I can’t believe I am already saying this, dear readers, but welcome to our final issue for 2023. It’s been a tough year for many, but as with any year it’s come with its wins and its losses, its heartache and its joy. As we traverse the next few weeks, I hope you all find some bliss amongst the crazy chaos that is December and that January brings us all some warm, lazy days to enjoy. Our team would like to say a huge thank you to everyone who has contributed to our pages in 2023. To our dedicated column writers, thank you for being so willing to share your valuable knowledge and expertise. Thank you to all the individuals, families and organisations who have allowed us to share their inspirational stories with our readers throughout the year and a big thank you, of course, to our loyal advertisers, who add their own vibrancy to our pages and help us to continue being a valuable source of information and entertainment to this community we love so much. HOW TO SEAL THE DEAL ON ONA AHOME HOMEYOU YOULOVE LOVE

You've seen the home of your dreams and now you want to own it. In this guide, we will run you through the steps to take in order to maximise your chances of securing the keys and making it yours.

Act quickly: There's a good chance if you like this home, other buyers will too, so get things moving as quickly as you can. Check the process. Ask your salesperson: What is the process for buying this home? If it's an Auction, Tender or Deadline Sale, can you offer early? How will offers be handled once they are received? How quickly will they be presented to the sellers? Know the timeframe you are working to. Finance first Notify your bank or mortgage adviser immediately and send them the property info. Do they have any objections to this property? Do you need a finance condition in your offer, or can you obtain unconditional pre-approval for buying this home? Do your research Start by reading through all the information the salesperson has available in consultation with your lawyer. Make a list of the documentation or inspections you still need and order it (or book the inspection) ASAP. Decide if you will add conditions to your offer for any research that will take time. Check comparable sales This is a critical part of the process that many buyers overlook. Researching homes that have already sold will help you make an accurate offer. Ask your salesperson for all sales in the last 12 months in the same suburb (or nearby area) that are similar sized to the home you are buying. Find the closest matches and search for old listing photos online. Decide how they compare to the home you are interested in. Decide on your value range Ask yourself, what is the absolute maximum price I would pay for this home (top of your range), and what price would I love to pick this up for if possible? (bottom of your range). Is your value range realistic with your recent sales research? If not, are you being realistic about what this home should sell for? Find out the owner's timeframe Making the right offer is about more than just price. Find out what kind of settlement date the owners are looking for. Try to align your offer with their ideal date if you can to increase your chances of gaining acceptance. Shoot your shot Ready, set, offer. You've done your research, now it's time for action. Ask your salesperson to prepare the offer document based on the conditions you need. Check it over with your solicitor before you sign. Make your offer price an uneven number just above the closest round figure to make it more enticing. For example, offer $1,201,770 rather than $1,199,500. Find common ground Don't take anything personally in the negotiation phase. Many a real estate deal will fall over at the final hurdle, only a few thousand dollars apart when buyers and sellers decide they won't move another inch, only to lose the home (or the buyer) they've been searching for. Keep negotiations moving, even if you can only move a small amount. Stay patient too, sometimes owners need a little time to consider their options and adjust expectations. Stick the landing Now that your offer has been accepted, it's all systems go to finish your research and confirm your conditions (if any). The key to success in this phase is communication. Make sure your advisers (lawyer, builder, valuer etc) clearly understand your timeframe. Book any inspections immediately, and attend any builder's inspection in person if you can. On that note, it's a good idea to meet with all of your advisers in person, to minimise the chance of important information being buried in an email, or a lengthy PDF report. Final step Once your offer goes unconditional, book your moving truck and advise the salesperson when you expect to be moving into the property. This is also the time to book your pre-settlement inspection - the final check of your new home a day or two before your settlement date. Don't forget to set up utility connections, too! If you follow those steps you can be confident you've done everything possible to secure the home of your dreams. Thanks for reading! Introducing Ingrid Ingrid Boot is an exceptionally talented professional figurative artist who is a local to the Coast and works from her studio in Orewa. Since emigrating from the UK in 2000 she has been exhibiting her work in galleries and shows throughout New Zealand as well as selling her work here and internationally. Her work focuses on feminine elegance and beauty and aims to portray female characteristics, whether that be sensuous, demure, confident or strong, through pose, colour and light. Well known for her very popular stylised Little Ladies, Ingrid has moved to a more representational realistic style as can be seen in her more recent work. She is inspired by vintage Vogue, especially by the fashion photographers of that era and each year Ingrid will work on a theme, often focusing on a certain time period. Last year she concentrated on the 1960s with a ‘retro’ inspired body of work. To create the realism in her work she often requires photographic reference, so she sets up photoshoots, sourcing fanciful outfits and props and often uses a model from the local area.

