HARRIS COMPEAUX
Harris J. Compeaux, 94, a native and resident of Cut Off passed away on January 25, 2017. Graveside services will be held at Sacred Heart Cemetery on Friday, January 27, 2017 at 9:30 a.m. HE is survived by his wife, Isabella Hebert Compeaux; children, Patsy Evans and husband Charles and Gary Compeaux and wife Ericka; four grandchildren; and seven great grandchildren. Mr. Compeaux was preceded in death by his parents, Armand Compeaux and Armacia C. Compeaux; and brothers, Howell, Wister, and Edward Compeaux. RONNIE HOUSEND
Ronnie Paul Housend, 69, a native of Larose and resident of Boutte, passed away on Friday, January 27, 2017. Visitation will be held at Falgout Funeral Home in Raceland on Thursday, February 2 from 9 a.m. until funeral services at 11 a.m. Burial will follow in Holy Rosary Cemetery in Larose. Ronnie is survived by son, Shannon Housend (Bonnie); daughters, Tammy Housend (Karen) and Tonya Housend; brothers, Terry Melancon, Nolan Melancon, Jr., Bryan Melancon; sister, Charleen Melancon; 7 grandchildren, Haley Bruce, Jazsmin Housend, Justin Housend, Jadelin Housend, Gavin Housend, Erin Housend; 2 great grandchildren, Aliyah Housend and Braélynn Lewis. In 2016, more than 111 million viewers in the United States tuned in to watch the Carolina Panthers play the Denver Broncos in Super Bowl 50. The viewership numbers are even more impressive when international figures are added. Simply put, the Super Bowl is one of the most popular sports and entertainment events of the year. Many people celebrate with parties filled with friends and, of course, food. Hosts who want to feed and impress their guests with some homecooking for this year’s big game can try their hands at the following recipe for “Red Chili Braised Short Ribs” courtesy of “Jon Bonnell’s Texas Favorites” (Gibbs Smith).
Red Chili Braised Short Ribs: Serves 8 to 10 Red Chili Sauce 1 yellow onion, diced 2 ribs celery, diced 5 cloves garlic, peeled and chopped 1 tablespoon butter 3 cascabel chiles 3 guajillo chiles 3 pasilla chiles 1 ancho chile 2⁄3 cup dry red wine 3.5 cups chicken stock 1.5 teaspoons kosher salt 1⁄2 teaspoon cracked black pepper 1⁄4 teaspoon ground coriander 1⁄2 teaspoon sweet smoked paprika 1 cinnamon stick Pinch of ground cumin 2 tablespoons tomato paste Short Ribs 8 to 10 thick-cut large beef

In a medium-size soup pot, sauté the onion, celery and garlic in butter until the onion softens. Remove the stems and seeds from the dried chiles and add them to the pot. Add the remaining sauce ingredients and cook for 1 hour at a light simmer, covered. Remove the cinnamon stick and puree the entire mixture until smooth, then strain out the solids and discard. Set the sauce aside. Season the short ribs with salt. In a Dutch oven, heat the vegetable oil on high heat and brown the shorts ribs over very high heat on all sides. Once the ribs are very brown, deglaze the pot with red wine, then pour in the Red Chili Sauce and cover with a tight-fitting lid. Place the pot in a preheated 250 F oven and cook for 5 hours. Once finished, the meat should be falling-off-thebone tender and the sauce incredibly flavorful.

Raceland fugitives arrested on drug charges
Scotty Poindexter, 27, and Ernest Boyd, 29, was arrested on Thursday, January 26. At around 12:40 p.m. on Thursday, deputies of the Problem-Oriented Policing (“POP”) Squad were at the intersection of LA Highway 308 and LA Highway 182 when they observed Scotty Poindexter in the parking lot of a convenience store. The deputies knew Poindexter to have active warrants for his arrest, and they proceeded into the parking lot to make contact with him. Upon deputies’ arrival to the parking lot, Poindexter sat down in the driver’s seat of his vehicle. His passenger, later identified as Ernest Boyd, exited the vehicle and attempted to flee on foot, but he was quickly apprehended. Boyd

Election Commissioners School For NEW Applicants
ELECTION PAY: COMMISSIONERS - $200.00 PER ELECTION WORKED
Annette M. Fontana, Clerk of Court and Parish Custodian of voting machines, in and for the parish of Lafourche, will hold a general instruction class for persons wishing to become eligible to serve as election commissioners in Lafourche Parish until December 31, 2020.
In order to be eligible to serve as an Election Commissioner, the applicant must have the following qualifications:
1. You must be a registered voter in the ward in which you are seeking to serve. 2. You must not be a candidate for election to public office. 3. You must not have been convicted of an election offense. 4. You must be able to perform the essential duties of a commissioner as described in the informational pamphlet by the Secretary of State pursuant to R.S. 18:421 (C).
Persons attending the general instruction class will be required to pass a written test as required by R.S. 18:431 (A). Upon successfully passing the test, each person will be issued a certificate of instruction and will be placed on the master list of certified commissioners for Lafourche Parish. Persons receiving a certificate of instruction will remain certified until December 31, 2020, unless otherwise disqualified.
