IT CAME UPON A MIDNIGHT CLEAR

It came upon the midnight clear, That glorious song of old, From angels bending near the earth, To touch their harps of gold: “Peace on the earth, goodwill to men From heavens all gracious King!” The world in solemn stillness lay To hear the angels sing.

GRANDMA GOT RUN OVER BY A REINDEER

Grandma got run over by a reindeer. Walking home from our house Christmas eve. You can say there’s no such thing as Santa, But as for me and grandpa we believe.

She’d been drinking too much eggnog, And we begged her not to go. But she forgot her medication, and she Staggered out the door into the snow. When we found her Christmas morning, At the scene of the attack, She had hoof-prints on her forehead, And incriminating Claus marks on her back.

Now we’re all so proud of grandpa, He’s been taking this so well.

See him in there watching football, Drinking root beer and Playing cards with Cousin Mel. It’s not Christmas without Grandma, All the family’s dressed in black And we just can’t help but wonder: Should we open up her gifts, Or send them back? Send them back!!

Now the goose is on the table

And the pudding made of fig And the blue and silver candles That would just have matched The hair on grandma’s wig.

WALKING IN A WINTER WONDERLAND

Sleigh bells ring, are you listening, In the lane, snow is glistening

A beautiful sight, We’re happy tonight. Walking in a winter wonderland.

In the meadow we can build a snowman, Then pretend that he is Parson Brown

When you’re in town. Later on, we’ll conspire, As we dream by the fire

Holiday Baking Pointers

The holiday season is steeped in tradition. Baking is one tradition that comes with the holiday territory. Many people may only bake in November and December, so it’s understandable if they’re a little rusty come the holiday season. These baking tips can lead to successful yields of cookies, cakes and other holiday treats.

Follow the recipe carefully

When cooking, it is easy to add an extra dash of this or a pinch of that. But baking is a science and the ingredients are used in a ratio to produce a desired chemical reaction while cooking. To ensure success, do not substitute ingredients unless the recipe tells you how to do so, and measure each addition carefully.

Spoon out your measurements

It can be tempting to dig a measuring cup right into a bag of flour, but scooping packs the ingredients down — potentially causing you to use more than the recipe calls for. Instead, spoon the flour into your measuring cup gently and use a straight edge to level it out. Even better, use a scale and metric measurements to ensure exact amounts of wet and dry ingredients.

Read up on temperature

Certain ingredients, like butter and eggs, are temperaturedependent. Cold butter in biscuits helps them to rise up flaky and delicious. Eggs brought to room temperature enable the emulsification process to work more readily. The difference in temperature can mean a completely different chemical reaction, so follow the recipe accordingly.

Calibrate the oven

Purchase an oven thermometer, set your oven to 350 F, the standard baking temperature, and see what the thermometer reads. If it is different, adjust cooking times accordingly or have the oven repaired. Cooking at the wrong temperature might mean the recipe doesn’t turn out right.

Use unsalted butter

Most recipes will call for unsalted butter so you aren’t adding

Position pans centrally

Pans should be on the center rack of the oven. If the oven isn’t wide enough to put multiple pans side by side, place them on different racks and slightly offset them to enable air circulation.

Use parchment paper

This unsung hero of baking can keep cookies from spreading out on baking sheets, prevent cakes from sticking to pans and may even help batter and dough bake evenly.

Flip cakes

Cool cakes upside down on a cooling rack. This will help flatten out the tops, which makes it easier to stack and level cakes for layered cakes.

A few tips can go a long way to helping holiday baking go more smoothly.

First Christmas

This day a year ago, he was rolling in the snow

With a younger brother in his father’s yard

Christmas break, a time for touching home,

Mamere’s Christmas Jeweel Cake

2 cups Graham Cracker Crumbs

½ cup butter, melted and cooled.

Mix crumbs with melted butter and press smoothly on bottom of a 9”X13” pan. Bake at 350 F for 10 minutes and let cool. Set aside about ½ cup to sprinkle on top.

