JORDAN RANDALL ordan Randall is a 26-year-old freelance photographer/writer from Upstate New York and a recent graphic design graduate from Southeastern University. In his career, Jordan has photographed Sadie Robertson, Bastille, and Andy Grammer, amongst others. He also maintains a passion for film and pop culture, contributing pieces on these to The Lakelander and on his own platform, @watchwhatyoucan.

How did you first get into photography? I started selling shirts that I designed in college and needed better photos for the website, so I used the money I made from the shirts to buy a decent camera. Then I ended up liking the photo thing more than the shirt thing, and now I’m here. You’ve contributed numerous articles for The Lakelander. What has been your favorite article to write to date? The piece on Stranger Things I wrote back in July 2019 for Season 3 was really fun. I really connect with those characters, and the story they’ve been telling for three seasons now, so it was sort of cathartic to write about those heroes in Hawkins.

Tell us a bit about your photography, and favorite projects you’ve worked on. I think a lot of my work is observational. I never try to make anything feel too posed. If it feels too stiff or “on purpose” I’m immediately turned off by it. Between my portraiture, editorial, or fashion photography, I try to make sure it all feels organic, like maybe you entered a moment that wasn’t for you, but now you feel welcome in it. Stumbling into work that quietly or easily connects with you is one of the best feelings. I guess I want everyone to be able to have that experience with my work. Top five 2020-2021 movies. Go! In the past decade, society has taken the time to intentionally place mindfulness and mental health on the same level of importance as our physical health. As we continue to grow and find balance in juggling the essential attributes that allow us to feel whole and grow closer to our true essence, gratitude has been a significant focus point for many of us. Gratitude happens when we go beyond just appreciating something to expressing it and acknowledging it. In a recent study, Harvard Health Medical Journal explains that people

acknowledge the goodness in their lives with gratitude. In the process, people usually recognize that the source of that goodness lies at least partially outside themselves. As a result, being grateful also helps people connect to something larger than themselves as individuals — whether to other people, nature, or a higher power. In positive psychology research, gratitude is strongly and consistently associated with greater happiness. Gratitude helps people feel more positive emotions, relish good experiences, improve their health, deal with adversity, and build strong relationships. The practice of gratitude teaches us to hold a posture of receptiveness and embrace beauty without being in control. As we long to return to the prepandemic rush, we also take time to embrace the stillness that the past year has taught us. During this holiday season, we hope you find time to relish in the beauty of gratitude.

WACO KITCHEN, A FARM TO TABLE EXPERIENCE After two years of vacancy, the city commission has unanimously approved a lease agreement for DiMor Eats LLC to open a new farm-to-table restaurant called Waco Kitchen at Lakeland Linder International Airport. The menu will contain American-European fused items and include a bar serving up both beer and wine to guests. The space also plans to accommodate reservations and have room for big groups. The restaurant is aiming for a March opening in 2022.

Letters To Santa Santa’s elves are teaming up with Lakeside Village this year to make sure Santa receives every wish list.

It’s that spark of fantasy and joy in a child’s eye that makes being a kid at Christmas time so special. And being able to see that spark in a child’s eye through the lens of adulthood brings a whole new perspective on the importance of Christmas and the importance of believing without seeing. This year, you can help keep that imagination alive in your child’s life by writing and dropping off a letter to Santa at Lakeside Village. The truth is; eventually, children grow up and become adults. They develop curiosity paired with critical thinking skills and stop believing in Santa. But the lessons we learn during our youth- when we most believed in a jolly, magical man who visited every home in the world in only one night- are evergreen. A PARK FOR YOUR BEST FRIEND Prepare your pups- a new dog park is on the way. The City of Lakeland plans to build a brand new dog park on the 1.2-acre land at the southeast corner of Main Street and Rose Street, land that the Florida Department of Transportation donated. The dog park will welcome the surrounding scene, including The Poor Porker, The Joinery, and the currently in-development addition to The Joinery, The Shed. Construction on the new park is aiming to begin soon.

