ver the years, View has garnered many prestigious awards; most recently, earning 3 Stars from Peter Gianotti, Newsday’s well-known restaurant critic, and the highly acclaimed Wine Spectator Award of Excellence. What is it that makes View so special? It’s all rooted in the kitchen, the heart and soul of View. I spent an amazing afternoon sitting with Executive Chef Muzio (aka Chef Billy) and Chef de Cuisine Keith McConnell, enjoying brilliant vistas of the bay from the outdoor deck, and dining on superb menu selections. Nothing short of perfection can be expected from Chef Billy, who graduated at the top of his class from The Culinary Institute of America in Hyde Park, NY. Following graduation, he spent time as a sous chef at several fine east end restaurants. Despite his success here on LI, his passion for Asian cuisine inspired him to travel and cook his way

I asked him what he wanted patrons to experience while dining at View. “I want to WOW them,” says Chef Billy. “I want them to walk in and say ‘Wow’, to see the first dish and say ‘Wow’, to take a bite and say ‘WOW’!” He achieves the “WOW” factor by knowing what customers want. Every morning, coffee in hand, Billy reads through a summary of the previous day’s posts on social media to understand what’s working and what’s not. “We are constantly eliciting the customers’

through Thailand, Laos, Vietnam and Cambodia. Upon his return, he had the opportunity to work at the prominent Le Bernardin in New York City, under world-renowned Chef Eric Ripert. Pair topnotch academics and experience with authentic Asian influence and passion for fine food and you wind up with the award-winning creative fare of Chef Billy.

“They’ve made it clear that there are some items I cannot change,” explains Billy, “We have customers who come specifically for our crab cakes. If I even think about changing the preparation, we’ll have very upset people in our dining room.” What goes on behind the kitchen doors is also a major component of the “WOW” factor. Watching them interact, these two have obvious chemistry. No doubt it’s all business in that kitchen. I wondered if they played music while they cooked.

“We play music during afternoon prep, usually something happy like Reggae. We never have music in the kitchen during ‘service’. Actually, it’s amazing to go into the full dining room at dinner and hear talking and laughter, and then pass into the kitchen where you can hear a pin drop. Quite the contrast. In the kitchen, we are 100% focused on creating a meal to exceed expectations. Each team member knows their role and trusts the others to put forth their best. It’s like a well-orchestrated ballet,” states Billy. “We have a team of professionals focused on our vision of ‘wowing the customer.’ We take food seriously, but not ourselves.” says Billy. And that’s why he approached Keith McConnell for the position of Chef de Cuisine.

Chef Keith, a native of Florida, began his culinary career at Johnson & Wales University. During this time, he simultaneously worked in the kitchen at The Ritz Carlton in Key Biscayne and also in Miami. After graduating with his culinary degree, he returned to Long Island, where he worked at several fine restaurants assisting executive chefs. It was an easy decision for him to accept the position as Chef de Cuisine under Chef Billy. They too share the same view and passion, making for wonderful camaraderie in the kitchen.

Let’s talk food... What’s your favorite to create? C HEF KEITH: “I like adding depth to simple food, such as the Bucatini Alle Vongole. I make the broth separately from baby clams and cockles and simmer it with fresh thyme and white wine. It’s our take on linguini and clam sauce, and it’s the best you’ll have.” With that, Chef Keith disappeared to make this dish for us. It…did…not…disappoint. In a word: WOW. C HEF BILLY: “I love using the best ingredients. The balsamic vinegar on our Savory Fig and Housemade Ricotta Toast appetizer is imported from Italy and the bottle is more expensive than a fine wine. It’s outstanding. Our claim to fame is our seafood. Our goal is 'sea to table', focusing on the freshest fish possible with most of it currently being caught off Montauk. Being on the water, it’s important to us that we help preserve our environment. That’s why we also recycle our used oyster shells to local oyster farms.” After spending an absolutely wonderful afternoon here, it’s not surprising that View continues to receive such outstanding reviews. Open year round, their recipe for success includes a commitment to excellence, the camaraderie of a great team, a love of dazzling food experiences, and the ultimate desire to “WOW” their diners. Their food is a reflection of the passion they deliver each and every day.

