Air Fryer Donuts

Ingredients

For the Donuts:

▢1 cup warm whole milk (105 to 110F) (240mL)

▢1 (0.25-ounce/7g) packet active dry yeast (2 1/4 teaspoons)

▢¼ cup plus 1 teaspoon granulated sugar divided (62g)

▢6 tablespoons melted unsalted butter (85g)

▢1 large egg at room temperature

▢3 cups all-purpose flour plus additional for dusting (360g)

▢½ teaspoon salt

▢coconut or olive oil cooking spray

For the Glaze:

▢3 cups confectioners’ sugar (120g)

▢½ cup whole milk (120mL)

▢2 tablespoons melted unsalted butter

▢½ teaspoon vanilla extract

In a small bowl, whisk together the warm milk, yeast, and 1 teaspoon sugar. Let the mixture stand until very bubbly, 5 to 10 minutes.

 In the bowl of a stand mixer fitted with the dough hook, whisk together the melted butter, eggs, and remaining ¼ cup sugar until smooth. Stir in yeast mixture until combined. Add the flour and salt. Mix on low speed until a shaggy dough forms. Increase speed to medium-low, and knead until the dough is smooth and elastic, about 5 minutes. (The dough will be slightly sticky.)



Transfer the dough to a large, lightly oiled bowl. Cover and let rise in a warm, draftfree place until doubled in size, about 1 hour 15 minutes.



Line a large rimmed baking sheet with parchment paper and lightly dust with flour.



Punch down the risen dough. On a lightly floured surface, roll the dough into a ½inch-thick rectangle. Using a donut cutter, cut out 12 donuts and 12 donut holes, rerolling scraps as necessary. You can also use a 3-inch and 1-inch round cookie cutter to cut out the donuts. Place donuts and holes on the prepared baking sheet. Loosely cover and let rise in a warm, draft -free place, until doubled in size, about 15 to 20 minutes.



Preheat the air fryer to 350°F for 10 minutes. Spray the air fryer basket with cooking spray.

 Working in batches, carefully place donuts in an even layer in the air fryer basket, about 1-inch apart. Lightly spray the tops with oil.

 Cook for 6 minutes for donut holes and 8 minutes for big donuts or until golden brown. (I recommend frying the big donuts and donut holes separately since the cook times are slightly different.)

For the Glaze:

In a medium bowl, whisk together the confectioners’ sugar, milk, melted butter, and vanilla until smooth. Dip the warm donuts and donut holes into the glaze. Place on a wire rack and let the glaze set for about 5 minutes before serving. Store any leftovers in an airtight container for up to 3 days.

First let’s talk about garlic scapes When to harvest garlic scapes

Garlic scapes in my cold climate garden usually start to make their appearance sometime in June (this may differ if you’re in a different growing zone). Not all of my varieties are always ready at the same time, which is nice because I can harvest garlic scapes in batches and enjoy them for longer.

Garlic scapes are easy to discern from the rest of the plant because they kind of look like green onions with a long elf hat (the bulbil) at the end. You’ll know your scapes are ready to pick when they form a spiral. Simply cut the scape (I use my garden scissors) at the base where it comes out of the stalk. If the scapes become straight, after they’ve gone through their curling phase, they’re past their prime. They’ll be tougher than a younger fresh scape and taste more bitter.

Once I have a handful of scapes, I usually whip them into garlic scape pesto (some of which I’ll freeze in ice cube trays). I snip off the “elf hats” and simply use the stalk. If you don’t cut your scapes and leave them on the plant, the bulbils turn into flowers and seeds. Even if you don’t intend to eat your garlic scapes, it’s still a good idea to snip them at the base of their stalk so

that all the energy can go back into growing the bulb underground.

When to harvest garlic

After you cut the garlic scapes, you have about a month or so until the garlic itself is ready. Keep an eye on your garlic as you’ll see some of the bottom leaves start to die back. The tips of the leaves may also start to turn yellow and brown in color. When there are two dry, dead leaves at the base of the plant with a third starting to die, this is when you should pull your garlic.

It may be hard to see the first leaf. The bulb is wrapped in several leaf layers. As a leaf dies, the soil bacteria help it to decompose.

