RACHEL BENAVIDES, LEAD PHOTOGRAPHER Take time, slow down, gather together around a meal, sharing stories, and talking about our day. Growing up, my family didn’t always sit down and have meals together very often. After getting married early this year, I’ve noticed the disconnect I have with food. Feeding myself is usually an afterthought in my day. However, now that I’m also thinking of someone else in my life, I realize I have the ability to add so much more to their day by making a meal together. I really enjoyed being able to photograph the many great chefs here in the Coastal Bend. Hearing their passion for food and sharing that passion with friends and family was so wonderful. My favorite part about photographing the chef feature was meeting new chefs and hearing their stories plus getting to know the ones I already knew a little bit better. I loved how intentional they were about what they were cooking and how they said you don’t have to over complicate things. Pick fresh ingredients that are seasonal and enjoy the process. I can now see I’m slowly letting that sink in more and more by taking the time to enjoy the journey of cooking and then gathering together—as opposed to rushing through life as I normally like to do.

Food for Thought
O
ur family started eating dinner together around the dining room table a couple of weeks ago. My wife and I both agree it’s been one of the best parenting moves we have made in a while. Before making the move to the table, we would all pick a spot in the living room, turn on the television and enter our own little individual worlds. While our oldest daughter watched cartoons, I would start checking e-mails or scores from whatever game was on that day—most likely a game with two teams I cared nothing about. My wife will often check social media for the latest updates and read various articles. It was a challenge to get our daughter to eat her food, and almost impossible to get her to eat her vegetables. We knew it was time for a suppertime intervention. I was inspired after a talk with an old friend of mine who owns a restaurant on the South Side. He told me an interesting story about a restaurant that gives out free dessert to guests who put their cell phones and tablets in a basket on the table and don’t pick them up throughout the meal. At first, I was shocked. I didn’t understand how a restaurant could put their guests through such torture. As he continued talking, I realized why he thought it was such a great idea, and why a restaurant owner would be willing to give out free dessert to encourage families to bond with one another. The truth is, most restaurant owners start their business because they want guests to come in and relax, enjoy a good meal, a few laughs, and bond with each other. The last thing a chef or restaurant owner wants to see is a family sitting down all lost in their smart phones. In our “Chefs Tell All” feature on p. 32, we interviewed five local chefs who all shared their influences, recipes, and cooking tips with us. However, I think Antonio Posada of The Blue Clove speaks for all of them when he says, “food is happiness.” He finds joy in watching people enjoy good food and good conversation. I’m looking forward to Thanksgiving this year. It really is the ultimate food holiday. However, every night I sit at the dinner table and look up at three beautiful girls sitting around me, I can’t help but feel a rush of gratitude. I’m thankful for my family, for good food to eat, and a roof over our head. Now, every meal is starting to feel like a mini Thanksgiving in our house.

An Homage to Fallen Aviators
The South Texas Aviator Memorial Association was established with the simple goal of honoring military aviators who have paid the ultimate price in service to our country. The organization has been working hard and has finally unveiled their South Texas Aviator Memorial. The memorial is located in Ropes Park on Ocean Dr. and features a seven-foot tall bronze aviator statue surrounded by a brick walkway. Street style. An approach to an outfit that emerges not from a studio or a mainstream trend, but from the roots of those who are wearing it. It’s personal and relays a message about the individual in regards to how they view the fashion world.
Kim Rios, owner of a personal styling and shopping business Metropolis, is no stranger to the realm of street style. Keeping true to the authentic and personalized themes that make up street style, Kim refers to her own personal version of street style as a combination of both vintage and contemporary. Creating timeless looks from pieces she has bargain shopped or thrifted, she is able to curate looks that are both chic and unique. “I like to think an outfit worn today will translate just as well in two, five, or even ten years,” Kim says. “Inevitably I am a bit of a risk taker, in fashion and in life.” Kim’s passion for all things style stems from wanting to create new looks and help others feel good in their clothes. “Friends and family have always come to me for my fashion sensibilities,” she says. “I have ended up styling more strangers than I can count and figured I should turn my passion into a business opportunity.” The other style maven in the photos is Cynthia Gonzalez. Cynthia and Kim work together in order to create collaborative style projects. Mixing their two aesthetics might just be a stroke of genius. Kim first met Cynthia at Renaissance Antiques — where Kim actually sells her vintage clothing and accessories. “I instantly gravitated towards her,” Kim says. “I am in awe of her style and she is constantly upping the ante.” [the lifestyle magazine of the coastal bend] 20 The Bend
Kim hopes to bring more individuality to the fashion scene here in Corpus Christi. “There tends to be a rather blasé attitude about fashion here,” Kim remarks. “I feel the need to step it up.” Kim and Cynthia both are stepping out into the streets with their boldest looks and aren’t afraid to push the boundaries when it comes to putting outfits together. It goes without saying these women are bringing a whole new meaning to the style of the streets here in town.

