The average restaurant goer's understanding of the hospitality industry is limited to their personal experiences as patrons. The requirements for excellence generally are few: great ambiance, outstanding service, and of course, delicious food and drink. But past the kitchen doors is a system known only to the staff and mostly misunderstood by patrons. Checks, balances, and timing are all key in the execution of service, something the triune ownership of The LakeHouse keenly understands.

For the last 12 years, Chef Matthew Connors and his wife Eileen were a hospitality force who had moved from Brooklyn to open The LakeHouse on West Main Street in Bay Shore. The team added partner, Jason Gut, and relocated to the Bay Shore waterfront in 2017. Expanding from a charming 50 seater, the new multiple dining room location can seat just over 200 guests, but a conversation with the owners quickly reveals The LakeHouse's strategy for success isn't based solely on the numbers. Rather, the team has a multifaceted approach to hospitality with the patron's experience at the center. The original LakeHouse Restaurant afforded its team a learning experience like no other. Says Eileen Connors, "We had ten years of watching people crammed into a small place, so we knew what to do when we were given this opportunity. We calculated our original space and scaled up to make things better." The LakeHouse team notes that they've literally accounted for every need of the patron in their design, from acoustics to table spacing, with the most notable feature being the addition of their more casual, in-house Tap Room. "The old restaurant had ten barstools and people felt uncomfortable because it was within the dining room," Eileen explains. "To keep the ambiance unaffected, we made a completely separate bar room. There are tables for sitting and walk-in dining alongside people enjoying happy hour at the bar. The Tap Room is its own entity here inside the restaurant, and the noise level doesn't affect the rest of the dining rooms where guests may be enjoying more intimate events." The Tap Room also features a special pub menu, in addition to The LakeHouse's lauded prix fixe and dinner menus, which focus on high end, American style food and seafood with nods to Connors’ experience as a chef in Manhattan. The menus continually challenge the status quo for dining on Long Island, without isolating patrons by serving high price tags for high quality. After a decade in a small location, one could hardly believe those beginnings birthed the new LakeHouse location. In a seamless transition, the team has upgraded to six separate dining areas, including an outdoor deck and the aforementioned Tap Room. This comfortably large new site on the bay

features several rooms, each accommodating various purposes. The private dining room features a long chef's table, perfect for intimate gatherings and presentations, with a window to the enormous kitchen. The deck provides an expansive outdoor view of the Great South Bay. The multiple dining areas within the restaurant yield different experiences, from cozy, fireplace dining to upscale booths for larger, less formal parties. The LakeHouse's new home on the bay may be large, but the most important aspect of their approach to hospitality lies within their relationships with their customers. The management has calculated dining times to the minute in order to ensure each guest has ample time to enjoy their experience. The kitchen is also given time consideration to prepare each dish to their liking with the dedication to detail Connors and his team have gained a reputation for. Each dish on The LakeHouse's menu is prepared to order, rather than pre-cooked, frozen, and reheated. To ensure this level of quality, the restaurant puts a cap on the amount of guests they will seat. "We only allow about 30 guests to be reserved every half hour," explains Jason. "To do the quality of what we do, for a fine dining experience, we have to limit things. We could say ‘yes’ to 200 people at 7pm on a Saturday night, but 150 of those people are going leave disappointed. The food will take longer, no one will have the attention to detail and proper care put into it, so why do that?" says Connors. "It's always been our philosophy that if you don't get greedy, give people the right thing, and do hospitality the right way, it's a long term investment in our guests, rather than short term. We don't want to jam everyone in here. We want them to experience that we care." At the heart of The LakeHouse is a team set on creating a positive experience for their guests, something Eileen notes is quite natural to her. As she circles the dining hall greeting patrons and checking in on regulars, it’s apparent that The LakeHouse is more a grand home than a dining room. “I love people. I really do. That’s just natural to me to make sure that they have a great time with us and want to come back. Why do anything else?” Why indeed.