Let’s Squeeze In Get ready for the new mico-transit service that has already squeezed its way into downtown Lakeland.

itrus Connection, which provides public transit in Polk County, has brought their micro-transit service “The Squeeze” to Lakeland. Starting November 29th, the service will be supplying 8-person golf carts with access to various spots downtown throughout a one-year pilot program. The service aims to add certainty and consistency to downtown transportation in Lakeland. With

efforts towards easing constraints of downtown parking, Citrus Connection wants to give you easier access to Lakeland’s various amenities. Starting at 11 am and ending at 1 pm Monday through Friday, The Squeeze’s route will run north on Kentucky Avenue, east on East Main Street, South on Tennessee Avenue, and East on Lake Morton Drive during lunchtime. The Squeeze will also run around Florida Southern College, RP Funding Center, The Joinery, and downtown from 3 pm until 10:30 pm on Fridays and 4 pm to midnight on Saturdays. To use the service, all you need is a phone, which will give you the ability to scan a custom QR code, allowing you to pay across payment platforms such as Venmo and Cashapp. Day fare will cost $2, weekly passes will cost $3, and monthly passes will cost $9. You can also use the Citrus Connection app to pay your fare, along with finding information regarding routes.

HOLD ON BABE, NEW ADELE DROPPED

With what is being coined as “Phase 2” of The Joinery, The Shed is on its way to Lakeland. The Shed plans to host a full-service restaurant, a coffee shop, and an event space for hosting private events. The expansion will occur right next door to The Joinery, at 678 E. Main St, after the local developer and owner of The Joinery’s property Wesley Beck submitted an offer for the land that the city commission accepted in a 6-1 vote. The space will also create 25-28 more parking spaces, nearly doubling the current lot’s amount.

After almost six years of fans waiting for new music, Adele has finally released her new album “30”, on November 19th of this year. Winter Haven is growing and so is the social scene. The Social Lounge is Winter Haven’s newest craft cocktail bar and one of the only speak easy’s in the city.

T

he 18th Amendment to the U.S. The Constitution banned the manufacture, transportation, and sale of liquors in 1920, a period in American history known as Prohibition. The states ratified Prohibition on January 16, 1919, and it officially went into effect on January 17, 1920. But during that prohibition period, people didn’t stop drinking alcohol. They found creative ways to consume alcohol in secret, and thus, the speakeasy was born. The increase of illegal production and sale of liquor, the proliferation of speakeasies (illegal drinking spots),

amongst other problems, led to Congress proposing a 21st Amendment to the Constitution that would repeal the 18th. The 21st Amendment was ratified on December 5, 1933, ending Prohibition. Although Prohibition ended in 1933, it hasn’t stopped bar owners from using it as inspiration for their aesthetic and experiences. Simply, step inside The Social Cocktail Lounge in Winter Haven, and you’ll find yourself within a whole new era. Naturally, a speakeasy-themed bar was an attractive choice for the owners of The Social, Brett and Ashley Hill, - when opening their cocktail lounge in Winter Haven. “We were very interested in the whole prohibition, 20-

30’s speakeasy theme,” said Brett. “The building was built in 1928, and our goal was to preserve the original architecture of the building, incorporating that into the design of the bar as well.” Speakeasy bars were born from cellars. They were a place where all different kinds of people could join together, socialize, and drink in secret. And the name Speakeasy? Well, that one’s simple. Patrons were encouraged to “speak easy” or, essentially, lower their voices to avoid unwanted attention from authorities. Modern speakeasy-style bars leaning into the prohibition-era theme typically have a secret entrance or a password to enter, but not The Social. The Social isn’t

