Gorge Wineries There are scientific, geologic and geographic ways to explain why the Columbia River Gorge produces great wine. The Columbia Gorge American Viticulture Area (AVA) designation — a proprietary one bestowed in 2004 that provides an official appellation for the benefit of those who make wine — is one of 242 in the U.S., and one of the most diverse, in terms of terroir. It boasts variety of climate (maritime/continental, with from 50 to 10 inches of rain, depending on where you are), soil type (it runs a huge volcanic and flood-plane gamut in its 40-mile swath up the river on both sides), acreage (nearly 4,500), and geography (wild variations in elevation, sun exposure, wind and other factors).

e have the place, but it requires so much more than that to grow and support more than 30 wineries, nearly all of which are of the boutique variety producing 5,000 or fewer cases a year, more than 90 vineyards, and some 1,300 planted acres.

That effort results in an overwhelmingly broad array of varietal grapes grown in a fairly extreme place, on which grapes seem to thrive. The long list includes familiar old-vine zinfandel, syrah, pinot gris, pinot noir, chardonnay, cabernet franc, sauvignon blanc, and merlot, among many, plus some perhaps less well-known names like primitivo,

barbera, dolcetto, gruner veltliner, lemberger, muller-thurgau, mencia, and trousseau, to name but a handful.

And yet that doesn’t begin to explain the fearless experimentation, innovation and shear passion and spirit the Gorge winemakers put into every bottle. Like jazz musicians and their instruments, these creators extract something from their soil — be it Missoula Flood debris, volcanic, lahar, silt, ashy loam or other complex soil series that cover the region — that mirrors the essence in their hearts and minds, and results in a deeply lyrical liquid that plays across your nose and tongue and taste buds.

It is chemistry to be sure, but equal parts alchemy. The makers play to wind and weather, to dirt and inspiration, to vines and vision. Each vintage is different. Each bottle a postcard to time and place and the company you keep. And that all feeds to the fluid dynamic that is Gorge wine.

Gorge Breweries You can’t swing a growler in these parts without smacking a craft brewer. We’ve gotten supremely spoiled with the selection of boutique breweries, brewpubs and frothy brews that range from classic and ubiquitous IPAs, amber ales, lagers, pilsners, and stouts, to sours, kolsches, saisons, weisses, Scotch ales, biere de gardes, and well beyond.

O

ne river, two states and 13 breweries is how the non-profit Breweries in the Gorge (BIG) organization describes it.

The member breweries stretch from Washougal and Stevenson, Wash., through Hood

River and White Salmon, to The Dalles and up into Goldendale, Wash. They offer a playful Passport Program to encourage visitation — print out the passport, visit 11 of the 13 member breweries, and there’s a prize waiting for you on your last qualifying stop.

From 30-plus-year stalwarts and pioneers Full Sail and Big Horse, to relative new kids on the block Dwinell Country Ales in Goldendale, Hood River’s Ferment on the waterfront, and The Dalles’ first two breweries, Freebridge and Sedition, the Gorge beer experience is a robust, vibrant and fearless scene, and one that continues to grow.

Beer seems to be the social lubrication of choice for the region. With nearby Yakima, Wash., producing most of the nation’s hops supply, clean and abundant water, a selection of grains and some serious passion,

we’ve become a prime destination in a beer-crazy region.

We’ve grown a lot since Oregon’s forwardthinking HB 2284 legislation, known as the Brewpub Bill, passed in 1985. Prior to that, Oregon breweries could not ​distribute directly to consumers from the brewery and had to lean on trucks to transport beer to taverns for purchase and consumption.

It helped create a culture perfectly suited to laidback Oregonians — especially an outdoorinclined Gorge population — and visitors to the state hoping to experience what Oregon enjoys. It has spawned folksy, homegrown gathering places to draw and sip a pint, dine on what’s become a pub-grub gastronomic and evolving genre all its own, often listen to live music (which was outlawed in taverns until 1972, when the Oregon Liquor Control Commission lifted its tavern ban), and gather with friends, often al fresco in the warmer seasons, for the conviviality and fellowship that a cold brew provides.

It’s a phenomenon that’s constantly evolving, so stay tuned. And as it’s been most eloquently put: Beer is not the answer. Beer is the question. The answer is, “Yes, please.”

GREAT MOMENTS IN CRAFT BEER HISTORY 1516: The Reinheitsgebot, instituted in Bavaria, is a beer “purity law” that remains today in revised form. The original law permits beer to be made only with barley, hops and water, later amended to include yeast and permit wheat.

1919-1933: Prohibition, made into law by the 18th Amendment, is ratified in January 1919 and goes into effect in January 1920.

In March 1933, President Franklin Roosevelt signs into law legislation permitting the sale of 3.2-percent beer. In December 1933, the 21st Amendment repeals the 18th Amendment.

1972: The Cascade hop, in development by

Oregon State University since the 1950s, is released to brewers. It becomes the signature hop for American pale ale. Today it’s the mostly widely used hop in craft brewing.

1972: Oregon becomes the first state to

2001: 1,458 breweries produce 6.2 million

barrels of beer.

2011: Anheuser-Busch buys Chicago craft brewery Goose Island for $38 million, becoming the first all-out craft brewery purchase by the world’s largest beer company. It has since purchased eight more craft breweries.

2013: More than 2,800 breweries are in business, of which 99 percent are small and independent craft brewers.

Gorge Distilleries Distillation is a centuries-old process that delightfully renders a steam-derived essence, a sort of noble, spiritual purity, if you will. Ancient Greeks lauded its divine powers. Second-century Egyptians exploited its healing powers. Persians used it as an herbal remedy. Stills have been found dating to ancient China.

