A Farm Near Your Table LOVE WHERE YOUR FOOD COMES FROM

This is one story about one of many farms on Long Island. I write it in this style because it is the farm I know best and collaborate with as a local restaurant owner. It is meant not as an advertisement but rather to inspire readers to learn more and hopefully visit a local farm. Organics Today is a three acre farm located down a quiet dead end street in East Islip. Here, Mike has been cultivating both the land and a micro community for over ten years. As I passed through the open gate and entered the farm I felt right away that I was part of something special. At the beginning of the path that loops around the entire farm, you will immediately notice rows upon rows of fresh organic goodness. On a warm day you can smell the fresh dew evaporating off many varieties of fruits, vegetables, and flowers. The first structure you will encounter is the market. Here, during the spring and summer, Mike works the stand. The market is the tip of the shovel (so to speak). A vibrant, unassuming place where folks of all ages gather to hand select the day’s bounty for themselves or their families. Here in the market area, depending on the season, you will find a larger variety of fresh organic produce than any “super” market. Mike is proud to tell you that most of the produce available has been harvested that very morning. Under this small roof there is such a

wealth of produce and knowledge. Mike is happy to talk shop, and people from all walks of life are swapping tips on soil, gardening, and of course recipes. A great way to get your feet wet (sometimes literally), is to come down to the farm on the last Sunday of any month during the season. This year's season kicks off on 3/20/2016 and culminates in October with a Moonlight Pumpkin Picking. During these Sundays the farm holds what Mike calls a “Green Fair”. Aside from being able to walk the farm and shop at the market, there are a number of other Green activities. Local Artisans set up stands filled with organic products from suntan lotion to candles. Local Artists offer hand hewn jewelry and art. You may even be able to see, or join, an outdoor yoga class, or catch a demo on bee keeping. Yes, honey from the bees on the farm is available! Another great reason for old pros and hip new beginners to swing by for the Green Fair is the cooking demo. On each of these Sundays, visitors can find a gathering of folks talking specifically

about creative ways to enjoy all of the season's freshest produce. You may find a long time regular cooking up some new home recipes or perhaps a Chef from one of the local restaurants that Organics Today supplies will be working some magic. There is an ever growing number of Long Islanders who are already passionate about Farm to Table. If you are interested in knowing more about where your food comes from and how it was grown/raised, Organics Today offers a strong Community Shared Agriculture program. For a minimal time and monetary commitment participants will receive two distinct benefits. Members will work the land together (24 hours throughout the season) thus gaining valuable real life experience in bringing fresh produce directly to your family's table. Members will also enjoy a weekly basket of the farm's harvest which can sustain most families until the next week’s harvest. This is a quick microcosmic look into a macrocosmically important trend. Color My Walls

GRAY.

Depending on the shade it can be cool and calming or, with a little bit of silver, energetic. Whether you've always loved gray or are falling in love with it, gray is a paint color so many of us adore. It’s a chameleon among colors; gray is a classic, refined neutral that works well with any color. I didn’t think I’d love Gray as a paint color, being a beigey kind of girl. It was only when interior designer, John Rocco of Realm, convinced me to paint my walls gray and he recommended Benjamin Moore, Edge Comb Gray that I Colored My Walls

A SPECIAL KIND OF LOVE STORY

By Marilyn Shullman Long Islanders are passionate about the place we call home. Even those of us who grew up here, or spent time here and left, feel an emotional connection with this enigmatic place. Often frustrating when we’re stuck in traffic on the Long Island Expressway, sometimes tedious with the many strip malls and big box stores, but always intoxicating when we’re at the water’s edge. Yes, we may be residents of New York State but we live on Long Island which is our state of mind. Long Island Memories is designed to reflect this special magic through unique products, many of which are available only at our website and sure to delight friends, family or yourself. So, how did Long Island Memories begin? It’s a bit of a long story so bear with us. Many years ago, a young woman named Marilyn decided

to give retail a try so she joined her family’s business, Bay Shore Lighting and Home, which had been started by her parents, Harry and Selma, in 1945. She had found her passion. A few years later, she hired an employee named Lynn and she was perfect in every way, and eventually she became Marilyn’s business partner. You might say it was the proverbial match made in heaven. Marilyn was good at marketing, analysis and numbers, while Lynn excelled at store design and customer relations. There were some challenging years. Our beloved Main Street, in Bay Shore, where our store is located, faced major vacancies and neglect, but Marilyn believed that revitalization was going to happen somehow. Then in 2000, a friend of Marilyn’s was renovating an historic building in the downtown area and pestered