fter a year of undergoing extensive renovations, the Argyle Theatre in the heart of Babylon Village is scheduled to open this spring and bring fine arts to the Great South Bay community. After a lifetime of shared interest in the arts, father and son duo, Mark and Dylan Perlman of Seaford, purchased the building in February, 2017. Dylan, 24, a working actor, told us their goal is to provide a Broadway-style experience on Long Island. The tremendous project restored the former movie theater to its original glory that dates back to 1922. Now a single theater, complete with an orchestra and balcony for live theatrical events, the Perlmans will be bringing musical theater, plays, comedy, film, concerts, and more to the south shore. The Perlman family was always passionate about the arts, but it was Dylan's youthful
idealism that launched the vision for the Argyle Theatre. "It was 2012, I was 18, and working in theater. I saw so many different venues and theaters on Long Island, but a lot of things made me feel there was a gap in the market, and real demand for a great venue. I ran my ideas by a friend and we wound up talking about it to my dad, and after that it just snowballed." The building became available three months after Dylan graduated college, perfectly synchronized with Mark's plans to retire. The Perlmans made a blind bid, and though initially turned down, after six months of silence, their bid was accepted. Three years later, the building was under construction and the Perlmans couldn't be a more natural fit. The new 500 seat theater will feature an intimate setting with the acoustics and presence of a Manhattan Broadway theater. Six mainstage
productions are scheduled for each season featuring casts from Actor’s Equity. In addition to performing arts, they are planning to offer theater workshops and a children’s theater camp during the summer. The stage has been built out, and multiple screening rooms removed to make it more spacious. An orchestra pit has been installed, as well as a threefloor multipurpose backstage area and dressing room. Concessions will be located on the main floor and a bar on the upper level. The theater is anticipated to drive commerce to the Babylon area, with many of the village’s bars and restaurants benefitting from show-goers enjoying a pre or post show supper or drink. We are very excited to have this venue in our community! Stay tuned for the grand opening and upcoming shows.

