The sports advocacy organization drives over $18 million in annual food and beverage spending
Great sporting events don’t just materialize out of thin air. There’s a ton of planning, recruiting, liaising, organizing, and marketing that goes into making them happen. In our region, Spokane Sports is the community partner responsible for a lot of that essential behind-the-scenes work. “At Spokane Sports, our mission is to strengthen our community through the power of sports,” says Keytra Lewis, the organization’s director of marketing and communications. “The way we do that is through a few different avenues. We bid on and successfully win sports events. We work


to actively retain long-term events, and we also create impactful sports events that drive economic impact.”
Do you ever wonder how Spokane lands the NCAA® Women’s Basketball Regionals? USA Wrestling Women’s National Championships? USA Volleyball Pacific Northwest Qualifier? The Fifth Season indoor track and field season? All of those — plus many, many others — come down to the successful efforts of the team at Spokane Sports.
While the sporting events themselves tend to garner most of the attention among fans and media, there’s a huge side benefit to Spokane becoming a top-tier sports destination. The tourism associated with each of these events provides regular boosts to our local economy.
According to a Tourism Economics Report, events hosted by Spokane Sports generated $86.7 million in total business sales in our community in 2023. What’s more, over 20% of that spending — that is, $18.4 million — was driven by food and beverage sales alone.
“We’re proud to showcase the culinary scene — whether its fast casual, fine dining, or cafes. Our athletes, coaches, officials, and fans give rave reviews to the hospitality they experience in our city” Lewis says.
As the caliber of events hosted by Spokane Sports grows, so does their economic impact. Which means the victories aren’t limited to the field or the court. Spokane’s thriving local food scene scores a win, too.

Satay is an unlikely location for a restaurant, says Elder, “and yet, once you’ve been there, you’re hooked.”

Legends of Fire

Much like fine wine, craft beer and gourmet food, a connoisseur community has long existed around cigars. Aficionados would gather in exclusive bars to socialize and savor the unique qualities of different cigar varieties.
That was the old days. The era of cigars as a members-only men’s club pastime is fading,

and modern lounges like Legends of Fire at Northern Quest Resort & Casino are offering people the opportunity to rediscover this ancient art of rolling tobacco.
“Legends of Fire is the only cigar bar on the eastern side of Washington state, making it one of the only places in our region for you to actually come in, buy a cigar, sit down, get it cut and lit, and then just enjoy it,” says Karri Bradshaw, the general manager of Masselow’s Steakhouse and Legends of Fire.
The staff at Legends of Fire are attentive to what Bradshaw calls the “intimidation factor.” As a result, they work hard to create a welcoming, approachable atmosphere for everyone from cigar enthusiasts to the newly curious. That’s one reason why Legends of Fire has become such a popular destination for groups of golfers and bachelorette parties alike.
“This is a really cool environment to come in, have a drink and eat dinner, or just have some appetizers to start your evening before you go down to the casino,” says Bradshaw. “It’s a fun, open-door mentality.”
She means that literally. Legends of Fire keeps more than 70 different brands of cigars in a walk-in humidor, so you can easily browse the full range of cigars up close. Some of them will be classic blends of



premium domestic or international tobaccos. Others will feature intriguing flavor profiles like rum, vanilla, honey or mint chocolate.

The 9th Street Bistro at Huckleberry’s
A neighborhood institution that prides itself on quality, choice and being really delicious
Huckleberry’s Natural Market opened on Spokane’s South Hill almost three decades ago. Since then, the neighborhood grocery store has become synonymous with its emphasis on natural, healthy and regionally sourced items that cater to a wide range of diets and appetites.
That same philosophy extends to its 9th Street Bistro, where you’ll find scratch-made meals, tons of vegetarian and gluten-free options, plus a menu that prioritizes customer choice. Breakfast for dinner? An omelet prepared with your selection of fixings? A traditional club sandwich with a vegan twist? Yes to all the above.
Bistro Manager Luis Hernandez says that the burger options are just one example. There’s the Carnivore, a fresh-ground bison burger topped with Black Forest ham and peppered bacon, served on a ciabatta bun with Dijon aioli. Its vegan mirror image is the Herbivore, which brings a Beyond patty together with Field Roast slices and tempeh strips.
Of course, you’re always welcome to build your own burger from a huge selection of ingredients such as a gluten-free bun, a