Hello everyone! Although I am not quite ready to wave “goodbye” to summer, there is a lot to love about September. It’s still warm enough to go to the beach, but late enough in the season to miss the crowds. And the back-to-school mentality of having to get everything organized and back on schedule is sort of welcoming. Still, there is nothing quite like our Indian summers on Long Island. It’s actually my favorite time of year weather-wise. It’s like the extra Christmas present your parents hid in the garden shed and forgot about until mid-January. You’ve accepted you’ve had your fun for the year, then BAM!! A few weeks later you get hit with a bonus treat! Our cover shot of dining alfresco at View is a perfect representation of an endless summer, as well as the delightful luncheon we had with not one, but two exceptional chefs. I am looking forward to every seasonal menu they create. Inside this issue you’ll find many terrific local restaurants and businesses, all with something special to offer. Our What’s Happening calendar for September is packed with fun festivals and events for the weekends, and even gives a sneak-peek into October. Now that we’re back-to-work and school, perhaps our quick easy breakfast recipes can be helpful; or maybe we can inspire you to prepare something special for a weekend morning. Annie started writing her column, Raging Gracefully, because she’s committed to the idea that regardless of how old one becomes, raging as opposed to simply aging, is the new paradigm for stalling Father Time. If we all get behind her ideology maybe Mother Nature will agree. We are counting on that.

Cocktail parties can feel like job interviews when you’re meeting people for the first time. Resumes are traded back forth posing as small talk. The “What do you do?”, “Where are you from?” and “What have you read lately?” questions make me nervous. My responses have gentle spins on them so they sound more interesting and I make sure to stand in good light. Last summer, at an event, I met a very successful business man who took great delight in telling me in exquisite detail how he climbed the corporate ladder. When he told me he was “self-made” I tried to be witty and asked him, “Are you sure your parents didn’t help you?” It was an anemic joke; I liked him for ignoring it. Or, maybe he didn’t hear me because he had the floor and I was cornered. My husband missed the “come rescue me NOW!” look that most wives have mastered because he was busy entertaining a group with stories about touring the world in his glory years with Alice Cooper. They were spellbound even though most of them heard these tales before…many times. Yep, that’s how good they are. I didn’t want to be rude to “Bobby Axel”, who was only mid-way through explaining his business model, so I did my best to appear riveted. My rock star husband is a contractor on Fire Island and Bobby might want to build a new town, so I raised my eyebrows, widened my eyes, blinked, nodded my head and said, “Wow” at regular intervals. But I shot myself in the foot by being too good of an audience. When he stuffed a crab cake in his mouth while laughing at one of his own jokes he spit food on my face. I had no choice but to take it on the chin.

Now a few things could have happened: (a) We both pretend the piece of crab on my face wasn’t there (my personal favorite when I spray someone), (b) I discreetly wipe my chin and make a note to write about it, or (c) He apologies profusely and gives me money. While cash for damages done is always a solid choice, what transpired was priceless. Bobby not only apologized, he helped me wipe my chin, with the tenderness a parent would show a child. When he followed with, “I’m such a pig, I’m so sorry, I get nervous meeting new people and when you told me you were a TEACHER I just wanted to impress you! I had some great teachers who always made me believe I could be successful in life if I worked hard.” Boom! We clinked glasses. His pricey red wine spilled on my fluffy pink slides. I slid them off before he could notice. So, I dedicate this story to teachers everywhere who are committed to young people, passionate about their jobs, and continually face new challenges which only those in education can truly understand. They are the stewards of future success stories like Bobby’s.

The Smoothie The term “power lunch”, born in 1979 in NYC and made popular during the 1980’s, is celebrating its 40th birthday by redefining itself and adopting a healthier, more youthful image. No longer exclusive to corporate CEOs and VIPs, today’s power lunch is inclusive of all, from toddlers to grandparents, and does not require a reservation for a table. In fact, it is portable and requires only a straw. It is commonly known, in layman’s terms, as a smoothie. Made from raw fruit and vegetables, a smoothie is a thick and creamy beverage, much like an old-school milkshake, typically blended with ice, sometimes yogurt, and a type of milk (almond, soy, coconut, rice, or even cow’s). Vanilla and chocolate no longer rule; they have been dethroned by exotic flavors like Mango Mixed Berry, Cherry Almond Spinach, and Kale Orange Banana.

