EARLY INSPIRATIONS AND CULINARY BEGINNINGS
Paul Boehmerʼs love affair with food began at a young age, shaped by his experiences living in Spain during his teenage years. The vibrant flavors and rich culinary traditions of Spain left a lasting impression on him, igniting a passion for food that would define his career. His parents, both accomplished cooks, further fueled this passion. Boehmer often found himself in the kitchen, learning the basics of cooking and developing a deep appreciation for the art of preparing meals.
Boehmerʼs travels across Europe during his youth were pivotal in shaping his culinary aspirations. Exposure to a wide variety of foods, including foie gras, sea urchin, and monkfish at the age of nine, solidified his love for gastronomy. These early experiences laid the foundation for what would become a lifelong dedication to the culinary arts. Upon returning to Canada, Boehmerʼs path became clearer when he met Michael Stadtländer, one of Canadaʼs most respected chefs. An apprenticeship under Stadtländer

in 1983 marked the beginning of Boehmerʼs formal culinary training. This experience provided him with invaluable knowledge and skills, setting the stage for a successful career in some of Torontoʼs top kitchens.
A CAREER OF CULINARY EXCELLENCE
Paul Boehmerʼs professional journey is marked by a series of prestigious appointments and notable achievements. After completing his apprenticeship, Boehmer joined Scaramouche in 1985 as a chef tournant, where he further honed his craft. His talent and dedication quickly earned him a position as sous chef at Bistro 990 in 1987. This role was followed by a return to work with Michael Stadtländer at Nekah, where Boehmer continued to refine his culinary skills.
In 1990, Boehmer took on the role of Chef at Lakes Bar and Grill, a position that allowed him to fully express his culinary vision. His innovative approach and commitment to quality led to his appointment as executive chef at Opus Restaurant in 1992, a role he held for nearly a decade. During this time, Boehmer established himself as


a leading figure in Torontoʼs culinary scene, earning widespread acclaim for his sophisticated and imaginative cuisine.
After a brief sabbatical, Boehmer took on the role of executive chef at the prestigious Prince of Wales Hotelʼs escabeche restaurant. His tenure at escabeche was marked by a dedication to using locally sourced Canadian ingredients, a philosophy that has remained a cornerstone of his culinary approach.
In early 2010, Boehmer took a bold step by opening his own restaurant, Böhmer. As chef and owner, he was able to fully realize his culinary vision, offering upscale dishes that celebrated the best of Canadian produce. Böhmer quickly became a beloved establishment, known for its elegant yet accessible cuisine.
LEGACY AND CONTINUED INFLUENCE
Throughout his career, Chef Paul Boehmer has been committed to mentoring young chefs, passing on his knowledge and experience to the next generation. His influence extends beyond the kitchen, as many of his apprentices have gone on to achieve great success in their own right. Boehmerʼs dedication
to nurturing talent has helped shape Torontoʼs culinary landscape, ensuring that his legacy will endure for years to come.
Boehmerʼs contributions to the culinary world have not gone unnoticed. His work has been praised in numerous publications, including Toronto Life, The Globe and Mail, and The Toronto Star. He has also gained international recognition, appearing as a guest chef at the Nirvana Food and Wine Festival in Arizona alongside renowned chef Beau Macmillan.
In 2019, Boehmer was invited to compete on Food Network Canada against Iron Chef Susur Lee in the highly anticipated “Battle Tiny Fish.” Boehmer emerged victorious, further solidifying his reputation as a culinary master.
Most recently, in the summer of 2024, Boehmer Restaurant was honored with the Distinguished Restaurants of North America (DiRōNA) Award, a testament to Boehmerʼs enduring commitment to excellence.
Chef Paul Boehmerʼs career is a shining example of what can be achieved through passion, hard work, and an unwavering dedication to the craft of cooking. In late 2011, Josef joined Boehmer Restaurant as a Poissonnier, marking the beginning of a new chapter in his career. Under the mentorship of Executive Chef Paul Boehmer, Josef underwent rigorous training in classic French cuisine. Over the years, he mastered recipes and techniques that span Chef Paulʼs distinguished 40+ year career. His dedication and skill led to him taking on the significant responsibility of running the kitchen, managing everything from busy services to large events.

With the support of chefs Tyler Cunningham and Taylor McMeekin, Josef further refined his skills, particularly at the Entremetier station, where he prepared local fare during busy dinner services. This experience added another layer of expertise to his culinary repertoire.
Josefʼs talents were further recognized in 2019 when he was invited by Food Network Canada to compete in the Iron Chef Canada competition. Personally selected by Chef Paul Boehmer as one of his sous chefs, Josef played a crucial role in the teamʼs victory against Iron Chef Susur Lee, with the secret ingredient being “tiny fish.”
Today, as the executive chef of Boehmer Restaurant, Josef Larita continues to build on his rich culinary heritage, blending the flavors of his Filipino roots with the refined techniques of French and Mediterranean cuisine. His journey from dishwasher to executive chef is a testament to his passion, hard work, and the enduring influence of his mentors.

