Benefits of Weight Loss

H

ave you ever run into someone and they comment on how much your kids have grown or how long your hair is? We are often surprised at peoples’ observations! Since we see them every day, we don’t notice the changes. This can also happen with our pets. We may not notice how giving them that extra treat has added a little to their waist (yes, our pets have waists, too!). It is when we visit our veterinarian and they comment that Fido is overweight that we get a look of shock on our faces. This recently happened to me. It had been a month or so since I had brought my dog to work with me and when Dr. Rand saw him, he immediately commented that he had gained weight. Shocked, I took him straight to the scale and lo and behold, my little guy had gained 0.8kg in 8 months! This was due in part to our youngest child dropping more food on the floor and a few little snacks before bed. But, I took Dr. Rand’s suggestions for weight loss to heart after he told me that an overweight pet can have a decrease in life expectancy by up to 2.5 years! How can you tell if your pet is overweight? According to Dr. Rand, it is important to look at the whole pet, rather than just a number on a scale. When standing over your pet, looking down at their back, you should see a wider chest that narrows into a waist, and you should also see the chest narrow to a waist from the side as you look from head to tail. If your pet resembles more of a sausage when viewing them from the top or the side, it is time to take action on weight loss! One last method of scoring your pet’s body condition is to feel over their ribs. If you can feel

their ribs with a thin flesh cover (similar to feeling across your fingers between the knuckles) then your pet is in good condition. If it feels like there is a bit of a ‘fat sweater’ over their ribs – then this is another indicator that weight loss needs to be a priority. Some of the other medical conditions that come with excess weight are osteoarthritis, type 2 diabetes, high blood pressure, certain forms of cancer, as well as respiratory and heart disease. Those are some pretty scary conditions; none of which I wanted for my dog. So, I got started by consulting with Dr. Rand about the best ways to take the excess weight off.

Food

Check the energy content of your pet’s food and make sure you are feeding them an appropriate amount for their target body size. (Your veterinarian can help you determine this if you are unsure!) For those overweight pets that are on free choice feeding rather than meal feeding, you may want to consider switching to scheduled meal times. This will make it easier for you to limit intake and to assess how many cups he/she is actually eating. You may also need to switch your pet’s diet to one that is specially formulated to help your pet lose weight while still feeling full. Your veterinarian can help you decide what weight loss food is right for your pet. Lastly, it is easy to love your pet with treats, but 1-2 per day is plenty! Try giving them a piece of their kibble rather than a table scrap, and remember that you are helping them live a longer and healthier life by not overfeeding them! This will require regular commitment on your part as well as your pet, but I promise it gets easier! Walking, running, throwing squeaky toys or Frisbee chasing with dogs requires at least 15-60 minutes a day for 5-7 days a week. If you have an overweight cat, consider investing in a laser pointer for them to chase on the floor for exercise. It may also be a good idea to move food bowls around the house (up or downstairs) so that your pet has to travel for food. 3.Lastly, regular weigh-ins at the vet clinic are free and a helpful way to track your pet’s progress! Most pets will achieve ideal weight in about 6-8 months, with monthly weight loss of about 3-5+% of body weight per month (depending on age and starting physical condition). If weight loss is taking longer than this, you may need to change your strategy, or have your pet’s blood taken to analyze for underlying conditions such as hypothyroidism that might be causing slowed metabolism. We sing a wee bit off key, but we sing our hearts and souls out anyways, as everyone should… We are very close to being ready for Christmas, our presents are wrapped and under our tree (our UPSIDE DOWN TREE!). Our meals are planned, our Sugar-Free Christmas Cookies are in the freezer. If

you missed Novembers issue and need the recipes, you can look back online! We have done so well with our Fitbit, our ten thousand steps per day, our diet control and living a healthy lifestyle. We were a bit frightened to go into this delicious Christmas Season unprepared, so we have done some research on HOW TO DO CHRISTMAS AS A GOOD DIABETIC. There are some things that we would love to share with you. First, please let me say this (and this is REAL folks, like it or not) “Those of us who have the opportunity to indulge a bit at Christmas are going to take the chance, so let’s accept that and make some adjustments accordingly, without giving ourselves permission to go off the rails and be crazy bad.” No matter what type of diabetes you have, Type 1 or Type 2, or no diabetes at all, you can offset a reasonable excessive intake with increased exercise. The recommendation that I am finding out there, therefore, is to deliberately take on a bit more exercise. I read today that just 15 minutes extra around the block every day – at a reasonable pace – will help your diabetic control through this holiday season.

Commit yourself to a food plan.

It’s very easy to get carried away by what’s on the table. To reduce the chance of this happening, plan how much you intend to eat and make a point of sticking to it. If you’re not cooking, find out what will be served in advance. It’s best to make this plan at a time when you’re not hungry, as hunger can distort your judgement.

Don’t forget to factor in that alcohol con-

tains high calorie content and also causes sugar levels to fluctuate. Plan how much or whether you will drink and stick to this, too. It’s a good idea to let you your family know in advance of the Christmas meal so they won’t offer you anything you’ve planned not to have.

Avoid feeling hungry for too long.

It’s a well drilled family that gets the Christmas meal to the table on time. If the meal is taking longer to prepare, it can lead to an unusually long period of hunger and anticipation. Say you actually wanted to overeat, the best way would be to make yourself very hungry before eating. One way to avoid being so ravenous is to break the delay. Protein and/or non-starchy vegetable based pre-meal snacks are a good choice as they are filling. Have a glass of water before eating. Having a

glass of water before you start your meal is an easy and effective way of reducing your food intake; it makes you feel full earlier on, thus reducing your appetite.

Base your meal on non-starchy vegetables.

Vegetables are the staple of sensible eating. Make sure that vegetables account for a good percentage of your plate.

Eat gradually.

Eating with the family is a nice occasion but if you’re a fast eater, it can make things more difficult. If others are still eating, you may be tempted to have another helping. Eating slowly will help with this and will also allow you to savour and better enjoy the food you’re eating.

Don’t feel guilty about turning offers down.

Any food you eat is going to end up in your blood stream and on your body, so don’t feel shy about turning food down. Feeling stuffed can be quite unpleasant by itself and it’s also worth bearing in mind that the body’s natural reaction to having to digest a particularly large meal is to release extra sugar into the bloodstream.

Go easy on the puddings and sauces.

One can be forgiven for indulging every once in a while, but if you’re a pudding/sauce person, Christmas can be something of a trial of restraint. If you cannot resist them, make sure you stick to (at most) one and keep the serving sensible, remembering that sweet dishes are very fast absorbed. Once again, apply the rule about eating gradually.