to provide my students and our community with a multi-dimensional creative event to showcase the dynamism of fine art printmaking. Additionally, The Ink Slinger’s Ball always boasts a lineup of local, regional, and national bands to provide musical entertainment and keep the energy high. I know you, along with students from the university, founded the Full Court Press Printmaking Symposium. Expand a little on that. This October, the Ink Slingers’ Ball was one event among many during the 2017 Full Court Press Printmaking Symposium. Full Court Press is a subsidiary, fine art publishing organization organized by myself and printmaking students at TAMUCC. The Symposium was a gathering of printmaking students, educators, and practitioners from all over who descended upon Corpus Christi to celebrate the diversity of printmaking. We had numerous lectures, demonstrations, and artists working in our studio at TAMUCC, an international juried exhibition held at our Islander Gallery, numerous pop-up shows at venues such as Hybrid Records, the Exchange, and Urbana Market, an open portfolio session at the Art Museum of South Texas, the Ink Slingers’ Ball, and of course, it all culminated with a beach bbq. The symposium was a huge success and provided an educational and inspiring experience for all who attended.
Conversation with
Ryan O'Malley Amongst the TAMUCC Art Department, Ryan O’Malley is a bit of a celebrity; however, his expertise and endeavors are spreading beyond the classroom. By: Kylie Kinnett Photo: Bryce Bunting How did you first get interested in printmaking? My history in print began with leaving Laramie, Wyoming to attend the University of South Dakota on swimming and track scholarships with the intent of studying art, but unsure of the direction. When people ask how I came into printmaking I say I was tricked by an old son-of-a-bitch named Lloyd Menard, aka, The Frogman. He pulled me aside after a freshman drawing class and said, “you know, you have a pretty good hand. You should take my print class next semester, and listen, I don’t tell this to first year students, so keep quiet.” Turns out, he said the same thing to everyone in that freshman drawing class. It was a challenge; it defeated me over and over again before I began to get the upper hand and develop both skills and

confidence. I went to Louisiana State University to pursue my MFA in printmaking and have been involved in it ever since. What is the story behind the Ink Slinger’s Ball? The Ink Slingers’ Ball is inspired by similar events held elsewhere. These events are a chance for regional, national, and international artists to sell their works to the masses at affordable prices in order to make fine art accessible to all. Printmaking makes multiples of an image, which results in its ability to reach a broader audience. As such, printmaking is known as the democratic art. I felt that Corpus Christi was a perfect venue for this format, particularly due to the generosity of Casey Lain, owner of House of Rock. I started it in 2011

You’re a professor at the University as well. What do you feel you bring to the program? As both an artist and educator, I have a responsibility to create positive change and foster lasting impact. As you may have noticed, Texas A&M University Corpus Christi physically and metaphorically sits on an island. It’s a cultural outpost much like my undergrad experience in Vermillion, South Dakota. Many of our students have never left Texas, but want to know the greater world. I see my younger self in them, therefore, my primary goal is to get students out in the world to shape for themselves a fulfilling life, and if they choose to stay or return to Corpus Christi, my hope is they bring the things they learn back with them, to further educate and enrich our city. What do you hope to teach your students? I begin by organizing my classroom and studio around collaboration and community. I often create projects where students learn how the role of the individual contributes toward broader ideas or goals. We often take this methodology beyond the classroom to engage with the community. Here students learn to speak the language of art in a way accessible to all, in order to broaden our city’s cultural profile, and of course to fundraise toward conferences and workshops. I’ve built an MFA program in printmaking with students from all over the country and ambassadors from elsewhere who bring diverse ideas to our island. They chose Corpus specifically because of our printmaking community, to live and work in a truly unique and slightly lawless place, where you have the freedom to make your own opportunities that you may not find elsewhere. What are some projects you are currently working? Since the successful conclusion of the Full Court Press Printmaking Symposium, I hope to devote some time to building my home studio so I can continue a number of works currently in progress.

Chacho’s Tacos:
Home of the Almighty Taco, Chacho’s slogan, “best tacos in town” hardly does this little restaurant justice. Along with their Almighty Taco, a 3.5 lb. breakfast monster (stuffed with carne guisada, potato, egg, refried beans, bacon, and cheese), their menu is filled with regular sized combinations to satisfy any palate. The “weenie and egg” taco is highly recommended among the locals, due to its similarities to a childhood favorite in grandma’s kitchen. Did You Know: As a Federally Qualified Health Center, Amistad is able to serve predominantly uninsured or underserved populations, while providing culturally and linguistically appropriate services for their patients. That means the clinic also offers services to Corpus Christi residents who cannot speak English, and therefore have a hard time receiving treatment from traditional healthcare facilities. Phillips says that having someone they can communicate well with is a big asset to her patients.
A Safety Net The Amistad Community Health Center is bringing hope and health to the Coastal Bend.
“If I had to guess, between 50 to 60 percent of the patients speak Spanish only,” she said. “Because I speak Spanish, my patients have told me the difference they see in their own health. Somebody can communicate and teach them what they need to do in order to get better.”

