Rewriting the Definition of Tourism: Shifting from Leisure to Education and Experiences

When we think of tourism, we often conjure images of happy travellers jetting off to spectacular destinations for adventure, exploration, or some “R&R”. While this hasnʼt necessarily changed, the visitor economy has evolved in recent decades. Today, the idea of tourism has broadened in scope and purpose, to become a powerful tool for facilitating education, cultural celebration, and enhancing knowledge through hands-on experiences.

This is why it is imperative that those involved in todayʼs tourism landscape recognize the opportunity this shift presents, and embrace the responsibility to grow in the same direction that savvy tourists are growing. Here is how our businesses are doing it in York Durham Headwaters (YDH).

INDIGENOUS STORYTELLING IN TOURISM

Southern Ontario has been home to Indigenous peoples for thousands of years. In recent decades there has been a widespread effort to “restory” previously shared narratives surrounding the history of Indigenous communities, culture and knowledge. The Village at Black Creek is one example of this effort. The focus at this open-air heritage museum has expanded from European settlement only, to include Indigenous heritage and history in the 1860s. They are doing this through initiatives like new permanent physical exhibitions, online exhibitions, and various Indigenous skills demonstrations.

There is also the new Spirit Wind art installation by Inuk sculptor Barry Best, which tells a traditional Inuit folk tale.

Sharon Museum and Gardens in York Region provides another example. When a 200-year-old maple tree on the property fell, it was turned into the Hope and Truth Reflection Sculpture by Anishinaabe artist Donald Chrétien and sculptor Shane

Clodd, with consultation from The Chippewas of Georgina Island First Nation. You can also find Indigenous art integrated into the everyday urban landscape in Georgina. Instead of travelling to a museum or gallery, visitors are encouraged to reflect on two sculptures by Ron Baird, with input from Indigenous consultant Jared Big Canoe.

STRATFORD, ON

Erla Boyer, owner of Gallery Indigena in Stratford Ontario in the early 1970s left a teaching position at Wilfrid Laurier University in the Department of Sociology and Anthropology to open a Gallery dedicated to showcasing the art of Indigenous peoples.

Celebrate Indigenous Art and Artists

Afamily-owned business of 55 years is now in its second generation of ownership. Under Erla and her son and daughter, Doug Socha and Patti Socha, the gallery continues to celebrate Indigenous art and artists, building meaningful relationships with artists and supporting their work.

Gallery Indiegena, located in Stratford ON, is complemented by Inukshuk Gallery, established 15 years ago on Granville Island in Vancouver BC. The galleries specialize in Inuit sculpture and prints, Iroquois sculpture, paintings, Northwest Coast masks, jewellery and BC jade sculptures. The gallery also offers indigenous-designed clothing and gifts in their gift shops, with royalties going directly to the artists. Gallery Indigena also has an office in Toronto that serves corporate clients and oversees the e-commerce division.

Maud Lewis, one of Canada’s most beloved and celebrated folk artists, is a cultural cornerstone of the Nova Scotia experience. Her most iconic work is the tiny, joyfully painted house she called home for over 30 years, which is now a permanent fixture at the Art Gallery of Nova Scotia. For visitors to Halifax, it’s an unforgettable highlight.

Born on the Yarmouth and Acadian Shore of Nova Scotia, Maud spent much of her childhood in solitude. Due to her physical differences, she often felt out of place among other children. Yet she found happiness in the quiet companionship of her parents and brother. Encouraged by her mother, Maud began painting Christmas cards to sell at a young age. This was a humble beginning of an extraordinary artistic journey.

Her world was defined by a small stretch of Nova Scotia, from her birthplace in

Yarmouth County to Marshalltown in Digby County, where she met and married Everett Lewis, a fish peddler, in 1938. The couple settled into their one room modest home in Marshalltown, which Maud transformed into a vibrant and joyful canvas.

Despite the increasing challenges of rheumatoid arthritis, which limited her physical mobility, Maud continued to paint with unwavering spirit. While Everett managed the household, Maud supported them through the sale of her art, which often depicted

vibrant scenes of rural life, filled with colour, charm, and optimism.

After Maud’s passing in 1970, followed by Everett’s in 1979, their cherished home began to fall into disrepair. The home was eventually acquired and restored by the Art Gallery of Nova Scotia, where it now stands as a symbol of resilience and Nova Scotia’s artistic heritage.

While Maud’s life is often romanticized as one of isolation, her art tells a deeper story. The exhibition at the Art Gallery of Nova Scotia challenges the notion that poverty, disability, and a lack of formal training shielded her from outside influences. Instead, it reveals how Maud Lewis, through talent and tenacity, created a world all her own and how her story continues to captivate hearts and minds around the world.

Cruising, Culture and Chana Masala

BY LENA ALMEIDA | When sailing with Disney Cruise Line, there are certain expectations: remarkable service, a family-focused approach, highly immersive theming and unique dining experiences. And, there’s always that chance you’ll experience a little bit of pixie dust.