What are Dental Implants and how do they work? How’s your dental vocabulary? Did you know that dental implants are basically artificial teeth roots? They replace a natural tooth’s roots to support artificial replacement teeth. Implants - the basics: Implants are titanium screws that are inserted into the bone tissue of your jaw. This is where tooth roots would normally anchor a tooth. Roots that are broken or diseased can be replace by these screws. Titanium has many biomedical applications because human tissue will bond to it, and it’s chemically inert — which means it doesn’t rust or break down. Titanium is very light but also very strong. o-ho-ho and Merry Christmas! My name is Candi, and I am a cranberry. We’re low, creeping (that’s creeping, not creepy!) shrubs with slender, wiry stems and small evergreen leaves. Give us a nice acidic bog somewhere in the cooler parts of the northern hemisphere, and we’ll grow like crazy. Our flowers are dark pink, and our famous berries (I mean really, what would the winter holidays be without us?) start out white, but turn the colour of Santa’s suit by the time we’re ripe. Native North Americans were the first to enjoy us, using cranberries to make a sauce that complimented wild game very nicely. To balance our natural acidity, they added a dollop of honey to balance things out a bit. When Europeans first saw us after they settled in what is now the United States and Canada, they took one look at our expanding flowers, stems, calyx and petals and decided we resembled the neck, head, and bill of a crane (you must remember, these people had no television or internet; they had a lot of time on their hands, and could spend hours staring at very small objects, letting their minds wander…). Thus, our initial name: craneberry. Eventually the “e” was dropped (don’t ask me why!), and the name cranberry stuck. Soon these early settlers began emulating their native neighbours, using cranberries in a variety of sauces and foods (especially pemmican), as well as the main component in wound medicine and dye. A fellow named Henry Hall is recognized as the first to farm us – that was near the Massachusetts town of Dennis, around 1816. In the 1820s, cranberries were first shipped to Europe. In one case, a ship with some of my ancestors on board was shipwrecked off the coast of Holland. I don’t know what happened to the passengers and crew, but the cranberries survived and prospered. Eventually we became quite a popular wild crop in places like Norway, Sweden, Finland, Scotland, and Russia. But we remain most popular back here in good ol’ North America, where we’ve never met a winter holiday we didn’t like. I’m happy to report we’re more than simply a colourful Christmas side dish. On the nutritional front, we contain lots of vitamin C, vitamin K, dietary fibre, and manganese. We have five times the antioxidants as broccoli (and they’re no slouches in the antioxidant department). In fact, according to something called the ORAC (Oxygen Radical Absorbance Capacity) score, we register 9.584 units per 100 g., placing cranberries near the top of 277 commonly consumed foods in North America. Cranberry juice is delicious on its own, or can be blended with other fruit juices or sparkling water. Our inherent tartness means we can be used to replace the flavours for vinegar or lemons in salad dressings. We’re yummy when added to puddings, breads, and muffins. There are all sorts of ways we can be enjoyed – try some of the recipes here, I think you’ll be happy you did!

Balsamic vinaigrette 1/3 cup (80mL) olive or vegetable oil ¼ cup (60 mL) cup balsamic or red wine vinegar 2 tbsp (30 mL) sugar 1 tsp (5 mL) Dijon mustard 1 clove garlic, finely chopped Salad 1 bag (10 ounces) mixed baby greens or Italian-blend salad greens ½ cup (120 mL) pistachio nuts ¼ cup (60 mL) dried cranberries In small bowl, beat balsamic vinaigrette ingredients with wire whisk until smooth. In serving bowl, toss vinaigrette and salad ingredients just before serving.

1 3/4 cup (420 mL) milk 1/2 tsp (2.5 mL) salt 1/2 tsp (2.5 mL) vanilla 2 cups (480 mL) bread cubes; soft, stale 1/4 cup (60 mL) honey 2 eggs – beaten 1 cup (240 mL) cranberries Whipped or light cream Combine all ingredients except cream. Pour into a shallow greased 1 1/2-quart baking dish. Bake in a preheated 350°F oven 25 minutes, or until firm. Serve warm with cream or a dollop of whipped cream. CRANBERRY SALSA WITH APRICOTS CRANBERRY SALSA WITH APRICOTS 3 cups (720 mL) fresh cranberries 2 tsp (30 mL) fresh lime juice

What is your favourite part about Christmas? Being around your family, the turkey dinner, the Christmas tree and all the lights and decorations? Or that cozy feeling you get inside only at Christmas? Or the Christmas music and parties, and “Charlie Brown’s Christmas” and much more? When you think about it, there are a lot of reasons to love this time of the year. It magnifies just how sad they are. So, giving gifts to children in need, gift cards to orphaned teens, coats and food to families, and volunteering at soup kitchens can make all the difference! And what about the original reason for Christmas, have we all forgotten? To me it often seems so. Like going to church Christmas morning, singing carols and celebrating the birth of Christ. It is sad how religion has changed and caused so many terrible problems in the world. So perhaps this Christmas we should all take the time just to be thankful for all we have and not think about what we don’t have. Peace on Earth and good will for all men and women.

For several years, my 21-year old daughter has been known for always finding the perfect Christmas gifts. She refuses to accept a list from anyone and instead, surprises us with gifts that truly represent who we each are. Last year I received a set of beautiful handmade candle holders from the UK that have purple butterflies (I happen to burn candles in my office every day and anyone who knows me even a little, likely knows of my absolute love of butterflies and anything purple!) I gave him a bamboo vase so he could write down all his celebrations through the year and put them in the vase, and then at the end of the year he could be inspired by all that he had experienced. Why did he select this for his word? He was fascinated by the fact that you nurture, water and care for a new bamboo plant for four years and not even a tiny shoot pokes through the ground. During that time, a strong root system develops so it can support the bamboo plant. And then… it appears above ground and in just 6 short weeks, the bamboo plant is 90 feet tall!!! The message is to have Patience and Faith in life, knowing that while you may not be seeing results from your actions, a strong foundation is being created so do not be discouraged, but keep going. The bamboo has many other lessons to teach us as well. For instance, while the bamboo looks weak, it is sometimes the only plant still standing after a storm. This teaches us that size is only a Perception, so do not underestimate yourself or others. Stand tall and believe in yourself. In life, we all face times of challenge and here again, the bamboo has a message to share. In the winter, the tops of the bamboo may almost touch the ground as it bends under the weight of heavy snow. And then one day it springs back and drops the snow as if to say, “I will not be defeated!” Know that you are as strong as you need to be, you can spring back from adversity. Bamboo is hollow and this reminds us that in order to receive knowledge and wisdom, we must be open to what is new. This requires that we have space to take it in and not be full of believing we already know everything. Be Open to Possibilities and do not hold onto preconceived notions. In the Japanese culture, bamboo is connected to laughter as the leaves in the wind sound like the forest is laughing. This reminds us to smile, laugh and be Playful.