just another themed and trendy bar you slide through once; it’s a bar where you can relax and enjoy a craft cocktail or two after work or on the weekend. “We want it to be the people’s place,” said owner Brett Hill. “Somewhere customers can call their own and return to regularly. I didn’t want it to be a special occasion kind of place, where you have to call a number and get a password before attending. You might go to a traditional speakeasy when some friends

are in town, but not every night. We wanted this to be an every-night spot in Winter Haven for everyone to enjoy.” In addition to maintaining the original architecture, Brett and Ashley have decorated The Social with a handful of authentic items from the prohibition era. When you step inside The Social, there’s a cozy and warm feeling that makes you want to take a seat and stick around for a few hours. The soft lighting and vintage decor make you feel at

home. Hanging inside are giant, genuine foundry patterns that are from the 1920s. The piano sitting inside, played weekly by various local artists, is from the ‘20s as well. “The bar doesn’t just look the part; a lot of it is from that era. We used reclaimed materials and other architectural features that we were able to salvage. It was genuinely very cool being able to pull all of that stuff together,” says Brett.

there is a need for nights like these and a place like this in Winter Haven.” When it comes to downtown Winter Haven, The Hills are well-versed. They’ve been in the restaurant industry for over 20 years. And not only do theyt run The Social, but also Fire Restaurant and Union pizza, both contributors to Winter Haven’s downtown life. “We’ve been in downtown Winter Haven for about ten years now. We believe in the city, the growth, and the small-town energy. We love the people, and we’re excited for the future of downtown winter haven,” explain Brett and Ashley Hill.

exquisitely wrapped gift is truly a beautiful thing to behold, and every year for the past few decades, from one celebration to the next, Gaines Jewelers iconic gift wrapping is what their most loyal customers look forward to in the Gaines experience. There’s something beautiful about creating with your hands, in a society where most of the things in our lives are mass-produced, a handmade product has a special kind of appreciation. For over 50 years, Lakelander Rosalie McCloud (Rosie) has been creating exquisite handmade gift wrapping bows at Gaines Jewelers.

Creating these handmade bows requires a specifc type of satin ribbon.

McCloud started working for Mrs. Gaines’s family in the ’50s and then eventually transitioned to the family business, Gaines Jewelers, in 1961. McCloud’s first role at the store was assisting with the upkeep of the store and as time went by her interest in gift wrapping and bow making piqued. “I watched other ladies in the store gift wrap and thought to myself well if they can do it I can do it too”, says McCloud. It wasn’t long until McCloud became head of the gift wrapping department and since then she is still creating some of Gaines’s most iconic and beautiful gift wrapping.

Her stories are plenty, she vividly remembers the salesman who would walk in the shop to sell the special kind of ribbon needed to create beautiful gift wrap bows and flowers. “He brought this sales pamphlets with instructions for the different kinds of designs, flowers and bows you could make”, says McCloud. It’s not just her craft in gift wrapping that makes McCloud special but rather the legacy that she carries with her as the longeststanding employee of Gaines Jewelers. At 85 years old, McCloud has watched Gaine’s and the downtown area grow.

She’s watched technology and processes shift and evolve over time, “I remember when our inventory came through the railroad, our china came in barrels. Yes, right on these tracks, here in downtown”, explains Rosie. The shipment would be dropped off at one of the nearby buildings which was the designated drop-off depot and then placed on a cart to be rolled down to the shop.

Over the years, even the inventory has changed to fit the needs of customers. Rosie says that the store used to carry a stock of sterling silverware, the kind that was heavy and needed to be polished after each use. “We sold whole place settings of silverware, brides would register for 8-piece place settings. In addition, we also sold a lot of silver holloware, goblets, and candelabras.” Silver holloware is any item that is not flatware. Holloware includes all different types of tableware items, including candlesticks, teapots, coffee pots, creamer sets, pitchers, platters, etc.

