Ingredients:

• ½ inch of fresh turmeric, peeled, thinly sliced

• ¾ inch fresh ginger, peeled, thinly sliced

• The juice from one lemon

• 1 clove garlic, minced do this first so it can sit for 15 minutes

• ¼ - ½ tsp ground cinnamon ceylon

• 1 Tbsp apple cider vinegar with the mother

• 1 tsp or to taste raw organic honey

• A few cracks of black pepper

• 1 cup of filtered water

Directions:

Place the turmeric and ginger in a saucepan with the water. Bring to a boil and then turn off the heat and let it steep for 10 minutes. Continue to cool until just warm. Once cool, strain the ginger and turmeric from the water, into a cup. Add all the other ingredients and stir until the honey dissolves. Enjoy! Tips: Stir while drinking to keep the garlic from settling to the bottom. It’s important to let the garlic sit for 10 - 15 minutes before adding to heat, after you either chop it or mince it. Letting the garlic sit before adding to heat allows the beneficial enzymes to activate. Once you add it to heat, the heat deactivates the enzymes. To keep the vitamin C intact, add the lemon juice only after the tea has cooled. The same goes for the honey as the heat will destroy all the nutritional benefits. In 2024, the March equinox happens on March 19 at 11:06 P.M. EDT. This falls on a Tuesday and is the astronomical beginning of the spring season in the Northern Hemisphere and the autumn season in the Southern Hemisphere.

If you thought that the spring equinox only ever occurred on March 21, you may be dating yourself. The civil calendar date of the equinox continues to shift every year.

What Is the Spring Equinox?

In the Northern Hemisphere, the spring equinox in the Northern Hemisphere (also called the March equinox or vernal equinox across the globe) occurs when the Sun crosses the celestial equator going south to north. It’s called the “celestial” equator because it’s an imaginary line in the sky above the Earth’s equator. Imagine standing on the equator; the Sun would pass directly overhead on its way north.

On the March equinox, the Northern Hemisphere and Southern Hemisphere receive roughly equal amounts of sunlight; neither hemisphere is tilted more toward or away from the Sun than the other. Although in most locations (the North Pole and Equator being exceptions), the amount of daylight had been increasing each day after the winter solstice, after the spring equinox, many places will experience more daylight than darkness in each 24hour day. The amount of daylight each day will continue to increase until the summer solstice in June, during which the longest period of daylight occurs.

Here’s an interesting fact: Equinoxes are the only two times yearly that the Sun rises due east and sets due west for all of us on Earth! While the Sun passes overhead, the tilt of the Earth is zero relative to the Sun, which means that the Earth’s axis neither points toward nor away from the Sun. (Note, however, that the Earth never orbits upright but is always tilted on its axis by about 23.5 degrees.)

What Does “Equinox” Mean?

The word equinox comes from the Latin words for “equal night” aequus (equal) and nox (night). On the equinox, the length of day and night is nearly equal in all parts of the world.

A: Well, both. The answer depends on your definition of “spring.” Both dates are accurate; they’re just from different perspectives. We’ll explain

Astronomically speaking, the first day of spring is marked by the spring equinox, which falls on March 19, 20, or 21 every year. The equinox happens at the exact moment worldwide, although our clock times reflect a different time zone. And, as mentioned above, this date only signals spring’s beginning in the Northern Hemisphere; it announces fall’s arrival in the Southern Hemisphere. Interestingly, due to time zone differences, there hasn’t been a March 21 equinox in mainland U.S. during the entire 21st century! We won’t see a March 21 equinox again until 2101.

Meteorologically speaking, the official first day of spring is March 1 (and the last is May 31). Weather scientists divide the year into quarters to make it easier to compare seasonal and monthly statistics from one year to the next. The meteorological seasons are based on annual temperature cycles rather than on the position of Earth in relation to the Sun, and they more closely follow the Gregorian calendar. Using the dates of the astronomical equinoxes and solstices for the seasons would present a statistical problem, as these dates can vary slightly each year.

Q: Are Day and Night Equal on the Equinox?

A: Quite close! In reality, day and night are not exactly equal on the equinox for two reasons: First, daytime begins the moment any part of the Sun appears over the horizon and is not finished until the last part of the Sun disappears below the horizon. If the Sun were to shrink to a starlike point and we lived in a world without air, the spring and fall equinoxes would truly have equal nights.

Vietnamese Spring Rolls

Recipe Ingredients:

►1 lb Large Shrimp (21-25 count), peeled and deveined (keep the shells)

►3 oz Vermicelli Rice Noodles

►1/2 Butter Lettuce (15 leaves)

►2 Carrots, peeled and julienned

►1/2 English Cucumber julienned (or 3 small cucumbers)

►1 cup Cilantro sprigs

►15 Round Rice Paper Sheets (8.5” diameter)

How to Make Spring Rolls:

 Boil Shrimp according to our boiled shrimp recipe then immediately cool in ice water. Once boiled and cooled, drain and cut shrimp in half lengthwise.

 Cook noodles according to package instructions until softened (do not overcook) then drain in a colander and rinse with cold water. Let noodles drain

RCMP looking to identify driver of white SUV

Prince George RCMP is looking to speak with the driver of a white SUV about an incident that occurred around 8:15 a.m. on Tuesday, March 5, 2024 near Galinis Avenue and Dornbrier Crescent.

We are currently investigating a report that was made where the driver of the SUV is alleged to have approached several students at a bus stop and offered to give them a ride. Investigators would like to speak with the driver to determine their exact involvement in this incident, states Cpl. Jennifer Cooper, Media Relations Officer for the Prince George RCMP. The students were picked up by the school bus a short time after the incident and reported it immediately to their school administration.

The vehicle is described as a mid-size white SUV with a bird sticker in the back window. The driver was described as a South Asian man with curly black hair who was wearing a grey or blue sweater.

If you have any information on this vehicle or who was driving it on the morning in question, please call the Prince George RCMP non-emergency line at 250-561-330 to speak with a police officer.

in a colander until ready to assemble. You can also fill a saucepan with water and bring it to a boil, add the noodles, turn off the heat and let them sit in hot water for 5 -7 minutes.

 Prep veggies – julienne cucumbers and carrots, remove stiff stems on lettuce leaves, coarsely chop cilantro,

 Assemble spring rolls One at a Time. Fill a shallow round bowl (wider than your wrappers) with very warm/hot water. Submerge spring roll wrapper for about 10-15 seconds or until softened (depending on the temperature of your water). Place wet spring roll wrapper on a clean and lightly wet cutting board.

 Add veggies on one half in this order: lettuce, a generous pinch of noodles, carrots, cucumber, cilantro sprigs.

 Add shrimp on the second half, placing the shrimp cut-side up.

 Tightly roll up the lettuce side first, tuck in the sides then roll over the shrimp so shrimp are visible on the outside.

 To serve – Transfer finished rolls to a serving platter and keep finished spring rolls covered with a damp kitchen towel so they do not dry out. For a prettier presentation, serve cut in half on the diagonal.

Prince George residents who do not have their own garden space can now grow their own fruit and vegetables if they rent a plot at the new Rotary Community Garden completed in the Fall. The Garden may contribute in part to the supply of fruit and vegetables at local food banks. The Rotary Clubs of Prince George Yellowhead, which led the project, Prince George Nechako and Prince George Downtown plus Prince George Rotaract contributed the majority of funds, with support of a $10,000 District Grant, to the $76,450 project, along with other sponsors