The fruits and veggies, along with additional ingredients like nuts, grains, and protein powders provide the “power” in the “lunch”….or breakfast. Or whenever the mood for a smoothie strikes. When blended, nutrients from the ingredients are more readily absorbed into the bloodstream, making them more effective. Smoothies are super rich in nutrients, antioxidants, vitamins & minerals, and contain an abundance of fiber because they utilize the entire fruit or vegetable, which keeps you feeling full. Toss in some nuts, seeds, grains, and protein powder and you’ve got one powerful lunch. But, most importantly, smoothies are delicious. You’ll drink your veggies without even realizing it.

One thing we love best about homemade smoothies (or ones freshly made from juice bars) is we know 100% of what goes in there. Tired of the same old sandwich? Try drinking your lunch! Here are some of our favorite recipes…

Peanut Butter Cup Smoothie • 1 cup almond milk (low-fat

Keep in mind, although nutritious, smoothies can contain a lot of sugar and calories from adding too much fruit, so be conscious of how many different fruits you toss in. Including protein (via powder supplement or yogurt) and/or veggies will help to keep it balanced. Equally important, for all your ingredients, is portion size. Too much of a good thing can be a negative. As with most dietary issues, it’s important to check with your doctor to make sure any meal replacement will meet your specific nutritional needs. Beware…pre-packaged store bought smoothie mixes may be loaded with sugar and preservatives.

PALLET REFINERY REVAMP, REUSE AND REFINE. “One man’s garbage is another man’s rustic treasure,” states Gabrielle Sprance, founder of Pallet Refinery. “We are all about second chances and seeing the real beauty in things. We take pallets that would normally get discarded and transform them into beautiful home décor. Here on Long Island, it’s becoming more and more crowded. If we can ‘revamp and refine’ what exists, it’s a win-win,” says Gabrielle, a skillful recycling warrior. Not limited to wood, they also use and repurpose vintage finds and antiques. Recycle. Recycle. Recycle THE BEAUTY AND THE BRAINS. Gabrielle and her husband work as a team; she is the artist and designer. She’ll find a piece, sketch her vision for its transformation, then hand it to her hubby. “He’s the handy one,” chuckles Gabrielle, “the one who continues to tell me wood doesn’t bend.” They might disagree over who is the beauty and who is the brains of their operation, or more likely, each will try to take credit for both. Their shop is full of laughs, music, and occasional swearing. HBO should consider these two for their next big series. Game of Pallets. Seriously. WOOD ELEMENTS. When working with wood, not just any old pallet will do. They are very responsible about using only healthy pallet wood for their creations, giving consideration to the homes that their pieces will end up in. And because pallet wood ages differently, each piece has its own look and personality. FROM SHIPPING TO SHOPPING. Staying true to their art of repurposing, they converted large shipping containers into a workshop and also a showroom for their creations. If you’re in the mood to shop, their showroom is open on the weekends. And yes, they take (and love getting!) custom orders.

Z I M M E R M A N ' S H O M E S TO R E The well-loved Zimmerman’s Home store, once located in Lindenhurst, has moved to East Islip! It’s the new Zimmerman’s Home featuring quality furniture and design service with a fresh and modern perspective. For over 65 years, the familyowned Zimmerman’s Home has stayed true to the goal of offering stylish, high quality furniture at reasonable prices. Recently, Jeff Zimmerman decided to step down and start a new chapter, relaxing and enjoying his life-long success, and passed the business on to his long-time colleague and friend, Ted Olander. Ted has been in the furniture business for almost his entire career, and was truly proud to carry on the Zimmerman’s name. In March, he opened the new Zimmerman’s showroom in East Islip at the landmark Textile Mill End building, just off of Sunrise Highway. Now, as the Principal Designer and Owner, Ted continues the legacy for quality furniture while incorporating his design philosophy, which is to create spaces that reflect each client’s style, space, personality, and budget goals. The first thing that struck me when I visited the new showroom was how bright and modern it was. Although it is a smaller space, the vignettes of room-settings were absolutely stunning. “What you see is just a small sampling of our style and design,” Ted told us, “We still carry every line of furniture as in the original showroom, and offer a wide variety of fabrics, styles, and finishes. The range of selections we offer is impressive. It really lends for a fun shopping experience. “ After browsing the showroom, I sat down for a little Q&A with the new Zimmerman’s team…

THE LIST: How are you different than a mainstream furniture store?