During our interview, Rosie took a look around at the store and shared how different the store is today than what it used to be. She explains that the shop’s mission remains the same but with the coming and going of every generation, taste and styles evolve and they have had to remain nimble to the customer’s products of choice and their desired shopping experience. A legend, Rosalie McCloud is an important part of the Gaines Jewelers family, her sweet and hardworking spirit transcends in every area of her life. She is a mom of five, a grandmother, and still remains an employee of Gaine’s Jewelers.

TURNING SPARES INTO STARS Create entirely new dishes with your Thanksgiving leftover ingredients!

W

hen I cook at home for my family, it can feel like something out of a 50s television set. An elaborate meal and dessert are planned. The apron is on, the Louis Armstrong record is on, and I’m channeling Lucille Ball in the kitchen but with less slapstick. If you’re like me, the Thanksgiving meal planning stops with the second gin gimlet, and it’s family time until the next morning… and realize you’ve got fifteen pounds of leftover turkey in the fridge and the only dish you can think of is sandwiches. Let’s put that Louis record back on and think of some creative ways to use up those Thanksgiving leftovers.

TURKEY STOCK Use your leftover turkey bits to make Turkey Stock. Assuming the legs and wings have been eaten, and any breast meat has been used in sandwiches and salads, you’re still left with a juicy, savory set of bones that can impart incredible flavor to a myriad of dishes for the savvy home chef. Making stock isn’t so much a “recipe” as a “technique” that slowly extracts flavor from bones and vegetables into water. It might seem daunting at first, but read on and try it for yourself.

Don’t let your stock boil. Keep your stock at a simmer, just below boiling, but not quite reaching that point. The heat and roiling action of a boil will make your stock cloudy and will overcook the vegetables.

Turkey carcass: Include all the leftover bones and any skin or flesh - minus that thigh bone your uncle spent half an hour gnawing on. White or Yellow Onion: peeled and quartered

METHOD Combine everything into your stockpot and bring to a simmer. Continue to simmer for about 4-6 hours… And that’s it! That being said, there are several things you can do to improve the flavor and quality of your stock. Consider trying out these additional techniques:

want it more robust. An excellent way to do this is to sprinkle a tiny bit of salt into a spoonful of liquid so that you can perceive the true vibrancy of your stock. (with no salt, the flavor will always be somewhat transparent) If you sense that your veggies are fully cooked, but you’d like a more robust flavor, go ahead and thoroughly strain your liquid and return it to a clean pot to reduce at a simmer for another hour.

Skim the top. Periodically, grey foam and fat globules will form on the surface of the liquid. Skimming the foam will keep your stock tasting clean and clear. A fine mesh strainer can do the job well, and running a paper towel across the surface is a great way to soak up any fat blobs.

Strain your stock. After your stock is finished on the stovetop, spoon out the larger solids into the compost bin. All of the flavor in the bones and vegetables have been extracted into the stock, so I don’t recommend re-using the veggies in another recipe. Use the finest mesh available to strain the rest; some folks even use large coffee filters to get their stocks crystal-clear.

Taste as you go. Don’t just set a four-hour timer and assume it’s perfect. Use the timer as just a reminder to check the flavor of your stock and judge whether you

Celery: Include the rib and leafy bits chopped into large chunks. They’re good for you. Carrots: Chop it into the same large chunks as celery, and sure, include the leafy top as well because why not? Herbs: Use whatever you have on hand. Parsley works best, but oregano, rosemary, thyme, sage, or bay leaf could be interesting if you have some on hand and are feeling sassy. Try to use just the leaf parts of herbs as the stems can be bitter. Freshly cracked black pepper: A few twists of the peppermill will do. We do not use salt when making stock, as the long time spent simmering will concentrate the salty aspect, potentially making it unpleasantly briny-tasting. Save the salt for when you turn the stock into soup. Water: Use filtered or distilled water if possible. Once everything is in your big stockpot, you’ll need enough water so that everything is mostly covered but not fully submerged.

You can’t go wrong with this recipe. Create the perfect flavor profile by mixing in your favorit herbs.

