Talking to Carl A P E R S O N A L H I S TO RY O F T H E S O U T H S I D E H OT E L I walked through the front door of the Southside Hotel for the first time on July 7, 1950. I was 6 years old. It was my birthday. My father shared all family celebrations with “the gang down at the Southside.” His little boy’s birthday would be no exception. “I figure he’s just the right age to start sharing a pint at me favorite pub,” my father said to Carl Wolff, the little Irish bartender who’s head barely cleared the top of the bar. “What’ll it be, matey?” Carl asked as if I were an adult patron. “Ginger ale,” I answered timidly, looking up at my beaming father. “Ginger ale it is,” Carl agreed, nodding and disappearing back behind the bar. He promptly served me a Cherry Coke. Carl and I repeated this ritual hundreds of times over the next 14 years until he died in 1964.

THE SOUTHSIDE HOTEL The Southside Hotel was Bay Shore’s original “local”. In old England, food and lodging was originally provided to the traveling public based on class distinction. Only the privileged classes could patronize certain inns and always occupied separate quarters. English common law eventually imposed social responsibilities for the well-being of travelers upon the inns and taverns, declaring them to be “public houses” which must receive all travelers in reasonable condition who were willing to pay the price for food, drink, and lodging. Thus, the first “pubs” were established.

Carl Wolff… Mr. Kelly liked to listen in to the police calls and offer commentary on every call. ‘Uh oh,’ he’d whisper. ‘Looks like Dot Mahoney called the cops on Jack again. He musta come home in his cups. They’ll be hell to pay.’ Kelly tended bar with me for 20 years. Never heard him tell a story the same way twice… When Johnny Witchert bought the place in 1952, he put old Edna out back to do the cooking. Pretty good cook. Invented what we call “pub” food today. Just simple home cooking back then. No menu. We ate what Edna cooked; pot roast, beef stew, corn beef and cabbage. Lunch and dinner. Didn’t matter. She made it in the morning and we ate it all day. Tasted better after it set awhile"

“Public houses” for travelers grew up in every small town across the British Isles and came to be known by the residents as their “local”. Immigrating from Ireland, the Hughes family built the Southside Hotel in 1930 and established the first “public house” in Bay Shore. It quickly became my father’s “local”. When Prohibition ended in 1933, Carl Wolff served the first legal drink over the bar that he had hauled out from Brooklyn in the back of a truck. That same bar still stands proudly today in the front room of the Southside Hotel.

It was never no “hotel”. Boarding house more like it. Hughes family took me in when I came over from the old country during the Depression. Homeless, I was. Started helping around the place to work off my keep. Bin tending the bar here for 30 years now. Just never left.” “Uncle Huey” and “Aunt Fran” Melton bought the Southside Hotel from the Hughes family in 1944 and ran a true “local” for the boys returning from World War II. The Post Office, built behind the Southside on Bay Shore Ave, and the new volunteer Fire House around the corner on Main Street insured a steady supply of patrons stopping in for a pint before and after work and after every fire call. Before some regulation stopped it, a fire department radio squawked behind the bar for twenty years calling the volunteers into action.

In 1962, due to John Witchert’s failing health, the Witchert family sold “Johnny Witchert’s” to their bartender, Artie Schiller. Artie ran “Schiller’s” for 38 years, welcoming a new generation of baby boomers to their “local” without changing or “upgrading” anything. Some saw this as “respect” for tradition. This, of course, was a romantic notion. Artie was not given to romantic notions. He was thrifty. Take the shuffleboard table. When I was six years old, I had to stand on tip-toes to push the pucks down the long shuffleboard table that occupied the entire length of the bar’s south wall. Thirty years later I was tall enough to notice the smooth grooves worn into the same shuffleboard table that still stood proudly in Schiller’s. Artie was really thrifty.

THE SOUTHSIDE In 2000, Ned and Loretta Baker purchased the Southside and continued to operate it in the same fashion; thrifty. But their thrift was colored with a genuine respect for the 20th century culture the Southside Hotel represented. The Baker’s were careful to continue the comfort of extended family, the sincere patriotism, the willingness to serve, and the readiness to burst into joy at a moment’s notice that was the soul of the “Greatest Generation” and the legacy of the “Baby Boomers”.

In 2013, the Southside Hotel joined the Lessing Family of restaurants and is today known simply as Southside Bar & Restaurant. The Lessings, a local family with a long history in the “pub” business, have endeavored to preserve the Southside’s 20th century colorful traditions while carefully updating them for the 21st century patron.

