筷子 Chopsticks

日本人使用筷子有不少禁忌,不可隨便亂用,例如不 可用筷子直插食物來吃、不可將筷子插在飯碗上、不 可用筷子移動餐具、不可用同一隻手同時拿著筷子及 其他餐具。 In Japanese culture, there are many rules and taboos surrounding the use of chopsticks. For instance, spearing your food with chopsticks or standing your chopsticks up vertically in your bowl is highly frowned upon. Refrain from also using your chopsticks to move utensils around the table or holding chopsticks and other utensils with one hand.

壽司

Sushi

吃壽司時需要一口放進口中,切勿咬斷分成兩口。在日 本人的眼中,任何咬開的痕跡都被認為不乾淨,同時會 破壞魚肉的原有組織,口水亦會影響原有鮮度,所以記 得一口吃完。 Remember to eat sushi in one bite. In Japanese culture, bite marks are considered unclean. Biting also destroys the tissue of fish, our saliva can also ruin the freshness of the sushi.

相信不少人都知道, Wasabi (山葵)不應拌進醬油之 中,原因是日本師傅希望食客吃魚生時,保留食物的原 貌色澤,所以最好還是將山葵放在魚生片上,再沾醬油 食用。提提大家,如果料理上有紫蘇葉或白蘿蔔絲,其 實不只裝飾,而是包著魚生吃,用來辟去魚腥。 Many of us are aware that wasabi is not supposed to be mixed with soy sauce. This practice is discouraged by Japanese sushi chefs to avoid tainting the food. The proper way to enjoy sashimi is to dab a bit of wasabi onto the sashimi before dipping it into soy sauce. It is also noteworthy that perilla leaves and shredded daikon are not just garnish; they are meant to be wrapped around sashimi to eliminate fish odour.

串燒

Skewers

吃日式串燒時,切勿用手拿著整串串燒來咬,正確食法 是,每次用筷子取下一塊,然後才夾到自己的碟子上。 When eating Japanese skewers, do not bite directly into them. Instead, remove the pieces from the skewers with your chopsticks, place them on your dish and enjoy them one at a time.

Soup

你有否發現,享用味噌湯時沒有湯匙?日本人只會直 接雙手托著飲用,甚或用筷子夾起材料吃。至於茶碗 蒸原本屬於湯品,正式吃法是用筷子將碗內的材料充 分攪拌後,當成湯品一同飲用,或者可用放在旁邊的 小湯匙攪拌後享用。 Have you noticed that miso soup is often served without spoons? Japanese people tend to drink miso soup holding the bowl with both hands, and fish out the solid pieces with chopsticks. Chawanmushi is also viewed as a soup, so the proper way to consume it is to mix the ingredients with chopsticks or a small spoon before drinking it like soup. 日本人愛喝各式酒類,要留意日本人覺得自斟自飲是無 禮的事,應先為別人斟酒,之後人家亦會替自己斟酒。 記得斟酒時瓶身標籤在上方,右手從上方握住瓶身,左 手輕扶下方。而人家為自己倒酒時,不要把酒杯放在桌 面,反應該雙手奉上酒杯,不需要過度傾斜杯身,待對 方把酒倒完為止。 Japanese people are big fans of alcohol. It is considered rude to pour a drink for yourself. Instead, pour drinks for others and they will reciprocate. When pouring a drink, remember to keep the label on the bottle pointing upwards. Hold the bottom of the bottle from above with your right hand, and gently support the top of the bottle with your left hand. When someone is pouring you a drink, do not leave your glass on the table. Show courtesy by holding the glass upright with both your hands until the person is finished.

Ramen

吃拉麵時可以大方發出啜麵條的聲音,這是日本文化 中對師傅的敬意。不過要留意的是,夾麵條要注意一 口的份量,必須把麵條完整啜進口中,如果最後麵條 被咬斷跌回碗裡,卻是不尊重的意思,也可能濺起湯 汁造成不必要的尷尬。 In Japanese culture, slurping ramen noodles is a sign of respect for the ramen chefs. However, remember not to take more than you can chew in one bite as biting off noodles is not only a sign of disrespect, but may cause soup to spill, resulting in unnecessary embarrassment.