Iʼve made it no secret that Disney Cruise Line is my preferred cruise vacation. As Platinum Club members, year after year, our vacation dollars are spent sailing the high seas with Mickey Mouse and friends. When asked why I invest so much and rarely deviate, my answer is simple: “I enjoy knowing that every member of my family is going to have the best vacation possible.” And really, how can you argue with that?

On our last voyage, a 5-night cruise aboard the Disney Dream with Marvel Day at Sea, we met our rotational dining team on the first night. If youʼre unfamiliar with Disney Cruise Lineʼs rotational dining, itʼs their way of making sure that all guests get to enjoy each of the three themed dining venues while on board. Each evening, your family rotates to a different restaurant, and as you rotate, the same wait staff — who know your preferences — will serve you.

Our waiter, Servelo Pio from India, instantly connected with my family. We shared that we are Canadian, had been on several Disney cruises, and were excited to experience our first Marvel Day at Sea. At one point in our conversation, it came up that Canadians had access to excellent, authentic Indian food thanks to our diverse ethnic population.

“Do you like Indian food?” Servelo asked. “We love it!” we chorused in response.

The next night, after we had finished our main course, Servelo said, “I have something for you.” He returned moments later with four small servings of Masala Shrimp, made fresh that evening by the Indian sous chef (using Serveloʼs recipe!). I was flabbergasted — What? How? And more importantly: I need some, NOW. As I dipped a piece of chapati into the aromatic curry, I asked nervously, “Will you get into trouble for this?” Servelo smiled and shook his head. He explained that for many guests who have specific dietary needs — vegetarian, low-carb or gluten-free — the menu options are wonderful, but sometimes, guests crave something different. Thereʼs usually curry available in the kitchen, thanks to the robust population of South Asian staff, and theyʼre welcome to present the dish to guests as an off-menu option if itʼs available for service. We loved it.

(This is not to say curry samplers should be the expectation; file this under “surprise and delight”, and maybe, a little bit of pixie dust.)

The following nights, in between our main course and dessert, we enjoyed sample portions of Lamb Korma, Butter Chicken and Chana Masala. We chatted about Serveloʼs hometown, his family (who heʼd be reunited with soon), and how food forges connections — even with people from across the globe.

That special experience will be in our minds and hearts for a lifetime. Itʼs proof that Disney Cruise Lineʼs rotational dining lays the framework for magical moments. Thank you, Servelo, for exemplifying the Disney difference.

INGREDIENTS

• Bacon (regular thickness, two slices per burger)

• Ground Beef (½ cup per bacon pinwheel burger)

• BBQ Rub

INSTRUCTIONS

Start this bacon pinwheel burger recipe by preheating your pellet smoker to 350 degrees. Lay out your strips of bacon. It renders more evenly when using thin cut/regular cut bacon. Using about ½ cup of your ground beef per burger, smash the ground beef onto your bacon slices. Roll each onto itself, and then the second slice of bacon/ground beef again. Season with your favorite BBQ rub. Place each bacon pinwheel burger on the grill grates directly. If using an oven or gas grill, cook indirectly. You want to slowly render each burger so the bacon cooks fully. The bacon grease will keep the ground beef moist. Smoke for approximately 1–1 ½ hours, or until an internal temperature of 145 degrees. Enjoy!

Meaty Bean Burgers

A blend of nutrient dense black beans and umami rich mushrooms that are so good you won’t miss the meat. Topped with tangy kimchi and a fried egg this burger really hits the spot!

Prep Time: 15 minutes

Cook Time: 10 minutes

Serves: 5 Burgers

INGREDIENTS

• 2 tbsp (30 mL) canola oil, divided

• 227 g (8 oz) crimini mushrooms, sliced

• 1 can (540 mL) black beans

• ¼ red onion, sliced

• 2 cloves garlic

• 1 tbsp (15 mL) Worcestershire sauce

• 1 tsp (5 mL) ground cumin

• 1 tsp (5 mL) smoked paprika

• 1 cup (250 mL) seasoned breadcrumbs

TOPPINGS

5 eggs

5 burger buns

5 tbsp kimchi

Chipotle mayo

INSTRUCTIONS

 In a large skillet, heat 1 tbsp oil over medium heat. Add mushrooms and sauté until water is released, about 5 minutes. Remove from heat and allow to cool.

 In a food processor add cooled mushrooms, black beans, red onion, garlic, Worcestershire sauce, cumin and paprika, pulse until combined. In a large bowl add bean mixture and breadcrumbs, mix until combined. Form into 5 patties and chill for 1 hour on parchment lined tray.

 In a large non-stick skillet heat 1 tbsp oil over high heat. Add burgers and cook until browned, about 5 minutes per side.

 Meanwhile, in another skillet, cook eggs until they reach desired doneness. Top bun with chipotle mayo, burger patty, 1 tbsp kimchi and fried egg. Serve hot.

Chef Hiawatha Osawamick Honoring Tradition, Feeding the Future

Anishinaabe-Kwe chef and entrepreneur Hiawatha Osawamick is a force in the Indigenous culinary scene. With nearly two decades of experience, she has built a career rooted in family, tradition, and community, bringing Indigenous cuisine to the forefront in Ontario.