Dear Readers, DIDN’T I JUST SAY, “SEE YOU IN SEPTEMBER”? WELL… HERE WE ARE! Welcome to our very first “September” issue. The lazy-days of summer are frequently anything but; more like action-packed, fueling our chaotic state with travel, social gatherings, and lots of carefree dining and schedules. This issue is all about ‘organizing chaos’, and full of ideas to help tidy up your life. Our focus is ‘simplify’, with “Simple To-Dos” that benefit your body, mind, and spirit; and even a simple breathing technique to help subdue anxiety. Whether you are sad to see it go, or a little excited about summoning the call to order, the summer season has begun its descent into fall. It’s time to transition from playtime back to school and work. Don’t worry; be happy… the weekends in September are overflowing with so many great things to do! Street fairs, festivals, apple picking… we’ve got you covered. We even have new seasonal menus and special offerings from our local restaurants. It’s all inside. Meet the South Shore's Own Chip & Joanna LO CA L HU SBAN D AN D WI FE BU I L D AN D DESI GN T EAM , BIL L & S HARON M ITC HELL LIST: How long have you lived in the south shore area? BOTH: We were both born and raised here. After living in the West Islip house for 2 years, we sold it and purchased a home in Babylon where we lived for 19 years. Having raised 3 strong, healthy, educated women in a town and community that we hold close in our hearts makes us very proud to live here. We look to continue living here and serving the community. LIST: What types of projects people should contact you for?

Bill and Sharon Mitchell have been buying, selling, and fixing up houses long before HGTV turned it into a mega-industry. The couple, married 34 years, started selling real estate together back in 1978. Their story began in the early 1980’s when Sharon was involved in the purchase of a fire damaged house in West Islip as an investment. Bill did the contracting work. Six months later, they fell in love with the house, and each other. They purchased the renovated home and got married. It’s been non-stop teamwork since then.

BOTH: If someone is interested in buying, selling, renovating or staging their home, they should contact us. We do it all! We are not exclusive to, but specialize in waterfront homes. Our next two projects are both waterfront, one on Captree Island and the other in Massapequa. We get excited about major renovations where designing and decorating transform a distressed house into a dream home. LIST: You both bring a lot to the real estate table; can you please elaborate on that for us? BILLY: I never really left real estate, I just switched from selling other people’s houses to buying and selling our own. Sharon worked in real estate, law offices, mortgage departments, and also with me finding properties and securing investors to help us purchase houses, all while she was home raising our three girls. SHARON: Billy loves his business of building, designing, and renovating. In 1989, during our recession, Bill was asked by insurance adjusters to go to St. Croix after hurricane Hugo. We spent three years rebuilding there before returning to LI and resuming Mitchell Contracting, Inc. We also buy homes under Mitchell Properties, Inc. In 1994, Bill decided we should promote the business and organize a local home show, which we did for 12 years at Farmingdale College. We had special guests like Bob Villa, Richard Karn (aka Al from “Tool Time” on the hit TV series Home Improvement), Jodi Marks and Pat Simpson, who are HGTV experts on building, renovating, and remodeling. We sold that show, and I went back to real estate. I’ve been working for Douglas Elliman in Babylon for the past 6 years. I worked there before, so it was an easy transition back into a great company. I love what I do in real estate. I work primarily by referral only. I love staging homes and creating

a place that a buyer can see themselves living in. Bill and I both take pride in what we do. We produce a great product. No matter how small the home, we use high-end appliances, custom moldings, and special touches that bring a lot of pride to our companies. We believe a small home deserves the same quality as our million dollar homes. Quality and ambiance is very important to both of us. Bill has kept his office right in the middle of Babylon Village for 23 years; we are always accessible and easy to reach for any inquiries. LIST: How many projects have you worked on together? BOTH: We have bought and sold over 125 houses between Long Island and St. Croix, USVI. LIST: Is there a particular project that is very memorable for you both? BOTH: Yes! We did our first knock down and rebuild in the heart of Babylon Village in 2000. We lived there for over four years, then sold it privately, as many of our houses are private sales, then we moved to Captree Island. LIST: Do you find it challenging to work together as a husband/wife team? BILLY: We find it very easy. SHARON: We are both real estate junkies, even on vacation! Sometimes one of us will buy things when the other is not around, making what we like to call “an executive decision”. We have disagreed from time to time on design or color, but we have learned how to compromise. We never run out of conversation; something is always happening or needs attention. We separated our business hats a long time ago, but if either of us should need the others help or input we jump right in and support them any way we can. We have our individual businesses and differences in how we run them, just like everyone else. However, we have learned to respect each other’s space and expertise. LIST: Who is the better cook? BILLY: Sharon, definitely. I only BBQ. SHARON: I am. I love to cook and entertain, so all of our homes have special attention to detail in the kitchen renovations. Like most women, I spend a lot of time in the kitchen. It should be functional and beautiful… a place for family and friends.

