espite the rapidly changing face of Sydney, it is amazing how many local institutions stand the test of time. The Neutral Bay Club and The Oaks Hotel are just two examples of this in our area, with both retaining their relevance and their soul. While it is, of course, great to see Neutral Bay and Cremorne being beautified, modernised and continually improved, it is just as pleasing to see places that have been around for well over a century still proving their worth.

W

ith sustainability and seasonal produce at the front of many people’s minds, knowing exactly where your food comes from has never been more important. At Northside Produce Market, which celebrates its 20th anniversary on September 21, you can meet the person who picked the apple, smoked the trout, rolled the pasta, cultivated the herbs or matured the cheese that catches your eye. There are more than 60 passionate growers, makers and bakers working at the North Sydney market on the first and third Saturdays of every month, attracting those eager to sample their delicacies. “The majority of stall holders are the growers, makers and bakers, it’s something we really pride ourselves on,” Lisa MacDonald, who has been market manager for the past six years, says. “Customers connect to them, especially when they have tough times during droughts, and, for the city dweller… it connects them to the bigger picture and reality.” Set up in 1999 to fundraise for the North Sydney Community Centre, the Civic Park market now includes stallholders from around NSW, and has grown into its own community. “Some of the stall holders bring their kids with them and the customers see them grow up. Markets are special meeting places, you see lots of people catch up,” Lisa says.

The stalls are filled with a mouth-watering selection of fruit, vegetables, gourmet meats, fresh and smoked seafood, bread, pastries and cheeses, to name but a few, with some traders coming from hours away to sell their wares. Trunkey Bacon & Pork has been at the market since its inception, with owner Zanzie D’Souza and husband Fred travelling six hours from Orange to feed the lower north shore. Karen Borg has also been selling her Willowbrae Chèvre and other delicious cheeses at the market since day one. “Northside is one of my favourite markets to attend. It’s in a lovely setting and has a good mix of produce and great ambience,” Karen says. Steven Adey brings the fruits of his greenfingered labour from Darling Mills Farm in Berrilee, one hour north of the Sydney CBD, offering organically grown produce, including more than 100 varieties of herbs and salad plants. The trips to North Sydney have turned into a real family affair for the Adeys. “I’ve claimed my regular spot at the market since 1999, and now my son Max and my sisters Susan and Cynthia also work on the stall,” Steven says. “We really like the direct contact with people who appreciate what we do.” Northside Produce Market is on from 8.00am 12.00pm on the 1st & 3rd Saturdays of every month at Civic Park, 220 Miller Street, North Sydney.

orth shore mum Micky Bittoun, is changing the face of the beauty scene in Neutral Bay. You’ve probably heard of her go-to clinic, Laser Clinics Australia, and the most luxe licensed hair salon in town, Hello Gorgeous, but you may not have heard about her latest venture, The Monday Clinic. For almost six years Micky has been making sure the women of the lower north shore get their beauty fix in between school runs, work functions and all the chaos that exists in their busy lives. “My career actually started in the corporate world. I worked in marketing for Apple, that’s where I really cut my teeth on user experience and customer service,” she says. “I think you really need to dive deep into that space in order to provide the best possible service as a business owner and team leader.” And after switching careers Micky hasn’t looked back. “It feels great to know the work we do is accommodating busy mums, making them feel and look good, all within a manageable time frame to reduce the stress of day-to-day life. Our businesses must be time-friendly and efficient, otherwise we are not delivering the core value of our brands,” she says. Micky began her move into beauty by partnering with Laser Clinics Australia, which has more than 130 outlets across the country. “After taking a break from the corporate world I thought a franchise would be the way to go. The set-up of a franchise means you get a lot of support from head office and it allowed me to cut my teeth in the beauty world before taking on further expansion,” she says. When the opportunity came to take over the

shop next door to Laser Clinics Australia in Neutral Bay, Micky and a girlfriend decided to open up a full-service salon with a licensed bar. “I was spending so much time in salons it made sense to work in one,” she says. “What I felt was missing from my previous salon experiences was the relaxation and atmosphere of a bar, and being able to enjoy a glass of champagne while I was making the most of the down-time.” She and her business partner also realised there was still space for something else. “We had one spare room that was the perfect clinical environment for eyebrow feathering – that’s how The Monday Clinic was born,” Micky says. “We wanted to utilise another space that removed fear of the unknown, and allowed clients to trust in our skills, quality and experience.” Micky’s advice to other women when it comes to “practical beauty” is don’t be scared and chat to an expert. The Laser Clinics Australia team is among the most highly trained in the country and is always on hand to offer pointers as well as expert treatment in everything from hair removal and skin treatments to cosmetic injectables that look completely natural. “We are great at giving the most natural and softest effects to suit anyone who wants to slow down the ageing process and give themselves a healthier glow,” Micky says.