Hiawatha’s journey began in Wikwemikong, Ontario, as a young busgirl at her Aunt Pat’s Café. The kitchen quickly became her happy place — a hub of love, laughter, and learning. She later joined her mother’s catering business, Osawamick’s Family Tradition, where she absorbed not only culinary skills but the values of hospitality and cultural pride.

After moving to the city, Hiawatha worked her way up in the food service industry, from hostess to server at high-end restaurants and Casino

Rama — Ontario’s only First Nations commercial casino. It was there she seized the opportunity to apprentice under one of Canada’s top chefs, training through a program with Georgian College that refined her culinary technique and deepened her love for the craft.

In 2008, she launched her own venture, Hiawatha’s, specializing in Indigenous cuisine. Her eco-conscious approach — using 100% biodegradable dinnerware — earned her the 2018 Environmental Champion of the Year award from Green Economy North. In 2020, she was named Indigenous Entrepreneur of the Year by the Greater Sudbury Chamber of Commerce.

Like many small business owners, Hiawatha faced major setbacks during the COVID-19 pandemic. Just weeks before opening a new eatery, the shut-

down hit. She pivoted fast — returning to Wikwemikong and launching a full-time food truck, filling a vital gap in local food services.

In 2022, she partnered with her mother to purchase and transform Rocky’s Restaurant in Wahnapitae First Nation. After six months of renovations, they reopened as Hiawatha’s Restaurant & Marina, complete with cabin rentals, a gas station, and the newly launched Cedar Wolf Fuel marina.

Now, she’s expanding again —developing a line of pre-made frozen meals and meal plans for busy families. A new website is in the works, designed to streamline catering orders and reservations.

Chef Shane Chartrand Bridging Cultures Through Cuisine

Before Chef Shane Chartrand stood in front of cameras on Top Chef Canada or plated wild game for international leaders, he was elbow-deep in soapy water, working his first job as a dishwasher at a truck stop along a highway in Alberta. “A legitimate truck stop,” he says with a smile — the kind where the food was hearty, the pace relentless, and the kitchen loud. It didnʼt take long for Chartrand to fall in love with the energy.

Raised on an acreage, Chartrandʼs childhood was deeply connected to the land. His family grew their own vegetables and raised chickens, ducks, and geese. “We were living food security before we knew what it was called,” he says. The connection between survival and sustenance was part of everyday life. But it wasnʼt until he got into the kitchen that he realized cooking could be more than a job — it could be art, identity, and joy.

Determined to rise, Chartrand hustled for a promotion to line cook and soaked up everything he could about professional kitchens. Before the internet, inspiration came from food magazines and his own imagination. He drew dishes in notebooks, inventing plates from scratch. The pivotal moment came when he opened a Susur Lee cookbook and saw wild birds paired with delicate plating. “That hit me hard,” he says. “Seeing that kind of beauty in food — thatʼs when I knew my path had to reflect my culture. I wanted to bring Indigenous food into fine dining.”

Also passionate about visual art and music, Chartrand found that food allowed him to combine creative disciplines. “I wanted to be great in my

world,” he says. “And I believed that food and art could exist side by side.”

As a Cree chef adopted by a Métis family, Chartrandʼs life has always bridged cultures — and his cuisine reflects that. “My parents are my heroes,” he says. “They adopted me as a young Indigenous boy and supported me every step of the way. They never

doubted this dream.” That foundation gave him the confidence to grow — and to climb the culinary ladder with intention, never skipping steps. “You canʼt evolve a cuisine unless you understand the basics.”

Over time, Chartrand has become one of Canadaʼs most recognized voices in Indigenous cuisine. He competed on Chopped Canada (placing second), Top

Chef Canada (fifth), Iron Chef Canada, and Fridge Wars, where he walked away with the win. Heʼs judged four episodes of Wall of Chefs, appeared in Red Chef Revival, Michif Country, and the documentary Cook It Raw: Alberta He also co-authored Tawâw: Progressive Indigenous Cuisine, a critically praised cookbook that blends storytelling with refined Indigenous recipes.

His accolades are numerous: Gold, silver, and bronze medals at Gold Medal Plates; NAITʼs Honorary Culinary Degree and Award of Excellence; Indigenous Role Model and Native Counselling Services awards. Heʼs also made appearances in hip-hop music videos and continues to speak on Indigenous food systems at events around the world.

Yet for Chartrand, the most meaningful milestones arenʼt always the televised ones. “Cooking a private dinner for the Canadian National Institute for the Blind — that meant the world to me,” he says. “The day Tawâw hit the shelves. And being invited to cook at COP 27 — those moments matter most.”

Today, Chartrand is executive chef at Paperbirch, located inside Edmontonʼs Old Strathcona Market. On weekends, he serves a bold allday brunch. In the evenings, he offers a curated Indigenous Culinary Experience — a modern, immersive take on traditional cuisine. Every plate tells a story, bridging generations with technique, respect, and imagination.
