fun facts about rosé: Rosé may be having a moment, but it’s hardly a new phenomenon. The first rosés date back to the Phoenicians, circa 1550 B.C.–300 B.C., and the ancient Greeks, circa 600 B.C. Not to be confused with blush wines, rosés are not made from a mix of red and white grapes. They’re typically made from red grapes and are drier and less sweet than blush wines. Most rosés aren’t meant to be aged; they’re usually best within a year of bottling.

LVE Rosé

Crafted from grapes grown in the south of France, this pale pink rosé exudes fruitiness and elegance, with aromas of peach blossom, raspberry and apricot. The taste is light and crisp with notes of fresh-picked strawberry and white nectarine.

Garzón Rosé

In one of the most common ways to make rosé, vintners squeeze the juice from red grapes, allowing the juice to touch the grape skin for just a short amount of time, producing the pink color. The Provence region of France produces most of the world’s best rosés, but other countries and regions such as Austria, Tuscany, South Africa, Greece and the Pacific Northwest United States have also produced impressive rosés.

With exclusive growing rights to one of the world’s best blueberry varieties, Family Tree Farms provides blueberries that are famous for their outstanding flavor, firm crunch and Guinness World Recordwinning size. In a small sauce pot over medium heat, add blueberries and 2 tbsp maple syrup. Stir until berries begin to release moisture and split open, about 2 minutes. Using the back of a wooden spoon, mash most of the blueberries into the syrup, leaving some whole. Remove from heat and set aside to cool slightly. In a medium bowl, stir together yogurt with remaining 4 tbsp maple syrup until smooth. Swirl the blueberry mixture very lightly, being careful not to overmix. How has your upbringing and life up until now influenced your cooking? Having grown up on my own in the States, I spent many days craving the cuisines of home and longing for time in my mother’s kitchen. Everything I cook now is based on my mother’s cooking or flavor combos I’ve learned from her or our time together in the kitchen. You’ve talked about “matriarchal cooking” as an influential force in your culinary development. What does that mean to you? Who are the matriarchs who inspired you? I believe matriarchal cooking is influential in all of our lives across the globe. What I did in In Bibi’s Kitchen was highlight that influence. I’m influenced by women I’ve met on the road who invited me into their homes and taught me their cuisine. I’m also influenced by Aunties and mothers of my friends.

Cook Like a Chef with Hawa Hassan

Hawa Hassan is a Somali-born New Yorker by way of Seattle and jack(ie) of all trades. A former model turned chef, she owns and operates Africaninspired food brand Basbaas, hosts Hawa at Home on The Food Network, and has just released her latest cookbook. In Bibi’s Kitchen was inspired by the women who command the kitchen with their “matriarchal cooking.” Hassan champions community building, uplifting the underrepresented and using life to inspire (culinary) art. @hawahassan

In Bibi’s Kitchen is more than just a collection of recipes; it’s a blend of stories and the foods inspired by them. When cooking, what memories inspire you the most? I’m inspired most by being in the kitchen with my mother and sisters. With them, food is a conduit between storytelling and creating a delicious meal together. Why was it important for you to include recipes from eight countries in Africa, as opposed to recipes solely from your native home of Somalia, in In Bibi’s Kitchen? My intention with In Bibi’s Kitchen was to tell WHOLE stories regarding the continent and how it was influenced by the Indian Ocean. I couldn’t do that just from the perspective of Somali cuisine. Xawaash is a traditional spice blend unique to Somali cooking. How would you describe it to readers who aren’t familiar with it?

Toast all the spices (except the turmeric) in a pan over medium heat until fragrant. Let them cool, then place all in a grinder and pulse until ground. Add the turmeric and store in an airtight jar.

Bariis with Spiced Beef 1 hour, 30 minutes | serves 4 Sweet and savory flavor combos are a staple of Somali cuisine. Hassan suggests adding banana for a perfect pairing.

Xawaash (pronounced HA-wash) comes from the Arabic word hawaij, which is used to describe Yemeni spice blends. Xawaash touches just about every Somali dish—it’s like the garam masala of Somalia. The mix of flavors is truly of the Indian Ocean, and each Somali cook prepares it differently. (See recipe in sidebar for Hassan’s take on Xawaash.) Outside of your culinary pursuits, how do you champion for community and representation? I’ve championed for my community in many ways. Most recently, I’ve been feeding frontline workers and helping out at food pantries in my neighborhood. How do you plan to use your platform and brand to champion for women entrepreneurs and chefs in the future? I intend to use my platform by showing up as my full self and sharing any resources I’ve gathered openly.

