-in-law got married a few years ago and I overheard her say to my mother -in-law that she wanted a DJ, because she didn’t want her dance to “be like Denise & Ryan’s wedding”. Ouch. But valid. Just do your research and make sure you give your money to a reputable DJ… not someone with no credentials who is buying 60 bags of Ichiban at the grocery store. Aleesha’s wedding was another story. People seemed to be dancing ALL night! Aleesha requested that the DJ not play any of the funny traditional wedding music like the Chicken Dance, and he didn’t… much to my dismay. With a DJ, you still have some control over the music that is played. I remember Aleesha’s mom (Kathryn) constantly going up and requesting Led-Zepplin songs to the DJ; most DJs are happy to take song requests to please the wedding attendees, which is fun, but they also know what songs don’t work so some of the songs that Kathryn requested were not played; I can’t imagine 80s heavy rock would have went over as well as, say, a great two-stepping song at a wedding. DESTINATION WEDDINGS NOT FOR EVERYONE!

My friend and her partner have been tossing around the concept of getting married. This would be a second marriage for both of them, hence the “tossing around” vs “planning the epic surprise proposal” complete with embarrassing Jumbotron incidents and flash mobs. While I’m excited that she’s met someone with whom she’d like to commit to “marriage, round two,” my excitement diminished a tad when the phrase “destination wedding” followed the announcement that they might get married. Here’s where my friend and I differ a whole bunch. She’s a traveler of epic proportions – she has no kids, has been single for many years and has a career that helpfully combines “maximum time off” flexibility with “maximum income to travel” flexibility. I actually secretly hate her as a result. She’s been to almost every continent and usually manages to devote one of her holidays each year to a diving excursion at some exotic, ocean-side location. I’m not even sure why I’m friends with her some days, actually. Particularly since I have to babysit her house while she’s gone – hello, insult? Meet injury. Although in my dreams I’m a traveler of epic proportions, too - except I don’t dive, really don’t like beaches and am ambivalent to resorts and oceans. But a cool sightseeing excursion to castles in Scotland or the Taj Mahal in India would be a dream trip for me (I’m available, should anyone need a budget-constrained companion for

weddings A Wedding Story "I Boo" White satin and lace, pale blush hues, chic table settings and soft, angelic music... Everything you imagined a wedding to be, is exactly what this wedding was not. It was, however, unique, unconventional and superbly sought out by the couple's friends and family. Jeff and Heather Busch, after being happily engaged for a couple of years, decided this past year that it was time to dive in and tie the knot. Being the unorthodox souls that they are, they picked up the calendar, noted that Halloween 2015 was on a Saturday and decided that was it - that was the date. With only 90 days until the ceremony, the couple enlisted close friends and family to help with all of the finer details. Brenda Stuart-Berry, designed and contrived Heather's wedding gown; A good friend, Courtney Herasemulk, offered up her make-up talents to the bridal party. Pony, the Strathmore Pawn Shop owner, decked-out a station wagon, complete with a "Just Married" sign on the back that delivered the couple to their destination; one friend made the wine and labels, plus was the wedding photographer, Jeffs cousin Janette made all the boutonnieres, bouquets, garter, veil and trimmed Heather and Quinlyns hats, and 3 very special friends prepared the entire menu. Oh, if we could all only be so blessed to have such love and support. As the day grew closer, the couple realized that they had unwittingly created

so much buzz and piqued so much interest around their wedding that they actually had to change their venue last minute in order to host all of their guests. Heather, dressed in a deep purple gown with black lace and knee high leather boots, walked down the aisle to "You are the One," by Shania Twain. Nope, just kidding! The soon-to-be Mrs. Busch proudly strutted her stuff down the corridor to the one and only, Alice Cooper: Hello Hooray. She also had a whip in-hand, cracking it the entire way down, to greet her husband. Jeff was cloaked in an all black suit with leather pants, a purple bow tie, a top hat and a cane. "This was the best day of our lives," says the couple, "We wanted to do something memorable; something that showed off our unorthodox personalities and would have everyone who attended the wedding looking back and saying, 'man that was fun.' The way we picked the date, the decorations - the entire ordeal - it was so insanely thrilling." All of the reception decorations and materials were purchased locally from the Strathmore Bidding War site and the Dollar Store - most of which were then handcrafted by an incredibly talented friend of the newlywed's. Once commenced, wedding guests could be found tapping their toes and singing along to musical talents such as Motley Crue, Van Halen, Pink Floyd and, of course, Alice Cooper. In fact, the tunes were so catchy and the affair was so mind-blowing that even Jeff's 83 year old aunt was up and enjoying the ordeal. Change tends to be an uncomfortable experience. I have at times in life tried to ignore or dismiss what I was experiencing (the situation, the discomfort, the mind bending, emotion jerking, habit reforming lessons that have tried to change the look of my world) and go back to what I know and what is comfortable. Sometimes that has worked for me. I think. But, like the caterpillar, would I even know where the change could have taken me if I could have accepted, or even embraced, the changes?

Leave Me Alone -

Other times, life wouldn't let me choose to stay the same. Like the larva that has no choice but to hatch, circumstances and choices forced a change that came whether I wanted it to or not. I am sure you have experienced that sort of life change for yourself.