her so much about opening a new store in that very building, that she and Lynn came up with a new concept and called it Willy Nilly Trading Company. Created in just a few months, it opened with an eclectic mix of products including clothing, jewelry, accessories, and gifts of all kinds. In spite of the naysayers who said no one would come, it became a retail destination within a few years. It soon became apparent that Willy Nilly Trading was a better business than the lighting store (and a lot more fun) so Bay Shore Lighting was closed and in its place Marilyn and Lynn opened Willy Nilly @ Home. Finally we are getting to Long Island Memories and how it came to be. In October 2012, the South Shore of Long Island was severely impacted by Superstorm Sandy.

We decided to create a shirt that would be a reminder of how we all pulled together to help neighbors and friends get through that difficult time. It said “Save Our Shore” and people loved it. That led to creating another shirt with the tag line “Long Island – There’s No Place Like Home.” We had another hit. That is when we thought we needed to make an entire department of items that would embody the way Long Islanders feel about their home. With the department well established it just seemed natural to take it to the web so that more people could have access to these special products. We hope you’ll enjoy shopping our site. It’s just the beginning as we are already searching for and creating new items to add to it. We’d love to get your feedback and to hear your ideas.

10 Things You Can Do To Show Your Body Some Love Eat right, exercise, drink plenty of water. Yes, yes, yes…we know. So what else can you do to tell your body how much you appreciate what it does for you every single day? What else can you do to recharge your battery and help keep your engine running smoothly? Here’s 10 practical ways to send your body a little love. Written by Michaela Connors

Start your day with warm lemon water. Too many reasons to state why, so I will stick to the important stuff. Lemon is an overlooked superfood, in my opinion. Not only is it a powerful dose of vitamin C, it is full of nutrients like potassium, calcium, and magnesium, just to name a few. Yes, lemons are a citrus fruit (acidic) until they are consumed. Because of their high mineral content, when lemon juice is fully metabolized, it has an alkalizing effect on the body. This helps balance PH levels against many of the acid-producing foods we frequently consume. Alkaline environments help prevent the growth of infectious bacteria; cancer cells do not thrive in alkaline environments. Start your day with the juice of ½ a lemon squeezed into a big mug of warm water. What about COFFEE, you say? No worries, just wait at least 30 minutes before you get your fix. Eliminate high fructose corn syrup (HFCS) from your diet. HFCS is an industrial food product used to sweeten beverages and other food products. It is NOT a naturally occurring substance. Once consumed, it spikes insulin levels which increase not only appetite, but weight gain, diabetes, heart disease, cancer, and body-wide inflammation. It also blocks the hormone that makes you feel full and leaves you constantly craving more sugary foods. It’s no wonder obesity is at an all-time high. HFCS is almost always a red-flag for a nutrient-poor food substance. Even more disturbing, HFCS is frequently the main ingredient in foods marketed towards children. Please read ingredient labels. There are plenty of healthy snacks that are HFCS-free. Ditching HFCS from your diet can radically reduce your health risks and improve your overall well-being.

Go out for Healthy Food. Swap out the burger and booze once a month (or week) for something really healthy (and delicious!). Go out for a baby kale & spinach greens salad topped with fresh salmon. Skip the beer and soda, opt for water instead. Your body will love you for it.

Cleanse (Not talking about your face here). While your kidneys, liver, and colon are sufficient at ridding your body of most toxins, some spring cleaning may be in order if you over-indulged in too many of the wrong kinds of food during the holidays. A detoxifying cleanse is an effective way to flush out toxins that have built up over time. There are several short term (48 hrs. to 7 day) cleansing plans that incorporate lots of fruits, veggies, fluids, and some lean protein. Beware weightloss cleanses and fasting which, besides other negative side effects, can shift the body into starvation mode and slow your metabolism to a crawl. Cleaning on the inside will show on the outside. Not only will you feel rejuvenated and re-energized, your skin will look fabulous.

Schedule a head to toe physical. Book a full body check-up with all your doctors (GYN, dermatologist, optometrist, dentist, etc.). If there is an underlying condition you need to be aware of best to get on it sooner than later. Early detection starts the path to correction. You owe it to your family, and more importantly, to yourself.