1 pkg. (3 oz Each:) Orange, Cherry, Lime Jello

3 cups boiling water

¾ cup cold water.

Prepare 1st 3 packages of jello separately with 1 cup hot and ¼ cup cold water in each. Dissolve jello thoroughly. Chill until rm.

Combine 1 cup pineapple juice

And ¼ cup sugar in saucepan heating to boiling. Remove from heat and dissolve 1 pkg. 3 oz lemon jello with ½ cup cold water. Chill until syrupy. Whip 2 cups heavy cream and fold into syrupy lemon jello. Stir well. Cube 3 remaining jellos and fold into the cream . Spread onto crumbs and chill 8 hours.

Add flour and beat well Make into cookies

Bake at 325 for 20 minutes

30 large marshmallows

½ cup butter

2 ½ cups cornflakes

1 cup shredded coconut

½ cup slivered almonds

Melt marshmallows and butter over low heat

Add cornflakes, coconut, and almonds – mix well

Press into an 8x8 greased pan

Chill well

Dill Devilled Eggs

ingredients

6 hard-cooked eggs, peeled

1/4 cup mayonnaise

1/2 teaspoon Dill Weed

1/2 teaspoon Ground Mustard

1/2 teaspoon Parsley Flakes

1/4 teaspoon Salt

1 small dill pickle , thinly sliced

· Slice eggs in half lengthwise. Remove yolks; place in small bowl. Mash yolks with fork or potato masher.

- Stir in mayonnaise, dill weed, mustard, parsley and seasoned salt until smooth and creamy. Spoon or pipe yolk mixture into egg white halves. Top each with a pickle slice.

- Refrigerate 1 hour or until ready to serve

1 c. shortening

½ cap vanilla

Roll in ball. Pat down with oured fork. Bake at 350F 8 - 9 minutes

Jumbo Raisin Cookies

2 cups Sunmaid Raisins

2 cups water

Wash raisins, add water and boil for 5 minutes. Set aside and cool

Cream:

½ cup butter and ½ cup margarine

2 cups brown sugar

3 eggs

1 tsp vanilla

Beat butter and sugar well. Add one egg at a time and beat in until fluffy. Add vanilla. Add cooled raisins (juice and all) mix well.

Sift together:

4 cups all-purpose flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

1 ½ tsp cinnamon

¼ tsp nutmeg

¼ tsp. allspice

Add to raisin mixture, one cup at a time. Dough should be sticky. Drop by teaspoonful on slightly greased cookie sheets. About ¼ cup each. Bake at 375 degrees for 12 to 15 minutes. Makes 5 dozen cookies.

Leftover Ham & Cheddar Scalloped Potatoes

� cup (4 tablespoons) butter�

2 cups whole milk or cream�

2 teaspoons minced garlic�

1 teaspoon salt�2 lbs.

Yukon gold potatoes, peeled and thinly sliced*�

1 cup (4 ounces) grated cheddar cheese�

1 � cups (about � ounces) cooked, diced ham�

Garnish: fresh chopped chives, green onions, or parsley

Preheat oven to 400F (200C). Spray an 11 x 7-inch baking dish with cooking spray and set aside.

In a large pot, melt butter over medium-high heat. Whisk in milk, garlic, and salt. Add sliced potatoes. Bring to a boil, reduce heat to medium-low, and cook (uncovered) for about 15 minutes (or until potatoes are tender). Gently stir the potatoes periodically as they cook. The sauce thickens as the potatoes cook! Add the ham to the potato mixture. Spoon into prepared baking dish. Sprinkle with grated cheese.

Bake for 20-25 minutes, or until golden brown. Let stand for 5-10 minutes before serving.

Dill Fish Crackers

Ingredients

1 (1 ounce) packet ranch mix

1/4 cup vegetable oil

2 teaspoon dried dill weed

1/2 teaspoon garlic powder

12-16 ounces cheesy crackers

Instructions

Preheat oven to 250°F

In a large bowl, mix together ranch, dill, garlic and oil. Toss crackers in seasonings and spread in a rimmed baking sheet.