GARLIC-BRAISED POTATOES Turn leftover potatoes into Garlic-Braised Potatoes. This is a simple no-fuss way to prepare potatoes and use up any stock and herbs that you have lying around. The type of potatoes don’t matter, but my favorites are small red fingerlings.

INGREDIENTS Potatoes cut into 1-inch cubes, scrubbed, and drained. A handful of minced garlic cloves A few glugs of olive oil, just enough to evenly coat the potatoes Salt and pepper to taste Turkey stock, approx. one cup of stock for each pound of potatoes Fresh herbs such as rosemary and thyme METHOD In a bowl, toss the potatoes, garlic, and oil together so that everything is evenly distributed and coated in oil. Transfer to a large saute pan and cook over medium-high heat until golden. Add stock and herbs to the pan and bring to a boil, then reduce heat to a low simmer, occasionally stirring until the stock has reduced into a saucy liquid; about another 30 minutes. Season with salt and pepper to taste, garnish with more fresh herbs, and transfer to a serving container to be gobbled up immediately.

Forget the sugar and turn your extra pumkin puree into a savory dish.

PUMPKIN MAC & CHEESE Turn your leftover pumpkin puree into Pumpkin Mac & Cheese. I don’t think this one needs too much introduction. If you have leftover pumpkin or pecans from pie-making this Thanksgiving, both items can find a home in this recipe. Extra points if you use turkey stock for cooking the cavatappi pasta. This is a true June Cleaver-level recipe.

INGREDIENTS 1½ cup Milk 1 cup Pumpkin Puree 12oz Cooked Pasta (I like cavatappi or other curly noodles) A half stick of Butter 3½ tbsp All-Purpose Flour A few sprigs of sage 6oz Shredded Cheese such as Cheddar and Gouda Chopped Pecans for garnish Salt and Pepper to Taste METHOD Melt butter over medium heat in a medium saucepan. Sprinkle in the flour and whisk until thickened, about 2 minutes. Whisk in the pumpkin, milk, and sage and continue to cook, periodically stirring for a few more minutes until the mixture is thick enough to coat the back of a spoon—season with salt and pepper to taste. On the lowest heat, stir in shredded cheese in small handfuls until the previous addition is melted before adding more cheese. Gently stir pasta into the sauce and taste again, adjusting seasoning as needed. Transfer to a casserole serving platter and top with chopped pecans. The dish can be covered and chilled at this point and warmed in a hot oven before serving.

BAKED BANANA SPOONBREAD Use your leftover bread to make Baked Banana Spoonbread. This recipe works great with any bread but works best with cornbread, brioche, challah, or other soft loaves. When I’m feeling fancy, I’ll sprinkle sugar on top of the bananas and use a torch to brûlée them as a garnish.

INGREDIENTS: ½ qt milk ½ qt heavy cream 4 whole eggs 4 yolks ¾ cups sugar 2 tsp vanilla extract 2 tsp cinnamon 8oz bread cut into large cubes Bananas, cut into slices METHOD: Heat your oven to 275*F Combine All ingredients except the bread and bananas with a whisk or immersion blender. Line the bottom of an aluminum casserole pan with the bread cubes and pour the liquid on top. Then, layer the sliced bananas on top. Let soak overnight, or at least 2 hours. Bake in the center of your oven for about 15 minutes, then raise the temperature to 325*F and bake for about 10-15 more minutes or until the center of the custard has set. This recipe can be made ahead, but let the spoonbread cool for at least 30 minutes before covering and transferring to the fridge. HONEY BUTTON SHORTBREAD COOKIE SANDWICHES Use leftover cranberry sauce to make Honey Button Shortbread Cookie Sandwiches. Cranberry sauce is one of those things that gets placed on the Thanksgiving table in a giant bowl, and you’re left with STILL a giant bowl after dinner. This recipe turns one of my favorite shortbreads into a cookie sandwich using cranberry jam. The chunky stuff works best. INGREDIENTS Two sticks Soft Butter ⁄5 cup Sugar