CHRISTMAS TREE COOKIES Every year I make shortbread cookies for Christmas. I don’t know why I only make them at Christmas, because they are absolutely the best cookies of all time. I use my antique Mirro cookie press to make them. Last year, I scoured the house and spent hours looking for my beloved cookie press, to no avail. This summer, as I was cleaning out my pantry, lo and behold, there it was hidden under a stack of dishcloths; I almost cried I was so happy to find it!

201, 97 Centre St SW Langdon, AB ● (403) 936-5006 I did a little research to find out how old this baby really is and as close as I could figure it came out in 1957 (the same year I was born). I guess lots of really good things happened that year!! So, I will get around to making my famous shortbread cookies before Christmas. Since it was such a cold Sunday afternoon yesterday, I thought to myself what a wonderful day to stay inside and try one of the original recipes out of the book that came with the press – Christmas Tree Cookies. A very simple recipe, indeed. I doubled the batch; after all if you’re going to make cookies, make lots. The recipe called for shortening but I used butter (same thing, in my mind). Here is the recipe doubled:

2 cups of real butter 1 ½ cups sugar 2 eggs 4 ½ cups flour

¼ tsp. salt ½ tsp. baking powder 2 tsp. almond extract Green food colouring.

I did not have any green left so I used three drops of blue and three drops of yellow and that worked just fine. Just a little tip – make sure your butter is pretty soft (mine wasn’t and there was a little cursing going on under my breath as I tried to cream the butter and the sugar together). I used my Kitchen Aid mix master but I still had to stop and scrape the paddle way too many times because the butter just kept sticking (pain in the you know what). So anyhow, you cream the shortening (butter), adding the sugar gradually. Once it is soft and creamy, you add the unbeaten eggs, the flour, salt and baking powder that you have sifted together, the almond extract and the drops of food colouring and mix very well. Now, at this point I got a little worried because the dough looked a little too thick for my liking but I carried on. Next time I would use a little less flour. I pushed the dough into my handy dandy cookie press using the Christmas tree plate (for the shape) and started cranking the handle, which pushes the dough onto the cookie sheet. As with anything, the first few didn’t turn out that great but once I got the hang of it they actually stated to look like cute little Christmas trees. TIP: do not grease or flour the cookie sheet. The recipe says you should bake them in a 375°F oven for 10 – 12

minutes, but I baked mine for 9 minutes and they were absolutely perfect!! With doubling the batch I ended up with (wait for it) 148 beautiful little Christmas Tree Cookies. So I guess I am off to the store to buy some pretty little bags and containers. It seems lots of friends and family will be receiving a little surprise of delicious cookies this year. I’ve tried the new plastic cookie presses but I have found there is just no comparison to my old antique Mirro – you can buy them on eBay and Amazon but you are going to have to pay quite a bit more for one. I laughed our loud when I saw the price was still on my box of $3.69. Can you imagine? But I’m thinking back in 1957 that probably wasn’t that cheap! On eBay, they are going anywhere between $50.00 and $75.00. Who knows, maybe your grandma might have one hidden in the back of a closet somewhere. It would make a wonderful hand-me-down Christmas gift. I’m telling you, I would love to have another one in my house just in case something ever happened to mine!! They just don’t make things the way they use to!!

May I be happy. May I be well. May I be safe. May I be at peace. This is such a simple prayer, yet famous throughout the world. Known as the Metta Meditation, or the Loving-Kindness meditation, its roots are in Buddhism. It feels fitting for the Christmas season, despite its lineage. Jesus challenges us to love everyone, including ourselves, the way that He loves us – unconditionally. How powerful would it be if everyone were able to feel this way about each other? How much relief would YOU feel if you yourself were happy, well, safe, and peaceful? In a day and age that feels unsettled and polarized, we need more things that bring comfort and camaraderie. We need all the tools we can find to help us reach out and create connection with those around us. And not just those that we are naturally drawn to. Now, more than ever, we need ways to find these things with everyone - including those that we are indifferent to or repelled by. The way to heal the world will not be found in denial or condemnation, but it CAN be found in love and kindness. Try these steps a little at a time. It is a powerful and profound process. You may find that you stay on each step for many repetitions before you are able to move on to the next, and that is just fine. There is no hurry. In fact, the power in this practice comes from getting very good at each step before you move on. Begin with taking a few minutes in a quiet place. Tune into your breath, relax your body. Bring your mind’s eye to your heart: 1. Begin with directing this mantra towards yourself first: May I be happy. May I be well. May I be safe. May I be at peace. Send loving vibrations to your Self. Breathe in a sense of the Divine. Allow whatever rises up for you to be observed by your internal Witness. Imagine releasing what is holding you back from feeling happy, well, safe and peaceful. 2. Think of someone you love. Repeat this to yourself as you gen-

tly direct loving energy toward that person: May you be happy. May you be well. May you be safe. May you be at peace. Someone you care for will benefit from this quiet energy you are sending them. Your actions towards that person are sure to reflect your feelings as well. 3. Send this energy on to a stranger, someone for whom you have little or no attachment to. Perhaps it is a person next to you on the bus, or the cashier at the grocery store, or the homeless person you pass on the street. Hold them in your mind and direct this towards them: May you be happy. May you be well. May you be safe. May you be at peace. Imagine emanating love directly from your heart to theirs. You may be surprised at the level of compassion that arises within you. You may never know how that kind energy may influence that persons experience, but it will certainly influence your own as you begin to do that in your daily (possibly previously mindless) interactions. 4. On to the tricky part. Think of someone whom you dislike, or has wronged you, or for whom you have little respect. Notice the mind begin the process of listing all the reasons you should NOT do this practice. Observe the feelings within your own body that arise as you hold this person in your mind. Breathe into your heart space love for yourself to settle. Begin to send this message from your heart to theirs: May you be happy. May you be well. May you be safe. May you be at peace. There is no work to do, no action to take, no words to be said. You can simply tap into the beautiful energy contained in these words. If you have practiced the previous 3 steps enough, it will be very possible to tap into that energy once again and direct it towards that person. Whether or not that person knows that I have brought myself around from anger to love, I have made a positive shift into the vibrations that are between us. Powerful stuff, even if it has to be returned to patiently over and over again. You may be surprised at the results in this one. 5. How can we make a positive impact to the world at large? It may feel overwhelming to think of what it will take to heal at a time so seemingly divided and full of hurt. If you feel overwhelmed, as I do, at the prospect of how to bring more good into our mad, mad world – this meditation is very powerful. The human race and all the living beings on this planet need more love and kindness and this simple visualization is more powerful that we can imagine. Imagine your heart emanating this energy in a massive field that can blanket the entire Earth, or whatever aspect of it is that is calling to you. Repeat this and let it do its good work: May all beings be happy. May all beings be well. May all beings be safe. May all beings be peaceful and at ease. Namaste, Becky The Newsy Neighbour Magazine