Schedule a massage every 4-6 weeks. Gym warriors and mere mortals alike will benefit from the variety of massage techniques that can help reduce stress, muscle strain and tension. We demand so much from our bodies, massage is a great way to revive, replenish, and soothe hardworking muscles.

Set the mood while you cook the food. A ride home in rush-hour traffic after a long day sitting at your desk builds tension. Your body needs to unwind and decompress. Light candles, turn on soft music (instrumental is best for relaxation) and pour yourself a cup of herbal tea or a glass of wine while you are preparing dinner. Standing for a while is a good idea. The day’s stresses will start to melt away in that warm, relaxing atmosphere. My kids started doing their homework at the kitchen table (instead of in their rooms) on the nights I “set the mood”. When I asked my 8 yr. old why this was he said “I like the way it feels in here.” Me, too.

Stretch before bed. 10 minutes is all you need. Focus on the areas of your body that are most tense. Stretching increases blood flow to the muscles, which warms them and releases tension. Deep breathing aids in slowing your body down. The result is a relaxed mind and body that is now primed for sleep. Your sleep will be deeper and more restful.

Get to Bed. Sleep plays an important role in physical health. Sleep deprivation is linked to increased car accidents, heart disease, high blood pressure, diabetes, stroke, and mental instability. The National Institutes of Health recommend adults get 7 1/2 - 9 hrs. for optimal functioning. Pick at least one night a week (and stick to it) where TV is off and lights are out in quest of those golden hours. We have become a society of overscheduled extreme multitaskers (especially moms) and it’s eroding our slumber time. Your body will reward you in so many ways if you give it the sleep it so desires.

Co-owner Frank Bono, formerly owner of Doppio Artisan in Huntington tells us “We’ve been rocking and rolling since we opened in the beginning of January." They recently finished their upstairs dining room and are now booking private parties and events. ITALIAN CUISINE LOVERS SPICE UP YOUR LIFE

with Herbs & Spices There are many health benefits when you cook with herbs and spices, not to mention they improve the taste of so many foods! What food better demonstrates this than Italian cuisine. The aroma of sautéed garlic and parsley can intoxicate a room. Enhancing the taste of food is just one benefit of herbs and spices, loaded with vitamins and nutrients they have the ability to detox, keep inflammation down, and boost your immunity. PARSLEY

Parsley (prezzemoio, in Italian), of the flat-leaf variety, is one of the most commonly used herbs in Italian cooking. Its health benefits include vitamin A, B, and C, as well as iron, iodine, and magnesium. Parsley makes a great breath freshner due to its volatile oils, however this edible herb is not just a breath mint. Loaded with high amounts of Vitamin C, parsley helps in reducing inflammation that may cause arthritis, as well as preventing reoccurring colds. Finish off any dish with some chopped raw parsley to brighten the flavors and give the food that fresh taste.

GARLIC

Considered nature’s antibiotic, this pungent spice holds a whole host of health benefits from strengthen the immune system to lowering cholesterol. Garlic is rich in selenium which plays a strong role in supporting the anti-oxidant system of the body. Keeping us sick free is not the only benefit of garlic but also of keeping inflammation down that leads to heart disease and elevated cholesterol. Often called “the stinking rose” the strong odor and taste is due to the high levels of sulfur found in this pungent spice. Sulfuric foods are often missing from our standard diets and provide strong immune support. Try adding pressed garlic to meals in the raw form for optimal benefits, otherwise enhance dishes during the cooking process for a more mild and delightful taste.

BASIL

Basil is a versatile herb that can be added to practically anything. Did you know that Basil has anti-inflammatory and antiviral properties and can help prevent osteoarthritis? It has been used in digestive disorders and is being studied for its anti-cancer properties. Fresh is always best, but dried is ok too as long as it is freshly dried. Basil can be sprinkled in omelets, on baked or grilled veggies, in soups, on meats or sliced fresh into salads. Layered with tomato and Fresh mozzarella cheese, it makes a wonderful Caprese salad. Talk about Fresh, Frank and Marias, in Bay Shore, makes their homemade mozzeralla every day, sometimes twice a day depending on how busy they get. A must try.

