Summertime In the LHV

5 Reasons Your Diet Doesn't Work 1.

It's not you who has failed the diet, it's the diet that has failed you... it's a not sustainable diet! Too many drastic changes happening too quickly will cause you to make one wrong move & quit. 2. You are viewing it with a "start" and "end" date. You need to find something that will work for life, not a temporary band aid. 3. You are cutting out way too many food groups -- gone are the days of keto, drinking juice for all of your meals, & keeping your calorie intake under 1000. Stop looking for the quick fix and start making permanent changes. 4. If you cannot see yourself doing it for 3 years, don't give that 'diet' 3 minutes. 5. It starts with your mind - changing your mindset around food is the first step in seeing longterm success

Summer is in FULL SWING... I hope you are enjoying the warm weather, friends, family, water sports, picnics, and more! BUT, there is one thing that should remain in focus all year long... and that, my friends, is BALANCE. Trust me when I tell you, that you can enjoy your life WHILE losing weight & feeling great about yourself. Here is another bomb drop --- I've got a program that you can lose the stubborn 'lbs' and exercise is considered "extra credit"!... meaning, the program guarantees results without lifting a single weight OR doing an ounce of cardio. If you're tired of your own excuses, let's connect... head to my interest form, fill it out, and we will discuss your roadblocks, concerns, hesitations, etc. & get you set up for success. It starts with YOU! Let's gooooo! https://www.cassilelkofitness.com/customerinterest In Good Health,

Grilled Scallops & Tomato Vinaigrette

INGREDIENTS Scallops

By Kyle Naylor Rum Runnas/the indie Podcast

1 pound scallops, patted dry 2tbs olive oil to coat Recipe and Photo Credit: Sylvia Fountaine Author of Feasting at Home

salt & pepper to taste 2tsp orange zest 2 garlic cloves, minced 1/2 tsp coriander Tomato Vinaigrette

DIRECTIONS

SERVES 3-4

don't be so shellfish? Scallops: Soak your skewers if they are wood, to prevent burning. In a bowl add scallops, seasonings, and aromatics. Mix

1 cup ripe cherry tomatoes

and combine well. Let marinade in the fridge for at least 15

1/4 cup olive oil

minutes. Make the vinaigrette while the scallops marinate.

3 tablespoons red wine vinegar Skewer and grill 2-3 minutes per side or until they are cooked 2 teaspoons honey 2 tablespoons shallots 1–2 garlic cloves 10 basil leaves Salt & Pepper to Taste

through and you have some beautiful grill marks. Vinaigrette: In a dry pan, begin charring your tomatoes watching to make sure they do not pop. When they are soft and black spots begin to form, take them off the heat. Add them along with other ingredients in a blender and combine until nearly smooth. If the dressing is to thick, slowly add more oil until you reach a consistency you prefer. Serve: Top with vinaigrette and serve with salad or your favorite grilled veggies!

The Salty Dog

4 oz. Gin or Vodka 6 oz Grapefruit juice Salt for the rim Simple syrup Lime/Grape Fruit wedge Ice Makes 2 Servings

Start by chilling 2 highball glasses. In a cocktail shaker add ice, gin, juice, and simple syrup. Shake until thoroughly combined. Using a wedge of lime or grapefruit, go around the rim of your glass, then gently dip the rim into your salt. Add ice to the glass and pour in your cocktail. Garnish with a lime, grapefruit wedge, and umbrella. Optionally, top off with your favorite lemon-lime soda or seltzer.

The salty dog is a cocktail you may have never heard of. It's a classic, but under-appreciated bright and refreshing cocktail. Great for relaxing by the pool in the summer heat. Originally created as a twist on the Greyhound by George Jessel who added a salted rim and threw in some grapefruit juice to create an iconic summer drink.

34

HOMEMADE GRENADINE

Contrary to what most people think, Grenadine is not made with cherries. In fact the name itself comes from the French "grenade" which translates to pomegranate. And that is because everyone's favorite cherry syrup is actually made with pomegranates.

450ml (16oz) pomegranate juice 225ml (8oz) demerara sugar 3–4 orange peels To make your own, mix pomegranate juice and sugar in a sauce pan over medium-high heat. When the sugar is fully dissolved, express the oils from the orange peels and add to the syrup. Remove from the heat and allow to fully cool before removing the orange peel.

Store in the fridge for up to 1 month and make sure to add it to your favorite cocktails and mocktails. Make a killer tequila sunrise or a refreshing Shirley Temple.

Cooking With Kids

Mini Blueberry Galettes

So you took the kids berry picking and now you have bushels and bushels of blueberries that you have to use before they go bad. Mini Blueberry Galettes are the perfect way to get the kids busy in the kitchen and avoid waste. Tired out kids and a delicious dessert where's the bad?

Ingredients 1 package store-bought pie crust 2 c. blueberries 1/4 c. sugar, plus extra for sprinkling 2 tbsp. cornstarch 1 lemon 1 tsp. vanilla extract Pinch of salt 1 whole egg 1 tbsp. water Whipped cream

41

Get Cooking

Preheat oven to 425 degrees. Now it's time to get the kids' hands dirty. In a bowl, have them take turns adding the blueberries, sugar, cornstarch, lemon zest, lemon juice, vanilla, and salt. Let the most gentle one mix until combined (don't want to pop too many berries) or take turns. Unroll the pie crust and, keeping an eye on them, cut out 5 inch rounds by tracing a knife along the edge of your round bowl. You should be able to get about 3 rounds from each sheet of dough. If you have some left over dough that is not enough to roll out for another round try twisting them into snakes and coating with cinnamon sugar to bake along side your galettes. Transfer dough to a parchment-lined baking sheet evenly, then allow them to distribute the berry mixture on each round (this is when they begin to claim which one they want). Gently fold the edges over, folding the dough in on itself (this is a part mom and dad might need to help with). Make an egg wash and allow the kiddos to brush it over the crust before sprinkling w/ sugar. Bake for 15 minutes or until brown. Remove and allow to cool for 5 minutes. They are best served warm with some ice cream and a dollop of whipped cream!
