Is it Canadian? Some things to look for…

1. FLYING THE CDN BEEF FLAG?
Look for this mark on packages or in store flyers as assurance that your beef is from right here. Canadian beef is your local beef, raised in every province. Or look for a beef brand that includes your province or Canadian region in the name.
2. JUST ASK. Ask store staff if the beef they have is sourced from Canada. DYK that 40% of Canadians are reluctant to ask the meat-counter staff for help? There’s no need to be shy and so much to know about beef. Just ask, ‘Is your beef Canadian beef?’ And if there is a Canadian beef sign in the store, just ask ‘Is all your beef Canadian?’
3. OTHER INDICATORS: If you see a package or sign that says ‘OTHER COUNTRY GRADE beef’ then you know it’s not Canadian. Canada AA, Canada AAA and Canada Prime on the package is your signal of quality beef.
4. IS IT ‘ELSEWHERE’ BEEF? Watch for statements like ‘Ungraded OTHER COUNTRY beef’, ‘Product of OTHER COUNTRY’, ‘Packaged in Canada. Product of OTHER COUNTRY’ – it’s NOT Canadian beef if these statements are on the package.

Few chefs embody the artistry, innovation, and passion of the culinary world as seamlessly as Chef Romain Avril. Born in Paris and raised in Angers, France, Avril discovered his calling at the young age of thirteen. Rich, hearty, and absolutely delicious, this Coq au Vin is comfort food at its best! Juicy chicken simmers in a savory red wine sauce with smoky bacon, earthy mushrooms, and fresh herbs, creating a meal that feels both cozy and elegant. Perfect for a special dinner or a weekend treat, this dish brings bold flavors to your table with surprisingly simple steps. Grab a fork and dig in — bon appétit!
INGREDIENTS:
• 2 pcs chicken thighs
• 2 pcs chicken drumsticks
• 180 ml red wine
• 125 ml brown chicken stock
• 30 ml brandy (optional)
• 60 gr double smoked bacon, cut into lardons
• 50 gr onion, mirepoix
• 50 gr carrots, mirepoix
• 2 pcs garlic cloves, minced
• 15 gr tomato paste
• 3 sprigs thyme leaves
• 60 gr mushrooms, quartered or whole
• 60 gr pearl onions, peeled (optional)
• 30 gr Beurre manié
• 15 gr parsley, chopped or dry
METHOD:
Place the chicken thighs and drumsticks in a medium-sized bowl and pour the wine, chicken stock, and the brandy over the top. Prep the vegetables. Add the bacon to a large skillet over medium-high heat. Cook until the bacon is crispy, about 8 minutes, then remove it from the pan with a slotted spoon. Remove the chicken from the wine marinade (save the wine) and dry the chicken with paper towels. Place the chicken in the pan, skin side down. Sear until it is golden on both sides (about 5 minutes each side) then remove the

chicken from the pan. Pour all but a bit of the bacon/chicken oil into a heatproof dish and set it aside.
Add the sliced onion and carrots to the pan and let them cook until the onion is golden brown, about 7–8 minutes. Add the garlic to the pan and let it cook for 1 minute. Push the vegetables to the side of the pan and add the tomato paste. Cook the tomato paste until it is fragrant and begins to darken. Pour the reserved wine marinade into the pan, scraping the bottom to remove any stuck on bits.
Nestle the chicken into the pan and sprinkle the thyme over top. Cover the pot, turn the heat to low, and simmer for 20 minutes.
Pour the reserved oil into a large skillet. Add the mushrooms and saute over medium-high heat until brown, about 10 minutes.
Add the pearl onions to the pot with the chicken and cook for 10 minutes more.
In a small bowl mix together your choice of beurre manie. Remove the chicken from the pan then add the beurre manié. Stir it into the sauce and let it thicken. Season to taste with salt and pepper.
Add the chicken back into the pan and top with the cooked bacon and mushrooms. Sprinkle with a little fresh thyme. Let it steep for 5 min, serve and enjoy — bon appétit!




CHICKEN APPLE CURRY



If you are looking to crush a curry craving quickly, this is the dish for you! This mild curry dish utilizes pantry staples to get a nutrient rich dinner on the table fast. Serve over caulifl ower rice or with whole wheat naan for an extra serving of vegetables or for more whole grains!