She also supports local businesses whenever she can, such as The Print Studio and Signpost Signs, as well as Orewa Framing, where her originals and prints are available for purchase. At the beginning of this year she started the Chanel Project, creating a small painting every week featuring a Chanel No. 5 perfume bottle challenging herself to paint it 52 different ways with the aim, as Ingrid says, ‘to learn and grow as an artist by experimenting with other styles and techniques’. Not only does Ingrid find the bottle and its history fascinating, she is also inspired by the story of Coco Chanel herself, who Ingrid views as a ‘very forward-thinking and ground-breaking female designer who would have fit perfectly in today’s day and age’. Alongside continuing to learn as an artist herself, Ingrid is eager to share her passion and help others on their artistic journey. She has created three different art workshops for all abilities that she will be running regularly at her Orewa studio.

The countdown to midnight, 31 December, reminds me of the game Hide and Seek. The steady counting of the seeker punctuates the running footsteps of retreating hiders until the cry is heard, ‘Coming, ready or not!’ Are you a hider or a seeker in the game of life? You may recall in an earlier article I quoted Clayton Christensen, ‘Questions are places in your mind where answers fit. If you haven’t asked the question, the answer has nowhere to go.’ At the beginning of each year, I ask myself, ‘What do I want in life and what needs to happen to achieve it? Asking appropriate questions allows the possible answers to

asking new questions that invite better answers.

In February’s article, I spoke of imagining living your best life. We live our best lives when we intentionally create daily habits and choices to achieve the life we want. ‘If you can get one percent better each day for one year, you'll end up thirty-seven times better by the time you're done.’ James Clear (Atomic Habits) Traveling the best route to get to where we want to go requires constant reviewing. Sometimes we are faced with a direction change in our life due to circumstances we have no control over. Experiencing death, divorce, diagnosis, distancing from loved ones or a disappointing outcome can feel like a major roadblock that prevents us moving forward on the journey. When we view these unexpected happenings as a necessary rerouting of our mind we can accommodate the revised plan for how we thought our life would be.

Sophie and Camryn’s ride to the top Meet Sophie and Camryn, two sisters ready to take on the world one BMX bike ride at a time. Though they may be small in stature their passion for the sport is nothing short of gigantic. Sophie started BMX when she was only six years old and Camryn followed along, joining at the age of five. Now 13 and 9 respectively, the sisters, who belong to the Mountain Raiders BMX Club, have an infectious enthusiasm and joy for the sport, which continues to take them higher and higher. It all started when mountain biking enthusiasts introduced the duo to BMX racing as a way of enhancing their skills. Little did they know that this introduction would spark a deep love for the sport and take them on a thrilling journey that would lead them to the pinnacle of BMX competition. Fuelling their passion for BMX racing is the thrill of competing against friends, the adrenaline rush of navigating track twists and the sweet taste of victory. At the North Islands championships Sophie achieved an impressive victory in her age group and Camryn secured a commendable 5th place, surpassing her previous score and hitting her personal target for the event. These young athletes, are not just chasing dreams but living them, competing all over the country and inspiring the entire community with their infectious enthusiasm in the process. Sophie and Camryn's next big adventure awaits them in South Carolina, where they hope to compete in the world champs. Scheduled for May next year, the competition entail days of rigorous practice before a thrilling day of intense races. The girls are bubbling with excitement as they prepare to represent not just