Has this ever happened to you? Have you ever gone through a difficult time in your life, only to find that it has acted as a catalyst in your life? An experience that opens your eyes afresh to the world, your life, relationships, to yourself? One where not only does the world look different, but you are different?

The best kind of life-altering experiences that I have experienced are the ones where I have found the courage to allow them to work upon me. When I become aware of changes happening, be it new thoughts or experiences, or the consequences of choices I have made, or old habits needing changing, or events that shake me right down to my roots - if I can surrender myself to the experience I am learning that I will see the world with new eyes, and perhaps be able to see farther, understand more, than I ever have before.

I Like Being A Caterpillar

I was recently reading about the life of the monarch butterfly. What an amazing creature. Every year, the monarch butterfly travels thousands of miles to lay an egg on a milkweed somewhere in the midwest of Canada or the US. Out of this egg comes a larva that feeds happily on the milkweed, becomes a fat and juicy and oh so comfortable caterpillar. Then it finds a stem or leaf and begins to transform itself into a chrysalis, and for 10 days goes through one of the most remarkable events in the natural world metamorphosis into a butterfly. A fat, juicy caterpillar that no one wants to eat, through its own surrender to its divine nature, becomes one of the world’s most remarkable migratory creatures. But what if the caterpillar really liked being a caterpillar? What if the caterpillar ignored its genetic code to spin its silky hide-away? Imagine a caterpillar that decides it likes being a caterpillar, and decides to just stay all fat and caterpillar-y on a juicy green leaf. How would this story end? We all know - while the caterpillar may enjoy the rest of its life filling its belly on the milky juices of leaves in the comfort of the life he knows, there will be so much he misses. He will never experience the joy of spreading newly-formed wings to take to the air with freedom, he will never be able to carry his legacy to the next generation of monarchs, and the world will never be witness to the gracious beauty that he exhibits as is his divine nature. When the caterpillar inevitably reaches the end of its lifespan, it will die. And what will be the legacy he has left in his wake?

Pay attention to the butterflies. Yoga teaches us to live moment to moment, and that is always the best way to get through hard times, to acknowledge miracles in each moment. Our tradition is decorating eggs in many colours and going on that HUGE egg hunt… Somehow, Peter Cottontail (aka, our human) usually manages to hide all different kinds of eggs every year. This year, we chose to have Peter (aka, our human) try something a little different. We left a list of things we may like to receive in order to continue on our quest to be good diabetics. It worked out really well. We were able to still have the excitement of the hunt, but we get to enjoy the health benefits of having healthy offerings. We had family gatherings a plenty, some with turkey, some with ham, and some with an Asian influence. Any holiday is a GREAT excuse for food, food, and more food!! And, of course, we ate decent portions and got our human out for walks after the big meals. We avoided the sugary desserts and replaced them with healthy treats. We did a great job, and feel like we are happier and healthier because of it. WOW, a great year so far… and we forge ahead to spring. With warmer weather coming, we’re getting ready to get the later seeds started. Our tomato plants are doing well, and we’re ready to start our corn and gladiolas inside – we are ready for summer! Homeopathy Awareness April is Homeopathy Awareness Month. I find that most people know very little about homeopathy. They often confuse it with naturopathy or herbalism. Homeopathy is very holistic, and the medicine is derived from natural sources, some of which are plant based. However, it is a very distinct system of medicine, which stands alone. There are three main areas that set homeopathic medicine apart from other forms of healing arts. The most unique characteristic of homeopathy is that it follows the Law of Similars. This law states “a disease can be cured by a substance if that substance can cause, in a healthy person, symptoms similar to those of the disease.” The root of the word homeopathy actually comes from, homeo meaning similar, and pathos meaning suffering. This is opposite to what most systems of medicine follow. Today we usually reach for medications known as antibiotics, antiemetics, antipyretics, antihistamines, just to name a few. We have entire pharmacies full of “anti” medications, which have wonderful effects of suppressing unwanted, uncomfortable symptoms. However, working in an antagonistic fashion means that these “anti” medications work in an opposing direction of the bodies innate path. Thank goodness for antidiarrheal pills! However, though they may bring immediate relief in uncomfortable situations, they do not always address the cause, root or imbalance of your complaints. The symptom is suppressed, but the cause may remain. Homeopathic medicines, also called remedies, are derived from plant, mineral and animal substances. Because this concept of making natural, non-toxic medication is so foreign to most of us, let me give some examples. First, we have the remedy Allium cepa (red onion) used for symptoms of hay fever. Allergies with the symptoms of watery acrid nasal discharge, watering eyes, tickling in the throat are the characteristic hay fever symptoms that Allium cepa would be ideal for. This can be remembered by the law of similars; bear in mind what happens to us when we chop a red onion. Typically, our eyes water, our nose runs and we may experience a tickle in the throat. Then there’s Calcarea phosphoricum (calcium oyster shell) from the mineral kingdom used for symptoms of teething, growth and development..... Every time I drive through Langdon I notice yet another new business – how exciting! I love new places to explore. Come Together to Build a Healthier Community Collaboration, the act of working together for a common purpose, has proved to be very successful for the hamlet of Langdon. Representatives from more than ten groups and associations are gaining momentum for community projects through a movement called the Langdon Community Collaborative. The Langdon Community Collaborative (LCC) has a mission to bring together all Langdon community groups to identify, prioritize, and coordinate the development of community projects to meet the current and future recreational and cultural needs of Langdon. LCC members meet on a monthly basis to share ideas, coordinate fundraising projects, and provide input on future amenities.

