SPIRALIZED CRUNCHIES SALMON This salmon makes for a fun yet dressed-up presentation.

INGREDIENTS 6 slices salmon

CRUNCHIES 2 cups spiralized zucchini 2 cups spiralized spaghetti squash 1 small onion, halved and separated into half rings 2 T. oil Salt, to taste

SAUCE 4 4 4 4 4

cloves garlic, crushed tsp. oil tsp. honey tsp. ketchup tsp. soy sauce

DIRECTIONS 1. To bake the crunchies, spread the spiralized vegetables and onions over two lined cookie sheets. 2. Toss the vegetables with 2 tablespoons of oil and a gentle sprinkling of salt. 3. Bake at 350° for approximately 45 minutes, watching to prevent burning, then shut the oven and allow the vegetables to cool in the oven until they’re crisp. 4. To prepare the salmon, mix the sauce ingredients and pour over the fish. 5. Bake at 375° for approximately 25 minutes, until the fish flakes easily with a fork. 6. Top with crunchies and serve.

Note: The crunchies can also be prepared in a frying pan. To fry, heat 2 inches of oil in a large frying pan. Fry the vegetables in small batches for a few seconds each, and then move them to a paper towel–lined cookie sheet and sprinkle with salt.