Bring Spring Inside
While it may be too early to plant impatiens outside, it’s the perfect time to bring spring inside. Ignoring dreary weather outside is easy when your home is in full bloom! Floral accents brighten up any room. For home décor lovers, Instagram has become an excellent source of inspiration and ideas to revive your home.
If you follow Instagram accounts of home décor enthusiasts, you may be familiar with Anisa (@a_flann) and photographer Sylvia Cook (@slcook52), our guest contributors. Sylvia decorates with a neutral base as she loves light, bright, airy spaces. She uses shades of white as her canvas for larger furniture pieces, then adds color with accents like pillows, throws, small decor items, and flowers. Anisa uses lemons and forsythia for a splash of sunshine. Dress tables with floral linens and tableware. Many pretty tabletop items can be garage sale treasures. On the First Warm Day... Many of us will be opening windows, looking to the garden, and turning outdoor chairs towards the sun. The mental shift from living indoors to living outdoors begins as we eagerly await the warmer temperatures. Filling baskets and pots with a variety of cold-tolerant early spring flowers such as primrose, pansies, and violas, rich in shades of blue, pink and purple, are a colorful way to brighten any outdoor space. A fresh coat of paint is a great way to give outdoor furniture a quick-fix and turn “garage sale finds” into treasures. Which paint to use, and how to apply it, depends on surface material and personal preference. Wicker, rattan, and plastic outdoor furniture all have a nice finish when sprayed as opposed to brushed; and wood looks great stained or painted. To paint a wooden surface with color, first prep the surface by sanding and wiping it clean. Next apply a quality primer to
avoid paint blotchiness and premature chipping. Finish with 1 - 2 coats of paint and voila!...a beautiful new piece! Plan a Project. Now is the time to plan an outdoor project. Prior to calling your contractor or landscaper, do some research and create an idea board, complete with inspirational photos, so you both have the same vision. Healthy Alternatives, Babylon Village, is a holistic center and specialty shop created to nurture, nourish and inspire health and well-being. Donna Lorenz, owner of Healthy Alternatives, has always believed in giving back. Donna started her business because she was passionate about living a healthy lifestyle and raising her family that way. The desire to spread her knowledge beyond her inner circle to reach the lives of others is what motivated her into business. “We have always been all about making things available that are safe for the environment, as well as any member of the family, whether it is something you’re wearing, putting on your skin, or something you’re ingesting”. Donna’s goal is to provide a product or service that has meaning, and there is usually a story that extends beyond what you see. When choosing products, she selects only locally made or from vendors within the U.S.. It is also important that the products are made in a healthy, sustainable way while watched over by the owners. Donna likes to single out vendors who offer anything that is “repurposed, recycled, gives back, has meaning, or something that makes it unique”. Many of the vendors Donna uses are also conscious companies. Hand in Hand soap offers products that are good for you as well as the environment, and they give back. They donate one bar of soap plus one month of clean water to a child in need. Conscious Steps supports a variety of non-profit organizations, from disaster relief to rainforest preservation. Their really cool, comfy socks are made from sustainably grown organic cotton and for every pair purchased they donate to a non-profit organization. Other product lines Donna carries who also share her conscious mindset are Grace and Lace, Knots Apparel, Pal Socks, and Chavez for Charity. Healthy Alternatives also gets involved in community events, especially around the holiday season. They participate in the ‘Adopt a Family’ program and also host a holiday party to help supply the local food kitchens. Donna says, “We are always helping out with raffle baskets and fundraisers”. May they be a role model for other businesses to get involved. By shopping at stores that give back, we are making an active choice about the companies we choose to support, and in fact are being part of the greater good.
Swell Taco
“
PEACE, LOVE, AND LIVE SWELL”
Swell Taco in Babylon Village has earned quite a reputation for their cool vibe as well as being a business that gives back to society. After opening ‘Swell’, owner Brooke Jankow realized she had a platform to make a positive impact. Brooke says, “I just feel like whoever is in a position to make a difference should”. While Brooke recognizes they can’t change the entire world, she is happy knowing that she can at least make a difference in someone’s life. Swell Taco’s mission is to perpetuate a culture of goodness and happiness. “The love of food, the love of each other, and the love of surf, sun, friends and family” is what they want to spread beyond their own four walls. Swell Taco hosts an annual event called ‘Swell Gives Back’. They do this to bring the community together while supporting a great cause…and have fun doing it. Their most recent event, which took place on the back deck of their Patchogue location and was more like a party than a fundraiser, was a huge success. Funds raised provided aid to Puerto Rico after Hurricane Maria… food, money, and supplies were handed directly to the people who were most in need of it.

Knots Apparel is a men’s apparel and accessories company on a mission to affect positive change in the world! Each premium men's accessory product is designed to evoke certain characteristics of their charitable partners. They then commit 50% of their profits towards advancing the mission of those charities. Love Your Melon is an apparel brand dedicated to giving a hat to every child battling cancer in America as well as supporting non-profit organizations who lead the fight in pediatric care.