USE A MASTER CALENDAR According to Barbara Reich, author of ‘Secrets of an Organized Mom’, it is essential to have one master calendar for the entire family. “Whether you affix a calendar to a wall, post it on the refrigerator, or keep track of your family's activities electronically, what's important is that every activity for each family member is recorded in one place,” Reich says. “This guarantees that you'll avoid the stress of doublebooked activities, impossible logistics and overscheduling.”

DESIGNATE AN UNLOAD ZONE Having a place for school bags, shoes, and coats to go will simplify your efforts to get out the door.

THE ENTRY WAY As the entrance to your home, it becomes a drop zone for shoes, coats, and bags… and it’s the first spot visitors see. Invest in an attractive sturdy basket, or storage bench, that looks nice and hides things.

Consider leaving doors off especially if the new alcove’s esthetics add to the function and beauty of the room

Mason jars are great for storing clothes pins and fabric softener sheets. Use clear glass or plastic containers to dispense smaller amounts of your cleaning agents, and keep the large containers behind closed doors. A DIY ladder-like drying rack can be hung from the ceiling with chains and serves as a drying spot for wet or pressed clothes. Create a folding station. A wood or Formica counter top across your washer/dryer is both functional and attractive.

A brightly decorated, wellorganized laundry room can inspire you to wash, dry & fold. Cabinets, shelving, counter tops, and storage bins can make this room stylish and tidy.

COOK ONCE; EAT TWICE Plan two meals each week that will create enough left-overs to make a second meal. For example, Baked Chicken one night can be shredded for tacos or a salad on another night.

PREP FOR DINNER IN THE MORNING Make a simple marinade, like olive oil & vinegar with seasoning. Place the meat you want to eat for dinner in a casserole dish or re-sealable plastic bag and cover with marinade. Put it in the fridge and it will be ready to cook when you get home.

USE A CROCK POT OR SLOW COOKER

If you’re making something like soup, burgers, or casserole, consider doubling the recipe and put half in the freezer for later.

Prepare ingredients for the crock pot recipe the night before. The next morning, dump ingredients in, set it and forget it. Your meal will be ready for you and your family when you walk in the door.

Just Like a Hallmark Movie…Sort Of BY JANE BAVO SO

Would I want to live in a Hallmark Movie? Of course not. After all, what fun would life be if everything went perfectly?”

I was looking forward to living in a Hallmark Movie for the week. My daughter and her four children were moving in for a few days since work was being done on their house. It sounded perfect. I envisioned quality time with my daughter, happy memories being made with my grandchildren, the house full of laughter and activity. And then the week began. Sunday the children and I made chocolate chip cookies together; each of them jockeying for the best position at the table. After cleaning up one egg from the floor, and after everyone had a turn to add ingredients, stir, and put dough on the cookie sheet, we managed to bake three dozen delicious cookies. All agreed we made the best cookies together! Ah, Hallmark was calling out my name. Monday morning those same joyful kids were unrecognizable at the breakfast table. Grumpy and bleary eyed, they choked down a few spoonfuls of cereal and off they went. I happily went grocery shopping to prepare a feast for my, I was sure, hungry grandchildren after their long day. I was confident that everyone could see the Hallmark Crown sparkling on top of my head. The vision of a table full of hungry children so happy to be eating grandma’s home cooked meal danced

in my head as I cheerfully pushed the grocery cart through the aisles. By 2:45 they were back; homework started and snacks given out. Dinner smelled great, I opened a bottle of wine and was anxious for us to share the meal. We all sat down…and then it started. “How many string beans do I have to eat?” “Don’t put any gravy on my food!” “I really don’t like mashed potatoes.” “Is this chicken?” I took another sip of wine. I felt my crown slip a little on my head. Tuesday arrived with the same four unrecognizable children. I had to drive them to school since their mother had work. Back packs in the car, everyone buckled up and off we went. I got home and sat down for a cup of tea when it dawned on me… I have four kids in the house! I scrubbed the bathrooms, made the beds and straightened up. Barbie Doll apparel was everywhere. When I glanced at the clock, it was time to pick them up from school. Seriously, have they shortened the school day? In marched the troops; clothes changed and homework started. The girls went to dance class and dinner preparations began: one for adults; one for kids. Wine for grandma…do they drink wine in Hallmark Movies? Wednesday felt more like Groundhog Day than a Hallmark Movie. Same kids, same scenario, but the added bonus of a sick grandchild.