ZIMMERMAN’S: Mainstream furniture is more of a “point and click” style of shopping. You get what you see. They are salespeople. We are designers. With us, you get one of a kind, perfectly constructed, high quality pieces to match your exact aesthetic and lifestyle.

THE LIST: Ted is so friendly and warm, what can people expect from him as the principal designer?

ZIMMERMAN’S: If a client wants guidance with decorating their living space, be it a cozy corner or their entire home, Ted can help. He will spend time with them and offer selections from our showroom as well as the extensive additional options that we can create. Some people may think that specialty custom choices for high-quality pieces limit their selection, or won’t work within their budget. That is truly not the case. Once they sit with Ted and see how knowledgeable he is, they immediately begin to relax and find themselves excited to shop for more than what they originally planned. Ted will even come to your home to measure and assess exactly what your space needs, always free of charge, always around your schedule. From start to finish, every step of the way, he seamlessly guides you through the process of

designing a perfect home. It’s really a unique experience.

THE LIST: Do you work with interior designers? ZIMMERMAN’S: Yes! We love working with designers! They are great for advice and teaching the importance of size and scale…equally important as color and style. We definitely cater to the trade; we partner with designers and industry professionals throughout the Tri-State area. However, not everyone has a designer, so Ted becomes your personal designer should you need one. THE LIST: Can you give us some details about having furniture customized?

ZIMMERMAN’S: Customizing furniture is about selecting finishes, fabric, and style. Let’s say you want a couch. Ted will show you all the different styles based on your desired look for your home. You’ll pick fabrics, cushion fill, and leg finish. You truly create a piece made just for you. It’s actually very fulfilling to have a piece like that in your home, one that you genuinely created, rather than just a stock piece from a furniture store floor. THE LIST: Do you carry products for the entire house?

ZIMMERMAN’S: We have everything you could possibly imagine for your home. Furniture, art, rugs, accessories, custom pillows, lighting - lighting is so important. People have

beautiful homes and leave lighting as an afterthought. Lighting comes in so many styles and designs, all surprisingly affordable, there is no reason to have anything but excellent fixtures in your home. When we say we can outfit your home with everything, we really mean it.

THE LIST: We think it’s great that you are in the same building as Textile Mill End Shop. Do you both get cross over business from each other? ZIMMERMAN’S: It’s really been a perfect pairing. They have been doing such high quality work for our community for generations it was an easy decision to join them on the property. The customers looking for their caliber of fabrics and upholstery are right in line with our customers looking for fine furniture and home design.

Zimmerman’s was always a favorite place of ours to shop for a unique piece or 'something special'. After seeing their new showroom, no doubt it will remain one of our favorite 'go-tos'.

Here are personal stories of tried-and-true favorites…

Anti-Inflammatory Several months ago, I developed lower back pain that became chronic. My doctor diagnosed it as mild dextroscoliosis of the lumbar spine, which occurs in the lower back and is more common in adults. Any spinal curve greater-or-equal to 10 degrees is considered to be scoliosis. Mild scoliosis, in particular, is defined as a curve between 10 and 20 degrees. I learned as we age, it is very common to develop back pain and arthritis in some areas of our bodies. I had tried many things to help relieve the pain and discomfort, but to no avail. Recently, a relative suggested I try taking turmeric, as she found it very effective at relieving her arthritis pain. Curcumin, the active chemical in turmeric, is known to be a natural antiinflammatory. Aside from taking a multi-vitamin and vitamin D3, both of which my doctor recommended, I typically get my vitamins and minerals through a balanced diet, not additional supplements. After having bloodwork done, my doctor was able to approve my taking turmeric and recommend proper dosage for me. I started taking turmeric in a supplement form, and I take it every day. Using an upside-down glass, gently twist a hole out of the center of each slice of bread.. Remove the cut-out pieces and set aside. Melt butter in a large frying pan over low heat. Add the bread slices and let them brown. When first side is toasted, flip and toast the second side. Crack an egg into the hole of each slice. Sprinkle a touch of water around the edge of pan and cover until whites’ firm up. For sunny side up cook without a cover. Add toppings as crumbled bacon or melted cheese. Serve immediately.