alking through the front doors of Amistad Community Health Center, it is immediately clear that this is not a typical hospital waiting room. From the friendly “Welcome to Amistad!” one hears from the cheerful staff, to the bright decorations lining the halls, it is easy to tell there is something special about Amistad.
The ‘people’ Phillips speaks of are the underserved healthcare population in the Corpus Christi community, Amistad’s primary patients. Phillips said Amistad is able to offer services to those who may not be able to receive it at a traditional medical institution. No matter what a patient’s financial status is, whether or not they have insurance, or what their medical history is like, they are welcome at Amistad.
Dr. Jacqueline Phillips, who serves as an internal medicine specialist at Amistad, says she can feel the uniqueness of the clinic every time she arrives at work.
“We did a lot of things to kind of help improve access to care. It’s a huge issue,” Phillips said. Whether a patient needs to see an internist, a dentist, an OBGYN, or take their children to a pediatrician, they can receive the treatment they need at Amistad.
“I love this clinic,” Phillips said. “You take the sickest people in the world, you make them better, and you get them out.”

“If you think about it, it can almost be your one stop shop,” she said. “You could come here and get your medical
care, get your kids medical care, get all of your dental care, and everythingin-between.” Despite its humble beginnings in 2005 as a faith-based, nonprofit organization with only one doctor, Amistad has grown to include two pediatricians, an internal medicine practitioner, 13 residents, a part-time family practice physician, two fulltime nurse practitioners, an OBGYN, a full-time dentist, and a behavioral health therapist. "As the needs of the patients have increased, so have Amistad's services to meet those needs," said Phillips. “We have 7,000 patients that come for the pediatrics, medical, and OBGYN services. Out of those 7,000, we have about 1,000 that utilize our dental clinic,” she said. “It’s a lot of people, and a huge practice.”

Serving the people of Corpus and meeting their needs is the heartbeat of Amistad. Phillips said she likes to refer to the clinic as a “safety net” of sorts, a place where anyone can walk through the doors and find the help they need. “Everybody can come here,” she said. “If you can’t find a doctor and you have insurance, you can come here. If you don’t have insurance and you can afford the sliding scale fee, you can come here. It’s really great.” The mission of Amistad is perhaps best summed up on their website: to show and share the love of Jesus Christ to the Corpus Christi community by providing holistic, affordable, and quality health care services. By helping the underserved of Corpus receive the care they need, Amistad Community Health Center is doing just that.

Applications for this scholarship will be through the DMC Foundation’s regular application process, which runs February through April of each year for the academic year immediately following.

F
rom fine dining and international cuisine to baking and sugary confections, you’ll find sweet, savory, and everything in-between at the Del Mar Hospitality Management and Culinary Arts program. The program is tried and true, its status as one of the top programs in the Coastal Bend is further cemented by its accreditation as Exemplary by the American Culinary Federation (ACF) through 2021. Del Mar College offers associates in applied science degrees in Hospitality Management, Culinary Arts and Baking/Pastry Specialization, and certificates in Cook/Baker and Hospitality Management. During their time in these programs, students are offered opportunities to gain real world, applied experiences while still in school. Several courses are offered that allow students to learn how to run restaurants by actually preparing and serving meals to the public. The students take turns trading staff positions from “manager to dishwasher and everything in-between,” according to Lisa Pollakis, Associate Professor of Hospitality Management and Program Coordinator. Two different courses are offered in this format, one in which is a lunch with a more “cafeteria style” and another that is “international cuisine” which is tailored towards a fine-dining experience. For those with a sweet tooth, every other year, a course focused specifically on chocolate is offered. Students learn the background of and how to use high quality chocolate, even that from Europe such as couverture chocolate, and other ingredients like cocoa butter, fruit purees, vanilla bean, and liquors as part of ingredients they came to master. The course ends in a “Chocolate Gala”

Del Mar’s Hospitality Management program is not only known for providing the highest quality education to its students, but also for its successful graduates who have gone on to both regional and national success. Food Network’s popular series “Diners, Drive-Ins, and Dives” featured two 2000 graduates for their Austin-based restaurant, The Noble Pig. The Noble Pig was also featured by Adam Richman, known for “Man Vs. Food”, as part of his “Best Sandwiches In America” series. Although the success story of the Noble Pig takes place in Austin, many graduates stay in Corpus Christi and work throughout the Coastal Bend, some even open their own restaurants. “Quite a few of our alumni are in the business in the area, including Citrus Bistro downtown,” says Pollakis. “[Citrus is] my husband’s restaurant, he’s a 1986 graduate.” Pollakis also describes her experiences going out to eat as a culinary professor. “Pretty much everywhere I go, I see students out there.” The program continues to educate its students and help send them out into the world with the knowledge and readiness to succeed in whatever it is they may choose to do.

