Foodies like this fall drive a latte!

The rolling hills of southern Peterborough County provide the perfect backdrop to view the fall colours. This route will bring you to the historic town of Millbrook, a quaint village lined with locally owned shops selling artisan work, food products, art, and more. Prep for the perfect fall picnic by picking up charcuterie from Millbrook Mercantile, baked goods from Pastry Peddler, and Doo Doo’s famous butter tarts for dessert.

Just up the road, Rolling Grape Vineyard is a great spot to stop for a drink (something for all ages!), wood- red pizza and swing into a photo-op patio side.

Another ‘fall’-tastic option is Lang Pioneer Village’s Grist Mill and if the timing is right, you can step back in time at one of Lang Pioneer Village’s special events.

The winding roads heading north toward Ston(e)y Lake are lined with dancing red, orange, and yellow leaves this time of year. This route is known for its unbeLEAFable photo ops along the way. First up, Petroglyphs Provincial Park, home to the largest known concentration of Indigenous rock carvings (petroglyphs) in Canada. This sacred site is known as “The Teaching Rocks”. It is also home to the bright blue/green McGinnis Lake – one of only a handful of meromictic lakes in Canada.

Nothing like a hilly hike to work up a thirst, Kawartha Country Wines’ tasting bar is located in an authentic pioneer log cabin and board & batten house which makes a magical backdrop for Instagram-worthy photos. If wine or cider isn’t your thing, not to worry there are lots of other items to browse in the store.

Harley Farms is your nal stop on this harvest hunt. Time to stretch your legs on a walking tour and forage some friendships with the farm residents. Before you leaf, be sure to stop in at the farm store for assorted meats, seasonal veggies and other locally made goodies.

Soak up the fall colours a little longer and stay the night at Elmhirst’s Resort located on the shores of scenic Rice Lake.

It wouldn’t be a #FallforPtbo tour without a stop along the Historic Trent–Severn Waterway. If you’re feeling a bit peckish, eat up the fall colours on Mainstreet Bar & Grill’s waterfront patio, located beside Lock 31 – Buckhorn.

Canadaʼs screening guidelines remain outdated. The Canadian Task Force on Preventive Health Care continues to recommend starting screenings at age 50, despite experts urging the age be lowered to 40. Routine mammograms can detect breast cancer at an earlier stage when treatment is more efficient and effective.

Folks who know me, know that I love beer. Sure, there are occasions that I prefer to drink a glass of red wine or a dram of single malt but nine times out of ten you will see me sipping (well maybe not sipping) on a barley pop. There is so much versatility to beer that you can always find the right “tool” for the job. Now that we are fully into Fall, there is no shortage of excellent beer drinking occasions. Practically every sport is on TV and there is still time for ad-hoc backyard bonfires before the snow flies — but what style of beer should you drink? Iʼm glad you asked.

FALL SPORTS

Whether your favourite MLB team is in the post season or your NHL team is just getting going, you are looking at roughly a 3-hour session of couch surfing. Your standard lager is a perfect beer for this occasion obviously, and if I was in the stands that is what I would go for but at home I reach for a nice session IPA. This style is lower in alcohol (usually around 3-4.5% ABV), lower in hops than your typical IPA, but it still packs a punch and is lower in calories which we can then spend on nachos. These beers are easy to drink but more interesting than a lager. They also pair beautifully with chilli when you are tailgating. Check out your local craft brewery and chances are high that they have a session IPA as part of their regular stable. A pale ale would work equally as good as this style is

generally around 4.5% abv (though it can be north of 5%), has all the hops, but more balance versus an IPA and more body than a session IPA.

BACKYARD BONFIRE

The afternoon was sunny and warm; youʼve raked up some leaves and even fired up the BBQ for dinner. The night is still perfect so why not light the fire pit and enjoy a few beers? You donʼt need to be delicate here, you can dust off one of those big beers for the cellar that you have been waiting to drink. A big IPA would work here or a stout. If you are thinking of making smores over the fire you will want to pair those with a beer that has some sweetness to it as well. A Belgian Triple or Quad would be great. They have some sweetness to them from the residual candy sugar they use as well as some boozy warmth.

