Easy Blueberry Muffins

For the Muffins

• 2 cup all-purpose flour

• 1 tsp baking powder

• 1/2 tsp baking soda

• 1/4 tsp salt

• 3 eggs

• 1 cup granulated sugar

• 1 tsp vanilla extract

• 1 tbsp lemon juice

• 3/4 cup heavy cream

• 4 tbsp unsalted melted butter

• 1 1/2 cup blueberries

For the streusel topping

• 1 tbsp unsalted butter cold

• 2.5-3.0 tbsp all-purpose flour

• 3 tbsp brown sugar

• Pinch salt

• 1 tsp cinnamon

Instructions

 Start off by combining all of your dry ingredients in a bowl. Add 2 cups of all-purpose flour, 1 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt, then whisk it together.



Reserve about 1 tbsp of the flour mixture and mix it

with 1 1/2 cups of blueberries. Then set it aside.

 Now add 3 eggs into a large bowl and whisk them on high speed with an electric hand mixer. You want to whisk them for a few minutes until the eggs become pale and fluffy.

 Then continue beating the eggs as you add in 1 cup of granulated sugar. Keep beating for about 3 more minutes. The key to super fluffy muffins is well-beaten eggs.

 Now add 1 tsp vanilla extract and 1 tbsp lemon juice.

 Beat the eggs on high speed again and this time slowly add in 3/4 cup heavy cream.

 Now you can begin sifting in your dry ingredients. But don’t add it in all at once. You’ll want to add about 1/3 of the dry ingredients at a time with mixing in between.

 Once you’ve got all your dry ingredients well Incorporated continue mixing as you add in 4 tbsp of unsalted melted butter.

 Now add the blueberries to the blueberry muffin batter.

 Fold the blueberries into the batter using a spatula. Now Line your muffin tin with cupcake liners and begin scooping the batter out using a large cookie scoop.

 Make the streusel topping by combing 1 tbsp unsalted cold cubed butter, 2 tbsp all-purpose flour, Pinch of salt, 1 tsp cinnamon, and 3 tbsp brown sugar in a small bowl.

 Mash it all together using a fork until all the ingredients are well combined and have a crumbly dry texture to them.

 Now top the blueberry muffins with the streusel topping and bake them in the oven at 350 degrees Fahrenheit for about 35 minutes.

15 Garden Plants That Repel Pests Naturally

Whether you want to keep mosquitos out of your yard or harmful pests out of your vegetable garden, there are natural ways to repel bugs that don't involve citronella candles or pesticides. For an environmentally friendly DIY pest solution, try growing one or more insect-repelling plants.

Many herbs, vegetables, and flowers have strong aromas that make them wonderful companion plants for natural pest control.

1. Basil: This easy-to-grow culinary herb doubles as a repellent for houseflies and mosquitoes. Plant basil in pots and place them around patios to form a protective barrier.

2. Bay leaf: Bay is slow-growing repellent plant and common ingredient in soups and stews. Bay leaves also repel flies, cockroaches, and ants. As an alternative to growing your own bay leaf plant, you can also purchase bay leaves at the grocery store and sprinkle pieces of the leaves around pest-heavy areas of your garden.

3. Chives: When planted in your garden, this allium plant deters Japanese beetles, carrot flies, aphids, mites, and even rabbits.

4. Chrysanthemums: Since they naturally contain a compound called pyrethrum that's common in many artificial insect repellents, chrysanthemums are an effective way to deter pesky insects like spider mites, silverfish, Japanese beetles, ants, bed bugs, roaches, and fleas.

5. Dill: Planting dill is a way to repel bugs like spider mites, squash bugs, and aphids from your vegetable garden. A word of warning: Dill is known to attract tomato hornworms, so keep dill away from your tomato plants.

6. Garlic: This pungent allium plant is a bug repellent for carrot flies, cabbage worms, slugs, and aphids.

8. Lemongrass: This attractive, tall-growing ornamental grass is a common ingredient in herbal teas. It contains a fragrant citronella oil that acts as a mosquito repellent.

9. Lemon thyme: Often grown for culinary purposes, lemon thyme helps keep mosquitoes at bay. Its tiny flowers also attract bees which help the pollination of surrounding plants.

10. Marigolds: The aroma of marigolds repels mosquitoes, aphids, and rabbits.

11. Mint: The essential oils found in mint plants as well as other members of the mint family, like sage, peppermint, hyssop, lemon balm, oregano, and catnip are all worthy mosquito repellents. Studies have indicated that catnip essential oils are more effective at repelling mosquitos than the chemical DEET, which is used in most synthetic insect repellents. There are 17,500 species of butterfly spread across the world (in every continent except Antarctica).

smells and tastes like? Nope, we haven’t either! But, according to astronomers, the giant dust cloud would taste like raspberries due to the presence of ethyl formate (the chemical which gives raspberries their flavour).

This chemical also has another fascinating characteristic – it smells like rum!

There’s a village in the Netherlands that’s designed specifically to help people with dementia

The village of Hogeweyk in Weesp, Netherlands, is home to residents who all have an advanced form of dementia. However, this village is completely unlike any other, as it’s actually a nursing home that’s designed to look like a village.

It has 27 houses that cater to four different types of lifestyle – nature-oriented, cosmopolitan, well-to-do, and traditional Dutch – and residents get to choose which suits them best.

Each house has six or seven residents and a carer who cooks, watches over them, goes with them to social events, and helps them run errands like shopping at the village market.

The village was designed to give residents a greater quality of life and has become a great inspiration for others who’re looking to humanise dementia care.

One couple spent 20 years planting 2.7 million trees to restore their Brazilian rainforest home

Sebastião and Lélia Salgado have proved that each and every one of us has the potential to make a difference in this world.

When Sebastião, a Brazilian photojournalist, returned home from reporting on the 1994 Rwandan genocide, he was shocked to discover that his family’s old cattle ranch (which was part of a 1,754-acre stretch of Brazilian rainforest) had been completely destroyed by deforestation. Only about 0.5% of the land was covered in trees.

Sebastião and his wife (with help from others) spent the next 20 years breathing new life into the forest by planting 2.7 million trees. Today, the area is a lush rainforest and many different species of birds, mammals, reptiles, and amphibians have returned.
