SWEET AND STICKY SWEET POTATOES

Sometimes we just need a change from the standard potato. This healthier option fits the bill perfectly.

4 sweet potatoes, peeled and cut into rounds 1 tablespoon cornstarch

1 tablespoon brown sugar ไป– cup orange juice 2 tablespoons lemon juice

Preheat oven to 425. Place potato rounds in 9x13 pan. Combine cornstarch, brown sugar, orange juice and lemon juice. Mix well and pour over potatoes. Bake covered for 1 hour, and then uncover and bake for additional 30 minutes.