Learning How to Paddle Our Own Canoe Dave Reesor is a man with a vision. “I’m totally convinced that almost everybody in the world, by nature, wants to look after themselves,” he told me when I sat down to chat with him. We are in a busy Tim Hortons on November 9th, the day after Trump’s surprise victory just south of the border. Politics is on everybody’s mind, and as bits and pieces of conversations float through the air over coffee, it’s clear we aren’t the only ones talking about policies, government, and reform.

“People want to look after their family,” he continues, “They don’t want people telling them what to do, but the elites in the socialist movement have managed to convince people that they’re not capable of looking after themselves, that we need ‘experts’ in government to tell us how to do everything from the time we’re born until the time we die, and it’s just not true.” Reesor takes a sip of his coffee thoughtfully. “It just doesn’t work…it doesn’t take human nature into account.”

And that’s not my opinion, that’s the numbers.” Enter LDIO. “We are in the process of writing a constitution that will lay out exactly what we stand for – the parameters within which we work,” he tells me. “Right now, we need members. It’s $5 per month – or less, if you come in as a family. We need people who see the merit in what we’re trying to do. Obviously, the more income we have, the more we can do.”

As for spreading the word about what Reesor and LDIO are trying to accomplish, the answer lies in appealing to the youth and the Facebook-savvy. “It’s so inexpensive to get a message out on social media,” he observes. “That’s how you reach young people, and that’s what our mission is: to give them a community to belong to. They want to belong, and they want to be involved, and we’re going to give them all kinds of ways to be involved.” This isn’t something that Reesor just recently envisioned as a response to our current political climate, either – he’s spent the past several years researching governmental affairs, spending, and policy-making before carefully beginning to build the foundation for the Let’s Do It Ourselves community. Not only has he devoted his time, but Reesor’s also invested substantial amounts of capital into getting things up and running. He truly walks the talk when it comes to what he’s looking to achieve with Let’s Do It Ourselves – and if all these facts didn’t convince me of his resolve, then his passion when speaking about LDIO surely did. Reesor earnestly believes in taking a hands-on approach to governance, and in “paddling our own canoe,” as the self-sustaining, online community’s tagline incites. First Impressions

y passport just arrived and my first thought was, “This had better not be the photo the media uses if I die in a tragic shark tank diving incident.” The last impression I want to leave to the world isn’t one of me looking like a cross between Casper the Ghost and an inebriated orangutan. Okay that might be a bit harsh, the orangutan was probably sober; angry but sober. I guess, however, if I do become shark chow, there isn’t much control I have over my last impression. when nor how we first met. Keep that in mind while I offer some unsolicited advice on making a strong first impression when job hunting. First impressions are not always made face to face. Social media now allows us to form opinions of others from the comfort of our La Z Boys. That’s right, there could be someone right now sitting at home, munching on chips, drinking a cola and forming opinions of you. Odds are if you go into a job interview, the person hiring you already has a pretty good impression. Your resume and cover letter has given them some data to decide if you are articulate, sloppy, creative or dull. Now that’s before your name gets typed into a web browser. What are they going to find? Perhaps a half finished LinkedIn profile? Might as well just post a sign saying, does not complete tasks. It is better to have no LinkedIn profile than one that is a poor reflection of you. And what to say about Facebook? I could say so much. If you are seeking employment, Facebook can be a great networking tool, just don’t word your post so you sound like there is a valid reason as to why you are looking for work. “Ya so, I just got fired from my job, the boss was an a$$ and wouldn’t give me the weekend off. So ya, if you have a job open call me.” Don’t expect calls. Moms and dads, this advice is for you. If your adult child is out of work, you can for sure help by keeping an eye out for opportunities, but posting on Facebook pages that your 22 year old would be perfect for the job ABC Industries has open isn’t recommended. ABC’s H.R. department has made the first impression that your child needs to be a grown up and be responsible for expressing his or her own interest in the job. I get it, you want to help your child succeed, or maybe just get them off your basement couch for part of each day. Go ahead, tell them about the job you saw, just don’t be “selling” them on Facebook, it makes employers wonder why they need Mom and Dad to job hunt for them. And for goodness sakes, if you are going to use Facebook as a job hunting tool, keep your profile rated PG. Now, I will be posting some photos on Facebook soon, photos of me and hopefully a great white or two safely separated by a thick, unbending steel cage. And I know that these photos will maybe cause some to form impressions of me…brave, crazy, must have lost a dare, how did they get a drunk orangutan in a wet suit, kind of impressions. And that, my friends, is why I have my settings set to private, because to know me is to love, or at least understand me and one should never try to make a good first impression while squeezed into a wet suit. In a medium china or non-reactive bowl, mix lemons with sugar, and let stand overnight in the refrigerator. Remove from fridge and let warm to room temperature before making pie. Preheat oven to 350°F. Fit bottom crust into 9" pie pan. Stir eggs into lemon-sugar mix and pour into pie pan. Top with remaining crust (optional). Trim edges, crimp and seal pastry, sprinkle with sugar. Bake for 45 minutes. Cool on a wire rack, and serve with whipped, heavy cream.

Strange Young Couple

A Strathmore peace officer was patrolling late at night off the main highway and sees a couple in a car, with the interior light brightly glowing. He carefully approaches the car to get a closer look and he sees a young man behind the wheel, reading a computer magazine. He also notices a young woman in the rear seat, filing her fingernails. Puzzled by this surprising situation, he walks to the car and gently raps on the driver's side window. 1 (3-ounce) package white chocolate pudding mix 2 tsp vanilla powder 1-2 tsp dried orange peel, finely ground, if desired In a small bowl, combine all ingredients. Store in an airtight container in a cool dark place. To make White Hot Chocolate for Two: 1-1/2 cups milk 1/4 cup White Hot Chocolate Mix In a small saucepan, heat the milk until bubbles form around edges. Add the White-Hot Chocolate Mix and whisk until the chocolate is melted and beverage is blended.