Avocado Toast

Loaded with fiber, healthy fats, vitamins, antioxidants and more potassium than bananas, avocados are a good choice for a meal that is both plant-based and healthy. Only a handful of ingredients are needed for this simple, yet sophisticated recipe.

Blueberry Almond Oatmeal ING RE DIE NTS

• I cup quick cooking oats • 1 Tbsp. plus ½ tsp. cinnamon sugar • 12 almonds, chopped into small pieces • ½ cup milk • ¼ cup fresh blueberries, washed, dried and chopped in half (frozen can be substituted) • 2 tsp. blueberry jam or preserves • brown sugar DIRE C T IO NS

Toss fresh blueberries with ½ tsp. cinnamon sugar until berries are coated; set aside. (If using frozen blueberries, microwave for 30 seconds then sprinkle 1/2 tsp. cinnamon sugar on top.) Over medium heat, add 1 ¼ cups water, 1 Tbsp. cinnamon sugar and almonds to saucepan and cook until water begins to boil. Add milk; return to gentle boil, then add oats and cook 2-3 minutes over reduced heat, stirring occasionally, until thickened. When thickened, add blueberries to oats; mix gently, then cover saucepan and turn off heat. Let sit for 2-3 minutes. Spoon into 2 bowls; place 1 tsp. blueberry jam in center of each bowl and lightly sprinkle with brown sugar. Makes 2 servings.

If you’re looking to spice things up, try topping with chopped garlic, jalapeno, or red pepper flakes. What’s in your spice rack? Powdered onion or garlic are quick ways to boost flavor. Adding fresh lemon, lime and/or cucumber slices to a tall glass of iced water is a refreshing substitute for sugary or caffeinated drinks… and is delicious alongside spicy avocado toast!

Cheesy Hash Brown, Bacon and Egg Breakfast Skillet A great way to bring the family together is over a special weekend breakfast. It’s a tradition in our home, and truly one of my favorites. Nothing better than the aroma of a hearty breakfast beckoning my boys out of their warm beds and down to the table. I cook. They eat. We talk. We laugh. They are all mine for a few hours. Enjoy! I N G R E D I ENTS

• 8 strips bacon

• ½ teaspoon coarse salt

• 1 lb. Yukon gold potatoes, (4 medium) diced into bite sized pieces

• ½ teaspoon black pepper

• 1 small yellow onion, diced • ½ red bell pepper, diced • 3 cloves garlic, minced • 1 teaspoon cumin

• 1 teaspoon chili powder • ¼ teaspoon paprika • 4 -6 eggs • ¼ cup mozzarella cheese, grated

• ¼ cup cheddar cheese, grated • Extra virgin olive oil for extra drizzling • Fresh cilantro roughly chopped, thinly sliced chives for garnish (optional)

Preheat oven to 400*F. Place strips of bacon in a large cast iron or oven safe skillet. Cook over medium-low heat on both sides until cooked through but not yet crispy, about 10 minutes. Remove from heat to a paper towel lined plate and set aside, leaving the bacon grease in the pan, then crumble bacon once cooled. Increase the heat to medium-high, add potatoes, bell pepper, and onion and cook for 7-8 minutes, stirring frequently, until potatoes start to soften and can be pierced with a fork. Add garlic, chili powder, cumin, salt and pepper. Cook for 1-2 minutes, until garlic is fragrant. Using a spoon, create 4 to 6 holes depending on how many eggs you want in hash mixture. Mix cheeses and distribute evenly into each hole. Place in preheated oven and cook for 8-10 minutes, until egg white is set but the yolk is still runny. Remove from heat. Sprinkle with chopped bacon. Garnish with fresh black pepper, cilantro and chives.