our community, but the entire nation on the global stage. In the build-up to the worlds in May, Sophie and Camryn have a full race calendar of events, including South Island Titles in Christchurch and Nationals in the Hawkes Bay, as well as lots of training, to be as prepared as possible for the big event. To turn this dream into reality, however, Sophie and Camryn need some help and they are reaching out to their community for support. Win with your food scrap bin Chances are you have now received your new food scrap bin from Auckland Council aimed at providing an easy way to keep food scraps out of our general rubbish and making good use of them. The bins will be collected weekly on the same day as your recycling. Council and Hibiscus Coast Zero Waste are running an initiative throughout the month of December to encourage locals to get in the habit of using the new bins. Community library at Stoney Homestead The team at the Stoney Homestead Community Hub would like to remind locals about their free community library service. Anyone can come along to the homestead to either donate books or to swap their books for something new to read. It is also a great eco-friendly way to bring community members together for a chat and a catch up while they swap out or donate their books. From an endless winter to summer fun What is there to do in our corner of the Coast?

After two years of hibernation, summer has finally arrived! Our slumber is over and at last we have the opportunity to enjoy a rain-free day of warm sunshine and clear blue skies. Now although the sun is here, we may be a little out of practice when it comes to sunny weather activities. So, what is there to do around here during the summer break? Here are some ideas for activities to keep you busy over December and January as you bask in the glorious sunshine! Firstly, the most obvious activity to keep you busy this summer is going to the beach. Us locals are spoiled for choice with a range of beaches spanning our coastline, many only a 10-minute drive away. Whether you are a boogie-boarding fan or stand-up paddleboarding enthusiast, there’s a perfect beach for you. If you prefer a smaller, less sandy environment, Stanmore Bay Pools is the place for you. Boasting an indoor heated pool, sauna and outdoor splash pad, there’s plenty to keep you entertained. For those who aren’t so big on getting splashed, going to the local park is a great way to spend the day. We are blessed with a great variety of local parks, with facilities ranging from standard playgrounds to speedy flying-foxes, skate parks and competitive basketball courts. Attention walkers! Here is a great activity for you: walking the Te Ara Tahuna Walkway around Orewa Estuary. Spanning 7.6 km, this walkway is bound to keep you entertained. Whether you want to

have a chat with a friend or enjoy the picturesque scenery, walking around the Orewa Estuary is a lovely way to start the day. Now, for those itching to express their artistic side, the Estuary Arts Centre is the place for you. The centre will be hosting a range of arts classes from Christmas wreath designing to clay sculpting, all under the guidance of exceptionally experienced artists. Finally, for those who like a little time indoors, a great activity for you is baking. As the school year draws to a close, some parents like to acknowledge all the hard mahi of the teachers with a gift. This is another area where we can make eco-conscious decisions to avoid creating waste. I actually surveyed some teachers on what they like receiving and my heart was warmed to learn that above all, most of them prefer a heartfelt message on a home-made card. For those wishing to spend more, wine was also popular! It’s a busy time of year, but if you can manage home-made baking instead of store-bought chocolates, the effort shows through and you’ll also avoid a lot of the packaging involved. If you like to gift toiletries or candles there are some lovely brands out there that focus on sustainable practices and minimal packaging. Plants were also popular on the teacher’s list of memorable presents and these can be cost effective if you use a clipping from home and replant it. Cooking Questions with Mark Lane

Your own personal chef I have been cooking professionally for 39 years, both in New Zealand and internationally. My business, Culinary Lane Catering is based in Millwater, providing three and five course dinners in your home, out-catering and grazing tables. Michelle: I want to learn to make a few sauces to add a little extra to my cooking. Can you recommend a couple of tasty, versatile sauces I could learn to make to have up my sleeve that can be used with a lot of different dishes to make them look and taste nicer?