During the night, my granddaughter threw up all over the stairs. She would be staying home. Fortunately, she was feeling better by the afternoon so we went shopping for her communion dress. Let me just say it was not like when I bought my daughter’s dress in Lobel’s many years ago, but it was a wonderful experience and maybe a little like a Hallmark Movie. She said “yes to the dress” and we returned home. Homework, showers, teeth brushing, bed and another glass of wine. Thursday. The last day. The excitement had worn off for all of us. Upon arriving, my seven year old grandson, more grouchy than usual, decided he really didn’t want to go to school and would just stay in the car. “Fine”, I said “you just sit tight and I’ll just have the principal come out to speak with you.” With that, he sulked off to school. Back home, I changed and washed sheets and before I knew it, was back picking them up. By this time my Hallmark Crown had rolled somewhere under the seat of my car. Homework, school clothes changed, and two kids who weren’t feeling well. I was counting the hours until this Hallmark Horror Movie would be over. I packed up bags of belongings. By 9:30 p.m. they were gone; amidst of course, hugs and kisses. I poured myself another glass of wine.

Jane who discovered her love of writing after retirement, is a member of several creative writing groups, has had her heartwarming stories published in Newsday, and is grandmother to six very active grandchildren who keep her busy and always laughing.

So You Think I Can Dance?

When is Your Little One Ready for Dance School? If you are the parent of a toddler, I’m sure you wish you could somehow harness their energy! This is the perfect time to try a dance class for the first time. Dance is a wonderful outlet for young children to learn how to coordinate their bodies, refine their motor skills, and be creative! Making the decision to join a class can be a bit stressful, especially if you are unsure if your child will like the class. Here are some ways to know if your child is ready for dance:

• They love music and movement! Does your child dance around your house and put on a “show” for you? Do they request their favorite songs when you’re driving in the car? Do they wiggle anytime they hear music? If you’ve answered “yes” to any of these questions, your child will LOVE dance class! • Your child is emotionally ready to take class without a parent in the room. This is a great sign. If your child has been in a school or daycare setting before, or if they’ve participated in other social activities, usually they will do well in an independent dance class. Sometimes the adjustment takes a few classes, which is fine and completely normal. However, if you don’t feel your child is ready for an independent class, we offer a Dance with Me program for ages 18 - 36 months, which includes parental participation in the class. • They can follow simple instructions. Children will be expected to learn basic tasks such as imitating the teacher’s movement, taking turns, and lining up. One of my studio employees once put this best: “Young children are still learning how to listen.” Children learn how to listen in dance class; they follow their teacher’s instructions and they accomplish learning a dance routine…and have a great time doing it. • Maybe you know your child is ready for dance class…but you’re not sure which option is a good fit for them. Speak with the dance studio director or staff member to decide which class will be best. Often, a class for 2 – 3 year olds is more of an exploratory class; it may be ballet-based but will involve creative movement and/or tumbling skills. 3 – 4 year olds may be ready for a Ballet/Tap combo class or even Hip Hop! Whatever you decide, your child still gets to explore movement of their body to music, which is priceless. How to Tame Anxiety Everyone has experienced feeling anxious. This could be due to starting school, a new job, getting married, moving, or even visiting the dentist. It is not uncommon to feel anxious during stressful times in our lives. We asked Babylon Village Clinical Social Worker and Therapist Sandra Reinert, and Toni Ann Panariello, owner of The Welcome Mat Yoga Studio in Islip, to share some helpful information pertaining to anxiety. “Anxiety can be paralyzing” states Sandra. “Anyone who has experienced a panic or generalized anxiety attack knows this and the fear that goes with it.” When anxious, we tense up which causes the constriction of blood vessels carrying oxygen to the brain, often causing panic and confusion. One technique that is effective for controlling anxiety is a simple breathing technique, which must be done at the first physical sign of disturbance, such as hands sweating, throat tightening, chest constriction, butterflies in chest or stomach, or any other signs unique to you. The important thing to remember is that the breathing must begin before the full-blown anxiety attack in order to prevent it. The technique is to count to six or seven as you breathe in, then do the same as you breathe out. Imagine taking the air in through your feet, bringing it all the way up – hold for a second - and then release just as slowly back down through your feet. This slowness causes a physical response which opens needed airways that carry oxygen to the brain, hence enabling one to think rationally rather than the frozen confusion and panic that usually evolves from anxiety. “At first this may feel very unnatural. Stick with it. The key is to keep trying and eventually you will begin to see improvement. At some point the technique will become a