“It is an exciting time to be a Langdon resident,” says Lisa Baker, Facilitator of the Langdon Community Collaborative. “Our local groups have come together to build a healthy community, assisting diverse groups of all ages and abilities. We have found common ground in this vision and are helping each other be successful. At the same time we are streamlining our individual group projects and fundraising efforts to bring programming to this hamlet in a coordinated way. In the next couple of months the LCC will be launching a Langdon clothing and accessory line, with proceeds from the sales directly benefiting Langdon projects. Hello Newsy Neighbours! We are so happy to have seen a fair amount of sun this early in the spring. It warms our hearts and our minds to see shoots of green and little flowers poking through the cold earth and melting snow. We have been travelling around the constituency researching various infrastructure issues, including Highways and flood mitigation infrastructure. We do not want to lose any more precious lives to roads when cheap fixes are available. We are asking our government to look closely at our constituency as we move towards the release of the provincial budget. Many of our roads need some love so we just want to understand where we sit in the list of priorities for infrastructure.

The students were very happy to find out that they are my boss, as is every Albertan when it comes to issues that relate to the running of the province. We explained that as a Provincial representative, we try and stay out of municipal issues and other elected boards as we believe in and encourage local decision making. The residents of Alberta have every right to question their elected representatives and should indeed take every opportunity to come into our offices and discuss the issues in their cities and municipalities. In fact, we love it when you come talk to us. Stopping in and talking to us is much more effective than some of the more negative forms of communication such as Facebook and Twitter. Social media is fantastic for many things, but serious issues should be discussed in a more formal and productive manner in our opinion. Can you really explore a serious topic in 140 characters or less? We left them with one big message: study the issues, ask questions, and VOTE! Talking to students is one of the true joys of my job. As always, we love to hear from you.

Who knew Langdon School was led by an alien?! Principal Dave Smith showed his true colours as they hosted Langdon Idol on March 23. MCed by the Men in Black, the school had to show the Galactic Community that they had talent to spare, and show them they did! I had the honour of serving as a judge along with Bev LaPeare, Rocky View Schools Trustee, and Carey Unger, aka “Robbie” of Robbie and the Rockets. What a great time. The sheer talent shown by the students was amazing. For the dedicated staff and students of Langdon School, this is truly a labour of love. From some of our discussions with the students, they were working hard on putting the show together until 10 pm the night before. We want to thank all the students, both junior and senior, for their immense courage and tremendous talent. We were so proud to participate. Many thanks to Learning Resource Director Darlene Neufeld for the invitation. We were also invited into the grade 6-W class with Mr. Weigum (one of the “Men in Black” and a teller of truly terrible jokes). He is studying politics and the political systems with his students presently and invited us to come and chat about government, being a member of the opposition and what this privilege

Jock Fool me once, shame on you; fool me twice, shame on me. Fool me three times and I will stop making predictions on the Calgary Flames! For the second straight season, I have been burned by making fearless projections on our local hockey heroes. Two years ago, I proclaimed the Flames had “no chance” to make the playoffs after captain Mark Giordano went down with the season ending bicep injury. This season, Newsy Neighbour readers may remember my column where I said the Flames would not be this season’s Colorado Avalanche. They would not take a step back. They would be a playoff team for a second straight season. Okay, so I was wrong!

Important Off Season for the Flames!

Schneider admits he was “shocked” when he was traded at the draft to the New Jersey Devils for a first round pick. That 9th overall pick turned out to be Bo Horvat.

Why is it important for the Flames to sign Johnny Hockey before July 1st?

While the Flames can’t afford to part with a first round pick for the second straight year, the organization will have to get creative to find a solution to this glaring problem.

As former NHL general manager Craig Button continues to remind me, there is no such thing a quick rebuild. “When it happens, it’ll be the first time it happens,” says the TSN hockey analyst.

The free agent market is very slim, unless you are in love with James Reimer or Cam Ward. 26 year old Frederick Anderson is a restricted free agent with the Anaheim Ducks. He would be number one on my list for Calgary. The Ducks have committed to John Gibson as their number one and Anderson may not be content with a backup role.

So as the regular season winds down for the Calgary Flames, let’s focus on the three top off season priorities for this organization.

The only thing that is clear is the Flames can’t go into another season with Jonas Hiller and Karri Ramo on the payroll!

1) Find a legitimate number one goalie! Obviously, easier said than done but it’s not impossible. Not many of the so-called experts had Cory Schneider in play at the 2013 NHL draft. He was the goaltender of the future for the Van-

So why is it important for the Flames to sign this player before July 1st? It’s simple. The Flames can’t afford to have another organization set their payroll structure. Personally, I am convinced if Gaudreau becomes a free agent on July 1st, there will be more than one team that contemplates an offer sheet. An offer sheet that would likely include huge up front money. In a difficult economy, this could leave the organization in a tight cash strapped situation. The Colorado Avalanche were not impressed with the Flames when they front loaded a deal for Ryan O’Reilly and what comes around, goes around.