Thousand Island Salad Dressing

1/2 cup dried parsley flakes 1/4 cup finely crushed saltine crackers 1/4 cup dried minced onion 3 tbsp garlic salt 3 tbsp onion salt 1 tbsp garlic powder 1 tbsp dried dill weed 1/8 tsp white pepper In a medium mixing bowl, combine all ingredients and mix well. Store in airtight container in a cool dry place. Makes enough Thousand Island Salad Dressing Mix to make 12 batches of salad dressing. This recipe is perfect for people who love Thousand Island Dressing but are allergic to MSG – like me – most of the salad dressings you buy in the stores have MSG. To make Thousand Island Dressing, combine 1 tablespoon of Thousand Island Salad Dressing Mix with 1 cup mayonnaise, 1 cup buttermilk, 1/2 cup chili sauce and 1/4 cup pickle relish and blend well. Store leftover dressing in refrigerator.

These cookies are incredibly luscious and with this mix they are super easy to make. 2-1/2 cups flour 1 tsp baking soda 1/4 tsp salt 1 cup sugar 1/2 cup brown sugar 2 packages chocolate mint wafer candies In large bowl combine flour, baking soda, salt, and sugar and mix well. Pour into the bottom of a screw top glass jar. Place brown sugar into a small bag and place on top of the flour mixture. Unwrap the mints and place in another small bag; place on top of the brown sugar. Screw jar closed and include this recipe: 1 cup butter, softened

2 eggs 1 tsp vanilla 1 jar cookie mix In large bowl, combine butter and brown sugar from cookie mix and beat until fluffy. Add eggs and vanilla and mix until blended. Stir in remaining dry ingredients from cookie mix until blended. Cover and chill dough for 2 hours. Preheat oven to 375°F. Shape about two teaspoons of dough around each chocolate mint wafer, making sure to cover the candy completely. Bake on ungreased cookie sheets at 375°F for 9-12 minutes until light golden brown. Let stand for 1 minute, then remove from cookie sheets and let cool on wire racks. Glaze with melted chocolate if desired, or top with nuts before baking. Makes 4 dozen cookies. Kathryn Hartwell

Graham Cracker Bars 3/4 cup butter 3/4 cup granulated sugar 1/4 cup milk 1 egg, lightly beaten 1 cup chopped pecans, toasted 1 cup graham cracker crumbs 12 graham cracker rectangles 1 tbsp butter, softened 1/2 cup powdered sugar 2 - 3 tsp milk For filling, in medium saucepan combine 3/4 cup butter, granulated sugar, 1/4 cup milk, and egg. Stirring constantly, cook over medium heat until mixture comes to full boil. Remove from heat. Stir in pecans and crumbs. Cool 30 minutes. Meanwhile, place 6 of the graham cracker rectangles, side by side, on a foil-lined baking sheet to make a rectangle about 10x7 inches in size. Spoon filling in small mounds onto graham cracker rectangles. Carefully spread to an even layer being careful not to move crackers. Place remaining cracker rectangles on top to match up with bottom rectangles. Lightly cover bars with plastic wrap. Chill in the refrigerator at least 4 hours or until filling is firm. Cut into bars. In small bowl beat 1 tablespoon butter with whisk or electric mixer until smooth. Gradually whisk in powdered sugar and enough milk to make a thick drizzling consistency. Drizzle over bars. Let stand until set. Makes 24 bars.

Year two was the exact opposite. The Flames floundered with poor goaltending. They missed the playoffs, finishing 12th in the Western Conference and 26th overall. Coach of the year Bob Hartley was thrown under the bus and fired for a kinder, gentler, nicer Glen Gulutzan. What's the old saying? Nice guys finish last? Maybe it's not fair to judge Gulutzan and his assistant Dave Cameron two months into the season, but the record speaks for itself. Bad power play, bad penalty killing and a fragile team. This is all a direct result of coaching, if you believe the team is good enough to win. Herein lies the problem. The Flames are not good enough to win. This falls on the general manager and this is why Brad Treliving receives a failing grade.

In the off season, Treliving addressed the Flames’ awful goaltending situation. While Brain Elliott has not lived up to expectations, we can all agree Elliot and Chad Johnson were an upgrade. But who created the mess in the first place? It was Treliving who signed Jonas Hiller and then resigned Karri Ramo.

Failing Grade for Flames GM

Treliving was given huge props for acquiring Dougie Hamilton from the Boston Bruins for a first and two second round draft picks. Is it just me or does Hamilton remind you of Dion Phaneuf? At least Phaneuf had a good shot because both

lames general manager Brad Treliving is a really nice guy! What's the old saying? Nice guys finish last.

While some may argue two and a half years is not enough time to honestly assess the job Treliving has done in Calgary, we are coming to a point where we have to ask the question.

Has he done a good job? Has he made the Calgary Flames better? Is he a good judge of character and talent? Is he a good negotiator? When Treliving took over the Flames on April 28, 2014, he took over a salary cap friendly team with a youthful core already in place. That core was Sean Monahan, Johnny Gaudreau, Mikael Backlund, TJ Brodie and the veteran Mark Giordano. The facts are, every team in the NHL has a great core of 5 or 6 outstanding players. The Flames core will improve with emerging talent of young players like Sam Bennett and Matthew Tkachuk. Treliving was the GM who selected these players and hopefully the organization will also hit home runs with the likes of young defensemen Rasmus Andersson and Oliver Kylington. Naturally, the GM takes the credit for a good (and bad) drafting record, but really that credit should go to the scouts and director of amateur scouting. So for the sake of this article, we are not going to dissect the draft record of this general manager. The bottom line is, the Flames core is no better or no worse than the 29 other teams in the NHL; it's maybe in the middle of the pack. It's the supporting cast that can make you or break you as a top 10 manager. The Calgary Flames had an amazing first year under Treliving. They made the playoffs and actually won a playoff round, losing to the Anaheim Ducks in the

Flames general manager Brad Treliving is a really nice guy! What's the old saying? Nice guys finish last? players are mentally and physically lazy. At times this season, Hamilton has been demoted to the third pairing and that's not a good bang for the buck when he's making $5.75 million a season. I also find it curious that Freddie Hamilton was acquired by Treliving a few months after the Boston trade and this past year was rewarded with a 2 year, one way contract. Makes you wonder if the brothers were part of a package deal for Dougie to sign in Calgary? Not a lot of people in Boston were shedding a tear when Hamilton was traded and maybe now we know why?