What advice would you give to women aspiring to start a business or break into a male-centered industry, like culinary arts? Your biggest currency is being yourself. Stay true to your vision, and above all else, be equally kind to everyone you meet along the way. Having already written several cookbooks, appearing on The Food Network and launching a successful condiment brand, what direction do you see yourself going moving forward? I’m hoping to build a global table that is reflective of the ways the whole world eats. I hope the work I put out and the product I create will always reflect that.

1 ½ c basmati rice 12 oz boneless beef chuck, finely diced 3 tbsp Xawaash spice mix, divided (see recipe above) ½ tsp Kosher salt 3 tbsp extra virgin olive oil 1 large red onion, finely chopped 2 garlic cloves, finely chopped 3c low-sodium chicken broth 1c canned crushed tomatoes ¾c raisins Rinse rice in a fine mesh sieve until the water runs clear. Transfer to a large bowl and cover with cold water. Let soak for 15 minutes. Drain and rinse. Meanwhile, toss the beef with 1 tbsp Xawaash and salt in a medium bowl. Heat olive oil in a medium Dutch oven over medium heat. Add beef and cook, stirring occasionally, until browned, about 3 minutes. Stir in red onion and garlic and cook until the onion begins to soften and is golden, 3 to 4 minutes. Add cinnamon, cardamom and cloves. Cook and stir until fragrant, about 1 minute. Add 1 c broth, cover and simmer over low heat until beef is almost tender, 15 to 20 minutes. Uncover and increase heat to high. Add tomatoes and cook until water has evaporated and sauce is thickened, about 2 minutes. Add the remaining 2 tbsp Xaawash and cook a minute to combine the flavors. Add drained rice and cook until translucent, about 2 minutes. Add the remaining 2 c broth, stir in the raisins and bring to a simmer. Cover and cook over low heat for 15 minutes. Turn off the heat and let rest for 10 minutes. Fluff with a fork. Discard the whole spices if desired and serve.

Herby Egg Salad 15 minutes | serves 4 12 eggs 3 tbsp champagne vinegar 1 tbsp mayonnaise 1 tbsp whole-grain mustard 2 tsp Dijon mustard 2 tsp kosher salt, plus more as needed freshly ground black pepper ¼c extra virgin olive oil 2 tbsp fresh tarragon, chopped 3 tbsp fresh dill, chopped 3 tbsp fresh chives, chopped

Bring a large pot of water to a boil. Gently lower in eggs and boil uncovered for 9 minutes (set a timer to ensure eggs do not overcook). Meanwhile, add ice water to a large bowl. After 9 minutes, transfer eggs to ice water using a slotted spoon. While eggs cool, combine vinegar, mayonnaise and mustards in a large bowl. Whisking constantly, slowly drizzle in olive oil until dressing has thickened slightly. Season with 2 tsp salt and several grinds of pepper. Peel cooled eggs. Working over the bowl with dressing, tear each egg into 5 or 6 pieces and drop into dressing. Add herbs and gently stir to combine. Taste, then season as needed with salt and pepper. Serve immediately. Can be made ahead, but allow salad to come to room temperature before serving.

In Mexico, Cinco de Mayo (the 5th of May) is a minor holiday marking Mexico’s victory over France at the Battle of Puebla in 1862 during the Franco-Mexican War. But, here, it’s become a major excuse to celebrate the vibrant culture and flavorful cuisine of our neighbor to the south.

4 Steps to a Perfectly Grilled Flank Steak 1. Season simply. Coarse salt and freshly cracked black pepper are all you need. Season generously, then let the steak sit at room temperature for 15 to 30 minutes to help it cook more evenly. 2. Keep it hot. For the best browning, use a very hot grill and avoid continuously turning the steak, so a crust can form. 3. Take a break. Let the steak rest at least 10 minutes before slicing so the juices can redistribute themselves throughout the meat. 4. Find the grain. Flank steak has a long grain that typically runs vertically down the length of the steak. Thinly slice the meat against the grain.