Great question, as it is often a great sauce that will lift a dish to the next level. The key is having balance, so when I use salt in a sauce I also add sugar, which elevates the flavour.

In my pantry I have oregano, thyme, rosemary, marjoram, basil and sage. I also keep fresh chopped herbs in my freezer and add directly from the freezer (I have chives, coriander, rosemary, Italian parsley).

Start with a good brown gravy. I use 1/3 reduced beef stock but you can use the Simon Gault Beef Concentrate, sweat some onions, garlic and thyme or rosemary, add red wine, reduce then add beef stock as per the directions, reduce to thicken and season with salt and sugar. Make a large batch and freeze in portions to use later.

For spices I have chili flakes, ground cumin and coriander, cumin and coriander seeds, paprika, turmeric, garlic powder, onion powder, fennel seeds and cardamon pods. It’s always best to toast your spices before using to release the natural oils and flavours.

Try a good Beurre Blanc sauce (white butter). Sweat onions and garlic, then deglaze with white wine, a touch of white wine vinegar and lemon juice. Reduce by ¾ (you can also add white chicken or fish stock). Slowly whisk in ice cold butter making an emulsion, check the seasoning. I add a cup of cream to the reduction then reduce by half then whisk in the butter to lighten the sauce. Once the butter is added it cannot be boiled or it will split, so keep warm until required. It's always good to have a good tomato-based sauce too.

• Assist eggplant flowers to pollinate – use a small paintbrush to transfer pollen between flowers. Eggplant flowers are pale mauve and droop downwards, so they’re uninteresting to the bees

• Christmas tidy-up in the garden: weeding makes the garden look great and focuses the eye on the desirable plants

• A regular squirt of water over the bean plants is said to increase bean production. Picking regularly also encourages a bumper crop • It’s all in the staking – plant such as beans, tomatoes and cucumbers benefit from good climbing supports through the summer • Find out if your potatoes are ready by gently excavating from the edge of the mound. Early cropping potatoes are generally ready from now onwards • Thin apples and pears now to allow fruit to grow to decent size. Keep watered through the summer months

• Avoid clipping hedges and topiary as freshly exposed foliage will burn in the hot sun • Flowering agapanthus should not be left to go to seed. These plants colonise easily in Auckland at the expense of other more desirable options • Summer prune the wisteria, rambling roses and jasmine to maintain control as they grow extensively in the heat • Plant carpet thymes, prostrate muehlenbeckias and coprosmas as hardy groundcovers to keep the weeds at bay • Heading away? Move pots and baskets into shadier areas to reduce their water consumption, water and mulch them to tide them over


The gift of music

Muse & Co Academy is a new local music academy here on the Coast offering a wide range of music lessons including voice, piano, bass, acoustic and electric guitar, clarinet, ukulele and choral music. Friends Katerina and Beth started the Muse & Co Academy in 2023 in response to a demand they saw for a local music academy for Hibiscus Coast families. The two met as high school teachers in 2010 and reconnected later when Katerina became the singing tutor for Beth’s musical daughters, one of whom now teaches voice at the academy. Proudly based at the Estuary Arts Centre in Orewa, the Muse & Co Academy’s talented teachers offer afternoon and evening music lessons suitable for the whole family, with students aged from five to adult. They strongly believe it’s never too late

to start music lessons, just ask Muse & Co Academy co-founder Beth Kubala. When she opened Muse & Co Academy with Katerina – who is a vocalist, pianist, composer and music teacher – Beth had almost no musical knowledge herself, but now (as well as running the operational side of the business) she is learning piano herself, alongside their growing community of musical students. Muse & Co also hosts the MUSE Women’s Choir, the Hibiscus Coast women’s choir with eighty members who meet weekly during term time. Katerina is excited to be expanding the singing community next year, with the MUSE Men's Choir and The Mini Muse Kids Choir both starting in 2024. Muse Choir is just one of the many facets of the Muse Academy, and reflects the commitment Muse has to providing a musical hub for the Hibiscus Coast community.