The aromatic bay leaf is well recognized in every culinary cuisine, often used to flavor up soups, stews, and sauces. Bay leaves offer a source of vitamins A and C, as well as folic acid, potassium, calcium, and iron. The active oils found in bay leaves are shown to have anti-septic and antibacterial qualities which help in keeping intestinal bacteria healthy. The bay leaf is rich in mineral content such magnesium and potassium which are crucial for regulating the nervous system. Add a few dried or fresh leaves to your next pot of sauce or gravy

SAGE

Sage (salvia, in Italian) is used internationally for its many healthy properties. The strong, delightful aroma has been used in aromatherapy for centuries and used to clear out energy in certain rituals, and is also a key element in Italian cuisine. Sage’s Italian name comes from the Latin root that means “health”. People have used sage for its anti-inflammatory properties, as well as its aid with digestion. Sage is used in Italian cooking with pasta dishes such as gnocchi and risotto, as well as roasted meats and in soups. Known as a “miracle herb,” sage is used in great quantity in Italian cuisine. For your next recipe try roasting chicken thighs with butter, mustard and sage for a comforting winter dish.

OREGANO

Oregano is a common ingredient in Italian and Greek cuisine, and they have the right idea! Oregano (and it’s milder cousin, Marjoram) are antiviral, antibacterial, anticancer and antibiotic. It is extremely high in antioxidants and has demonstrated antimicrobial properties against food-borne pathogens like Listeria. Its oil and leaves are used medicinally in treatment of cough, fever, congestion, body ache and illness. Combined with basil, garlic, marjoram, thyme and rosemary, it creates a potent antiviral, anti bacterial, antimicrobial and cancer fighting seasoning blend. It can also be sprinkled on any kind of savory foods. A couple teaspoons added to a soup will help recovery from illness.

Rosemary (rosmarino, in Italian), grows in abundance in Italy. A hardy plant, rosemary is known for its peppery, woody flavor. Its health properties include iron, calcium, dietary fiber, and antioxidants. How about keeping our brain sharp? Rosemary has been linked to stimulating our cognitive abilities which is important in elders and preventing dementia and Alzheimers. On a large platter arrange tomato and mozzarella slices and basil leaves, alternating and overlapping them. Sprinkle salad with oregano and arugula and drizzle with oil. Season salad with salt and pepper. The dressing is only a drizzle of extra-virgin olive oil. Vinegar would destroy the delicate flavor of the cheese and is never used. Because this salad is so simple, top-rate ingredients are imperative: Hothouse tomatoes and rubbery processed mozzarella are unacceptable.

Pistachio Crusted Rack of Lamb This is a dish that is sure to impress your dinner guests for Easter Sunday or that special occasion dinner party, and is quite easy to make. The racks usually come 8 ribs to a rack. 4 servings (can be adjusted to desired yield)

Ingredients

1. Preheat oven to 400 degrees F (200 degrees

• 2 racks of lamb, trimmed • 1 teaspoon herbs de Provence • salt and ground black pepper to taste • 1 tablespoon vegetable oil • 2/3 cup chopped pistachio nuts • 2 tablespoons Italian bread crumbs • 1 tablespoon melted butter • 1 teaspoon olive oil • 3 tablespoons Dijon mustard

C). Line a baking sheet with aluminum foil. Generously season each rack of lamb with salt, and black pepper and herbs de Provence.

2. Heat oil in a large skillet over high heat.

Place lamb in skillet and cook, browning on all sides, 6 to 8 minutes. Do this in batches if needed to keep the pan temperature to a searing temperature. Transfer lamb to a foillined baking sheet; set aside.

3. Stir pistachios, bread crumbs, butter, olive

oil, and a pinch of salt and black pepper in a bowl. Spread mustard on the fat-side of each rack of lamb. Pat pistachio mixture on top of

mustard. Bake in the preheated oven until the crust is golden and lamb is pink in the center, 20 to 25 minutes or until and instant read thermometer inserted into the side registers 135 degrees F for medium rare.

4. Remove lamb from roasting pan, transfer to

a plate and let rest 10 minutes before slicing. Drizzle with any juices from the cooking pan. The beauty of lamb is that you can serve it with almost anything and rest assured that the meal will come together smoothly. Sage roasted potatoes with caramelized carrots or Garlic mashed potatoes with sautéed spinach both are delicious accompaniments to this elegant main course.