Their passion for curating a meal for others is remarkable and their desire to create new and exciting things is inspiring.

Ben Hague BKK THAI KITCHEN + BAR BRINGING a taste of home to others is what Ben Hague, head chef at BKK Thai Kitchen + Bar, is all about. Her story begins in Thailand and travels to several other countries before it finally makes its way here to Corpus Christi. Ben lived in Thailand for the first eight years of her life. It was there her passion for cooking began—almost without her even knowing it. She wasn’t allowed to go outside and play until she helped her mom in the kitchen. After Thailand, her family moved to Saudi Arabia and she spent the next ten years of her life there. It wasn’t until one of her high school teachers told her she should move to the States and attend culinary school that she realized she truly had a passion for cooking. “It wasn’t really a love at first sight thing for me,” Ben says with a laugh, “but once I started learning more of the actual process behind everything…that’s when I fell in love.” Living and traveling to numerous countries around the world has had a heavy influence on Ben and her cooking style. Being able to experience so many different cultures has helped her understand the value in different types of foods, and she enjoys exploring those cultures. “My dad is British and my mom is Thai,” she says. “So I am accustomed to curries, but I also love a good shepherd’s pie.” Ben’s biggest inspiration when it comes to the kitchen is being able to create and cook for others. She enjoys cooking what others are craving and strives to make others happy with her dishes. “Being inspired by what others are craving is probably one of my driving forces,” she says. “I want to create for them.” While being the head chef at one of the newest and trendiest restaurants in town might be intimidating, her hardest clients to please are her three and five-year-old sons at home. “The kitchen is intense, but those kids are my toughest critics,” she jokes. Her love for food and creation flows out of Ben when she speaks. The way she talks about authentic cooking and ingredients is inspiring and it definitely shows when you take a bite of anything she whips up for you.

IN THE DURATION of our 18-minute interview, Chef Kris said the word ‘goofball’ a total of 32 times. He is lighthearted and brings a certain sense of childlike wonder to the kitchen with him. Kris, the owner and head chef of Shoreline Sandwich Company, describes himseld as a hustler and it is evident as to why. With his downtown, uptown, and soon to be South Side locations of the restaurant, Kris is bringing a fresh and creative take to the food industry here in Corpus Christi. “I just want to wrench people’s minds,” he says with a smirk. “I want people to think ‘who is this guy?’ when they see what kind of weird food I’m making—I’m not making the same things your mother makes.” Kris obtained his chef expertise by learning under one of Food and Wine’s best new chefs. He moved back to Denver, Colorado after working an uninspired furniture delivery job here in town. He wanted something more. “I always had an appetite for cooking,” he recalls. “I knew how to cook and I loved it, but restaurant cooking is a whole different ball game, and I wanted to play.”

His passion for cooking, he says, comes initially from his mom. He describes his mother as the ultimate entertainer and he always admired that about her. However, when it comes down to it, he says the backbone of his love for cooking comes from the concept of hospitality. “I love all aspects of food,” he says. “I like learning about it, I like watching it, I like seeing what other people create; but, the backbone of it all is hospitality—changing someone’s day with a meal is what it’s all about.”

Recipe: PAD THAI PAD THAI SAUCE:
(of your choice)
-1/2 c. of Tamarind Paste
-1 tbsp Crushed Peanuts (unsalted)
-1 c. Palm Sugar -1/4 c. Vinegar -1/2 c. White Sugar -1 tbsp Paprika
DIRECTIONS: Put all ingredients together in sauce pan. Bring to a boil and let reduce to syrup consistency.
PAD THAI: -8 oz of Rice Noodles -2 tbsp Vegetable Oil -1 Garlic Clove, minced -1 Large Egg -2 tbsp Water -1 tbsp Fish Sauce (Soy Sauce for Vegetarian) -1 c. Bean Sprouts -1/2 c. Green Onion -6 ounces of Protein

“I know I am doing what I was meant to do,” Kris says as he wraps up his final thoughts. “It’s goofball, but it works.”

DIRECTIONS: Soak rice noodles in warm water for 30 minutes. Then, in a large wok, heat the vegetable oil over medium heat. Crack the egg into the wok and cook until lightly scrambled. Lower the heat, add garlic and set aside in wok. Add protein and stir-fry until cooked. Pour the Pad Thai Sauce and add Fish Sauce (or Soy Sauce) into the wok with the scrambled eggs. Add the noodles and toss to coat in the sauce. Cook until noodles are tender. Add bean sprouts and green onion and toss until softened. Plate and sprinkle the fresh bean sprouts, cilantro, crushed peanuts and lime over the dish.
Tips from Chef Kris: Treat your ingredients with respect. Don’t be afraid to fail—just because you haven’t ever cooked a certain dish doesn’t mean you’re incapable of making it. Find ways to add flavor to a dish; don’t be boring!