It doesn’t end there…Swell has raised $20,000 for a local resident and loyal patron who was battling cancer and in need of financial support; enrolled under-privileged kids in sports programs; and provided Christmas presents for children who otherwise wouldn’t have gotten any. “It’s honestly a huge privilege to be able to give back!” says Brooke. She is currently in the process of forming her own organization called Project GroundSwell. GroundSwell’s mission is to do everything they are currently doing, but to get children involved at the ground level. Brooke’s hope is that the children will feel empowered and inspired to do good things for others, and then continue to do good and give back throughout their lifetime.
Lessing's Restaurant Group
“
GIVING BACK IS ON THE MENU”
The Lessing’s Restaurant Group operates multiple high-end wedding and catering venues, several restaurants, and various other food services. Being a conscious business has always been a core value of the 128 year old, highly diversified food company. Family-owned and operated since 1890, it’s always been Lessing’s mindset to give back, both locally and on a grander scale. They are continuously involved in charity events to help their local communities and beyond. From September 2017 until Super Bowl Sunday, Lessing’s partnered with Gallo Wineries for #winenot. The mission of this campaign was for every bottle of select Gallo wines purchased, four meals would be donated to Feeding America. Lessing’s Post Office Cafe, Maxwell’s, Library Cafe, Finnegan’s, and Southside Bar and Restaurant all participated and 208 meals were donated thanks to their amazing patrons! Still ongoing is Lessing’s Local Cheer campaign, which began back in December. Blue Point Brewery brews a beer called Local Cheer, which is Lessing’s holiday beer. For every Local Cheer that is purchased, 10% of the proceeds gets donated to Long Island Harvest.

It was 1989. I moved back to Long Island to be close to my mother who was battling cancer. A mere 26 years old filled with a world of possibilities, I opened my first business, Elle Rae Bodyworks Salon, in East Islip. I immediately felt the need to connect with the community and do something meaningful with my new business. I began to seek out local organizations, and got involved with the East Islip Chamber of Commerce. It was early spring, and members of the Chamber were asked to sell daffodils on behalf of the American Cancer Society. I loved those daffodil days! I believe this was the beginning of consciousness building in my business. Soon after, I was asked to attend a South Shore Hospice meeting of nurses, or as I liked to call them, the ‘true nightingales’. I offered my talents and efforts to assist with their fundraisers and other various supportive events. I enjoyed working with the community and feeling connected to such a worthy cause, especially knowing we were making a difference in people’s lives. During this time, my dear beautiful, vibrant mother was succumbing to her disease. Although it was her wish to have spent her last days on earth at home, she unfortunately never made it out of the hospital. Her passing left an indelible mark on my heart and would eventually lead me to my greatest work…

Well-equipped with a boat-load of ambition throughout these nearly thirty years in the beauty industry, I was fortunate enough to realize that without giving back, I could never be truly successful. The effects of watching a loved one suffer is honestly what inspired this cancer care program. We are truly honored to be able to spend time, lend support, and hopefully make a difference in the lives of people just like my mother. We are now in our sixteenth year with eleven programs running strong. The salon and spa industry is notoriously, sometimes
freakishly, competitive. With Mondays at Racine, we have created something unique within the beauty industry - a new model where salons, spas, yoga studios and wig specialists can work in collaboration towards one goal: helping people battle cancer with support and dignity. I guess it's safe to say there is no competition when it comes to cancer. It levels the playing field; we become one team working together. Competition is healthy as long as you keep it healthy. Integrity and acting in good conscience should be woven into all we do in business and in life.

For the Greater Good We all are different, yet beautiful, in our own way. Each of us both unique and diverse in appearance, opinion, and culture. It's very tempting to see the world in black and white; a right way and a wrong way. But that's just not how it is. Our world is rainbow colored, with many different ways of doing and seeing things. As long as we are all peaceful, respectful and rooted in love, we can help make this a better world. Learning to accept differences is a step in the right direction.