In the meantime, I think I will just hold off making any more predictions on the Calgary Flames.

3) Sign Mark Jankowski before August 15th. In the 2012 NHL draft, Flames then GM Jay Feaster went off the board and selected Jankowski with the 21st overall pick. Feaster then predicted “Jankowski will be viewed (over time) as the best player in the draft.” While Flame fans are hoping he’s correct, it really was one of the stupidest comments ever made by an over excited GM on the draft floor. Fast forward four years and Jankowski is now a 21 year old prospect. He has won an NCAA championship and hoping for a second with Providence. “I really like the player,” says Craig Button. “He has size (6’ 3”) and the skating ability to play in the NHL. Time will tell just how good of a prospect he is, but I think he will be a good NHL center.” The Flames new management team of Brain Burke and Brad Treliving still believe Jankowski is a solid prospect but he must be signed by August 15th or he will become an unrestricted free agent. If he is not signed by the organization, The Flames will receive a compensatory 2nd round pick in 2016. I think I would rather have the player!

Always Do Your Homework

As you settle on a particular mechanic, you’ll want to ask yourself the following questions: - What warranties does the shop offer? Most shops offer a warranty. Always ask to see the warranty prior to having any work done. - Does the shop mandate the use of aftermarket or used parts? Such parts may not match up correctly and they can also void your factory warranty. A good shop will pay for and use original equipment manufacturer (OEM) parts to prevent warranty issues. - Are the prices, policies and guarantees posted where they can be clearly seen? - Is the shop itself clean and well-organized? A well-run shop takes pride in maintaining a professional appearance. - Are the technicians trained and certified? Look for signs of certification from the National Institute for Automotive Service Excellence (ASE) as well as the Inter-Industry ASE Conference on Auto Collision Repair (I-CAR). Here in Strathmore our town representatives are working hard behind the scenes with the “Strathmore Downtown Revitalization Committee” trying to draw you – the residents of this fine community, to our downtown core. Many people only see our community as all the shopping centers and restaurants that line the Trans-Canada Highway, not realizing all the incredibly unusual and unique stores in our downtown core. There should be a HUGE SIGN on the highway saying, “You don’t know what you’re missing – COME DOWNTOWN!!” Last year the committee constructed those comfortable portable islands for the downtown shoppers to enjoy, a place to sit and visit or enjoy lunch sitting in the sunshine. This year they are working with Huxted Enterprises to facilitate a new composting project in the downtown area. They plan on experimenting with having a park and garden to test the growth of seeds and trees using a unique formula of compost where vegetation will actually grow at a quicker rate than usual.

TwoShine County

TwoShine Country makes country music their own way, and while that means not necessarily following the rules, it’s a sound that has quickly won over radio stations and fans alike. The Calgary, Alberta-based duo consisting of singer/songwriters Daron Schofield and Dennis Hann burst onto the scene in 2014 with their first single “Make It With You,” followed a few months later by “Whole Lotta Love.” Both tracks just missed cracking Billboard’s Top 50 Canadian Country chart, an impressive feat for a completely independent, unsigned act. Those first two demos ended up being their first two singles, re-recorded at two-time CCMA Recording Studio of the Year, MCC Recording Studios. It was all made real in 2014 when TwoShine County made its first public appearances at the Canadian Country Music Awards, and a coast-to-coast radio station tour. “We were a little intimidated going to the CCMAs,” Schofield says. “But it seemed like everyone we met there had heard about us. That was a real eye-opener, having had experience in the rock world where there’s so much competition. Being part of the country scene in Canada really does feel like being part of a family.” TwoShine County returned to the CCMAs in 2015, taking part in two songwriter showcases, as plans for a full-length release will soon be finalized for 2016. In the meantime, the duo continues to expand their fan base with the personal touch that has already endeared them to so many. Wildflower In the varied landscape that is today’s Canadian music scene, Wildflower stands out bringing a unique blend of folk-roots & rock to their own brand of country music. As with most musical journeys, Wildflower started with a song. A little bit of everything Gaylene Smith has been a waitress, tree planter, canoeing instructor, cemetery caretaker, fund development officer, communications officer, marketing coordinator, and currently is a career coach, and first aid instructor on the side. She still isn’t sure what she wants to be when she grows up other than healthy, wealthy and wise, although right now she is willing to take just one of the three. Interviewing the Interviewer I used to get very stressed before going to a job interview. I’d try to learn everything about the company. I’d cram like a freshman desperate to learn a term’s worth of physics formulas in one short day. The night before, I never slept, but would lie awake in bed trying to come up with all possible questions I was going to be asked and worry about what answers the interviewers would want to hear. Walking into the interview room, I most likely looked like a deer in headlights, complete with big bags under my eyes from lack of sleep. “Are they going to like me?” It was like going back to the awkward years of junior high. What if they didn’t like my outfit, my jokes, me? The butterflies in my stomach had metamorphosed into pterodactyls and the fear of shaking hands with sweaty, wet palms left my entire body shaking like a poorly balanced washer. And that was before I entered the building. During the interview, my over preparation most likely resulted in me giving off a creepy stocker vibe. “I see that the company’s CEO enjoys chess, volunteering with the food bank, and has a tendency to wear Armani suits with sky blue coloured ties that enhance the colour of his eyes.” I was so focused on giving the answers I thought they wanted to hear that they ended up sounded over rehearsed (they were) and full of more crap than the only litter box in the crazy cat lady’s house. Suffice it to say, the impression I made stank as bad as the above mention kitty washroom. Now, miracle of all miracles, I did manage to land a few jobs over the years. Some of the jobs were great opportunities… others, not so much. In fact, one job I landed ended up as two years of the most stressful, agonizing hell I have ever endured. Now having the ability to look back on it, I want to smack my younger self on the head for not seeing the warning signs clearly given off during the interview. I was so focused on making them like me I forgot how important it was that I like them. I ignored the fact that the HR Manager and the Communications Manager refused