NOVELLA’S OF LITTLE ITALY SHARES A RECIPE WITH THE LIST

Italian Stuffed Artichokes I cherish this recipe as it was given to me by my favorite Italian restaurant in Little Italy, Novella’s. This would be a nice complement to the rack of Lamb as a first course. Serve in a soup bowl, atop its own flavored broth; you taste a hint of garlic and lemon. Melted shavings of Fontina cheese, adds to the delightful taste. Yields: 6 servings | Prep time: 20 min | Cook time: 30 min

Ingredients • 5 cups coarsely-chopped bread crumbs

• 1 cup chopped green onions

• 1 tablespoon freshly-ground black pepper

• 1 1/2 cups Parmagiano Reggiano or good domestic Parmesan cheese, grated

• 1/2 cup chopped fresh parsley leaves

• 6 large artichokes

• 1 1/2 cups Pecorino Romano cheese, grated

• 5 cloves garlic, minced

• 1/2 cup extra-virgin olive oil

• 1 tablespoon salt or to taste

• 6 slices lemon

Directions

1. Mix into a large bowl and add bread crumbs, Parmesan cheese,

Romano cheese, green onions, parsley, garlic, salt, black pepper, and cayenne pepper; toss to combine.

2. Cut about 3/4-inch off the tops of each artichoke. With your scissors,

snip off the pointed ends of each artichoke leaf. Rub a lemon on the cut ends to prevent browning. Slice off the stem end of each artichoke so that they sit up straight. Spread the leaves of each artichoke as much as possible, and pack in a generous amount of bread stuffing around each artichoke. Tap each artichoke gently to let any loose stuffing fall off. Stand them in a casserole or roasting pan just large enough to hold them in a single layer. Add water to a depth of 1 1/2 inches.

3. Pour a generous amount of olive oil over each artichoke, letting it seep

in. Top each artichoke with a slice of lemon. Bring the water to a boil, cover, reduce heat to low and steam the artichokes approximately 1 hour (depending on size of artichokes) or until the leaves pull off easily. Test for doneness by pulling out a leaf and tasting for tenderness. Check the water level after about 25 minutes, and add more if necessary.

4. Serve hot or at room temperature. The stuffed artichokes can be prepared in advance and reheated before serving. Any leftover stuffing keeps for 2 weeks in the refrigerator and longer in the freezer.

OPTION: Place Mozzarella or Fontina cheese over the top and place briefly under a broiler until cheese melts and begins to brown. Top with Garlic.

But these days, for this successful thirty-one year old, becoming a father has changed his focus from the present to the future. Upon the birth of their daughter Max, Zuckerberg and his wife Priscilla Chan, joined the growing list of billionaires including Warren Buffet, Melinda and Bill Gates, and Richard Branson, who have pledged to leave a vast portion of their growing fortunes to helping others over their lifetime. In an open letter to their daughter the Zuckerbergs wrote, “You've already given us a reason to reflect on the world we hope you live in” and we hope our generosity will help to "advance human potential

and promote equality in areas such as health, education, scientific research, and energy". “Max, we love you and feel a great responsibility to leave the world a better place for you and all children.” Mark and Priscilla have made a promise of a better tomorrow, and hopefully all our children will reap the benefits, but that does not excuse us from doing our part. While you and I may not make thegivingpledge.org list of billionaires anytime soon, we can make an impact in other ways. After all the definition of philanthropy is not limited to a monetary donation but encompasses any charitable aid or act of human kindness. We can all leave the world a better place by giving from the heart. Whether writing a check to a worthwhile cause,

volunteering time, talents or no longer needed belongings, we can make small but cumulative changes in the lives of others. Mother Teresa said, “If you can't feed a hundred people, then feed just one”. Having served meals in a soup kitchen, I have experienced nourishment being received on both sides of the table. The look of gratitude and hope in the eyes of a hungry child feeds the soul and has rewards beyond the tax credit of just writing a check. While a university hall may never bear our names, we can help someone who will one day walk through them. Who knows what impact they will also leave in the world? Nelson Henderson said, “The true meaning of life is to plant trees, under whose shade you do not expect to sit”.

THE LOAFER: I will take the dog to the vet if he is sick, if he looks healthy there is no reason NO GOOD. It is important to take your pet for regular check ups, as you would with a fellow human. Talk to credible folks who own that breed, read the background and history and any potential health problems. Visit a dog show and get first-hand information from breeders who truly care about the sanctity of the breed. Obey that "no dogs allowed" policy and if a dog is truly your desire, find a way to move and make it happen.