Bake for 15 minutes, stirring half way through. Cool completely before storing in an airtight container.

These make great homemade gifts for the holiday season.

Baba’s Shortbread Cookies

Ingredients

1 1/2 cup butter (not margarine)

1 1/2 cups brown sugar

2 eggs

1 tsp. cream of tartar

1 tsp. baking soda

3 1\2 cups flour

Beet buttered sugar well. Add eggs and beat again. Mix together the last three ingredients and add to butter mixture.

Use cookie cutter and top with red or green cherries before baking.

Bake at 350 for 10-15 minutes only until light brown. Delicious!

1 ½ c. graham wafer crumbs

2 c. icing sugar

1 c. peanut butter

Mix together and spread on cookie sheet and chill.

Melt: 1 c. chocolate chips and 1 Tbsp. margarine

2 c. our 1 tsp. soda

1 tsp. cream of tartar

½ c. each of brown and white sugar

1 egg

1 c. shortening

½ cap vanilla

Roll in ball. Pat down with oured fork. Bake at 350F 8 - 9 minutes

Chocolate Marshmallow Cake

12-16 pieces

½ cup butter (no substitutes)

2 – 1 ounce squares unsweetened chocolate

1 cup all-purpose our

½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

2 eggs

1 cup unsweetened apple sauce

1 tsp vanilla

1 pack mini marshmallows (divided)

Glaze

½ cup sugar

2 tbsp milk

2 tbsp butter

¼ cup chocolate chips

In a double boiler melt butter and chocolate. Cool for 10 min.

Combine the our, baking powder, soda and salt

In another bowl beat eggs, sugar, applesauce and vanilla. Stir in chocolate mixture. Add dry ingredients and mix well

Pour into greased 13 X 9 X 2 baking pan.

Reserve ½ cup marshmallows

Sprinkle remaining marshmallows over cake. Return to oven for 2 minutes

In a saucepan combine glaze rst 3 ingredients. Boil for 1 minute. Remove from heat add chocolate chips and marshmallows until melted.

Quickly drizzle over cake. Enjoy

Warm Up With a Rich Chocolate Beverage

Nothing beats sipping a hot, soothing beverage after a day of choosing the perfect Christmas tree or lobbing snowballs in the backyard. Teas, hot toddies, coffees, and mulled ciders certainly can fit the bill, but a mug of rich hot chocolate is a holiday season staple. Hot chocolate can be whipped up quickly from premade packets, but many such packets are loaded with sugar. Chocolate lovers should have a reliable hot chocolate recipe to lean on when the moment is right. This recipe for “Real Hot Chocolate” from “Chocolate” (Parragon) by the editors of Love Food is sure to please.

Real Hot Chocolate Serves 1 to 2

11⁄2 Ounces semisweet chocolate, broken into pieces 11⁄4 Cups milk

Chocolate curls to decorate

Place the chocolate in a large, heatproof pitcher. Place the milk in a heavy-bottom saucepan and bring to a boil. Pour about one-quarter of the milk onto the chocolate and leave until the chocolate has softened. Whisk the milk and chocolate mixture until smooth. Return the remaining milk to the heat and return to a boil, then pour onto the chocolate, whisking constantly. Pour into warmed mugs or cups and top with the chocolate curls. Serve immediately.

Christmas Punch

Ingredients

· 1 orange sliced

· 1 cup cranberries

· 1/2 cup pomegranate seeds

· 2 cup cranberry juice

· 2 cups orange juice

· 1 cup pomegranate juice

· 2 cups Gingerale or Sprite

· 1 cup white rum optional

· Rosemary for garnish

· Ice

Instructions

1.Combine all ingredients in a large pitcher or punch bowl over ice. If using a really large punch bowl, you can double the recipe.

Notes

·This punch can be made ahead of time, but don't add the ice or soda until just before serving so as not to dilute or lose its zz.

