Grilled Salmon Dinner A hearty dinner in 30 minutes — dipping sauce included! Serves 2

Ingredients 6 oz. frozen broccoli, defrosted 2 potatoes 1 sweet potato 2 slices (10–12 oz.) salmon fillet, or fish of your choice

Marinade ½ cup mayonnaise 2 T. honey 1 T. lemon juice 1 tsp. salt ½ tsp. paprika ¼ tsp. black pepper

Directions 1. Plug in the pizza maker to heat. Combine all marinade ingredients. 2. Drain broccoli on a paper towel and dry. Drizzle with 2 to 3 tablespoons of the marinade, tossing to coat well. 3. Peel and cube potatoes and sweet potato. Drizzle with 3 to 4 tablespoons of the marinade, tossing to coat. 4. To butterfly fish as shown: Lay fish skin side down. Cut through the center of each slice lengthwise, cutting the flesh only (and not the skin). Spread fish apart, folding skin in half into the center. Coat with 3 tablespoons of the marinade. 5. Add food to the pizza maker in the following order: potatoes, sweet potato, fish, broccoli. 6. Close the lid and cook for 8 minutes. 7. Flip food and cook for 7 to 10 minutes longer (bringing it to a total cooking time of 15 to 18 minutes). If using another type of fish, you may need to adjust the cooking time. 8. Serve with remaining marinade. Note: Up to three complete portions can fit into the pizza maker at once. To cook for a larger crowd, cook all vegetables first, and then cook the fish.