SPICED-SMASHED POTATOES
Using a meat mallet to crack or smash the potatoes helps to break the skin enough for the flavour to get to the meat of the potato. Cooking the potatoes in a skillet on the stove helps give a golden colour and added crunch appeal to the potatoes. For this recipe and more visit:


INGREDIENTS
• 1 lb (500 g) new mini Ontario potatoes
• ¼ cup (50 mL) extra virgin olive oil
• ¼ cup (50 mL) chopped fresh Italian parsley
• 1 long hot chili pepper, chopped
• 1 tbsp (15 mL) coriander seeds
• 2 tsp (10 mL) chopped fresh thyme
• 2 tbsp (25 mL) chopped fresh coriander
• ½ tsp (2 mL) coarse salt
INSTRUCTIONS
1 Using flat side of meat mallet, crack each potato to break the skin.
2 In large shallow Dutch oven, add oil and heat over medium low heat. Add potatoes, parsley, chili pepper, coriander seeds and thyme. Cover and cook, stirring frequently, for about 30 minutes or until potatoes are tender and golden.
3 Add fresh coriander and salt and stir to combine before serving.

Much has been made about the purity and quality of organic foods and rightly so! At St Francis Herb Farm, we have always been of the mindset that itʼs essential for quality herbal medicine to begin with organic herbs.
Herb growers use similar agricultural methods to food crop farmers, planting, growing and harvesting a crop for people to consume, and how it is done matters.

DIVERSITY
Monocultures are not found in nature and make great one-stop shopping destinations for insects and fungi. On organic farms several herbs often grow together in the same field. Different plants attract different insects — and beneficial insects are an effective organic method of pest control. Herb diversity encourages diversity in the whole farm ecosystem, supporting a variety of pollinators and animals, and resulting in a happier, healthier, herb harvest of higher quality.
INVESTING IN SOIL HEALTH
100 years — thatʼs how long it takes to form just one inch of soil! Our global food systems depend on a mere two inches of soil right beneath the surface. Diverse soil organisms and beneficial fungi make for fertile, nutrientrich soil. Organic farming doesnʼt just avoid harming soil — it incorporates several practices that actively improve soil health.
Rotating the herbs grown in each field means higher microbe diversity, no nutrient depletion, and no need for toxic fertilizers. More nutrients are available to be taken up by herbs — which makes for high-quality herbal supplements.

Organic farming uses cover crops during “rest periods” to replenish the soil with nutrients. These crops are like place-holders, keeping the soil ʻwarmʼ until the next main crop is planted and discourages pests and prevents weeds from taking hold. A wellrested, nutrient-rich soil produces excellent quality herbs not just for this season but also for the many after it. Cover crops encourage biodiversity in the farm ecosystem yearround and keep carbon in the ground to reduce greenhouse gas emissions.

In a Warming World, We Need Trees Now More Than Ever

GREENING PROGRAM | Canada is one of the most forested countries in the world, with about 9% of the planetʼs forests located within our borders. Along with other large, highly forested countries, Canada has a responsibility to protect and grow its forests to preserve biodiversity and fight climate change.
An estimated 18 million hectares of land — an area almost three times the size of Nova Scotia — was devastated by forest fires in 2023, forcing thousands of people to evacuate their homes and blanketing cities with smoke for days. Sadly, this yearʼs wildfire season is just as intense in some regions, causing widespread damage to forests and the communities living near them.
The effects of climate change are increasingly being felt through more frequent or
extreme natural disasters such as forest fires and floods. While both are naturally occurring events, their increased intensity is taking a toll on ecosystems and making for a longer recovery process.
PLANTING THE SEEDS OF HOPE, ONE TREE AT A TIME
Faced with these facts, itʼs easy to feel discouraged. Yet despite the scale of this devastation, the simple act of planting a tree offers hope for the future. Planting trees can significantly decrease the time
needed for a new forest to establish itself. While most areas will naturally regenerate, some experienced high intensity burns that destroyed the seed bank. This type of fire can delay regeneration, making soil erosion and water quality issues a real concern.
Since 1992, Tree Canada has worked relentlessly to grow Canadaʼs tree canopy through its greening programs. Through its National Greening Program, the national non-profit is working directly with landowners that have been affected by wildfires. Growing trees where forests have been degraded provides multiple environmental benefits, from ecosystem stability to cleaner air, water and soil. Accelerating reforestation after disasters also helps communities regain a sense of normalcy and aids in the healing process.
Tree Canada works closely with nurseries and tree growers to cultivate seedlings of native tree species that are adapted to local conditions and provide biodiversity benefits to the existing ecosystem. Survival assessments are conducted in the first five years after planting to ensure proper maintenance for long-term growth.
The scars from last yearʼs fires are still fresh, and there continues to be a great need for reforestation and restoration efforts across Canada. The trees we plant today will be the forests of tomorrow, providing critical habitat for wildlife, sequestering carbon, and enhancing the beauty and health of our environment.

New attractions, dining experiences, world-class entertainment and much more; this fall and beyond, there are more ways than ever to create magical moments at Walt Disney World Resort in Florida.
TIANA’S BAYOU ADVENTURE AT MAGIC KINGDOM PARK
The much-anticipated attraction, which is based on the Walt Disney Animation Studios film “The Princess and the Frog”, officially opened in Magic Kingdom Park on June 28. This family-friendly thrill ride takes guests down the bayou, meeting 17 new musical critters along the way. Tiana’s Bayou Adventure concludes with an exciting drop down a water flume, adding an exclamation point to Tiana and Naveen’s happily ever after.
Located beside the attraction, Critter Co-Op is a must-do; find Princess Tiana-inspired merchandise, including apparel, accessories, toys, plush, home décor and more.
COMPLETION OF THE MULTI-YEAR EPCOT TRANSFORMATION
