Savory Noodle Squares Yields 24 2-inch squares Individual portion-sized sides are convenient, especially when it’s hard to predict, until the last minute, how many people you’ll be hosting. Sauteed peppers give these kugelettes a unique twist of flavor. The silicone pans allow for firm and even baking and prevent an annoying noodle crust, giving these their unsurpassed texture. DIRECTIONS INGREDIENTS 1 pound medium noodles

2 cloves garlic, minced

1 large onion

2½ T. kosher salt

¼ cup oil

½ tsp. white pepper

1 red pepper 1 yellow pepper 1 orange pepper 5 mushrooms

2 T. brown sugar 6 eggs ½ cup oil

1. Cut onion in half. Slice thinly and saute in oil for 15 minutes. 2. Slice peppers into 2-inch strips, dice mushrooms and add to onion. Cook for 20 minutes. 3. Cook noodles and drain, but do not rinse with cold water. 4. Mix with vegetables and rest of ingredients. 5. Bake on 375° for 15 minutes. Cover with foil and lower oven to 350°. Bake for an additional 20 minutes. 6. Turn over pans to remove squares while still hot.