Serves 6 | Prep Time: 15 minutes | Cooking Time: 25 minutes









INGREDIENTS
• 1 tsp (5 mL) vegetable oil
• 1 medium onion, finely diced
• 2 cups (500 mL) diced Ontario apples*
• ¼ tsp (1 mL) each salt and pepper
• 3 tbsp (45 mL) yellow curry powder
• 1 lb (500 g) boneless, skinless chicken breast, diced
INSTRUCTIONS
• 2 tbsp (30 mL) all-purpose flour
1 540 mL (19 fl oz) can chickpeas, drained and rinsed
• 1 green pepper, seeded and diced
1 769 mL (28 fl oz) can diced tomatoes

Heat oil in a large pot over medium-high heat. Stir in onions, apples, salt, pepper and curry powder. Cook stirring for 2 minutes.
Stir in chicken and flour, cook for 4 minutes. Mix in chickpeas and green pepper, cook for 2 minutes. Pour in tomatoes, turn heat to medium and cook for 15 minutes stirring occasionally. Serve with rice, cauliflower rice or whole wheat naan bread.
* VARIETY TIP: Gala, Ambrosia and Honeycrisp apples work well in this recipe

Ingredients
1/4 cup olive oil
1 onion, finely diced
1 carrot, finely diced
8 cloves garlic, minced
1 1/2 tsp salt
1 1/2 tsp thyme
1/2 tsp red pepper flakes
1/4 tsp turmeric
1 can white kidney beans, drained and rinsed
1/2 lb of potatoes, peeled and diced
4 cups chicken broth
4 cups water
Juice of 1 lemon, divided
2 cups packed kale, chopped
1/4 cup fresh dill, chopped
1/2 cup rice, cooked
Instructions
Cook rice according to package directions. 1.

Heat the olive oil in a large pot over medium heat. Add the onion, carrot, garlic and salt. Sauté until softened, about 5 minutes.
Stir in the thyme, red pepper flakes and turmeric and cook for 1 minute.
Pour in the chicken broth and juice of half the lemon. Add white beans and potatoes. Bring to a boil.
Reduce the heat to a simmer, and simmer the soup for 15 minutes.
Stir in the kale and and dill and continue cooking for another 5 minutes.
Taste and adjust seasoning. Add remaining lemon juice if needed.
For serving, divide the cooked rice evenly amongst serving bowls. Pour the soup overtop of the rice.

Returning to Canada, Chef Williams expanded his expertise to wine education, earning certification as a Certified Sommelier under the Court of Master Sommeliers in 2022. In recent years, breweries have prided themselves on being leaders in innovation and creating some very exciting beverages for consumers. We have seen exciting things happen with packaging, experimentation with ingredients and breweries creating unique new styles. But over the last few years beer sales have been declining. So, whatʼs your favourite breweryʼs plan this year to get you back through their doors?

NON/LOW ALC BEER
For generations, beer ruled the world. When the Millennials came of age they started to experiment more with cocktails and often chose wine over beer but when Gen Z finally started hitting the bars…they didnʼt. Part of this was due to the pandemic, part to the legalization of cannabis, and part was simply a lack of interest in alcohol – Gen Z is “sobercurious”. This is where a renewed interest in non-alc beer started.
There are many ways to create a non-alc beer but the most popular are: vacuum distillation, reverse osmosis, arrested fermentation or fermenting with maltose-negative yeast. Many smaller breweries have chosen arrested fermentation since the process is fairly simple to execute and uses all of their existing equipment and yeast. But to create a fully shelf-stable non-alc beer, they need to either pasteurize or use a preservative like potassium sorbate.
The beautiful thing for all beer lovers is that there are some really great non-alc beers out there. Youʼre a lager lover? They got you. Need your IPA fix? Plenty of excellent choices to pick. Sober on St. Patrickʼs Day? Even Guinness has an excellent non-alc version
complete with the nitro-widget pour. Another great thing about non-alc beer? You can still support your favourite brewery and they can ship it to you all across Canada.
RTDS AND FMBS
Seltzers have made a big splash on the scene and what was once a beer occasion may now be a seltzer one. Ready-to-Drink (RTDs) and Flavoured Malt Beverages (FMBs) are very similar to the end consumer but completely different to tax officials. RTDs are made with spirits (like your vodka seltzer) and taxed at a rate much higher than beer, while FMBs are made with malt-based alcohol (the alcohol that is left when you strip the “beer” away) and taxed at the lower beer rate. Breweries can make FMBs under their existing manufacturing license but some choose to get a distilling license so they can also produce spirit-based RTDs. The main difference for consumers is that spirit based RTDs are often gluten free whereas FMBs are not. When breweries realized that they couldnʼt beat the thirst for seltzers, they decided to join in.
If there is one thing I have learned in the last 25 years in beer — it is one resilient little drink and it will evolve.

THE CANADIAN CANOE MUSEUM’S NEW HOME ON THE WATER’S EDGE
In May 2025, The Canadian Canoe Museum will celebrate its first anniversary at its new location on the shores of Little Lake in Peterborough, Ontario. For those involved and many more across the country, this milestone marks the realization of a long-held dream.
For the past 28 years, The Canadian Canoe Museum has cared for the worldʼs largest and most significant collection of canoes, kayaks, and paddled watercraft. More than 650 in number, these watercraft and their stories required a purpose-built home on the water — a place to properly share them and provide visitors with transformative cultural and recreational experiences.