to make eye contact with each other and my future boss had the warmth of an iceberg, in the middle of Antarctica, during a blizzard, in the dead of the night. Ya, she wasn’t the warm and fuzzy type. Riding up the elevator on my first morning a new co-worker asked me what department I was going to be working in. I kid you not, she said “Oh my gosh, I’m so sorry.” I should have pushed the down button and exited the building in a quick and efficient manner, never to return. But return I did, for twenty four long, long months. Finally I decided going through a few rounds of interviews had to be less stressful than punching in my time card day after day working for one of Satan’s minions. (I still strongly believe this woman took her management training with agents for the KGB and, while I have no hard proof of this, I do think she has water boarding listed on her skills section of her resume.) Now every opportunity is a chance to learn and boy did I learn from that job and manager. I learned what it was I valued in a work place and what type of manager best suits my needs as an employee. I learned an entire new vocabulary of four letter words from my coworkers. I found out how important it is for me to have a job that allows me to be part of a team with a common goal. (Other than how to get away with murdering your supervisor - although we did have an elaborate and creative plan for hiding the body that required several large jars of peanut butter.) I refuse to work in an environment where kissing arse is not only expected but rewarded and that following orders is more important that giving your best effort. I also learned to change my mind set when it comes down to interviews. Interviews no longer make nervous at all. I still prepare for them, but not with the same level of desperation that I did in the past. I still make a list of questions I think I will be asked and prepare my answers ahead of time; but now I put more energy coming up with a list of questions I want to ask. “What is your management style?” “Do you encourage your staff members to develop new skills outside of the limits of their job descriptions?” “How would you describe the energy in your department?” “Have you ever worked for a Russian enforcement agency?” I don’t worry if they will like me, I worry will I like them? Can I see myself working with these people 40 hours a week? I’m going to be spending more time with them than my husband, so I better be able to be myself at work. For me, the litmus test of how well an interview went was how often everyone laughed. Trust me when I say, you need a sense of humour to be able to put up with me Monday to Friday, week after week. I never expect my co-workers to become my bff’s, but it sure is wonderful when that happens. So my advice, for what it’s worth, is never forget that interviews go both ways. Take the time to evaluate the people across the table from you. Had I done that, I would have been saved two years filled with yelling and anger (from the manager) and ulcers and gray hair for me.

Kimberly’s donation provided her with a tax receipt, attracted interest from the community in her artwork, and most importantly, brought new friends into her life. Kimberly has prepared unique and beautiful drawings for the following Hope Bridges auctions, and since 2014’s event, she has become involved as both a volunteer and participant in Hope Bridges workshops - all because she stepped into something new.

Love is in the Air… Everywhere! “Paint a pretty smile, each day lovin, is a blessing, never let it fade away. It’s all about love.” ~ Earth, Wind & Fire, It’s All About Love Summer is on its way and with that comes weddings to plan and ceremonies to attend. It got me thinking, “What is love?” It’s a word we use a lot in regards to many things. I love my children. I love peanut butter (especially with chocolate!). I love helping people bring ideas to life. I love lunch dates with friends. I love… well, you get the idea. If you stop and think about it, chances are pretty good that you have a long ‘love’ list as well, but unless you are about to be married (congratulations if you are!), you are probably not hosting a ‘love event’ to celebrate. In our society, the word Love is used to describe a wide range of emotions and not just romantic love. For example, the love we have for our life partner is different than the love we have for our morning cup of tea or the love we have for helping our neighbours. While we have one word to describe the different forms of love that we experience, the Ancient Greeks had seven: Eros (passion & desire between two people), Philia (deep friendship), Storge (love between parents and their children), Ludus (playful love), Agape (selfless love for everyone), Pragma (longstanding love, such as between long-married couples) and Philautia (love for self). Philautia caught my attention and I realized that I rarely hear people expressing that type of love, although it is just as important as the others. Deborah Khoshaba, Psy. D says, “When we act in ways that expand self-love in us, we begin to accept much better our weaknesses as well as our strengths, have less need to

My son has a never ending appetite! I’m sure it’s due to his growth at 15. Instead of always reaching for the quick fix of cereal or popcorn, I felt it was time to give him the basics required to build many dishes. He told me on one of the shows he watches that they eat spaghetti tacos…I thought that’s odd but decided to go with it. I started with boiling water safely and added spaghetti noodles. I showed him how to remove the spaghetti with a long wooden spoon and oven mitts to test the doneness. We placed the colander in the sink and proceeded to pour the pasta (away from the body) into the colander and pick it up with the oven mitts and pour back into the pot. Next, he opened the pasta sauce and poured it in with the pasta and stirred it up, thus heating it up. He found it quite easy to shred the cheese and proceeded to fill the tacos using tongs. He sprinkled the cheese on top and voila – his spaghetti tacos were born! I was surprised how good they actually tasted! It’s now his go-to when his friends are over! I’m proud when I see this young man cook for himself and friends.