Recipe:
THE ARTISAN SANDWICH TOMATO JAM: -2 ½ lb. tomatoes -3/4 c. white sugar -1 c. brown sugar -1 tsp. cinnamon -1 tsp. red pepper -1 tsp. salt
DIRECTIONS: Dice tomatoes and add sugar and other spices. Bring to a boil and then reduce to a simmer until thick and delicious (it will take about 2 hours but your patience will be rewarded). SANDWICH: -2 eggs -1 slice of sharp cheddar cheese -a handful of fresh spinach -2 slices of wheat bread
DIRECTIONS: Cook eggs to over easy, or however you like them best. Add salt and pepper to taste. Spread the tomato jam across one slice of bread. Add the cheddar slice, egg, and spinach.

Boyd Vithounh: AKA SHUSHI BAR
IF YOU HAVE EVER HAD THE OPPORTUNITY to experience the downtown dining scene, chances are you’ve come across Chef Boyd. He is serious about his craft, but somehow manages to add a little humor in when the opportunity presents itself. Boyd’s love and passion for cooking stems all the way back to the jungles of Laos. He would help his grandmother prepare for meals by going out and picking leaves and peppers for her. “I didn’t know it at the time,” he says, “but that really is where it all started.” Boyd came to America in 1980 and took a dishwashing job at a Japanese restaurant in Washington D.C. “I just needed money,” he says with a laugh, “so I took the job.” Two months into the job, a kitchen worker quit and the chef needed some extra help. Boyd simply helped him cut up vegetables that day, and three months later he was running the whole kitchen. Six months after that he was promoted to head chef and that is when he knew he had found his career. He mentions "the basics" a lot when speaking about food and how important it is to know the basis of what you are doing. He brought that viewpoint with him to AKA and was able to create a whole new menu for them in 2014. When he came to the Downtown location he noticed how open people were to trying new things and so he put his twist on the dishes and things took off. “I get bored with things easily,” Boyd says in regards to recreating the AKA menu. “So I got creative and changed it up.” His dishes at AKA are simple and fresh—which coincides with his back to basics mantra. He enjoys creating dishes that take you back to the beginnings of how they were made and then adding small twists of fusion when necessary. “The rice has to be right, the fish has to be fresh,” he says. “There is a right way to do sushi and once you have that down, you can add to it.” Chef Boyd’s outlook on both life and food are the same. “Life is hard as it is already,” he says. “You have to enjoy the process—that’s the most important part. A lot of people don’t get the same opportunities as we do, so you have to enjoy it.”
Tips from Chef Boyd: Always start with fresh and basic ingredients. Have fun with it—the worst that can happen is you mess up and try again. Don’t rush through, enjoy the process.

Recipe:
TRADITIONAL JAPANESE SUSHI -1 c. Japanese rice (short or medium grain) -1 c. water -Your choice of preferred fish. Today’s recipe includes: tuna, salmon, Japanese red snapper, and Japanese sea robin.
DIRECTIONS: Wash your rice three times thoroughly. Mix the rice and water and cook for 45 minutes, then let it sit for 10 minutes. After it cools slightly, create a mix of vinegar, sugar, and salt (the ratio is up to you). Move the rice to a wooden bowl and mix your vinegar mix slowly until every grain is touched. Wash and clean your fish well and let it sit for about 2 hours. Then cut and roll. Add garnish to each roll in order to enhance the flavor.
Antonio Posada: THE BLUE CLOVE
ANTONIO POSADA is reserved and quite. He doesn’t say much, but rather lets his cooking do most of the talking. Both his business and his life are family oriented. When walking into his restaurant, the Blue Clove, you are immediately greeted with smiling faces and a warm welcome from everyone inside. There is a certain type of environment he has created inside The Blue Clove—you instantly feel at home. Antonio first moved to the United States in the early 1980s from Aguascalientes, Mexico. He was having a hard time finding work when the Yacht Club offered him his first job in America. He gladly took the job and started merely as a dishwasher. He quickly moved up the ladder and eventually landed himself the position of head chef. After both learning and cooking there for about 20 years, Antonio finally decided to partner with his son, and thus, The Blue Clove was created. “It’s family,” Antonio says as he reminisces back to the beginning of the restaurant. “It is like getting to cook at home with your son every day, except it is work.” The Blue Clove can be best described as a seafood restaurant with a slight Mexican twist. Their menu is filled with delicious dishes all thought up by Antonio and his son. He tries to

consistently incorporate new dishes into his menu and is inspired by the work of others. “I’ll see a dish I’ve never seen before and I just want to learn from the plate,” he says. “Being a chef is a lot of fun, but it also provides an opportunity of infinite knowledge. There are so many types of dishes out there to make and that really inspires me.” At the end of the day, for Antonio, food is happiness. It really is as simple as that for him. He finds joy in seeing people sit together and enjoy a good meal over a conversation. He hopes that both his restaurant and his food provides that for others.

