Easy Chocolate Zucchini Bread Recipe
Rich, fudgy, and so moist, this chocolate zucchini bread is a must-try. Bursting with decadent chocolate flavor and melty chocolate chips, it is impossible to tell that there is a serving of vegetables in this quick bread!
Ingredients
• 1½ cups all-purpose flour (180g)
• 1 cup granulated sugar (200g)
• ½ cup dutch-processed cocoa powder (50g)
• ¾ teaspoon baking powder
• ¼ teaspoon baking soda
• 1 teaspoon ground cinnamon
• 1 teaspoon espresso powder or instant coffee
• ½ teaspoon salt
• ½ cup vegetable oil (120ml)
• ¼ cup unsalted butter melted (60ml)
• 3 large eggs room temperature
• 2 teaspoons vanilla extract
• 1½ cups packed shredded zucchini (220g)
• 1 cup semisweet chocolate chips (180g)
Instructions
Preheat the oven to 350F. Grease a 9×5inch loaf pan with butter or baking spray.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, cinnamon, espresso powder, and salt.
In a medium mixing bowl, whisk together the melted butter, oil, eggs, and vanilla. Add to the flour mixture, along with the zucchini, and chocolate chips. Stir together until combined. (The batter will be very thick). Scoop the batter into the prepared pan and spread into an even layer.
Bake for 60 to 70 minutes or until a toothpick inserted into the center comes out with a few crumbs. Let cool in the pan on a wire rack for 20 minutes. Remove the bread and cool completely on the rack or until slightly warm before slicing and serving. The bread can be wrapped and stored at room temperature for up to 4 days. Individually wrapped slices freeze great, too!

Orphaned Bear Cubs Can be Prevented
Human negligence continues to orphan bear cubs. The lack of proper waste and attractant management is simple intolerable. Two young Grizzly bears are the latest victims. Hearing their cries and watching their hopeless movements is heartbreaking. These cubs came from Stewart, a town that advertises to tourists that you can view Grizzlies there and yet the mother bear had easy access to birdseed and garbage. But Stewart is not alone in mismanaging their waste and attractants. Smithers Bylaws still allow residents to put out their garbage the night before pickup, which recently got another young grizzly killed. Smithers and Prince George are also lacking bylaws to deal with unharvested fruit bearing trees, in fact both towns have planted crabapple trees on town land. That has gathered them the dubious high ranking place in BC's list of towns that get the most bears killed due to the lack of proper attractants and waste management. Come on People, town officials are elected, you have the power to make changes, use it. No wildlife should have to die because we as people are not putting the right measures in place. It's not rocket science, just common sense and a heart that cares.

Hermes lost his mom on July 31st and still cries for her after 12 days. He and his sister Gaia will never be the same, their carefree youth was stolen. We are entering the worst season at NLWS were we deal with this daily and we thought we share what we see and hear. Maybe some will be moved enough to change their way and maybe one or two cubs will not loose their mom to preventable circumstances. We will celebrate the day when cubs we rescue have been orphaned due to accidents and not human negligence.