Taking a Hike

Tiritiri Matangi walk On a recent Sunday I was lucky enough to visit Tiritiri Matangi, a bird sanctuary and predator-free island off the coast of Whangaparaoa Peninsula. I’m not sure our short walk qualifies as a hike, but it’s a great day out with stunning scenery and bird life galore. The island is home to a multitude of native birds including the rare Takahe, once thought to be extinct. You can book a guided tour or make your own way around. We headed over on a friend’s boat, but a ferry runs from Auckland central and stops at Gulf Harbour, then it’s only a 25 minute trip to the island. We had sunshine, the slightest breeze and just one brief shower that made for some beautiful photos of Tui’s covered in droplets of rain. There are several walks on the island from the favourite 40-minute short stroll up to the lighthouse to the three-hour loop circumnavigating the island. We opted for the short one and meandered up gravel tracks, through the forest, across boardwalks and up a few easy steps to the top of the island. The path is dotted with bird feeding stations and the longer you sit and the quieter you are the more birds stop by. We watched Tui bathing in the concrete water baths. They were hilarious, ducking and diving and shaking themselves dry. At the top there is a visitors centre with displays, information and a shop selling all things kiwi from Pukeko-emblazoned tea towels to yoyos with hand-painted Kiwis. Everything you buy contributes to funding a breeding program for Takahe along with conservation and education programs. We took our own lunch as there is no food for sale, but there are chairs and tables and lots of space for a break, and complimentary tea and coffee are on offer. It’s a stunning spot with panoramic views looking out over the Hauraki Gulf, down to Coromandel, out to Great Barrier and beyond. We spent a good leisurely hour enjoying the vista, Takahe roaming around and the Tui’s playing in the bird feeder. On the way back down the track we spied more Tui, Saddlebacks, Bellbirds, North Island Robin and a couple of beautiful big Wood Pigeons swooping through the bush. Back down at the water we walked along to Hobbs beach where penguin nesting boxes are on the path, carefully lifting the lids we excitedly saw two birds snuggling in to their beds of straw. If you fancy a longer adventure, you can stay the night in the former lighthouse keeper’s cottage, decked out with bunks. I’m planning an overnighter soon with an early start for the infamous dawn chorus and maybe a wander around at night searching for Kiwi!

and then you will see ripples in the water in the distance moving towards your direction. Often it will white cap for a short time before it settles again and if it is a significant weather change, it’s time to pull your lines and get out of there.

Summer here we come! It’s really firing out there on the water too! The weather has finally settled with some warm evenings perfect for dusk missions and long sunsets. The work ups have really kicked off this year and the lure fishing is absolutely magic! Soon the water temperature will increase and the fish will start spawning, which means they will go off the bite a little, but they still need to eat just like us. Fish have similar habits to us and will feed morning and night so if you want to take the family out for a fish, the best time is early morning before the sun hits the water around 9am and then again from 5pm into the evening. Reading and understanding a weather forecast is a fundamental skill when boating. Often the wind is changeable and it’s important to know when there will be a change in direction and whether the wind may increase when it does change. The water will go calm

My last trip out was a perfect example of one weather report stating that the wind was dying out to 5 knots in the evening while another showed a short window of northeast wind before the wind died out. Assuming I had a calm evening, I shot out the middle only to find the wind 15 knots gusting to 19 knots northeast. Bouncing around, I managed to hook my first fish in a very fast drift. It was a decent fish around 450mm and I decided to use my net to land it as I was fishing light gear. The fish was still pretty green and jumped when I was pulling the hook out of its mouth. The second hook went straight into my thumb between the nail and the skin. It was deep. With a quick pull of the pliers and a few swear words, I was back fishing again. Next time I will use a towel to hold the fish. Tight lines!

