NICOLA THOMSON, after three years in Burlington, is somewhat of a local history buff. Her unique hobby, unhindered by the pandemic, is a daily walk or run, camera in hand, to the old section of Aldershot’s Greenwood Cemetery or The United Empire Loyalists’ Burial Grounds on Plains Road. Referencing gravestone names, she finds details of the person’s life and photographs their home or workplace, if still standing.


One of Nicola’s findings included two builders; Alfred B Coleman and his brother Charles, coming from England in the 1870’s. Nicola found Charles Coleman’s gravestone in Greenwood Cemetery and began her research. Alfred lived in a home he built on Nelson Avenue and he also built the very ornate Gingerbread House on Ontario Street. In 1902, Coleman also built an inn on the site where Jo Brant hospital is located but it was later taken over as a military hospital. From there he built a country club across the street on the corner of Lakeshore and North Shore Boulevard, which eventually became the very famous entertainment venue, the Brant Inn. This club hosted big names from the swing era such as Louis Armstrong, Duke Ellington, and Ella Fitzgerald. The legendary nightspot ran from the 1920’s until 1964.

Another one of Nicola’s findings was Peter Zimmerman. “Interestingly, The Queen’s Head Inn at Elgin and Brant was built in 1860 by Peter Zimmerman,” adds Nicola. Zimmerman originally rented it to a fellow named Evans to run as a first class hotel. Peter loved building hotels but did not want to manage them. He was a descendent of the Zimmerman family who emigrated from New Jersey in 1794. Do you recognize these Burlington street names that Nicola matched to gravestones at the United Empire Loyalists’ Cemetery?

STEP 1: Preheat oven to 325˚F and prepare a muffin tin with paper liners.

STEP 1: Place finely chopped chocolate into a heat-proof glass or metal bowl.

STEP 3: Let the two ingredients sit for a few minutes before stirring.

4 ripe bananas, mashed 90 g unsalted butter, melted 100 g granulated sugar 100 g packed light brown sugar 1 large egg, at room temperature 5 ml vanilla extract 225 g all-purpose flour 5 g baking soda .75 g salt 250 ml toasted pecan pieces (optional)

STEP 4: Stir until smooth.

FOR THE GANACHE

STEP 2: Whisk the mashed banana, melted butter and sugars together until well blended. STEP 3: Whisk in the egg and vanilla. STEP 4: In a separate bowl, sift the flour, baking soda and salt. Add this to the banana mixture and stir just until blended. Stir in the nuts if using. STEP 5: Using an ice cream scoop, scoop the mixture into the paper lined muffin tin filling to 2/3 of the way up. STEP 6: Bake for about 15-17 minutes or until a toothpick comes out clean when you insert into centre of muffin. STEP 7: Cool the muffins completely on a wire rack. Meanwhile, make the ganache. 8

STEP 2: Heat cream in a small sauce pan on the stovetop until just simmering (you will see small bubbles along the edges of the pot). Do not let it boil. turn off the heat and immediately pour the warm cream over the chocolate.

400 g semi-sweet chocolate, chopped into small pieces 175 ml heavy cream 1/2 cup sprinkles of white chocolate curls

With the cooled muffins, remove the wrapping paper and put the muffins on the cooling rack with a clean sheet pan underneath, and making sure the muffins aren’t too far apart. Pour the ganache into a liquid measuring cup with a spout, and slowly pour over each muffin, coating top and sides. You could use a small offset spatula to help guide the ganache onto the sides of the muffin. The extra ganache that drips into the pan can be scooped up with a spatula and reused on the muffins, or put in the fridge for later use. Sprinkle the tops with the white chocolate curls and let set completely before serving.

The Science of Kindness reports that when you perform an act of kindness, you trigger a release of oxytocin, the love hormone, which aids in lowering blood pressure and improving our heart health. Oxytocin also increases our self-esteem and optimism, which is extra helpful in times like these. That’s not all random acts of kindness do for you! They can increase our energy and improve mood, by stimulating the production of serotonin, the same way a medical antidepressant can. When you are kind to another person, your brain’s pleasure and reward centres light up with what is called a "helper’s high".

ENCOURAGE EMPATHY

When we donate to the food bank, I get the kids to shop our cupboards for what we can part with. I also get them to read the list of what is needed, and we add that to our grocery order. They need to see that lunch snacks and baby food are a luxury to some. When we make a financial donation, we ask the kids to help us choose where the money should go.

I have strong views on certain topics, but instead of pushing those views on my kids, I ask them open-ended questions to spark deeper thinking. "I wonder why the food bank needs formula?" Then I show them the price of formula and diapers and we do a quick calculation to see how long someone would have to work to afford those two items. They realize that not everyone can afford what they have, and they not only learn to relate to others but to appreciate their blessings.

VOLUNTEER My almost 13-year-old and I deliver food weekly to folks who need it. We do it so she knows what giving her time and kindness can do for others. We also love any opportunity to clean up a green space or connect with seniors in our community. The appreciation that organizers show to volunteers is unmatched and encourages more volunteering.

USE THIS LIST These ideas for acts of kindness for kids were brainstormed by our whole family! It was a great learning exercise to see if we can still perform acts of kindness during a pandemic and lockdown. Guess what? We can! And we need kindness now more than ever.