Would Treliving have the confidence (or the stones) to trade the 23 year old defenseman now? It certainly is a hot topic on the rumour mill. Treliving has made some good trades. Sending defenseman Kris Russell to Dallas for Jyrki Jokipakka, prospect Brent Pollock and a 2nd round pick was a solid move for a player on an expiring contract. Sending Jiri Hudler to the Florida Panthers for a 2nd and 4th round pick was also value at the time. The unfortunate thing with Hudler under Treliving's watch, is that he allowed Bob Hartley to take away his "A" and leadership role less than a year after winning the Selke trophy. Hudler was never the same player after that and you have to wonder if it had to do with some lost respect for the organization? Brandon Bollig goes into the bad trade category. A salary dump by Chicago and Calgary was stuck with a slow 4th line player who is now being paid 1.25 million dollars to play in the minors. The jury is still out on the Markus Granlund trade to Vancouver. Hunter Shinkaruk may be a Calgary kid, but for me Granlund gave the team more substance, speed and skill. He wanted to be a difference maker. It's also curious the organization gave up on players like Paul Byron, Josh Jooris and Joe Colborne. Michael Frolik and Troy Brouwer may be sexier names, but they're still role players (not top 6 forwards) making way too much money. After working so hard to get out of salary cap jail, the Flames are once again up against it. Every general manager in the NHL has made his share of mistakes. We all make mistakes. The good GM's are able to limit theirs. Let's not kid anyone - Mason Raymond, Devin Setoguchi, Brandon Bollig, Jonas Hiller, Paul Byron and Nik Grossman have been mistakes. Are the Flames really better off with a supporting cast of Freddie Hamilton, Alex Chiasson, Kris Versteeg, Linden Vey and Hunter Shinkaruk?

Twas the night before Christmas Clement Clarke Moore (1799 - 1863) came from a prominent family and his father Benjamin Moore was the Bishop of New York who was famous for officiating at the inauguration of George Washington. The tradition of reading Twas the Night Before Christmas poem on Christmas Eve is now a Worldwide institution and tradition. It is also a tradition for us to put it in the Christmas Issue of The Newsy Neighbour each year! Enjoy! Twas the night before Christmas, when all through the house Not a creature was stirring, not even a mouse. The stockings were hung by the chimney with care, In hopes that St Nicholas soon would be there. The children were nestled all snug in their beds, While visions of sugar-plums danced in their heads. And mamma in her ‘kerchief, and I in my cap, Had just settled our brains for a long winter’s nap.

And then, in a twinkling, I heard on the roof The prancing and pawing of each little hoof. As I drew in my head, and was turning around, Down the chimney St Nicholas came with a bound. He was dressed all in fur, from his head to his foot, And his clothes were all tarnished with ashes and soot. A bundle of Toys he had flung on his back, And he looked like a peddler, just opening his pack. His eyes-how they twinkled! His dimples, how merry! His cheeks were like roses, his nose like a cherry! His droll little mouth was drawn up like a bow, And the beard of his chin was as white as the snow.

When out on the lawn there arose such a clatter, I sprang from the bed to see what was the matter. Away to the window I flew like a flash, Tore open the shutters and threw up the sash.

The stump of a pipe he held tight in his teeth, And the smoke it encircled his head like a wreath. He had a broad face and a little round belly, That shook when he laughed, like a bowlful of jelly!

The moon on the breast of the new-fallen snow Gave the lustre of mid-day to objects below. When, what to my wondering eyes should appear, But a miniature sleigh, and eight tinny reindeer.

He was chubby and plump, a right jolly old elf, And I laughed when I saw him, in spite of myself! A wink of his eye and a twist of his head, Soon gave me to know I had nothing to dread.

With a little old driver, so lively and quick, I knew in a moment it must be St Nick. More rapid than eagles his coursers they came, And he whistled, and shouted, and called them by name!

He spoke not a word, but went straight to his work, And filled all the stockings, then turned with a jerk. And laying his finger aside of his nose, And giving a nod, up the chimney he rose!

Now you all knew that this would involve making a list. It always does and the truth of the matter is I have found that list making does make your life easier. If I don’t write it down, I will absolutely forget things every single time. I would not survive without all my little lists laying around my house. So, begin with making a list of your top 4 – 5 important things. What’s most important to you? What do you value most? What 4-5 things do you most want to do in your life? Simplifying starts with these priorities; you are trying to make room in your life so you have more time for what you want and love. Forget all the little things that don’t matter. Evaluate your time. How do you spend your day? What things do you do, from the time you wake up to the time you go to sleep? Make a list, and evaluate whether they’re in line with your priorities. If not, eliminate the things that aren’t, and focus on what’s important. Redesign your day. Our work day is made up of an endless list of work tasks. If you simply try to knock off all the tasks on your to-do list, you’ll never get everything done, and worse yet, you’ll never get the important stuff done. Focus on the essential tasks and eliminate the rest.

Am I the only one who starts to feel a little pressurized around the Christmas season? I doubt that I am. Christmas can be a very hard time for some people financially and emotionally, but it can also be fabulous and fantastic. There are different ways to cope in this season of merriment and I am here to tell you there are very simple ways you can simplify your life. First and foremost, start with getting rid of many of the things you do that aren’t a necessity so you can spend time with people you love and doing your favourite and fun stuff. This may sound simple, but let me tell you this is a battle I have been fighting most of my life and I am sure that is true for many people. Getting to simplicity isn’t always a simple process. It’s a journey, not a destination, and it can often be a journey of two steps forward, and one backward. The truth is there are only two steps to simplifying: Identify what’s most important to you, and eliminate everything else. Haha, it sounds so easy!