Compulsory Christmas shutdowns The lowdown on leave and holiday pay time off even if you don’t have enough annual leave entitlement to cover the shut-down period. If you don’t have enough leave entitlement, talk to your employer about options If you don’t have enough unused leave to cover the whole shutdown period, talk to your employer about your options. For example, you could agree to take some leave in advance, or take some unpaid leave. If you aren’t yet entitled to annual leave, your employer must give you holiday pay up to the start of the closedown (instead of paid leave) You need to work for 12 months continuously with your employer before you are entitled to annual leave. If you haven’t, your employer must give you pay-as-you-go holiday pay for a period up to the start of a shut-down. They also have to move the anniversary date of your annual leave entitlement to the date of the shut-down. You can agree with your employer to take some leave in advance.

Many firms have an annual compulsory shutdown period at the end of each year and we often get asked if an employee be forced to take annual leave between Xmas and New Year?

Pay-as-you-go holiday pay is 8% of your gross (before PAYE is deducted) earnings, and is a replacement for leave: •

if you’ve worked for your employer for less than 12 months

if you worked for your employer for 12 months or more but aren’t entitled to annual leave because you took leave in advance earlier in the year or had some pay-as-you-go holiday pay – in this case, your pay-as-you-go holiday pay will be minus the pay-as-you-go holiday pay you got or leave in advance you took earlier in the year.

Your employer can make you take leave during their annual shutdown If your office normally shuts down over Christmas and New Year, your employer can make you take annual leave over that time if they give you at least two weeks’ notice. This only applies if they have only one shut-down period each year. You have to take this

A mortgage holiday lets you temporarily stop making repayments towards your mortgage if you’re facing financial hardship from circumstances such as losing a job, or an unexpected illness or injury. But it is not a holiday from interest. Interest will still accumulate on to your mortgage and this will cause the total amount of your mortgage to increase during your ‘mortgage holiday’. In reality, a mortgage holiday is NOT a holiday, and should only be considered as a last resort and as a short-term relief.

Over the following six years, this ‘germinating acorn’ grew into a strong sapling, raising $110,700 for Hospice. By the time you read this, the seventh Greek Extravaganza will have been and gone and, hopefully, nudged the total funds raised to date for Hospice to over $140,000. Want to know how to make your advertising work? Part 2 If you’re going to invest money in designing a new brochure, advert or website you better ensure the message works so it will be worthwhile. In Part 1 last month we explained how to focus your advert and find a headline that gets attention. This time we’re going to focus on the eight key components to an effective advert. 1.

Headline: Gets attention by posing a problem or offering an important solution. Although our example here is to the point, don’t underestimate the power of humour, if possible.

2.

Photo/image or visual: Gets attention and is relevant to the headline or advert message. Our example introduces the expert.

3.

Subhead/introduction: Only if needed to connect the headline to the advert. This justifies the headline and gives insight into why you should read on.

4.

Body copy: Clarifies the customer’s problem and offers the solution.

5.

Final proposition: The final word, such as ‘We offer a full range of x’ or ‘Your local experts in x’.

6.

Call to action: What action do you want someone to take? Phone? Visit your website or showroom? In our example we are wanting people to give us a call.

7.

Response mechanism: Phone, www, QR code are a few options. This needs to be clear, easy to digest and as memorable as possible. An example of this done well is to say 0800 Lawyer.

8.

Logo: Make this clear, clean of distracting backgrounds and consistent. Getting brand recognition is crucial so each time a customer sees you it leverages the last time they noticed you. Good brands are trusted so this gives credibility to the offer.

Adding a tag line or positioning statement and including logos of well-known, trusted partners are all optional, but are good for credibility if you choose to include them too. Once you create a great advert consider carefully where and how you run it. The smaller spots in a newspaper or magazine may be low cost but may not serve your purpose. If you print a brochure, how will you distribute it? And a website needs to be promoted through mechanisms such as SEO, Social and links from other sites. Consider your customers – where will they be looking? Then you can ask someone to point you in the right direction for putting a plan together that gets the timing and the spend right for your type of business.