chicken breast, avocado, caramelized onions and honey habanero sauce.
Or maybe you’re more in the mood for a made-to-order sandwich? You can opt for that, too, and draw on an equally large selection of à la carte options like roast beef, turkey, hummus, various cheeses and seasonal organic produce.
“Another thing we’re pretty proud of is our hot bar area,” says Hernandez. “All of that is scratch-made — we prepare it all here in-house.”
On Saturdays and Sundays, the bistro’s omelet bar consistently draws a crowd of regular diners and newcomers. Just pick your favorite proteins and veggies and the chef



will prepare it on the spot. Better still, the omelet includes a coffee, a side and fresh fruit.
The equally popular pasta bar on Fridays and Saturdays works much the same way. And, just like any bistro meal, you can pair it with a refreshingly healthy beverage from the juice bar or a glass of one of the many regional beers or wines.
“With this great team and all these great ingredients and choices, there’s a lot of different options that we have available. That might be why we have so many regulars who just appreciate what we’ve been doing.”

Purgatory Craft Beer And Whiskey Bar
Whet your whistle with one of a thousand whiskeys and enjoy a meal as well
There just wasn’t a good whiskey bar in Tracy, California, where Kevin Cox was working as a contractor. “I had to create one,” he says. After opening a Purgatory in Tracy, the Colville native unveiled a second location in Spokane. The businesses are named for an area in Colorado where Cox has spent much of his time — outdoors, enjoying the company of friends and family, and of course drinking good whiskey. Purgatory Spokane is in its fourth year and thriving.


“We have pretty much every type of whiskey on our wall,” says Cox. That’s not an overstatement, with all sorts of international and rare spirits including various iterations of whiskey hailing from Canada, Japan and Australia adorning Purgatory’s enormous lighted wall of spirits. Whiskey not your thing? No problem, there’s also a selection of craft beers, wines by the glass or by the bottle, and an expansive cocktail menu.
That kind of variety is what Cox thrives on. “I’ll have a favorite and something else will come in and be my next favorite,” he says.
But with so many options, it can be hard to choose. So why not try a ight? “Our sta




is very knowledgeable,” Cox says, noting each bartender has created a namesake set of sips.
As for food, Purgatory’s menu o ers rotating selections featuring unique and creative o erings. The menu’s best-selling item is the elk burger with beer mustard and roasted garlic aioli. Sometimes whiskey meets meat, as in the case of the whiskey-crusted smoked pork ribs. Roasted goat cheese with blueberries is a splendid starter, while the honey-fried chicken tacos will have you licking your ngers. For dessert, it’s only tting to end with whiskey, so dive right into a slice of bourbon caramel sauce cheesecake.

It’s the fastest-growing sector of the spirit world, and right next door to Purgatory you’ll find a massive selection of all things agave. Owner Kevin Cox is adding to the 340-plus options by the day and plans to offer 1,000 agave choices, along with a wall of more than 350 different rums. Inside the spacious Agave Bar with its 17-foot rollup garage-style window opening onto downtown Spokane, you can try their tequila and mezcal flights and agave-based specialty cocktails. Crafted Tap House + Kitchen
The downtown Coeur d’Alene gastropub boasts 50 craft beers on tap — and even turtle races
In the early 2010s, Crafted Tap House + Kitchen owner Rob Berger was working at a software company that created a point-of-sale ordering system for restaurants.
When the company was acquired, Berger considered his next move. Looking at the auto shop across the street from his office, he couldn’t help but think the shop, with its big garage doors, would make for a cool restaurant and patio space.
With the idea starting to take shape, Berger decided to strike while the iron was hot and center the space on craft beer, then in the early days of its eventual explosion in popularity.
Crafted Tap House + Kitchen opened in Coeur d’Alene in 2013. Its 50 taps feature a mix of fan favorites, which stay on tap yearround, and rotating varieties of Belgians, IPAs, pilsners and stouts, all selected with quality in mind.