Learn to say no. This is one of the key habits for those trying to simplify their lives. If you can’t say no, you will take on too much. Stress is often the result of over commitment and schedules that are stretched paper thin. When possible, assert your right to say "no" and politely decline those activities, projects, and extra obligations that clutter up your life and your thinking. Next--this may be a tough one for most of you and I can think of a few in my life who are glued to their cell phones!! who you are. But you MUST learn to limit your communications. Our lives these days are filled with a vast flow of constant communication—email, cell phones, Skype, Twitter, and so much more. It can take up your whole day if you let it. Instead, put a limit on your communications—only do email at certain times of the day, for a certain number of minutes. Limit phone calls to certain times too. Same with any other communications. Set a schedule and stick to it. We all seem to be in such a rush all the time. Try to just relax and learn to drive a little slower. Most people rush through traffic, honking and getting angry and frustrated and stressed out. And endangering themselves and others in the process. Driving slower is not only safer, but it is better on your fuel bill, and can be incredibly peaceful. Put on some music that you love and just be at peace. Give it a try. Our materialistic society today is about getting more and more, with no end in sight. Sure, you can get the latest gadget, and more clothes and shoes. More stuff. But when will you have enough? Most people don’t know, and thus they keep buying more. It’s a never-ending cycle. Get off the cycle by figuring out how much is enough. And then stop when you get there. Plus you end up in debt; nothing complicates our lives quite as quickly as debt. The dark cloud of interest, taxes, and household budgets, stresses families, and often keeps us tied to jobs we hate. Commit to becoming debt-free and simplifying how you approach spending. This is an easy one for me because I LOVE to cook. Cooking is creative and fun and “The Newsy” is always full of wonderful recipes. You can make it easy by creating a simple weekly dinner menu. If figuring out what’s for dinner is a nightly stressor for you or your family, just consider creating a weekly menu. Decide on a week’s worth of simple dinners, set a specific dinner for each night of the week, go grocery shopping for the ingredients. Now you know what’s for dinner each night, and you have all the ingredients necessary. No need for difficult recipes, just have a fabulous time together creating. And eat healthy natural foods. You may even consider making a double batch. The next time you fire up the stove or oven to cook your favourite meal, consider making double. If the menu is freezer-friendly, store it for a later date. If not, you've got a pre-made lunch for the next day!

An update on the Bovine Tuberculosis Outbreak By now you have probably heard about the outbreak of Bovine Tuberculosis (TB), causing concerns for many. This is cause of great concern to me, and I have been fighting to get answers from the government on what sort of relief can be expected in the short term. I have now asked 3 questions of the government on this issue in the House of Commons.I also had the opportunity, at a special meeting of the House of Commons Agriculture Committee, to question our ranchers on how the crisis is affecting them at a special meeting of the House of Commons Agriculture Committee. I have spoken to the Ministers of Agriculture and Health, and have written them letters seeking further clarity. Unfortunately, the government, as well as the Canadian Food Inspection Agency (CFIA) are staying tight lipped. I have been told to simply refer concerned parties to the CFIA website for updates. What I have made clear in my questions asked in the Commons, and in my written correspondence as well as face-to-face conversations with the Ministers, is that simply referring people to a government website is not good enough. It’s not good enough that our hard-working farmers and ranchers are being left in the dark, and that the government doesn’t have any further answers to offer. I have asked about compensation for those farm and ranch families that will be stuck with cattle they had no intention of keeping

over the winter. As I have stressed, these families get 1 payday a year, before the winter months descend upon our region. These families will need to pay for special feed, they will need to pay for extra lodging for this cattle over the winter months. This could cost farmers and ranchers tens of thousands of dollars, all because they are under CFIA quarantine. Some ranchers must foot the bill for months, for animals that are designated by CFIA to be euthanized, with no opportunity to recover money from cattle that would have been sold. As your representative in Ottawa, I will continue to fight for answers for all affected by the Bovine TB crisis. On another note, Bill S-223, a much-maligned law sponsored by now retired Liberal Senator Céline Hervieux-Payette on fireams, was dropped from the Senate order paper. This means that it is no longer on the agenda.

We are looking forward to seeing everyone on December the 3rd for the LCA Christmas Carnival or at the local school Christmas concerts. We are also excited about the Newsy Neighbour Best in Business Awards! This event was so successful last year and with our economic downturn, it has never been more important to support our local efforts to shine light on our incredible local businesses. These are the job creators. Our provincial government does not seem to comprehend the immense contribution of these small businesses. I have been a small business owner for most of my adult life. It has brought me into my community in a deeper and more meaning way. As a result of supporting local business, we see more volunteers, more contributors to local decision making, community outreach, and community accountability. When you provide a good or service to people who live in your community, word of mouth is a powerful tool and keeps businesses progressing and finding ways to improve and provide for our communities. We are very proud of our local businesses and the wonderful communities that support them and remove barriers to success. We will continue to press the provincial government to understand and stop penalizing Albertans for wanting to be successful by a job-killing carbon tax, increased minimum wage, and anti-oil activists who are being paid to participate in panels that actually want to keep our oil in the ground and stop pipelines. The Kinder-Morgan pipeline is scheduled for approval in early December, so hopefully that will be

a wake-up call to the government of Alberta. You may want to keep an eye on three Bills that are before the Legislature. Bill 21, the Modernized Municipal Government Act, is a huge bill that really should be separated into about 20 Bills. It will govern the powers and relationships between the Provincial Government and Municipalities like Rocky View County and will directly affect your life. Please contact my office and Rocky View Councillors if you have any questions. Bill 25, the Oil Sands Emissions Act, puts a 100 megaton cap on CO2 emissions from the oil sands. This Bill really should be called the “Export Our Jobs And Prosperity To Foreign Jurisdictions That Have Lower Environmental Standards Than We Do Act”. We are trying to get this Bill sent to Committee for further study but we are not hopeful. One issue: the Government has granted leases to more projects than will fit under the cap. Are we going to have to pay these people? The NDP won’t say. Bill 27, The Renewable Energy Act, seeks to mandate that 30% of Alberta’s power will come from renewables by 2030. Given the disaster in Ontario with their Green Energy Program we are seeking to have this bill referred to committee also to examine exactly how they are going to do this. Again, we’re not hopeful and all I can say is hold onto your wallets, folks. That hand reaching into your pocket belongs to the NDP Government. As November draws to a close, let me wish all of you an early Merry Christmas in the company of friends and loved ones. The majority of them will at least contemplate whether or not it would be safe for them to drive home, but the fact is that it is never safe to drive when you are intoxicated. Even if you are only slightly buzzed, your reflexes will be stunted and you will present a danger to other motorists and yourself. You Could Lose Your Job - A DUI conviction can cause you to lose your job, especially if you are required to drive as a condition of your employment. Not only will you be dealing with exorbitant legal fees, but you might have to do so without being employed. This scenario could ruin your financial life and cause you to file for bankruptcy. Your Insurance Rates Will Go Up - Most insurance companies have a clause that allows them to either raise your rates or cancel your policy if you are convicted of a DUI. If you lose your policy, then it will be extremely difficult to find a new insurance company that is willing to sign you to a new one. Staging Your Home 101 Hi all… I’m sitting in Strathmore show home today and felt inspired to create a new blog post affectionately called, “Staging Your Home 101.”