taly has a well-earned reputation as being home to some of the world’s favourite dishes, and Manuela Gant delights in showing people new tricks inspired by the old country. Manuela, who runs a cookery school and catering company – La Cucina di Manuela, has been interested in food since her childhood in Milan. “From my mum I learned the basics, from my father how to love all that grows wild and free. We spent many holidays in the northern Italian mountains,” she says. “We would all go fishing for trout and yabbies in the rivers, collecting mushrooms, berries and chestnuts in the forest, even catching snails. Then we would cook a fantastic meal.” After moving to Sydney a few years ago, via New York and London, Manuela has been showing Aussies – and now readers of The Bay – how to whip up a delicious Italian-style feast. But she doesn’t like to always limit herself to her home cuisine. “Although my heritage is Italian my frequent travels and time spent living in different countries has made me eager to explore different dishes,” Manuela says. Buon appetito!

Manuela's Gnocchi di Zucca Cooler weather calls for hearty dishes that are able to warm your body and soul. Pumpkin is a wonderful ingredient for many Italian winter dishes, such as soups or risotto, but one of Manuela’s favourite winter warmers is this delightful pumpkin gnocchi. INGREDIENTS: THE GNOCCHI DOUGH

500g Japanese pumpkin 250g desiree potatoes 1 egg 250g-300g all-purpose flour Salt and pepper INGREDIENTS: THE SAUCE

400g mixed mushrooms, cleaned and finely sliced 20g extra virgin olive oil 1 or 2 cloves garlic, finely minced 1 tbsp parsley leaves, finely chopped Salt and pepper INGREDIENTS: THE GARNISH

100g butter Sage leaves Roasted pine nuts Fresh grated Parmesan cheese Fresh ground pepper Chopped parsley

METHOD

1. Preheat oven to 180C. 2. Remove pumpkin skin and seeds, then cut into chunks and place on a baking tray layered with non-stick paper and cook for 30-40 minutes until nicely roasted. 3. Meanwhile, cook the potatoes, skin on, in a pot of boiling water until soft and tender. 4. Drain potatoes and process them through a potato ricer, along with the cooked pumpkin. 5. Sprinkle the flour on a board, add salt and pepper, the potatoes, pumpkin and egg, and knead to form a dough (the addition of the potatoes is to achieve a proper gnocchi consistency, because unfortunately very often the pumpkin pulp is too wet and requires too much flour so the gnocchi can end up hard, floury and tasteless). 6. Put on a large pot of salted water to boil. Cut a small piece of the dough and roll it until about 1cm thick, and then cut into small pieces about 1.5cm long and mark the pieces with a gnocchi board or the back of a fork. 7. In a large saucepan, place the oil, garlic and parsley over a medium heat. 8. Cook for few minutes then add the mushrooms, salt and pepper.

9. Cook for about 10-15 minutes and set aside. 10. To prepare the burnt sage butter, place the butter in a small saucepan along with the sage leaves and cook over a medium heat, until the butter goes a soft brown colour and achieves a very aromatic sage smell. 11. In batches, put the gnocchi in the boiling water until they surface, then scoop them up and place them in the mushroom sauce, mix well. 12. Plate the gnocchi, adding a tablespoon of burnt sage butter, some Parmesan, freshly grated pepper, parsley and few toasted pine nuts.

Ricotta & Truffle Honey This delicious dish dates back to Sardinia in Roman times, when locals would make fresh ricotta from the sheep and goats that roamed the island, and pair it with the sweet local honey. This is an updated version, with the fantastic addition of truffle honey and pistachio nuts.

2 tbsp of cream 60g truffle honey 40g pistachio nuts, halved, toasted and roughly chopped METHOD

1. In a bowl, whisk the ricotta and the cream until well combined. 2. Equally divide and spread it on the toasted sourdough. 3. Spoon over the truffle honey and finish with the pistachio crumble.