·You can sub the lemon-lime soda for ginger ale.

·You can add lemon and limes slices as well.

·Keep alcohol on the side for guests to add their own and keep the punch itself kid-friendly.

Strawberry Pretzel Dessert Squares

2 cups nely crushed pretzels

1/2 cup sugar, divided

2/3 cup butter or margarine, melted

1-1/2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese (12 oz.), softened

2 Tbsp. milk

1 cup thawed COOL WHIP Whipped Topping

2 cups boiling water

1 pkg. (6 oz.) JELL-O Strawberry Flavor Gelatin

1-1/2 cups cold water

4 cups fresh strawberries, sliced

Heat oven to 350°F.

Combine pretzel crumbs, 1/4 cup sugar and butter; press onto bottom of 13x9-inch pan. Bake 10 min. Cool. Beat cream cheese, remaining sugar and milk with mixer until blended. Stir in COOL WHIP; spread over crust. Refrigerate until ready to use.

Add boiling water to gelatin mix in large bowl; stir 2 min. until completely dissolved. Stir in cold water. Refrigerate 11/2 hours or until thickened. Stir in berries; spoon over cream cheese layer.

Refrigerate 3 hours or until rm.

Festive Salad Bowl l

2 quart clear salad bowl

1 medium head iceberg lettuce, chopped

1 cup celery, diced

½ cup green onion or white or red

1 cup green or/and red peppers, diced

½ red onion, cut in slices, place along side of bowl

Carrots, cauliflower, optional

1 ½ cups frozen peas, rinsed to remove frost

1 cup miracle whip

1 cup sour cream

2 tbsp sugar

½ tsp celery salt

Place ingredients in layers into bowl. You can use your own creation of veggies

Stir together the miracle whip, sour cream and celery salt. Spread over the layered vegetables. Refrigerate overnight. Sprinkle with grated cheddar before serving. Serve with tongs dipping in the middle first to distribute the dressing.

NOTE: Use your own creation of veggies to suit the occasion over top of the lettuce Christmas – Reds and greens

RUDOLPH, THE RED-NOSED REINDEER

Rudolph, the red-nosed reindeer had a very shiny nose. And if you ever saw him, you would even say it glows.

All of the other reindeer used to laugh and call him names. They never let poor Rudolph join in any reindeer games.

Then one foggy Christmas Eve Santa came to say: “Rudolph with your nose so bright, won’t you guide my sleigh tonight?”

Then all the reindeer loved him as they shouted out with glee, Rudolph the red-nosed reindeer, you’ll go down in history!

Best Ever Meatloaf

Ingredients

2 eggs

1 onion chopped

2/3 cup milk

1 c. shredded cheddar cheese

3 bread slices

2 tsp. salt

½ cup raw carrot

¼ tsp pepper

1 1/2 lbs ground beef

¼ c ketchup

¼ cup br sugar

1 TBSP prepared mustard

Instructions

Break eggs in large bowl and beat with fork. Add milk, salt, pepper and bread crumbs. Beat until bread disintegrates, add onions, carrots, cheese and beef. Mix well. Put into loaf pan. Combine brown sugar, ketchup mustard in a small bowl and spread over meatloaf. Bake in oven at 350 for 1 ½ hours. Let stand for 10 minutes.

1 ½ lbs. hamburger

1 med. white onion diced

2 tsp. minced garlic

1 28 oz can diced tomatoes

1 can tomato soup

4 c. beef broth

2 bay leaves

1 tsp. thyme

2 c. frozen mixed veg.

½ tsp sugar pepper

2 c. uncooked macaroni

Fry beef and onions together until beef is cooked and onions are translucent. Add garlic and fry until brown. Drain fat and place in crockpot.

Stir in tomatoes, soup, broth, bay leaves, thyme, frozen veg, sugar and pepper.

Simmer on high 4 -5 hrs.

Before serving cook macaroni. Drain and add to soup. Remove bay leaves and serve. Yummy!!