Crafted also sells standard fare like Coors Light and Bud Light, but staff try to steer customers into the world of craft beer when possible.
“It stands for what ‘crafted’ stands for — hard work,” Berger says. “We recognize that it’s a ton of hard work to make those beers




and small businesses, so we like to support the small guys as best we can.”
Crafted’s gastropub menu also celebrates those who go above and beyond, with each entree named after a master of their respective craft. Popular dishes include the #42 (named after Jackie Robinson), a local Angus burger topped with roasted garlic-bacon jam and black pepper apple cider aioli, and Berger’s favorite, the Rockafella Y’all (a nod to Jay-Z), a towering chicken-and-waffles dish with a green onion Belgian waffle, buttermilk fried chicken and toppings like black pepper bacon, an egg, whipped cream, and a house-made blueberry, fennel seed, and black pepper syrup.

In the winter, reserve one of Crafted’s six beautifully decorated igloos for 80 minutes at $80 plus the cost of food and drinks. Walkins can enjoy the igloos for free if they’re not already reserved.
Every Friday night, Crafted hosts turtle races. During these races, an emcee hypes up the crowd before releasing six turtles, which Berger says are speedier than you might think. Those who vote for the winning turtle receive $1 beers.



























































Torra Tea
Enjoy an elegant, hearty meal and carefully crafted drinks inspired by Scottish tea traditions
When Kathryn Soady decided to transition out of her career as a physical therapist, she decided to take a leap into the restaurant world, opening Torra Tea in Spokane Valley in the fall 2024.
“This is really about experiential dining and having fun with things,” Soady says. “You can come and sit in these chairs and just have a cocktail and something light to eat, or come in and have a full meal, or come and have tea.”
When crafting the menu and focus of Torra Tea, Soady began digging into her Scottish roots and learning about the country’s tea traditions.
“I was exploring different tea ceremonies and different cultural relationships with tea and drinking tea,” she says. “I learned about the

Scottish high tea, which is a high tea because it’s served on a dinner table, a high-level tea table. I started thinking about what it would look like if I did a nod to Scotland.”
And as another nod to Scotland, Soady decided to add a whiskey bar to the eatery, adding craft cocktails and tastings to the Torra Tea dining experience. Plus, there are more than 40 teas from Revival Tea Company and The Jasmine Pearl Tea Company.
Torra Tea serves seasonal menus, highlighting fresh ingredients and flavors. If you want to enjoy a paced-out Tea Service meal, stop by for Afternoon Tea before 4 pm or Scottish High Tea after 4 pm and enjoy soup, tea sandwiches or a savory pie, and dessert.

With small plates like their deconstructed Irn Bru Chicken Wings or Ploughman’s Lunch, entrees including their staple bourbon maple ribs or savory pies, and a variety of other small bites and deserts, Torra Tea has a variety of hearty, unique dishes to enjoy.
“My tagline is ‘tradition with the unexpected,’” Soady says. “I want to bring elegance, but at the same time I want people to just be themselves and come and have a good time.”

Established in 1940, Roger’s Ice Cream and Burgers was purchased by Mark and Nicole Randolph in 2009. In the years to follow, they opened three more locations in Coeur d’Alene, Post Falls and Hayden. The Randolph's just purchased Cougar Country Drive-In in Pullman. The Randolph's say that what sets them apart from other burger joints in the area is a focus on serving high-quality, fresh food. “We truly focus on quality, and it really starts with our beef program,” says Mark. “It’s a ‘never ever’ program: never any antibiotics, never any hormones. It’s


life, because a great, happy cow is going to produce a great tasting burger at the end of the day,” he says. At Roger’s and now Cougar Country they only use fresh produce sliced daily not pre-shredded and sprayed with chemicals & gases to keep it fresh. They cut locally grown potatoes for their fries & kettle chips and fry in rice bran oil- no seed oils ever. They make all of their sauces in-house. Mark says, We like to do things “the old-fashioned way." All the Roger's locations serve premium hand dipped ice cream and old fashioned malts and shakes. All of the Roger's Burgers locations serve beer, hard ciders and seltzers. “We truly care and want to provide a great experience to our guests from the food to the service to the pricing,” he says. “We have done a lot to build a company that truly cares about our guests and the people who work for us.”

Sharee Moss, who launched Birdie’s Pie Shop with her husband, Brad, in 2019.

“People love the signature aky crust of our pastry pies,” says Sharee, who named the popular pie shop after her grandmother, Birdella Cox Lybbert. “People also love the fact that they can tell that everything is made in-house.”