Pour a generous amount of the white glue into a small bowl or container. Add an equal amount of shaving cream to the bowl. Just guess with it; you can’t really mess it up. Add a few drops of food colouring to the mixture. Keep in mind, that as the puffy paint dries, the colour will get darker, so don’t be too worried if it looks too light at this point. I add about 10 to 15 drops of food colouring into each puffy paint bowl. Use a Popsicle stick to stir it all up and there you have it: PUFFY PAINT!!! Parasites March is the start of warmer weather, and along with that, our animals are outside more often and socializing a whole lot more! Spring is a good time to consider a parasite medication to help combat those icky bugs that we often cannot see. Parasites can be external or internal. Common external parasites can include creepy crawlies like ticks, fleas and lice. All of these are very different in how they affect your pet, how they are transmitted and how we treat/prevent them. Ticks, for example, are well known for being the carrier of Lyme disease. There are many different species of ticks and only certain species of ticks will carry and transmit the bacteria that results in Lyme disease. However, there is a program being run by the Alberta government monitoring the spread of ticks within our province. Therefore, if you find a tick on your animal, bring it to the clinic and we will send it away (free of charge to you) for species identification. When dealing with ticks, prevention is key, and there are several different products available for tick prevention, please speak with a team member to discuss your specific circumstances so that we can recommend the product that will be best for you. Lice are another external parasite that we can see commonly. Lice are spread via direct contact between an infected individual and a non-infected individual. Interestingly, lice are very species specific, meaning that lice on your dog will not spread to your cat or to you. Internal parasites find places to live within your animal, predominantly these parasites will live within the gastro-intestinal tract; however, they can, and do, spread to other areas of the body. These parasites are often spread via fecal-oral transmission (itchy bum – sucky thumb) so often we will hear that because an animal doesn’t eat feces they are not at risk. That, however, is a false sense of security, internal parasite eggs can survive in the environment for very long times (years in some cases) with no outward sign. Therefore, there is the potential that just being out for a walk could potentially put your pet at risk for internal parasites. There are a multitude of different species of internal parasites that are often grouped into the broader categories of roundworms vs. tapeworms. Certain roundworms and tapeworms are zoonotic and pose potential threat to people, most commonly children (as they play in sandboxes or dirt where animal feces may be present). Parasite control should be taken seriously. Did you know that there has been a reported case of Ocular Larval Migrans in a child within the Strathmore area? This condition stemmed from a roundworm infection, and the larva travelled through the skin and up into the eye, causing blindness within the eye. SCARY! Get educated, and take preventative measures to protect yourself and your family. As pets are becoming more and more a part of the family, we need to protect them and ourselves. Liberal Budget is highly concerning for Bow River communities Ottawa, ON - M.P.

I was in the House of Commons on March 22nd for the Government Budget. The Budget Book was 269 pages long, but the Minister verbally presented the highlights. MPs speed read to review the details. What was obvious was the Government plans to borrow and spend almost $30 billion more than the revenue it receives this year only. Over five years, the plan is to borrow/spend $113 billion more than it receives in revenue. There is no plan to repay any of this borrowed money. The interest also just keeps adding up as well. The end result of the borrowed amount after interest costs in 5 years will mean a bill of $160-170 billion dollars from Canadians.

I must emphasize yet again that the next generations are on the hook for all this debt, which is unfortunate. I am honoured to continue being your representative in the House of Commons. Other than a tax hike, there is very little in this budget for our energy sector. There are 100,000 people in the energy sector looking for work, not just a 5 week extension of EI. These workers are looking for permanent jobs, and Budget 2016 is not a job-creating budget. From the point of view of agriculture, there is very little in Budget 2016. There is a suggestion that the agriculture sector develop wind and solar energy. Otherwise, it comprises no measures to assist agriculture or agri-food. Details of programs that could possibly benefit rural and rural urban areas that are part of the Bow River constituency are very scarce. Broadband internet support for rural communities may be one of those areas, but money for infrastructure projects is for major urban centres, not rural communities. There are resources being devoted to water and wastewater, so hopefully some of this funding finds its way to rural communities. The lack of a tax decrease for small businesses, as was promised in the Liberal platform, is concerning to the vast majority of businesses in the Bow River riding. The addition of a carbon tax for the energy sector causes extreme concern. The elimination of the middle class tax decreases like income splitting and tax credits like the Children’s Fitness Credit introduced by the previous government is going to have negative effects on Canadian families.