Today’s topic is… making your bed

The inspiration came while I was making my bed this morning with help from my hubby, Phil. It’s funny - some of us were raised to make our beds the moment our feet hit the floor in the morning and then some of us were never encouraged to make our beds at all. I was raised to make my bed every day in the morning when I got up, a routine that I easily continued into adulthood. Great studies have shown that having routines in the morning, like making your bed, are very good for our health.

My first recommendation is to use your favourite bedding to help form and maintain this great habit. If you don’t have favourite bedding, do yourself a favour and go buy some… and you don’t have to spend a lot of money. Discount stores are great places to shop! Now take that freshly washed fitted sheet and put it onto the mattress. The flat sheet comes next and is optional, but if you use one, put it over the top of the fitted sheet and tuck it into the bottom end of the mattress nice, neat and tight (where your feet go). Throw the duvet (that big blanket thing) over top of all of this, and spread it out to cover the whole top of the bed with the edges draping over. I like to then go back to the top of the bed and pull the flat sheet and the duvet cover back in half and flatten it out. This will expose some of the fitted sheet and is a perfect place to add all of your pillows. Place your night pillows (the ones you use every night) closest to the headboard. Next, cover these pillows with 2-3 decorator euro shams (A sham is a pillow cover covering a pillow… we also call them pillow cases). The next layer to add in front of euro shams are two regular sized shams. You can then finish off by adding a cute little decorator pillow, and sometimes for fun, add in a coordinating pop of colour - easy peasy!

TURKEY – (My Favourite Food Group) I love turkey soooo much and that is a very good thing because it is good for you! We all knew it was a rich source of protein but skinless turkey is also low in fat. The skin, though, is my favourite part—succulent, juicy, crunchy skin. And I only eat it twice a year—if I can get to it before my children do! White turkey meat is lower in kilojoules and has less fat than dark meat. A typical turkey consists of 70 per cent white meat and 30 per cent dark meat and is a source of iron, zinc, potassium, phosphorus, vitamin B6 and niacin, which are both essential for the body's energy production. Regular turkey consumption can help lower cholesterol levels. The meat is low-GI and can help keep insulin levels stable. It contains the amino acid tryptophan, which produces serotonin and plays an important role in strengthening the immune system. It is also a source of selenium, which is essential for thyroid hormone metabolism and it also boosts immunity and acts as an antioxidant. I was thinking of changing up my stuffing this year and found this most marvelous recipe I want to share with you. Enjoy your Christmas turkey—you are going to love this recipe. Gobble-gobble.

Holiday Turkey With Rice Stuffing & Gravy With Fresh Herbs

Please read entire recipe before shopping or beginning. 12-15 lb fresh organic, or free-range turkey (do not use self-basting turkey)

1 medium green apple, diced about 1/4 inch pieces 4 medium cloves garlic, minced 1/2 cup chopped walnuts 6 dried apricots, coarsely chopped 1/2 cup raisins 1/2 cup chopped fresh parsley 2 tbsp chopped fresh sage (or 2 tsp dried sage) 3 tbsp chopped fresh thyme (or 1 Tbsp. dried thyme) 1/2 tbsp fennel seeds 1/2 cup + 1 Tbsp. chicken broth salt and black pepper to taste Optional: cook liver for 10 minutes with gravy ingredients, remove from heat, chop and add to stuffing mixture.

Gravy:

6 cups chicken broth 2 large carrots, chopped in large pieces 2 medium onions, cut into large pieces 2 celery sticks, cut into large pieces neck, wing tips and giblets from turkey 1/3 cup flour mixed with water 1 tbsp

Stuffing:

Bring 3-1/2 cups of lightly salted water to a boil. While water is coming to a boil, rinse the wild rice under running water in a strainer. When water is boiling add both wild and brown rice, cover, turn heat to low and cook for about 45 minutes, until tender. Do not overcook. You will most likely have excess water when rice is cooked properly. Put cooked rice in a strainer and drain out excess water. Set aside in a large enough bowl to mix everything together. Heat 1 TBS chicken broth in a large stainless steel skillet. Sauté onion in broth over medium heat for 5 minutes. Add mushrooms and celery and continue to sauté for another 2-3 minutes. Mix all the stuffing ingredients together in bowl and season with salt and pepper. Always stuff the turkey just before roasting—never ahead of time—to avoid the growth of harmful bacteria. Have the stuffing hot and pack it loosely in the body cavity.

Right before roasting the turkey, stuff it loosely with the stuffing. Cut about 48 inches of heavy kitchen twine. Truss the turkey by first binding the legs together with the center of the length of twine. Run the twine along the sides of the turkey toward the neck tightly holding the wings to its sides with the twine. Cross the twine around the neck end of the bird and back to the legs. Loop around legs and tie a knot. Rub the turkey with a little salt and pepper. Place turkey breast side down on a flat or V-shaped rack in roasting pan. Make sure you use a rack inside the roasting pan. Otherwise the skin may stick to the pan and tear. Add a cup of chicken broth to the bottom of the pan. Roast breast side down, basting about every 30 minutes with the pan juices for about 2-1/2 hours for a 12-15 lb. turkey. Bring turkey to the top of the stove, turn it to its back and remove the trussing twine. This will now allow the inside of the legs to brown along with the rest of the turkey. Baste again, and return to the oven. But first, check the breast for doneness by inserting an instant reading thermometer at the thickest part of the breast toward the neck. This will give you an idea how much longer the turkey will need to cook. It should read about 125°F (52°C) at this point. When the thermometer reads between 165°F and 170°F (74-77°C) in the thickest part of the thigh the turkey is perfectly done. Check the stuffing by inserting the thermometer into the center of the cavity. The stuffing should read 165°F (74°C) to be done. If it has not reached this temperature, you should remove it from the turkey and finish cooking it in a baking pan on its own. It's important the stuffing reaches this temperature to be safe to eat. Check the thighs for doneness. Remove your turkey to a platter, but don't carve it for at least 20 minutes.

Gravy:

Simmer all the ingredients except oat flour, thyme, rosemary, salt, and pepper for about 1 hour on medium heat. Strain and discard solids. Heat 1/4 cup broth in a stainless-steel skillet. Whisk in flour a little at a time to incorporate. Using a wire whisk, add the rest of the broth a little at a time on

low heat. Keep whisking to avoid lumps until all the liquid is incorporated. Add rosemary and cook for another 20 minutes on low heat, stirring occasionally. Season with chopped thyme, salt, and pepper. Recipe from whfoods.com