I was raised in one of our coastal towns along the bay. Our family was pretty sheltered. We knew all our neighbors, went to the local Catholic schools, and wore the same uniforms for 12 years. The schedule rarely changed. School, church, friends, parties. All with the same group of people. Time came for me to venture from the safety of our nest and I was off and running. New York City was my playground. It was a safe, fun, exciting place for a 20 something. I could take the subway at any time of the day or night. I met people from all walks of life in the world of advertising. It was the early 1970’s…women were protesting, burning their bras, nudging the glass ceiling, and loving new-found freedom. I met people who lived far and away from my coastal bay bubble. We partied together, talked politics, read Kierkegaard and Sartre. I questioned everything I was told. The Beatles talked about
love, peace and healing the world. They crooned “All You Need is Love”. They went to India and came back changed by their Guru. George was teaching us to love “My Sweet Lord”. We wore flowers in our hair, sang with the hippies in Washington Square, and were asked to Make Love Not War. Yet, the war in Viet Nam was raging. Hanoi Jane, Kent State and draft card burning. We watched our soldiers come home mangled or in boxes draped with flags. Coming from a family of patriots, a dad with a purple heart, it was hard to ignore this reality. “We Didn’t Start the Fire” juxtaposed the Fab Four. Peace marches sprung up everywhere. We were respectful of the vets and prayed for peace throughout the world. Fast forward a few decades… soldiers are still fighting for freedom for the besieged. Democrats and Republicans are still digging in their heels, wondering how this will all
play out. We citizens of the U.S. are confused daily by the pettiness and animosity stemming from the individual differences in people throughout our beautiful land. Aren’t these differences the same ones we accepted, loved, and even celebrated only a few decades ago? I asked, in prayer, what I could do to help myself and I looked into my soul. I decided to learn more about World Religions and enrolled in One Spirit Interfaith Learning Alliance. I gained insight about the “others” as well as myself. We learned how to conduct ceremonies such as funeral services, baby blessings, worship services and weddings. In the summer of 2010, New York legalized samesex marriage. “Now, that is something great”, I thought. Why not allow couples who love each other, who are committed to a lifelong partnership, and want to have equal rights with, to marry? It was what lead me to become
a legally ordained minister. This has allowed me to officiate same-sex marriages, as well as weddings for people who have been married two or three times, and people who wouldn’t be allowed to be married in an organized religion. The quote “There is Only Love” resonates with me. I truly believe it is what the world needs. I am thankful that my mom opened my eyes to the different people she met in life, and that my Dad taught me to treat all people the same, whether they are in your bubble or not. They formed me, then sent me on my way to learn about love and people on my own. As I grow in age, it has become my mission to grow in love and acceptance of all people. It starts with me; I will continue to spread and sow these valuable seeds throughout my community in hopes of creating a more kind and peaceful place to co-exist.

“I promised to lose the twenty pounds of weight that I gained over the past few months from overindulging during the holidays and poor eating habits.” It’s always easier said than done. Often, cravings for your favorite foods are actually what your body needs most, but in a much healthier version. Instead of reaching for a sweet roll, a sweet potato is really what the body wants, or a nice piece of fruit, or a bowl of sweet brown rice. Making the right choice by reaching for the much healthier sweet, salty, or savory food is the key to managing cravings. Getting started is challenging, but paramount to any life goal. The old saying, “A house is built one brick at a time,” couldn’t be more appropriate when it comes to establishing new habits or new life choices. Cravings usually indicate an imbalance in your body’s digestive system. Personally, I crave the bad fermented foods, and they are my favorites. Cheese, catsup,

Valerie chooses shelter dogs from Riverhead, Southold, and Brookhaven shelters who would benefit most from individual attention, small group socialization and relaxation. Friends come visit and bring food, treats, hugs and toys for the pampered pooch. Please advise. I’m concerned. Dear Concerned, Here’s my heartfelt advice. First, I’m glad that you are listening to yours. Second, your symptoms align with normal canine cardiac functions. However, to stay heart healthy it’s important to keep it well-nourished. Apply generous amounts of love, compassion and kindness to keep it strong. For optimal lubrication, I recommend daily doses of joy. Slow down when you eat, practice mindful munching, if someone tosses you a bone, return the favor, find a squirrel and get jiggy with it, prance like there’s no one watching, rub against a tree, bask in the warmth of family, rely on the kindness of strangers, and continue chasing tail. Play it forward my friend! That said, bear in mind that even the strongest hearts can break, but love is the glue that repairs. Always keep your heart open, follow it! When we lead with our hearts, we have truly arrived. P.S. Be extra careful when rubbing shoulders with humans, they wear their hearts on their sleeves. With love, Dr. Mil