¼ cup Honey 1 Egg 1 tsp Vanilla Pinch of Salt 13.5 oz All-Purpose Flour The zest of one orange ¼ tsp Baking Soda METHOD Using a mixer with the paddle attachment, cream the butter, sugar, and honey on medium speed until light and fluffy. Add the eggs and Vanilla and stir at low speed for a few seconds, scraping down the sides of the bowl as needed to keep everything in the center. Add the remaining ingredients and stir at low speed until just coming together into a dough. Scoop the dough onto a parchment-lined baking sheet and press gently into disks with your fingers or a fork. Garnish with a bit of granulated or raw sugar if you’re feeling sassy. Bake for about 12-15 minutes at 375*F until barely golden. Let cool thoroughly, then stick two cookies together into a sandwich with a spoonful of cranberry jam.

It’s strange, isn’t it? Every winter, there is about one month of the year where the most famous music in the world is a collection of primarily decade-old songs. We have a fascination with Christmas music. We carry such a love for it and the nostalgia tied to it. Christmas music has undoubtedly played a small part in all of our childhood memories and can consistently transport us back to them every year. There is an innocence in the melodies and a softness in the reception. Music is a miracle in that way, giving you and me the ability to go back decades to the most cherished times in our lives. Most new music these days deals with both love and heartbreak or endings and beginnings. But Christmas music? It brings us home. If new music is always moving forward, Christmas music is always taking us back. In a certain way, it centers us and brings us together. It’s a homecoming in the form of a song.

SANTA TELL ME The Vanguard Room, Tim Steiner A total reimagining of Ariana Grande's huge holiday hit. Genreswapping from dance/pop to alternative/Americana, with steady acoustic guitar, emotive piano lines, and Tim's brooding low-range vocals. This version brings out so much heart and gravitas to the lyrics, making it feel like an entirely new song.

3. LET IT SNOW The Vanguard Room, Emilie Weiss Since it was written in 1945, almost every version has been up-tempo and pop-inspired. With two key changes, this slower version allows Emilie’s unmatched vocal talent to take center stage and fully embody the lyrics’ authentic romance and thoughtfulness. 4. CHRISTMAS FOR COWBOYS The Vanguard Room, Dan Sharrett Frontman of the hugely influential Nora’s Breakfast Club, Dan helped build a local music community that’s still strong today. Dan’s vocal delivery is a unique style that helped transform John Denver’s country ballad into a 90s-alternative, pop-inspired holiday anthem.

ALL I WANT FOR CHRISTMAS IS YOU The Vanguard Room, Van Plating Taking on one of pop-cultures greatest smash hits of the holiday season, Van Plating brings unique, memorable vocals to Mariah Carey’s mega-famous refrain. A restrained and intricate piano, bass, and drums arrangement create a foundation that slowly builds entirely into indie-rock orchestration. This arrangement sets aside the original’s 80s synthesizers and drum machines for a more somber, acoustic-driven feel, ideally suited for this holiday breakup song. 8. HAPPY XMAS (WAR IS OVER) The Vanguard Room, Bobby and Kenzie Walker Channeling the spirit of John Lennon and Yoko Ono in this Christmas standard, Lakeland couple Bobby and Kenzie Walker conduct the same spirit on this track. A hybrid of organic and electronic instrumentation mixed with minor harmonic progression fuels a darker and more dramatic twist on the original. 9. LITTLE DRUMMER BOY The Vanguard Room, Emily Jones A beloved and prolific Lakeland artist, Emily Jones’ nuanced and evocative performance brings eerie and haunting energy to this 80-year-old Christmas classic. Although the song has been covered by artists ranging from Johnny Cash to Joan Baez and Bing Crosby/David Bowie, Emily’s version easily holds its own.