way of life, not something you have to think about” says Sandra. “Anxiety can be tamed.” Toni Ann also emphasizes the role of breathing when working through stressful situations. “We often explain to our students that when they feel overwhelmed by anxious and stressful thoughts, take a moment to disconnect” says Toni. “Softly close your eyes and connect to only your breath. As you inhale and exhale softly through the nose, thoughts will enter; acknowledge their presence, then let them go like passing clouds in the sky. This is your time to just breathe.” A certain amount of anxiety is normal, we all experience it from time to time. When you are no longer able to control the anxiety and it becomes problematic, coping tools need to be put into place. If anxiety attacks are becoming more frequent and disruptive to your life, or if you are suffering from a specific trauma which you cannot get past, then it is best to seek professional help.

NO GO FOR CHEMO New Study Says Many Women with Breast Cancer Don’t Need Chemotherapy According to a major international study, known as TAILORx, as many as 60,000 women a year who have been diagnosed with early-stage breast cancer do not actually need it. This differs from current standards, sparing thousands of women from the rigors of chemotherapy. The study confirmed that through gene testing, many women could instead take only the drug tamoxifen or other estrogen blocking medications Chemotherapy can be very successful, but also has serious side-effects. For this reason, Good Samaritan Chief of Hematology/ Oncology John Loscalzo, MD, sees the recent study as great news. He states that this recommendation only affects a subset of patients who have breast cancer; those with an intermediate risk of relapse as defined by their Oncotype DX Breast Cancer Assay test. Oncotypes are done only on women with breast cancer who have tumors that are node negative, estrogen

positive and Her-2 receptor negative. “At The Cancer Center at Good Samaritan, we have incorporated Oncotype testing into our decision making for many years,” said Dr. Loscalzo. “This test analyzes the genes in the cancer cells that may be broken and are causing the cells to grow out of control. These are not genes the patient inherited or could have passed on to her children. Instead, they are mutations that have transformed a normal breast cell into a cancerous one.” The Oncotype test is a measure of risk of relapse and scored on a range from 1 to 100. It divides cancers into three groups—low, intermediate and high risk. According to Dr. Loscalzo, the majority of women fall into the low risk category and the recommendation for them for many years has not included chemotherapy. Those in the intermediate group, though, are among the 60,000 annually whose treatment was at question.

This study, though, provides the data and confirmation that this subset of women do not need chemotherapy. “The final caveat is that for women under 50 years of age, the recommendation is still up for debate as to whether chemotherapy should be recommended for intermediate risk women. A Hat for All Reasons BY ANNIE NILAND

I have trouble leaving the house without a hat on. I feel unfinished, naked, and vulnerable. I have no idea if others feel this way because they usually laugh when I tell them how I feel about hats, and it leaves me scratching my head as to why everyone doesn’t share my affinity towards them. Many people claim that they don’t look good in hats, but I would argue that everyone does, it just has to be the right hat, and the world is filled with “just right” hats. Now we have to fill it with the right heads…another column.

Fashion statements aside, there are so many tangible reasons for wearing hats:

Protection from the elements….especially bird poop.

A disguise: We all need to be the artful dodger when we are in CVS with hemorrhoid medication in our cart and we spot a high school nemesis. Pull down hat, exit aisle.

Bad hair days.

The Royal Wedding…or stateside, the Kentucky Derby.

It’s been said that there are no quick fixes in life, but I would argue that. They’re called baseball caps. Just like closets become hiding places for the mess that needs to be hidden from the eyes of unexpected company, a baseball cap gives us a head start on pulling ourselves together on short notice. It might explain why I have so many. What’s in your closet? One of the sweetest stories I have about hats involves a fifth grade boy named Brian. He shared with me not only a love for hats, but a need for them. I was working in a classroom with a kind teacher who was always able to see the world through a child’s eyes. As with many schools, it was against the rules to wear hats in school. However, this teacher bent the rules a bit and told the

students they could wear their hats in the classroom. However, soon as they had to leave the classroom for any reason, it was “hats off”. As we were getting ready to leave for an assembly, Brian was slow in removing his hat. I reminded him gently about the hat rule outside the classroom. Brian’s cheeks flushed, and his eyes welled up with the promise of tears. I leaned in to make my point and he burrowed his head into his arms. His voice was muffled, but his words struck a chord in my heart… “It’s not just a hat….it’s like a house I live under”. I knew at that moment that I would never forget Brian’s words. He spoke an unnamed truth. When we need to shield ourselves from the pressures of the world… hats heal. They are houses we can live under.