You see, everything in the universe is made up of one thing, and that is light energy. Light energy moves at different frequencies, but the human eye is only capable of perceiving light in a frequency range of about 400nm-700nm (from red to violet). However, there are other animal species that are capable of perceiving even more frequencies and colours (for example, many birds and insects can see ultraviolet light, which is of a higher frequency than we can perceive). Regardless of the range of colour and frequency vibration that we are able to see, the ability to perceive different colours simply means that we have an innate ability to easily detect the vibration that we need and want. An easy way to help create your reality is through using colours that align with the vibrations of what you desire.

You can actually use Colours to Create Your Reality While it is true that some colours (like purple) have a higher vibration and frequency than other colours (like red), each colour serves an important purpose. Using colour effectively requires that you are knowledgeable about colour frequency vibration. Once you understand the basics, you can easily decide what clothes to wear, what colour car to buy, or what colour to paint your room. Depending on what you are trying to achieve in life, you can surround yourself with the colour that best represents your reality the way you want. I recommend green or pink to envelop your new child in love. 9. Are you depressed? People tend to select colours like black, red, brown or gray when they are down, but it is advisable to resist this urge and pick higher vibrational colours to lift your spirits like indigo, yellow or pink. We all have our favourite colours and mine is green – It has always been green for as long as I can remember. We all have a favourite colour and it seems all colours have a different meaning. What is your favourite colour (you have one)? To discover your personality colour, ask yourself: what is my favourite colour? Answer this question now before reading any further. As I sit here writing this article, the birds are out and singing a happy tune. Spring is definitely in the air. This idea made me reflect on outdoor activities and how many of us will be venturing outside now, shaking off the dust from being indoors most of winter and enjoying the fresh air. It's a great opportunity to go for a walk or maybe a run and soon the bikes will be on the pathways as well. Strathmore has many beautiful neighbourhoods (we are pretty lucky) and these neighbourhoods are all interconnected by a series of pathways that link our town. Did you know that we have over 20 km of pathways? And guess what else we have? An app! It’s called Smore Paths and it was designed by SAY (Strathmore Assembly of Youth). It is very user friendly and gives you great details on 15 different pathways around town. Go to www.Smorepaths.ca or to the Apple App Store to find the app and add it to your mobile devices. I am a runner and I've come to know our path system very well over the 17+ years that I've lived here. At first, I had to be a little creative to run "off the roadway" but over time, the path system has become better and better. Now while I'm tracking my progress or planning on meeting a fellow runner, I can name the paths that we plan to use. There are many reasons to enjoy the great outdoors here and another one is that Strathmore has a disc golf course! The disc golf course weaves weaves its way around various parks and playgrounds in Strathmore. What is Disc Golf? It is a game where you throw a disc (like a Frisbee) and try to land it into a net. It's a lot of fun and you can get some great exercise and enjoy the spring weather at the same time. The maps are available at the town office or on line at www. strathmorediscgolf.com. We have to thank the Strathmore Assembly of Youth for pursuing this great idea and making it a reality. My plan is to take advantage of this game when my family comes to town for Easter dinner. I am organizing a Disc Golf Tournament with prizes... it’s going to be so fun! What I love best about the pathways and Disc Golf is that they are all literally right outside of our front doors.... This will probably sound a little strange to you, but would you ever consider the idea that sardines could be Luscious? Sardines? What? Luscious? I contemplated that exact idea as I stood in front of my pantry yesterday deciding what to make for supper. My gaze came across those two cans of sardines gathering dust and I thought, now how could I eat these other than on toast or a cracker (they are rather healthy for you)? So off to my computer I went in search of a few luscious sardine recipes! Well, what I found was rather shocking; I found a plethora of recipes for sardines. I’m guessing I am not the only one who has a few cans of sardines lying around, so here you go -- a few Luscious recipes for you to try.

Fisherman’s Eggs

Heat the oven to 500°F and preheat an ovenproof serving dish for five minutes. Place the contents of a can of sardines, a small sliced shallot, a few sprigs of chopped parsley, and two cloves of finely chopped garlic in the warm dish. Add some black pepper and put the dish back in the oven for six minutes. Remove the dish from the oven, break four eggs into a bowl, and pour them gently on top of the sardine mixture. Season with salt and pepper and put the dish back in the oven for seven minutes, until the egg whites are cooked but still jiggly. Remove the dish and let it sit for five minutes (the eggs keep on cooking even out of the oven). Set out with toast and hot sauce. Serves 4.

1 pound linguine 2 tablespoons extra virgin olive oil 1 medium shallot, finely chopped 1 (4.25 ounce) tin sardines packed in oil (we're using this oil as well) 1 medium tomato chopped into 1/2-inch pieces (OR a 14.5 ounce can of diced tomatoes) 1 (6-ounce) can pitted black olives, olives halved crosswise (so as to keep the little ring look intact) 1 tablespoon capers, drained, rinsed, and finely chopped Freshly ground black pepper

In a large pot of boiling, salted water, cook the linguine according to the manufacturer's directions until it is al dente. Reserve 1 1/2 cups of the pasta cooking water for adding to the Pantry Puttanesca at the end of the cooking time. In a large sauté pan or skillet, heat the olive oil over medium heat, then add the shallot and cook until the shallot is translucent, 2 to 3 minutes. Add the sardines and their oil, then the tomato, olives, and capers, and cook until the tomatoes are softened, and the sardines are breaking apart before your very eyes, 5 to 7 minutes. Add the linguine to the Pantry Puttanesca pan, then pour in 1 cup of the reserved pasta cooking water, stirring well, folding those olives, tomatoes, and sardines into the strands of pasta. You're looking for a moist sauce here, so if you need a bit more water in the pan, add the remaining pasta cooking water, 1/2 cup at a time. Season with pepper, perhaps top with a sprinkle of grated Parmesan. Make sure you have some crusty bread to soak up the sauce that remains on your plate.

