Pat's Pizza & Bistro in Bethlehem opened in 2018 and ever since then business has exploded! Owner Yiannis Kyziridis says "At Pat’s Pizza & Bistro, you can enjoy unique pizzas, salads and more made with “clean ingredients” whenever possible, “The food’s as natural as it gets". Even with the chicken fingers, which most restaurants will use already breaded [and] frozen, we egg batter the chicken and then dip it into panko breading.” The artisanal Roman-style, thin-crust pizzas, for example, feature dough made with all-natural flour, high-quality cheeses free of anti-caking agents and sauce made from Italian-imported, steam-peeled San Marzano tomatoes, containing no preservatives. Recently Pasta Flights have been a HUGE hit at Pat's, Pictures of them have been popping up all over social media.

Sleep deprivation can affect your psychological state and mental health. Developing a sleep routine, turning off electronics one hour prior to sleep, and avoiding caffeine and sugary snacks before bedtime can greatly improve your sleep.

Chef Spotlight Mike Pichetto | 3rd & Ferry Fish Market

The son of two small business owners from Dumont, NJ, Mike, along with his wife Rebecca, moved to Easton nearly 20 year ago to put down roots. His professional life up until then had largely been influenced by his time working his way up within the kitchens of Marriott Hotels. During his twelve year tenure at Marriott, he worked at various properties and had the opportunity to cater to tens of thousands of guests. He was eventually promoted to Senior Sous Chef at the Bridgewater Marriott and met his future wife, Rebecca.

In 2004, Mike was presented with an opportunity to open his own restaurant and catering facility at Morgan Hill Golf Course in Easton, PA with Rebecca and they made the decision to take on this endeavor together. Their venture was successful and Mike was Executive Chef/Owner at Vintage Restaurant & Bar for 10 years until closing its doors due to the sale of the golf course. During that time, the couple launched their 2nd venture, Thyme Restaurant and Bar at Architects Golf Course in Alpha NJ for a 2-year run, were married and began a family. Sensing opportunity for growth in downtown Easton, and also eager to own his own real estate, Mike was able to purchase the former Lipkins Furniture building and transform the building back to its former glory through the launch of 3rd & Ferry Fish Market, a seafood restaurant and bar. The restaurant is currently in its 8th year of operation. Community service has long been a core value for Mike, and he was able to launch an annual dinner for the needy population in Easton in addition to many fundraising events to benefit the State Theater and various other city charities. The pandemic has been an unprecedented challenge for the restaurant industry, and Mike’s creativity, work ethic and persistence have been on display as 3rd & Ferry needed to morph many times to support employee and community needs. Next up for Mike will be Rod’s Dogs, a hotdog stand located in the Easton Public Market that is dedicated to his grandfather (Rod), who ran a hotdog cart in Clifton, NJ after returning home from WWII. Mike has taken immeasurable pleasure in being a part of Easton’s downtown community and contributing to its renaissance. Mike and Rebecca currently reside in Nazareth, PA and are proud parents to Bobby, Josie and Mikey.

Spicy Crab Chowder INGREDIENTS 2T olive oil

DIRECTIONS

SERVES 4

Dice the bacon ¼”.

Add olive oil to a cold heavy bottomed soup pot Add bacon and cook over medium heat until bacon is crisp and fat has rendered. peel and chop chorizo sausage in the bowl of a food processor. Add Chorizo, onions, celery, potato, spices.

4 slices diced bacon 1/4c chorizo sausage 1/2c white onion ¼” dice 1/2c celery ¼” dice 1 1/2c potato peeled ½” dice

Turn heat to high and Sautee until onions are translucent and sausage renders some of its red colored fat Add clam juice, crushed tomato, paste and chipotle and bring to a boil reduce the heat and simmer for 30 minutes adjust the seasoning with salt and pepper to your taste.

3/4t ground celery seed 1t chopped garlic 1/2t dry oregano

To serve place about ¼# of crab meat into 4 bowls and ladle soup over garnish with thinly sliced scallions and some grilled or toasted bread.

2 1/2c clam juice 1c crushed plum tomatoes with juice 2T tomato paste 1T pureed chipotle 1c crab meat. Salt and pepper to taste

If you love Capri-Sun and have ever thought this would be better with rum, this is the recipe for you. This super sweet cocktail takes a spin on the classic Caipirissima by mixing in flavored rum liqueurs. It makes for a refreshing cocktail great for sunbathing on the beach or lounging at home.

CHERRY FLAVORED RUM FINE SUGAR

2OZ 1TBS

1 LIME QUARTERED CRUSED ICE Muddle quartered lime in a highball glass with the sugar. Add you crushed ice. Pour in you rum and stir. Garnish with a candied lime wheel, and the straw from a Capri-Sun.

This recipe works great with any flavored rum. I've also used mango with amazing sucess!