How to harvest garlic

The best way to remove a garlic bulb depends on the variety you’ve planted. For Turban, Artichoke, and Silverskin varieties, you might want to use a sturdy trowel or even a small shovel. Make sure you place the tip of your tool slightly away from where the bulb is. You don’t want to damage it underground. Gently lift the soil beneath the bulb. Usually this nudges the bulb up a bit, loosening the soil enough to pull the stalk. Gently remove excess dirt, being careful not to bruise the bulb. Bruising affects the storage life.

If the soil seems reasonably loose, I’ll try pulling hardneck varieties, like Rocambole and Porcelain, because the stalks are super-thick and sturdy. You want to avoid breaking off the stalk

There will be a lot of activity with others from now to 21st July. At times you could feel your own choices are limited and that you need to go along with what they expect. Part of this could be restructuring things in some way of which you can be resistant. What you might have to accept is that this will be the case eventually.

(May 21-June 20)

As free as you might feel or want to be there will be decisions of a more serious nature that need to be considered. It might become obvious that something you wanted to pursue in the future would best be put on hold. Things can change day by day over the next 12 months. This unpredictability can be rather exciting at times.

VIRGO (August 23-Sept.22)

A new lease of life can descend upon you, generating quite a different view of what might be possible in the future and feeling as though you have the self confidence to pursue it. It is important to lower the level of regular commitment this would involve. That might include handing some responsibility over to someone else.

AQUARIUS (Jan. 20-Feb.18)

You can accomplish a lot to 21st July when it comes to getting some sort of structure in place that will give you a sense of being better organised. This is likely to be in line with major changes you feel you need to make about yourself. Some of this could involve family and perhaps the way things operate at home. Greater enjoyment needs to be part of it.

SAGITTARIUS (Nov.22-Dec.21)

Other people can be all over the place and if you are not careful this could land you with a lot more work to deal with to 21st July. Don’t be afraid to cancel something that doesn’t seem to be working as you expected. If you don’t want to be left handling most of the responsibility it will be up to you to speak up and let them know.

PISCES

(Feb. 19-March 20)

A light can be shone on somebody else in some way which will give you a better sense of what they are really all about or exactly where you stand with them. It will not alter any situation where you need to take responsibility for yourself but it may lead to feeling mentally stronger when it comes to standing up for your own ideas.

CANCER (June

21-July 22)

So much can seem unpredictable at the moment and for this reason you need to take a patient approach. Wait for matters to surface of their own accord. The expectations of somebody else can put you under a lot of pressure, especially if it interferes with your own priorities. It would be best to keep your true thoughts to yourself.

LIBRA (Sept. 23-Oct.22)

Focus on where you want to head in the future and any commitments you would need to make on a regular basis. Relying on somebody else right now might be difficult as they will tend to be more secretive rather than open. Much of this can be connected to them wanting more freedom than is possible. That is not your worry.

CAPRICORN (Dec.

22-Jan.19)

Social activity that isn’t necessarily light hearted can put you under some pressure in the next few weeks. Your main focus needs to be on what has to be handled on a daily basis and even though you might have it all well planned, there can be all sorts of interruptions that take place. You will cope quite well but could feel worn out.

ARIES (March 21-April 20)

Any new directions you have taken from the start of May will now require some consideration on the financial side up to 21st July. Lowering the level or cutting something out is most likely. Youcan’t get away from taking a practical approach mentally, especially when it comes to being prepared for the unexpected in the future.

because then you’ll need to go searching underground. Without a winter mulch, I’ve found myself before with a broken stalk in my hand and a clove of garlic still hiding beneath the soil.

Sometimes the soil and bulbs need a little coaxing. I’ve found that when I mulch my raised bed with straw in the fall, the soil is much looser than if I just leave the bed exposed for the winter.

What if you pull garlic too early?

It’s sometimes hard to know if a smaller head of garlic will keep growing, even if the bottom three leaves have died away. There is a rapid growth stage just before garlic is ready to harvest, so a few days could make a significant difference. But then sometimes a bulb is just going to be a runt no matter what.

Curing garlic basically means drying it out. You want lots of air flow and a cool place to cure it. Drying racks are great options because you can use them for other veggies and herbs, as well. I made my own drying rack out of screen stapled to a scrap wood frame. I place it on a stack of bricks or buckets in my garage so air flows underneath. In years past, I’ve also hung my garlic in bunches, secured by twine around the stalks, in the garage. You can braid the stalks to store, as well.