STUFFED QUAIL QUAIL: -2 semi-boneless quails for stuffing -1 c. wild rice -1/2 c. dried cranberries -1/2 c. feta cheese -1 green apple
Tips from Chef Karey: Pay attention to what season it is in regards to produce. Find one strong ingredient and then build a whole meal around it. Explore new ingredients and pay attention to their quality!
-2 tbs. green onions -2 tbs. olive oil -salt and pepper to taste
DIRECTIONS: Mix all stuffing ingredients and stuff into quails. Put both quails in the conventional oven and bake for 20 minutes at 375˚. While baking, begin on the cherry compote.
CHERRY COMPOTE: -1 c. dark cherries -2 c. port red wine -1/2 c. red onions -1/2 tbs. ground cinnamon -1 tbs. unsalted butter
DIRECTIONS: Mix each of the ingredients (except for the butter) to a pan and let simmer. Let the red wine reduce to about 1 1/3 cup and then slowly add the butter. Let the compote cool slightly and pour over the quails. Add your favorite choice of sides, (in this case, we wanted asparagus and garlic mash potatoes) and you are ready to eat!
Tips from Chef Antonio: Do research when cooking a new dish. Figure out how others have done it and then put your own spin on it. Trial and error is key— don’t give up! Be aware of your ingredients and mix the right spices together for the flavor you want.

KAREY SWARTWOUT is a breath of fresh air. There was no shortage of laughter in the Rockport based restaurant, GLOW, when we paid her a visit. Karey, the owner and head chef, has a deep passion for food and everything it encompasses. You can tell how much she cares about her ingredients and process—watching her cook is something else.
Karey’s passion for food comes from how often she has been around it and influenced by it throughout her life. Her mom was from New Orleans and her dad always had a deep love for food, so flavor was a big part of her life growing up. While living in London, she owned her own catering business for about 9 years and picked up British and French influences and brought them with her back to America when opening up GLOW.
GLOW
GLOW, at its core, focuses on simple foods with ingredients you can taste. She explains that the majority of their menu items have no more than five ingredients in order to force people to taste what they are supposed to be tasting in the dish. “It forces you to keep the core ingredients in your meals at their best,” Karey says, “because otherwise what it the point!” The way she cares for her ingredients stems from her philosophy of why food is so important. “Cooking and eating is the oldest thing known to man,” she says. “There are basics to it that are so vital.” She explains that knowing where your food comes from

“Truly, I think food is just so important,” Karey says when asked about the gathering aspect of food. “Growing up and everywhere I have traveled, food for everyone is a personal and gathering experience, she says.” She explains that is the reasoning behind her close-knit feel she has created in the restaurant. She wanted her patrons to be reminded of what the food experience is supposed to be like. “I want to preserve food and the way we experience it—that is what makes you whole and we are really getting away from it.”
Recipe:
BLACK DRUM WITH LEMON CAPER BROWN BUTTER AND HEIRLOOM CHERRY TOMATO BASIL SALAD - 2 c. heirloom or multicolored cherry tomatoes -8 leaves basil -2 tbs. sliced shallots -juice of 5 lemons -4 tbs.olive oil -Glow Sea Salt -Cracked Black Pepper -4 fillets Black Drum, 6 ounces each -2 tbs. butter -2 tbs. capers
DIRECTIONS: Slice tomatoes into halves and set aside. Tear basil leaves into pieces or chiffonade them. To chiffonade the basil, stack the leaves on top of each other, gently roll them into a cigar (being careful not to bruise leaves), and use a sharp paring knife to slice them into thin ribbons. Gently toss the tomatoes and basil with shallots, lemon juice and olive oil. Season to taste and set aside at room temperature. For the fish, pour olive oil into a nonstick pan on medium high heat. I like to use cast iron pans. Gently season the drum fillets with sea salt and pepper and place in pan. Cook for 3-4 minutes each side, until fish is opaque and flaky. Remove from pan and set in warm space. Bring the pan back up to temp and add butter and capers. Swirl in pan until butter starts to bubble and turn golden brown. Stir in lemon juice and seasonings. To finish, spoon some of the tomato salad onto a plate. Layer the fish over the salad and drizzle the lemon caper brown butter over the fish.