Savoury cornbread and chive stuffing

Yield: 8 servings

Prep time: 30 minutes

Cook time: 55 minutes

Give thanks this month with a meal made with one of Ontario’s most bountiful grains: corn! Using a cornbread base, this savoury stuffing will be a crowd pleaser.

Ingredients

Cornbread with chives

• 1 cup cornmeal

• 1 cup all-purpose flour

• 1 tablespoon baking powder

• 1/8 teaspoon cayenne pepper

• 3 tablespoons sugar

• 1 egg, beaten

• 1 cup buttermilk

• 3 tablespoons oil

• 2 tablespoons minced chives

Stuffing:

• 4 garlic cloves, minced

• 1 large onion, finely chopped

• 4 celery stalks, diced

• 1 tablespoon parsley flakes

• 1 teaspoon dried thyme leaves

• 1/2 teaspoon sea salt

• 1/2 teaspoon coarse ground black pepper

• 2 and 1/2 cups reducedsodium chicken broth

• 2 large eggs

• 1/4 cup unsalted butter

Directions

First, prepare cornbread:

1. Preheat oven to 400 °F.

2. In a bowl, combine the cornmeal, flour, baking powder, cayenne pepper and sugar. Stir in the minced chives.

3. Stir together the egg, buttermilk and oil in a separate bowl.

4. Add the egg mixture to the dry ingredients. Stir until combined.

5. Pour into bread tin. Bake for 15 minutes until done. Cool on a rack. Savoury cornbread with chives stuffing:

1. Once cornbread has cooled, slice into small cubes. Place aside.

2. Place a saucepan on medium-high heat on stovetop and add minced garlic. Cook up to 1 minute, then add onion, celery, parsley, thyme, salt, and pepper. Cook until vegetables begin to soften.

3. Mix broth and eggs together in a large mixing bowl. Mix well and pour into the saucepan with vegetable and seasoning mixture. Remove from heat and place in a large mixing bowl.

4. Add cornbread cubes to the bowl and gently fold in.

5. Next, place stuffing into turkey cavity or bake in the oven, for 40 minutes in a greased baking pan covered with aluminum foil at 325 °F. Serve warm and enjoy!

PISTACHIO APPLE CRISP

INGREDIENTS

This Pistachio Apple Crisp offers a small twist on the classic and much-beloved dessert. It features saucy, buttery soft Honeycrisp apples baked under a crisp and nutty cookie-like crumble. The crust, which is loosely inspired by the Greek treat baklava, is comprised of pistachios, walnuts, and oats kissed with cinnamon and rosewater. Topped with a scoop of vanilla ice cream, a drizzle of honey, and chopped pistachios, this apple delight hits all the right notes.

For the Apples:

8 Ontario Honeycrisp apples, peeled, cored, and sliced

½ cup light brown sugar

¼ cup all-purpose flour

1 tsp vanilla extract

1 tsp ground cinnamon

½ tsp ground ginger

½ ground nutmeg

¼ tsp salt

For the Topping:

¾ cup all-purpose flour

¾ cup light brown sugar

½ cup pistachios, lightly salted

½ cup walnut pieces

1 tsp ground cinnamon

½ tsp salt

½ cup cold unsalted butter, cut into cubes

¼ cup pistachios, coarsely chopped Serves 6 | Prep Time: 30

1 cup old-fashioned whole rolled oats

1 tsp rosewater (optional)

INSTRUCTIONS

To Serve:

1 pint vanilla ice cream

¼ cup honey

 Preheat the oven to 350°F. Grease a cast iron skillet with butter and set aside.

 Place the apples in a large bowl. Add the sugar, flour, vanilla, cinnamon, ginger, nutmeg, and salt. Toss to coat the apples. Pour them into the cast iron skillet and set them aside.

 Place flour, sugar, pistachios, walnuts, cinnamon, and salt in a food processor. Pulse until the nuts are pebble-sized and the dry ingredients are well mixed.

 Add the butter, oats, and rosewater to the food processor. Pulse until the butter is evenly distributed. Sprinkle the crumble evenly over the apples.