Some other quick and easy serving ideas

• Sprinkle sardines with lemon juice and extra virgin olive oil. • Combine sardines with chopped onion, olives, or fennel. • Top sardines with chopped tomatoes and basil, oregano, or rosemary. • Balsamic vinegar gives sardines a nice zing. • Make a sauce with extra virgin olive oil, lemon juice, pressed garlic, Dijon mustard, and salt and pepper. Serve over sardines.

Now, don’t eat your sardines just because they are Luscious – you knew this was coming - they are also extremely healthy and are an excellent source of vitamin B12 and selenium. They are a very good source of phosphorus, omega-3 fatty acids, protein, and vitamin D. Additionally, they are a good source of calcium, niacin, copper, vitamin B2, and choline. Sardines are rich in numerous nutrients that have been found to support cardiovascular health. They are one of the most concentrated sources of the omega-3 fatty acids EPA and DHA, which have been found to lower triglycerides and cholesterol levels; one serving (3.25 ounce can) of sardines actually contains over 50% of the daily value for these important nutrients. Sardines are rich in protein, which provides us with amino acids. Our bodies use amino acids to create new proteins, which serve as the basis for most of the body's cells and structures. Proteins form the basis of muscles and connective tissues, antibodies that keep our immune system strong, and transport proteins that deliver oxygen and nutrients throughout our bodies.

AND, JUST A LAST BIT OF TRIVIA:

Sardines are named after Sardinia, the Italian island where large schools of these fish were once found. While sardines are delightful enjoyed fresh, they are most commonly found canned, since they are so perishable. With growing concern over the health of the seas, people are turning to sardines since they are at the bottom of the aquatic food chain, feeding solely on plankton, and therefore do not concentrate heavy metals, such as mercury, and contaminants as do some other fish. So dig those cans of “Luscious Sardines” out of the back of your pantry and don’t just think of them as those tiny little oily fish anymore! (I personally like the ones in mustard or jalapeno sauce). Are You Working With The Right Team? As a first time home buyer, to say the task of purchasing one’s first home can be a little daunting could be putting it mildly. Making sure you are surrounded by the right team of professionals can make all the difference from start to finish. So where do you start? Getting pre-approved for your mortgage financing is a critical first step. By doing so, you not only know what your purchasing power is, but you also have the knowledge of knowing your mortgage rates are going to be held for a minimum of 90 days, which will protect you if rates do go up during that time. As well, most realtors and/or builders prefer if you have already been pre-approved for your mortgage. As soon as your mortgage pre-approval is in place, you will likely want to work with a realtor to help you find your first home. Based on your budget, the location, style, size and other requirements you may have for your future home, a real estate professional will be able to help you find the perfect place. They will also help you with the negotiation process that will undoubtedly occur with most purchase transactions. After the purchase price has been agreed upon by all parties involved, you may choose to get a home inspection done for your own piece of mind as part of the conditions of buying that home. By having a home inspection completed, you will know if your future home will either require immediately or be subject to any costly repairs in the future. Now that all of the conditions have been met as per your purchase contract, you will need to get property insurance. Speaking with the company that holds your car or life insurance may be an excellent start. If you are looking to see if you can acquire better coverage at a lower cost, you may wish to seek the service of an insurance broker. Like a mortgage broker, they will shop your application to several different companies looking for the best price and coverage. Once you have negotiated a purchase contract, and have acquired a full approval on your mortgage financing, you will need to seek the services of a real estate lawyer. Like any professional, not all are created equal, so calling around or getting referrals from friends and family could be very helpful. Getting quotes, and finding out if they have time to work with you is very important as purchasing a home can be a time sensitive situation. Some lawyers offer an “all inclusive” fee for purchasing a home, while others may have a standard fee plus additional costs depending on the complexity of the purchase and the requirements of the financial institution providing the mortgage. By working with the right group of people to assist you with your first home purchase, you will find that if or when the time comes to sell and or purchase another property, you will be that more confident going through the process once again. 1 tsp (1 bag) Earl Grey Tea 1/2 cup boiling water 1 cup milk (almond milk or coconut milk work too) 1-1/2 tbsp cocoa powder 1 tbsp raw honey or maple syrup (use more for a sweeter treat) 1/4 teaspoon vanilla extract 1 pinch sea salt Bring water to a boil and pour over tea bag in a mug, allowing it to steep for 5 minutes. While tea is steeping, heat milk and make a paste of the cocoa powder, maple syrup or honey, and salt. Once the tea is ready, mix the cocoa paste, tea, and milk. For a frothy latte, blend in a high-powered blender or your magic bullet.