T

he beautiful weather perfectly suits the atmosphere as we arrive at Soldiers Point in Port Stephens. A shimmering white building perched overlooking the beautiful blue waters and narrow beaches, Bannisters is an enticing prospect that sits reflecting the sun’s rays back to the surrounding area. Housed in an old motel, what was once The Salamander, it underwent an extensive 18-month $7 million makeover before opening last year with a restrained style that has become synonymous with the brand. The bare bones of the old motel remain so the refurbished property retains some of its laid-back 1960s vibe, although everything is refined rather than retro. There is a simplicity and finesse that highlights the maxim less is more. From the elegant yet relaxed reception area and impeccable menus of the restaurants to the uncomplicated but chic rooms and the stunning infinity pool with panoramic ocean views, effortless luxury abounds. Well known for its flagship Bannisters By The Sea in Mollymook on the south coast of NSW, the company has reimagined it for the expansion north, and once again brought popular TV chef Rick Stein along for the ride. Around three hours’ drive from Sydney, Bannisters Port Stephens is within easy reach for a weekend away from the hustle and bustle of the city – and there is nowhere better to kick back and relax. There are 78 rooms in total – 45 of which have ocean views – four luxury suites and

a penthouse. Each has an air of bespoke simplicity and features balconies overlooking the lush, green gardens that skirt the hotel and the water beyond. Surrounded by dazzling outlooks featuring koala habitat and the ocean, there is a sense of serenity and seclusion no matter where you look. This air of peace continues into the room itself, with a photographic print showing a surfer at home on a wave with a slither of sky above him perfectly encapsulating the pervading atmosphere. And with names such as Oceandeck and Paperbark given to each room, it is clear the natural environment is an important influence. The room exudes a sense of calm and comfort. All refinement and no fuss, with clean lines, natural hues, patches of blue and touches of blush pink as light floods in from the balcony. The monochrome bathroom is also awash with style, with some top-floor bathrooms featuring a large skylight to allow the warmth of the sun to reach even the most private of spaces. It is worth visiting Bannisters for the spectacular infinity pool alone. It has a European feel, with its roughhewn stone floors and grey and white striped umbrellas. Situated high among the treetops, you can drift away as you take in the endless views or retreat to one of the surrounding loungers to soak up some sun as you decide on a cocktail from the adjoining Terrace Bar. It is another example of the simple but stylish outlook that pervades throughout, with muted natural tones combining with the warmth of dusty pink. There are strong design

elements, such as the propeller-style ceiling fans and the clustered oversized pendant lights, with a unique painted white contemporary design spanning one of the walls. Each detail adds a layer of intrigue – banks of oversized, soft seats, the soft lines of the natural-coloured cane furniture. The Terrace Bar’s menu has been crafted to perfection and is served by happy and relaxed staff more than willing to linger and have a chat. The food is a Mediterranean-Australian mix, with everything meant to be shared around the table, and includes delicious fish tacos, fried calamari, haloumi salad and grilled salt water barramundi, which were particular favourites. Many people make the pilgrimage to Bannisters By The Sea in Mollymook to visit Rick Stein’s renowned seafood restaurant and Soldiers Point is no different. The hotel is located beside a huge marine park and the chef’s signature restaurant makes full use of locally sourced fish to prepare simple, sumptuous, modern dishes – accompanied by a wine list of equal class. From oysters fresh from the waters of Port Stephens and meaty Moreton Bay bugs to a classic fish pie and Sri Lankan cashew nut curry, to name just a few, everything is note-perfect, making the key ingredients – the seafood – the hero of every dish. For something altogether different, on the ground floor there will soon be a revamped pub. The Tavern, which is being rebuilt with plans to open in mid-December, will serve Aussie pub classics, with a large beer garden just 50m from the beach and craft brews on tap.

The beach that borders Bannisters stretches out for a short way either side of Soldiers Point Jetty and is great for a short stroll, but if you want somewhere to relax and enjoy a swim, nearby Shoal Bay is the place to visit. A long stretch of white sand that curves gently along the shore, the inviting ocean waters lap gently on the beach as stand-up paddleboarders float by and a few more daring divers throw themselves off the jetty that juts out into the sea. Just behind there are plenty of places to grab something to eat or drink, such as the wonderful Shoal Bay Country Club, which offers unobstructed views of the beach and ocean. Just next to Shoal Bay is Nelson Bay, where there are some great cafes and boutiques to check out. Evviva Cafe & Bar stands out for its chic setting and delicious coffee – which is sourced from Neutral Bay – and is perfect for breakfast, lunch, dinner or even an evening cocktail. Also not to be missed are The Home Interior – a stunning homewares shop with licensed in-house kitchen serving breakfast and lunch – and Homebody, which sells a hand-picked range of homewares, furniture, clothing and accessories from Australian and New Zealand brands. The Bannisters team has once again created a wonderful place to escape. They call it barefoot luxury – we would just love to call it home again some time soon.