Beach Body BY ANNIE NILAND Last spring, when I was standing on line at CVS trying to remember what I forgot to buy, the cover of a popular health and beauty magazine caught my eye. A glossy young woman with an amazingly fit body must have been directed to flex her biceps and make a facial expression like she just found her lost puppy. The camera loved her….so did the teenage boy in front of me. The team that put it all together for the shoot did their job and then some. She was magnificent in her star spangled bikini. I saluted her youth and beauty, wondering where her genetic gifts ended, and Photoshop began. Either way, it was obvious that she spent many hours in the gym, and not at the snack bar. But, the copy on the cover made me want to stamp my feet and explain to everyone on line that it was false advertising. According to that publication there were 10 exercises we could do in the comfort of our living rooms for only 7 minutes, 3 to 4 times a week, and get the Perfect Beach Body by summer. I was so irritated about the ridiculous claim, and the word, Perfect, that I came close to finding solace in a big bag of Doritos, but I practiced self-control and grabbed a small one.
Fast forward to 2018. We know all too well that there are no quick fixes for winter bodies that burrowed into warm couches on cold days instead of hitting the gym. As a pro, I would never dream of fit-shaming anyone who decided to tuck in this winter. Maybe we’re biologically wired to do so. I too enjoyed binging on Netflix series during snowy days, and got cozy with comfort foods which never disappoint. Truth is, my nose would grow if I didn’t admit to feeling anxious about the warm weather coming our way. I don’t want to break up with my roomy sweaters and long- sleeved shirts, and I’m in a long term relationship with workout clothes that keep things under wrap. I suffer separation anxiety when I have to peel them off on hot days. Like you, I’m more confident when my lemons are held in place by my Lulu’s. Stretchy black leggings that wick and don’t tell are truly a girl’s best friend. So, what can we do between now and summer to accept, and even celebrate, our perfectly imperfect beach bodies? Keeping it light, maybe we could: Get over ourselves and stop
worrying about how we look. (This sounds good in theory and works well on paper. If you have achieved this state of grace, the rest of us look forward to your TED Talk).
Continue to wear black leggings
and long-sleeved shirts even as the temperatures rise. (Heat rash is a small price to pay for dignity)

Pizza Rustica BY DIANE KANTOR
This traditional Italian Easter pie recipe has been passed down from generation to generation in my family. Bound together with eggs, it’s made with cured Italian meats and cheeses, and can be served either warm or cold. We usually eat thin slices of Pizza Rustica as an antipasto on Easter before a traditional lamb dinner. INGREDIENTS
• ¼ lb. prosciutto • 1 stick soppressata (or mix half

Spaghetti alla Trapanese BY DIANE KANTOR, BAY SHORE
This is a quick and easy vegetarian recipe for a delicious meatless meal. The sauce is made like traditional Pesto Genovese sauce with a few additional ingredients and almonds instead of pine nuts. This raw sauce is added to hot spaghetti. INGREDIENTS • 1 pint cherry tomatoes
• Kosher salt and fresh ground
• Large handful of basil leaves (approx. 2 cups, not packed down)
• 1/3 cup whole almonds, lightly toasted (the skin can be on or off)
• 2 – 3 garlic cloves • 1/4 tsp. red pepper flakes
black pepper to taste
• 1/2 cup olive oil • 1/4 cup sun-dried tomatoes in oil
• 1/2 cup grated cheese • 1 lb. spaghetti or any long pasta of your choice
DIRECTIONS 1. Toast the almonds in a dry pan or on a cookie sheet at 350 degrees between 5-10 minutes, until just lightly toasted. Watch carefully, they can burn easily. Set aside to cool to room temperature. 2. Rinse and pat dry the tomatoes and basil. 3. To a food processor, add the tomatoes, garlic, cooled almonds, basil, sun-dried tomatoes, red pepper flakes, salt and pepper and use short pulses until mixed well. Scrape down the sides of the bowl with a rubber spatula. 4. While the food processor is running, add olive oil until a creamy paste forms - do not puree. Transfer pesto to large bowl and taste for seasoning. 5. Generously salt water for pasta. Cook spaghetti 2 minutes under al dente as per package directions. Save 1 cup of pasta water. 6. Drain the spaghetti and toss into the pesto. Toss quickly to coat the spaghetti, then add grated cheese and toss again. Add pasta water, 1 tbsp. at a time to adjust consistency so that the pesto coats the spaghetti and is not too dry or too thick. I like to serve the spaghetti immediately, but it can be served at room temperature. Additional grated cheese can be added at the table. Garnish with fresh basil leaves.