Is Sanjeen Ramsuroop Silverdale’s answer to Jamie Oliver? Sanjeen Ramsuroop is the executive chef at The Botanic Silverdale’s recently opened Clubhouse Café, and is passionate about serving memorable, flavoursome fare to all who come through his doors. He says he loves the way his cooking is bringing together families and communities. ‘I have an all-day menu, so everything is available at any time of the day. You can have breakfast for dinner, or dinner for breakfast,’ says Sanjeen. One of the biggest hits with residents is his lamb’s fry and bacon. ‘The lamb’s fry is very tasty. I cook it with bacon and a soft-poached egg on top, and we present it with a creamy mushroom sauce with onion, balsamic and garlic.’ Every day there is an authentic curry on offer and there are always two options – chicken or fish. The Clubhouse Café has accommodated residents, their families and some members of the public so far, and Sanjeen is slowly increasing the Cafe’s capabilities so he can accommodate the growing number of locals who are popping in for a coffee, lunch or dinner.

‘The cabinet food is really popular. I make fresh cheese and onion scones every day, fresh muffins and sometimes we have lemon tart, traditionally-made tiramisu in a glass, a decadent baked cheesecake and a homemade apple pie.’ Gluten-free options are also available. ‘I think residents love Sanjeen’s jovial personality just about as much as they love his food,’ says Michelle Pipping, a Millwater resident and a member of The Botanic’s sales team. The Club House is an architecturally designed, light-filled building and is positioned in the heart of the village. It takes in views across the garden and the new three-rink bowling green, and also has an outdoor barbeque area. It has quickly become the centre of The Botanic community. Pipping says ‘If the way to a retiree’s heart is through their stomach, then Sanjeen is doing a very good job of winning over hearts and minds in the village.’ The Clubhouse Café is open 8am-5pm from Sunday to Wednesday, and 8am-8pm from Thursday to Saturday.

Can I write my will at home? Writing a will at home or using a ‘do-it-yourself kit’ might appear to be an easy and cheap way to create a will. There is also no requirement that you use a lawyer to prepare your will. So then why doesn't everyone write their wills at home? In our experience, DIY wills can result in a time-consuming and expensive estate administration process for your family after your death. This is because sometimes DIY wills do not meet the strict statutory requirements that need to be met for the courts to formally declare that your will is valid – this is called obtaining probate. It can be difficult for the court to grant probate if your will is not properly drafted or executed (signed/witnessed) or your intentions are otherwise unclear. For example, issues as simple as securing your will with a paper clip can lead to difficulties in validating a will. Not having a valid will may also mean that your wishes may not be followed as you intended and your assets instead distributed as provided at law. The stress, costs and time spent in estate administration can be greatly minimised by having a well-drafted will in place. It is also important to have a will that is tailored to your circumstances and ensures that your intentions are accurately

recorded. This is especially important in circumstances where you have a blended family or own property jointly with other people. It is also important to consider certain obligations you may have under the law to your children, spouses or partners. While it may be more expensive to have a lawyer craft a will tailored to your unique circumstances, in the long run a welldrafted will is likely to prove less costly, less stressful and less time-consuming for those managing your estate. A DIY kit may be suitable for someone with minimal assets and a simple family structure, however, that is not the reality for most families. Coastguard Old for new

If you’ve been down to Gulf Harbour Marina recently you may have noticed that Hibiscus Rescue One, our primary rescue vessel isn’t on its normal berth. She is currently with the team at Fishing Boats NZ completing a major refit.

Whangaparaoa College on 3 December and, of course, the worldfamous Big Dig on 20 January. Also, thanks to the ongoing support from New World Orewa, you will also find us and your new boat on display there early February.

At over 12 years old she is approaching retirement, mostly because of the vigorous demands on her hull and equipment. During this possibly final refit we will be replacing both outboards and our GPS equipment. The fuel tank needs to be removed, inspected and refitted, the wiring for our navigation systems, VHF and UHF radios, phone and navigation lights needs to be removed and replaced to remain in Survey.

We will also be part of the Orewa Old for New Lifejacket Trade Up on 10 December, from 8am to 2pm at the Orewa Boat Ramp. Trade in your old, damaged jackets for a great discount off new fit for purpose PFDs to keep your family safe this season and beyond.