A
lthough hundreds of people are squeezed under a tent in the middle of downtown George West, everyone is silent.
The only voice that can be heard, however, is one of the many storytellers that flock to George West, a sleepy town of 2,500 just 60 miles north of Corpus Christi. During the annual George West Storyfest, the population more than triples. “I can't believe you can pack a tent with 600 people to listen to stories and they're quiet,” said Becky Allen, who ran the festival for more than two decades before retiring. “They’re not coming to a rock concert or anything like that, they're coming to go back in time.” For the 29th consecutive year, personal stories and local folklore will come to life at the George West Storyfest, which shuts down the main street of the town. The festival, which started with a few hundred
attendees, now attracts nearly 8,000 people for a weekend of games, food, and storytelling from nearly 20 hand-picked individuals from across the nation. Imaginations run wild at the event, which has been dubbed one of the best storytelling festivals in Texas. The Texas Legislature, in fact, declared George West the Storytelling Capital of Texas. But, storytelling isn’t all the event offers. Local nonprofits set up booths to serve home-cooked fare such as funnel cakes, barbecue, and baked potatoes as a way to fundraise for their causes. There’s also a parade, children’s games, car show, and living history exhibits—which makes George West the place to be for the first weekend in November. “It’s the biggest thing that happens in our town all year,” said Mary Margaret Campbell, who took over as executive director after Allen retired. This year, Campbell and her volunteers will work feverishly to arrange hundreds of chairs, dozens of

“Storytelling was dying,” said Campbell. “That's what we’re here to do—make sure that art form stays alive.” booths, and multiple stages for thousands of dedicated attendees, many of which flock to the festival year after year. Campbell is tasked with organizing events ranging from open mic sessions for story-telling newbies to the Texas State Liars Contest, which attracts performers from across the state to see who can tell the wildest tale. Some of the event’s performers are recognized nationally, while others specialize in tales that preserve the history and folklore of Texas. “I don't get to listen,” said Campbell. “I’m the energizer bunny.” But, preparation wasn’t always that busy— what is now the town’s largest festival was once just a few hundred people sitting on hay bales around a wooden stage in the late 1980s. The festival’s humble beginnings date back to 1989, when George West — like many other Texas communities — was struggling in the aftermath of the oil industry crash. Rob Schneider, who grew up in the town, was the president of the local Chamber of Commerce at the time. “Things were kind of depressed,” said Schneider. “So we were trying to figure out how to help morale.” George West is a sleepy, small town where the majority of the businesses, most of which are locally owned, are situated on the town’s main street. Even today, the town closely resembles what it looked like when Schneider was growing up, when storytelling became an important part of his childhood. More than three generations of Schneider’s family grew up in the area, and storytelling became one of the key ways to pass along

knowledge and local folklore to younger generations, Schneider said. His relatives were far from the only ones who engaged in the art. “You'd go to the Dairy Diner, and all the older men would be sitting around it telling stories,” said Schneider. Decades later, that gave Schneider an idea for a festival: “Maybe if I could create places where people could tell stories, that would be a theme to talk about the history of the communities.” Schneider had another mission, too. In the midst of the economic downturn, the chamber wanted find a way to allow local nonprofit organizations to raise money. So, Schneider and his team asked them to run food booths, selling items ranging from sodas to chili. Other vendors set up children’s games and arts and crafts. The first year of the festival was a success. On the first weekend of November in 1989, hundreds of people showed up to hear from local storytellers, ranging from cowboy poets to people sharing personal tales. Jim McGee, who has lived in George West since the late 1960s, was also a part of the team that put it together. “Really, it’s been by word of mouth to start and it progressed from there,” McGee said. But nearly three decades after the festival began, the atmosphere hasn’t changed much, McGee said. Unsupervised children play games and run around the festival grounds while their parents enjoy live music and tall tales. Despite thousands of people flocking to the area, the event is safe; children are watched carefully by volunteers, while local law enforcement — some of which participate

in the event — keep an eye on the crowds, McGee said. McGee credits the event’s success to keeping the venue family friendly—all storytellers, vendors, and musicians are thoroughly vetted before they’re invited to the festival. Plus, the day before the event starts, the storytellers kick off the weekend by speaking to children and teens in more than a dozen public school campuses in towns ranging from George West to Alice, Texas. “You’ll hear stories that will have you laughing, and then crying the next,” said McGee. Campbell, the Executive Director, is the woman in charge of hand selecting the storytellers and musicians that perform at the school and the event itself—some of which come from out of state. Several times a year, the George West native travels to hear up-and-coming performers who specialize in the art of storytelling. Campbell listens carefully to their performances to ensure they’re the best storytellers to captivate both children and adults. “Storytelling was dying,” said Campbell. “That's what we’re here to do—make sure that art form stays alive.” Campbell, who first got involved by volunteering as a stage manager, sees the event as a way to help children and their families appreciate history and the cultures of other people. The former high-school english teacher also invites local storytellers to share tales during an open mic segment. “A lot of times it's healing to tell your story,” said Campbell. “And we're just trying to make sure that doesn't die out.”