T

hrough the ages, distilling has taken on a poetic and nearly mythic appeal. The process that results in liquor is simple — combine heat, water, yeast, and carbohydrate-containing plants. It is a fascinating chemistry of evaporation, condensation, and flavor-inducing agents, with decidedly tasty, euphoric, and intoxicating results.

The rise in Northwest winemaking, craft brewing and cider making, by logical extension, has lit a fire under a roaring craft distillery industry in the Gorge. Changes in various local, state, and federal laws have enabled small producers to park steampunk-looking pot stills in back rooms and begin bottling a sumptuous array of tasty craft spirits.

Five locations on both sides of the mighty river practice the ancient ritual for more decidedly commercial purposes. Camp 1805, Skunk Brothers Spirits, Clear Creek Distillery (under the auspice of Hood River Distillers), and McMenamin’s Edgefield are all crafting some exciting distillations.

Camp 1805 Distillery and Tasting room, named for the year the Lewis and Clark expedition found its way to the Gorge, sits

along the Hood River waterfront, and serves up not only tasty food but serious craft cocktails, several made from their in-house distilled Mt. Hood Vodka, Endurance White Whiskey, or Backbone Rum. It’s fun to watch the stuff being made as you sip.

Look for Skunk Brothers Spirits distillery and tasting room along the docks in Stevenson, Wash., fashioned after an old-time speakeasy, replete with sliding bookcase façade that reveals the tasting room. Inspired by a bootlegging grandfather, Skunk Brothers stills up a selection of liquor, including Whiskey Road Bourbon, Cinnamon Corn Whiskey, Moonshine Corn Whiskey, Apple Pie Brandy, and several different seasonal cordials and soon their version of a single malt whisky (currently in the cask releasing the angels’ share).

A pioneer in Oregon’s craft brewing and partly responsible for the state’s entire brewpub model, McMenamin’s and its Distillery at Edgefield handcraft some 13 different offerings, from rum to brandy, and whiskey to gin. Small and tucked away on the expansive Edgefield grounds, McMenamin’s got into the distillation game in 1994, when it shipped some of its pinot noir and chardonnay to the now-defunct Carneros Alambic distiller

in northern California to make brandy. Full distilling operations began in 1997.

The granddaddy of Gorge distilleries is Hood River distillers, a commercial operation down on the Columbia River in Hood River that got its start in 1934 making fruit wine and brandy from the excess fruit of bountiful Hood River County orchards. It’s grown well beyond that, especially with the opening of its downtown Hood River tasting room and the purchase of Clear Creek Distillery in 2014.

Clear Creek’s mastermind, Steve McCarthy, lays claim to being Oregon’s oldest craft distiller. With deep family ties to the Hood River Valley and its pears, McCarthy began making his now widely acclaimed Pear Brandy 30 years ago, earning accolades from far and wide.

Gorge Cideries It’s likely John Chapman never rambled as far west as the Columbia River Gorge, but the man known as Johnny Appleseed would likely approve of what we’ve done with his fruit.

C

ider was the preeminent way apples were consumed in early American history, and the making of hard cider was not only a preservative method, but naturally rendered its drinkers a touch on the wobbly side. You might not know a Yarlington Mill apple from a Brown Snout these days, but our ancestors on the East Coast were intimately familiar with hard ciders made from these and other heirloom fruit early in our history. In fact, one estimate from colonial times indicated average consumption was 35 gallons a year.

But with a German influx into America, beer soon overtook cider as the drink of choice.

Most of America missed out on hard cider, thanks to Prohibition and the slashing of apple orchards for urban sprawl, but that — bless our little agricultural hearts here in these parts — is changing at a rapid rate.

The Columbia River Gorge Cider Society is the emerging face of a growing cadre of cideries that stretch from Stevenson, Wash., to Mosier, all following a delicious national trend toward fresh, artisanal products, a decidedly local flavor and craft, and the fact that cider is absolutely gluten-free. Though long popular in Europe, we’re only recently

discovering the crisp and often dry joys of hard cider made from a variety of fruit grown in these climes. Closer to wine than beer, it’s all strictly regulated from a licensing standpoint, but the Gorge makers are playing fast and loose with varietals, dryness, and other flavor factors, to push this region into prime cider country.

Don’t drink ice-cold cider. Extreme cold masks flavors and aromas. Craft ciders are usually best enjoyed at about 50 to 55 degrees, although dry ciders are often better closer to room temperature. If a cider seems too alcoholic, you might be serving it too warm.

If it lacks aroma, you might be serving it too cold. Of course, always defer to the cidermaker or tap-tender at your local cidery for particulars on their individual ciders.

Enjoy your cider in the right glassware. Pilsner, fluted Champagne, tulip and actual cider glasses are best as they accentuate the bubbles in an effervescent cider and enhance the aromatics. Before tasting, swirl the cider in your glass a few times and sniff the aromas.

When tasting a flight of ciders, do so in order.

Start with ciders fermented from apples only. Then try ciders with spices or botanical flavors (hops, lavender etc.). Then move to barrel-aged ciders, fruit ciders and cysers (ciders fermented with honey). Ideally, start with the dry and semi-dry ciders and end with the sweet, as the residual sugars in the latter can overwhelm your tastebuds. Spitting is rarely necessary as a typical cider contains only half the alcohol of a typical wine.

Pair cider with food. Lighter-bodied ciders make great “session” ciders — for drinking on their own on a hot day, for example. Dry ciders and those made from tannic cider apples are complex and pair well with meals and appetizers — particularly cheeses, oysters, crab, pork and charcuterie.