 Cover the crisp and place it in the oven. Bake for 30 minutes and remove the cover. Bake for another 15 minutes or until golden and bubbly. Let stand for 5 minutes before digging in.

 To serve, spoon the crisp into bowls. Top with vanilla ice cream, a drizzle of honey, and a sprinkling of chopped pistachios. Serve immediately.

The Culinary Journey of Chef Christina Khan From Family Traditions to Culinary Fame

Christina Khan didnʼt always envision a future in the kitchen, but life had other plans. Raised in a food-loving family, she spent her childhood surrounded by the comforting aroma of home-cooked meals and the bustle of food markets. Today, Chef Christina Khan has made a name for herself with her bold Caribbean-Latin fusion style, all while holding the position of Chef de Cuisine (CDC) at the renowned restaurant La Palma. Her journey is one driven by passion, family, and a deep love for the cultural richness of food.

Christinaʼs path to becoming a chef wasnʼt planned from the start. In fact, she initially set her sights on becoming a school teacher. “I wanted to become a teacher,” she reflects when asked about her early aspirations. However, her immersion in food from a young age shaped her destiny. Growing up in a family that treated cooking as a communal activity, she was introduced to the joys of food early on. Whether it was working with her father at the Ontario food terminal as a teenager or cooking with her extended family, food was always at the center of their gatherings.

“I had been surrounded by food my whole life,” Christina explains. “Each chapter of my life prepared me for wanting more. I moved up the culinary ladder and have always been hungry for more.” The joy, sense of community, and togetherness she experienced through food sparked her desire to explore the culinary world in a deeper way.

Despite her rich family background, Christinaʼs formal education in the culinary arts came from George Brown College. While pursuing her studies, she

worked as a line cook at the restaurant Rosalina, where she had the good fortune to meet her mentor, Chef Emma Herrera. “Emma is an amazing Trinidadian chef. I first met her when I was a baby line cook at Rosalina, and she was my sous chef,” Christina recalls. “She shaped me a lot as a chef.”

Christina also credits her father, grandfather, and aunt for teaching her the basics of cooking at a young age. These early experiences not only provided her with essential skills but also helped her develop a deep respect for how food connects people, culture, and geography. As Christinaʼs career progressed, she

developed a cooking style that reflects her personal experiences and cultural background. “My style of cooking is Caribbean-Latin American forward with a splash of Italian,” she explains. Her time spent working in different Latin American restaurants allowed her to fall in love with Latin cuisine, which felt both “familiar but different” from the Caribbean food she grew up with. The Italian influence comes from her time at La Palma, where she has learned to integrate Mediterranean flavours into her Caribbean-Latin repertoire.

Christinaʼs inspiration to become a chef stems from the cultural and familial significance of food. She vividly remembers the joy of preparing food with family during holidays like Eid and birthdays. “The togetherness of family members all pitching in to make holidays and family gatherings special is what really drives me,” she shares. This deeprooted connection to family and culture fuels her passion for food.

When asked about her future goals, Christina has a vision that goes beyond the kitchen. “The ultimate goal would be to have a farm one day,” she reveals. This ambition speaks to her holistic approach to food, where the origin of ingredients is just as important as the dishes they create. A farm would allow her to control

the quality of the food she cooks and foster a deeper connection between the earth and her cuisine.

Christinaʼs journey officially began in the vibrant streets of Torontoʼs Kensington Market, where she worked in a small vegan café as a juicer. It was during this time, while studying to become a teacher, that she realized she found more joy in creating food than in pursuing a career in education. Her experiences in the café sparked a lifelong passion for cooking.

Despite the challenges she has faced along the way, Christina has achieved significant milestones. One of her proudest moments came when she was selected to compete on Top Chef Canada Season 11, a testament to her growing influence in the culinary world. Although she modestly says, “I hate this question,” when asked to share her accomplishments, this opportunity solidified her status as a rising star in the Canadian food scene.

Currently, Christina is working as the Chef de Cuisine at La Palma, continuing to push boundaries with her innovative fusion of Caribbean and Latin American flavours. As she looks ahead, she remains committed to perfecting her craft and sharing her love of food with the world.