idden among the streets on the harbour side of Military Road sits a “sanctuary” that has been in the heart of Neutral Bay for almost 140 years. Whatever the time of year, the pocking of tennis balls and laughter resonate from The Neutral Bay Club. “I joined the club in 1972 and it’s such a beautiful spot, an oasis in the residential heart of Neutral Bay,” says life member Ross Davidson, 91, who now lives in semi-rural Glenhaven. “I don’t play tennis any more but the camaraderie among the friends I made is still there going strong and we keep in touch.” Founded in 1882 and now affectionately dubbed the “NBC”, people still while away the hours playing tennis and lawn bowls, or enjoying a refreshing drink as children play nearby at what was once a gentlemen’s club – even though it was founded by women. Opened by enterprising female tennis players keen to play and socialise, they inspired their male counterparts to join, and today the club is the domain of sports enthusiasts and families alike. “In the early days it was a gentlemen’s club, in 1952 lady tennis members were not allowed in the bar, but of course, later on that changed,” Ross says. “We convinced others in the end the ladies should be allowed in. It was a lot more fun when they joined.” Social tennis mornings, barefoot bowls, tennis lessons for all ages, children’s discos and even wine and beer tasting evenings are now firm favourites, as are the bar and bistro. “In the past the club has been almost like a secret gem in the garden of Neutral Bay, but more and more people are experiencing the

great atmosphere it offers,” club president Greg Scott says. It is a sentiment echoed by 15-year member Kieran Bourke. “It’s a place I liken to the TV show Cheers, where everybody knows your name, you can have a quiet drink and enjoy the beautiful surroundings,” the champion bowler says. Things have changed a lot over the years, from the ladies’ bonnets and wooden tennis racquets of the early days when matches were played on grass, through to the synthetic courts of today, as well as the addition of bowling greens, but developments have not been limited to the sporting arena. “When we played many years ago, we had to go and shower, and return wearing grey pants, navy-blue jackets and a cravat, it didn’t matter what colour, as long as you wore one, it was all very proper,” Ross chuckles. It’s fair to say things are a little less stuffy now, with people attracted by the relaxed atmosphere. As Kieran says: “The fact you can walk into the club by yourself and start up a conversation, it can feel like you could be in a quaint country town, not 5km from the CBD.” It’s that sort of friendly environment that keeps people coming back. “I miss playing, there were no arguments and no one swore on court, it really was for true gentlemen and ladies. It was the sort of club you couldn’t help but love and the people were the same,” Ross says. “I’ve been a member for 50-odd years, it’s such a nice spot – in the middle of high-rises, it’s there, a little sanctuary.”

A flashback to the 1880s / The Oaks Hotel

The modes of transport surrounding it may have changed but this is still instantly recognisable as The Oaks Hotel. Situated next to the North Sydney tram depot, the pub first threw open its doors in 1885 with Francis Snudden as licensee and, as can be seen here, was popular with local workmen who tethered their horse and carts outside as they enjoyed a well-earned drink after clocking off. The famous oak tree that envelops the courtyard and twinkles with fairy lights at night was not planted until 1938, using a 30cm-high sapling from the Anthony Hordern department store in George Street. Neutral Bay Chamber of Commerce The Neutral Bay Chamber of Commerce works closely with North Sydney Council to ensure Neutral Bay is a great shopping destination. There has been a variety of excellent additions as well as rejuvenation schemes in the area thanks to the fully funded Mainstreet Program, including: • Continued beautification of the suburb; • Provision of additional two-hour free shopper parking spaces; and • Increased security and safety in Neutral Bay. But the chamber does not just focus on infrastructure and advocacy, it also takes on a networking role, allowing local businesses to meet with each other and share ideas. New members are welcome to host a function at their premises and introduce their business, or to join a North Shore Chamber gathering, which is usually hosted at The Oaks Hotel.

The chamber has a strong voice on the lower north shore. It has regular Mainstreet Program meetings with North Sydney Council, which are open to members, and has strong links with both state and federal MPs, and Harbourside Police. It is also affiliated with the NSW Business Chamber. Current, proposed and ongoing projects for Neutral Bay include: • Creation of a Young Street Pedestrian Plaza with closure of Young Street between Military Road and Grosvenor Lane; • Realignment of the traffic lights at the post office on Military Road, allowing for direct pedestrian flow through from the proposed Young Street Plaza into May Gibbs Place, next to the post office; • Creating a shared and beautified zone for Grosvenor Lane between Ben Boyd Road and Young Street;

• Repaving of Military Road pavements with a better quality, longer-lasting paver; • Rebranding of the Neutral Bay logo, along with associated stylised fencing, to be carried through onto signage, fencing, fence emblems and banner flags; • Lobbying against any proposed extension of clearway hours, in order to protect valuable parking spaces for retailers; and • Lobbying North Sydney Council for more commercial space in new developments, facilitating a stronger retail economy with increased shoppers from these offices through the working week.