Q: INTERESTING. WHAT WAS YOUR OWN EXPERIENCE LIKE WITH "BUSHY" HAIR?

We recently sat down with award-winning author, Peta-Gaye Nash to discuss family, writing and her latest story, Bushyhead, available on Amazon. Q: CONGRATULATIONS ON YOUR NEW BOOK, BUSHYHEAD. TALK TO US ABOUT THE BOOK AND WHY YOU CHOOSE TO WRITE THIS STORY? Thank you very much. I’m passionate about this story and the important messages in it. I believe the story helps instill self-esteem and a sense of self-worth in children. Children need to know they are valuable people just as they are. A few years ago my father nicknamed 12

my youngest daughter Bushyhead when she went to Jamaica one summer. She was running in the garden with her wild, curly hair fanning out in all directions. We thought her hair was simply glorious and I wanted to ensure that my daughter had a completely different experience with her hair than I did growing up.

I was surrounded by societal messages that straight hair was better and those messages are still in force today. My hair was chemically straightened by age 11. The message I got was that curly hair needed fixing. It needed to be tamed, straightened. I stopped chemically straightening my hair when I was in my twenties and then I stopped using a flat iron a few years ago. Since releasing Bushyhead and my blog post about why I wrote the story, many women have contacted me about their own struggles with their curly hair and the negative comments people have made. Not long ago, I heard that my nieces were teased at school and told they couldn’t be princesses because princesses didn’t have curly hair, I knew this was going to be a book. When my daughter Meadow was told she had doo doo hair and other negative comments, I felt I had a duty to write this story. The book is about embracing the hair on your head, whatever hair it might be. The character in 'Bushyhead', Miranda May, doesn’t always love her hair. Her bald father keeps telling her to be glad she has hair. The father in the book is based on my husband who is bald who is always saying just that, “be glad you have hair”. Then when my niece Jisele donated her curly hair to make wigs for children, I knew I had the full story. I was really proud when my daughter Meadow also donated her hair. She said the book inspired her to do it.


Q: YOU'VE WRITTEN 7 CHILDREN'S BOOKS TO DATE. WHAT HAVE YOU LEARNED ABOUT WRITING AND ABOUT YOURSELF OVER THAT TIME? I’ve learned that I can overcome self-doubt. I wrote these books for a reason: to share valuable lessons with other parents and children. In Essie Wants an Education, Essie the squirrel learns to cross the street safely. My own son ran across the road when he was very young. I thought that other parents could read this story to their kids and the kids would remember Essie the squirrel, how amazed she was when she learned that you have to look both ways and be careful when crossing the road so that they would be careful and be safe. That’s important for all of us parents, to know our children will make wise decisions about their own safety. With my book Juliet Malevolent, Juliet is born into a world where everyone is evil but she wants to be kind and compassionate to her friends. That’s the message right there. The world may be one way, but you can be different. You can be caring, thoughtful and forgiving. Every time I feel reluctant to promote the books, I remind myself that I’m not only doing this for myself and my family, I’m doing this for other parents and children. I’m doing this to make our world better. I love these books and the lessons they teach - about having manners and spending time with family. Learning through stories is one of the best way to learn. I hope kids think my characters are memorable and learn from them.

Q: YOU ARE MARRIED WITH FOUR KIDS? TELL US ABOUT YOUR FAMILY AND THE ROLE THEY’VE PLAYED IN YOUR WRITING CAREER? I’m incredibly lucky to be married to someone who supports my writing. Sometimes when I’m writing for over an hour and I hear him doing all the things that need to be done (cooking, laundry, looking after the children), I feel guilty. I feel like I’m not doing my part. I become consumed with this guilt for not being the perfect wife and mother, which becomes a distraction and then I can’t produce. Thankfully, my husband Dominique always reminds me to focus and that all the other stuff can wait. Plus, he’s a fantastic editor, catching both typos and story flow. Without my children, I wouldn’t have these children’s stories. At one time when they were all very young, I used to get frustrated

and think my family life and the demands of being a mother were preventing me from accomplishing my goals as a writer. I’ve since learned that the only person preventing me from anything is myself with those negative thoughts that tell me I can’t do it, it will take too long or it’s not worth the effort. Now I know better. If I have those thoughts, that’s okay but they won’t prevent me from taking action and putting in the time. As a matter of fact, my greatest accomplishment has been the raising of my four children. I’m sure parents out there will agree with me when I say that raising a family is one of the hardest things we’ll ever do. There are challenges at every stage.

Born in Jamaica, she lived and travelled all around the world and now calls Canada home. All of her stories have important messages like road safety, being yourself and the importance of education. What we’ve been able to do through the original Sysco Foods grant and thanks to the City of Burlington, is bring fresh produce into the support offering for our clients. Families love to receive home grown, organic fresh vegetables all summer long and our own garden plots in addition to the amazing support from Grow-a-Row and Grow-to-Give allowed this to become a reality. It’s also such a great way to engage the community as well.

If you are interested in sharing some of your time as a volunteer gardener please email us at garden@burlingtonfoodbank.ca and we can start scheduling time for planting, weeding, watering and eventually harvesting. We’d also like to thank the other plot owners at Maple Gardens that generously donated some of their own harvest last year to help us out.