The pontoons along the sides that provide a buffer to protect our vessel, and any vessel we come along side, need to be removed and replaced. The hull integrity needs to be inspected and certified before we even start on the cosmetics, such as a repaint, floor coverings and waterproof cover. These updates should provide the local boating community with another 5 years operational service from the vessel, with the refit still expected to cost between $300,000 - $350,000. Which is why you can expect to see our volunteers out raising money and selling lottery tickets at events around the Coast this summer. Lottery tickets are still only $10 each, with $7 of that $10 donated back to the unit. First prize is valued at over $140,000 – how would a new boat, a boating safety package and the car to tow the boat look in your driveway this summer? There are also train adventures, holidays in Rarotonga and a number of Apple devices to be won. Sounds good? We think so! We’ll be attending a number of local events, including the Raiders Fishing Competition on 25 November, the Gulf Harbour Carols at the Canal on 2 December, A Very Coastie Christmas at

Local Recipes Savoury creamed potatoes (Serves 8-10) Ingredients

Method

10 medium Agria potatoes, peeled

Slice the potatoes into 2mm slices and wash in cold water.

30g butter

In a heavy-bottomed saucepan, sweat the garlic and onions in the oil till soft and transparent then cool in a bowl.

30ml olive oil 8 garlic cloves, finely chopped 2 medium brown onions, finely diced 4 rashers of streaky bacon, diced 10g Italian parsley, chopped 400g button mushrooms, sliced 5g fresh thyme 1ltr cream 100g parmesan, grated 300g tasty cheddar cheese, grated 2 Tbsp Vegeta stock powder 1 tsp ground nutmeg Salt & pepper

Add some more oil to the pot. On a medium to high heat, sauté the sliced mushrooms until all the water is removed from the mushrooms, then add the bacon and sauté for 3-4 minutes. Add to the cooling onions, then add the thyme, chopped parsley, cream, parmesan, Vegeta, salt & pepper (over-salt as this will soak into the potatoes). Then lightly whisk together till combined. Butter the inside of an oven-proof dish with sides around 10cm high. Layer the potato till 5cm below the top. Pour on the cream mixture, till it just reaches the top layer of potato. Add one more layer of sliced potato then sprinkle with the cheese and tin foil the top. Place in a 170°C oven and bake for around 90 minutes or until the potatoes are soft. Remove the tin foil and grill until the top is golden brown. This can be made the day before and reheated till hot in the middle when required. A great side dish for Christmas.

Zucchini butter spaghetti (Serves 2 generously or 4 petitely) Ingredients 1½ tsp salt, plus more for pasta water, and to taste 225g spaghetti, cooked al dente 1 cup pasta water, reserved 570g zucchini, trimmed, coarsely grated 6 Tbsp unsalted butter 4 garlic cloves, minced ¼ teaspoon red pepper flakes, or more to taste

from time to time, for 13 to 15 minutes. It will first let off a puddle liquid, the liquid will cook off, and the zucchini will become soft and concentrated. If the zucchini begins to brown, reduce the heat slightly. Stir frequently for 2 more minutes, chopping it down into smaller bits with the edge of your spoon or spatula, until it reaches an almost spreadable consistency. Pour in ½ cup of the reserved pasta water and stir up anything stuck, then add drained pasta, and cook together for 2 minutes. Use tongs or two forks to pull up the zucchini butter sauce into the pasta strands, tossing frequently and adding some or all of the remaining pasta water as needed to loosen. Toss in half of the parmesan and basil and mix, then transfer to a serving bowl. Finish with remaining parmesan and basil.

Method Boil your spaghetti in well-salted water until it’s 1 minute shy of fully cooked. Before you drain it, reserve 1 cup of the pasta cooking water and set it aside. Melt the butter in your empty pan over medium-high heat and add the garlic, stirring it into the butter for one minute before adding the zucchini, salt, and red pepper. Cook the zucchini, stirring