1 stick pepperoni salami ¼ lb. hot capicola 6-8 slices of genoa salami 1 fresh basket cheese (2lbs) NOT mozzarella (This cheese is a specialty item that is sold during Easter at Italian markets such as Uncle Giuseppe’s, Aiello Brothers, and Pastosa). Let it drain in a colander overnight. When ready to use, squeeze out any excess liquid then use a wooden spoon or fingers to crumble.

• Two 1 lb. balls of pizza dough (either homemade, or from a pizzeria)
DIRECTIONS 1. Preheat oven to 350. 2. Cut first six ingredients (meat and basket cheese) into small bite size pieces and mix together in a large bowl (this prep work can be done one day prior to assembling the pie). 3. When ready to assemble, add Romano cheese, mozzarella, provolone, nutmeg, parsley, salt and pepper to meat and basket cheese mixture. 4. Prepare small roasting pan or spring-form pan with olive oil to coat the bottom and sides. Cut pizza dough and shape to form a bottom layer, sides, and also top layer of dough. (If you don’t want a full top layer, cut the dough in strips and criss-cross on top with no venting) 5. After shaping the bottom layer of dough in the pan, add the meat and cheese mixture. Separately, beat the 13 eggs and half and half; pour over dry mixture in pan and mix well. Add top layer of dough (or strips). 6. Roll top and bottom layers of dough together around the sides to seal. Vent the top of the pie with a fork or paring knife several times. 7. Add sugar to the egg yolks and brush the top of the pie for glaze. 8. Bake at 350 for 60 -75 minutes. 9. For the first 30 minutes, cover the pie with aluminum foil. Bake uncovered remaining 45 minutes. 10. If using a spring-form pan, let pie stand 15 minutes then release pan sides and transfer to plate. Can be served warm or cold. I had this at a friend’s St. Patty’s Day party in Bay Shore and loved it so much I wanted to share it. The recipe below uses crescent dough; I also make it with pizza dough and roll it into a Stromboli by pinching the ends. You can use leftover slices of prepared corned beef, or corned beef sliced from a deli. Either way, it’s a hit. -JL Recipe Yield: 8 Servings INGREDIENTS • 2 tubes (8 ounces each) refrigerated crescent rolls
• 1 pound sliced Swiss cheese • 1-1/4 pounds sliced deli corned beef
• 1 can (14 ounces) sauerkraut, rinsed and well drained
• 2/3 cup Thousand Island salad dressing
• 1 egg white, beaten • 3 teaspoons caraway seeds
DIRECTIONS 1. Preheat oven 375. Unroll one tube of crescent dough into one long rectangle; seal seams and perforations. Press onto the bottom of a greased 13-in. x 9-in. baking dish. Bake for 8-10 minutes or until golden brown. 2. Layer with half of the cheese and all of the corned beef. Combine sauerkraut and salad dressing; spread over beef. Top with remaining cheese. 3. On a lightly floured surface, press or roll second tube of crescent dough into a 13-in. x 9-in. rectangle, sealing seams and perforations. Place over cheese. Brush with egg white; sprinkle with caraway seeds. 4. Bake for 12-16 minutes or until heated through and crust is golden brown. Let stand for 5 minutes before cutting.
