LocallyI’venotseenanybread ovensleftonCortijo’sthathave beenrenovatedbutI’dliketo believethatsomeonesomewhere locallystilldoes.MeanwhileI’llbe tryingtobakemyownbreadusing thewoodstovethatI’veinstalled. Thereisatopopening compartmentthatmightjustdo thetrick.
MeanwhileI’vediscoveredthat thereisaverylargesnake,judging bythesizeoftheskinithasshed, livinginmystorage/garage,and possiblysomelittleones.I’veonly seenthetipofthetailasitmoved undersomewood,butthat’sa storyfornextweek.
Oneofthemosttypical breadsofAndalusia, especiallyofMálaga.This breadisalsoknownascountrystylebread.Itisaloafthatlasts severaldaysinarowwithoutspoiling.Themostcommonthingisto prepareitwithbreadflour,oneof theoldestvarietiesofhardwheat. Asaresult,yougetatight crumbedbreadwithoutanyholes..
Ingredients:
Breadflour(500g),water(293 ml),salt(10gr),dryyeast(4g)
Steps:
•Startbydissolvingtheyeastin thewater,whichmustbeat roomtemperature.
•Useabigbowltoaddtheflour andgraduallypourinthewater. Stirorkneaduntilboth ingredientsaremixed.Addthe saltandcontinuekneading.
•Placethedoughonasmooth, cleansurfaceandcontinue kneadinguntilitisevenand elastic.
•Putthedoughinabowluntilit doublesinsize.Thelongeryou leaveitthebetter,uptoa coupleofhours.Theroommust haveamildtemperature, around20ºC.Youcanrubsome oliveoilonthebowlsothatthe doughdoesnotstick.
•Kneadthedoughagaintogiveit aroundshape.
•Oncethebakingtrayiscovered withbakingpaper,youcanplace thedoughonit.Coveritwitha dryclothuntilitrisesagainand consequentlyincreasesin volume.
•Preheattheovento240ºCand makesomecutsonthebread surface.
•Putthebreadintheovenand keepitatthistemperaturefor thefirsttenminutes.Then loweritto200ºCandletitbake for50minutes.Tomakethe crustcrispy,everynowandthen itisconvenienttospraythe doughwithwater.Whenthe breadisready,letitcooldown.

Thoughmanylivedlocally,and someeveninthetownsand villagesthemarketswereheldin, itwasamainlyruralsocietywith familieslivingfairlysecludedlives inthemountains,somarketdays werealsoanopportunityto socialiseandmeetoldfriendsand otherfamilymembers.Theywere fairlyselfsufficientsobuyingand sellingtheirproducemayhave beensecondary.