PAIN MEDICINE DR. GABRIEL LOPEZ Dr. Gabriel Lopez got his beginnings as an anesthesia resident at Loma Linda University after graduating from the Medical School at UT Houston Health Science Center. He then proceeded to complete a Pain Fellowship at UTHSC in San Antonio. In 2006, one year after moving to Corpus he started his own practice, Corpus Christi Pain Medicine. Now a little over a decade later he employs a full-time Nurse Practitioner and 18 office staff. They are a mix of medical assistants, referral specialists, office managers, and billing specialists who are all incredibly hardworking, some are bi-lingual and all of them treat each other like family. With the motto “Making Lives Better” Dr. Lopez goes above and beyond to find an answer to treat each patient’s pain. His patients are his biggest marketers, and he knows the importance of listening to each patient along with a thorough physical exam to diagnose their problem. The doctor loves to joke with his patients as humor and laughter can be very helpful in making a patient feel at ease. oday, more than 9 million adults in America will vape.
This statistic, published by the Centers for Disease Control and Prevention, illustrates the widespread popularity of e-cigarettes. Many limit or have completely quit smoking cigarettes for this electronic alternative. But, despite vaping’s appearance of being a safe replacement to smoking, how healthy is it? Physicians and experts across the country, and right here at home in the Coastal Bend, are growing more concerned about the potential health risks of e-cigarettes. “The typical risk factors for heart disease include smoking, diabetes, and hypertension.” Says Dr. Shamim Badruddin-Mawji, M.D., F.A.C.C., a board certified Cardiologist at Coastal Cardiology, located at CHRISTUS Spohn. Dr. Badruddin adds that e-cigarette users are not decreasing their risk factors for heart disease. “Patients say, ‘I quit tobacco but I am using e-cigarettes, which has very little nicotine.’ However, more and more studies are coming out that they are potentially more harmful,” she informs. In fact, the vaping trend may be creating many alarming health risk trends. As Dr. Badruddin explains, there are many ways that vaping poses major health concerns: “First, e-cigarettes are not regulated, so we don’t exactly know how much nicotine a person may receive. Next, recent studies show that it increases free radicals in our bodies. These are oxygen radicals that are not good for your ar-

This is one industry among many that restrict the use of e-cigarettes alongside traditional smoking.

It also causes constant adrenalin increase in your body, so your body is in a constant state of stress.” And the next reason could be the most frightening of all, the doctor warns. “The solvent used in e-cigarettes is a polyethylene glycol. That compound itself is not dangerous. But when it is heated, it generates formaldehyde. Which is what’s used to embalm dead bodies,” she says. While research continues into the safety of vapes, a fact has already emerged; e-cig use continues to grow in popularity and has created a vaping culture over the last five years. Swapping smoke for vapor began to heat up in 2012 and spawned thousands of stores and lounges dedicated to vaping, along with a massive market of e-cigarettes, larger vape devices, and fashion accessories. Easy access and widespread acceptance of e-cigarettes means they can be puffed in restaurants, bars, and homes, only increasing the use of vaping and its potential dangers. While some threats to heart health are new, solutions remain the same. "The heart of heart health beats steady, with many traditional practices to promote cardiovascular health," says Dr. Badruddin.

“We can modify risk factors, like controlling blood pressure and quitting tobacco, just to name a few,” Dr. Badruddin lists. She stresses the importance of diet, fitness, and exercise, and keeping up with regular visits to your physician. They are all important factors for maintaining a healthy heart. Dr. Badruddin wants to bring awareness to all risk factors because the sooner a person becomes a patient, the better their heart health outcome. She says, “We are trying to bring more awareness to early detection, because heart disease is a preventable disease.”

hat’s good for the mind, body, and includes spirits? Sets and Sangria is a tennis program and social meet-up for men and women ages 21 to 39, and of all skill levels. During a spring and fall season each year, the group meets on Wednesday evenings at a local tennis facility to play several fun and flexible rounds, before migrating to a neighborhood restaurant and bar for a social hour.
- Studies since the 1990s indicate that tennis boosts brain health, thanks to the quickness and tactical thinking the sport requires. - Physician and author Dr. Jim Gavin states that tennis outperforms all other sports when it comes to developing an athlete’s positive characteristics and physical fitness.
Sets and Sangria is the brainchild of Katy Rogers, a tennis aficionado and Corpus Christi’s Tennis Service representative of the United States Tennis Association (USTA). She designed this program with the support and guidance of Corpus Christi Country Club tennis professional Clay Reuter and the Corpus Christi Tennis Association. “It’s thanks to these local efforts that Sets and Sangria exists today,” says Rogers. “This program is by the community, for the community.” The inspiration behind this one-of-a-kind program is personal to Rogers. “Tennis has provided me with necessary tools, inspiration, and boundless opportunities to flourish.” says Rogers, “I want tennis to be the sport of opportunity; an opportunity for children, young adults, and families from all facets of life to learn and play the sport, but more importantly, an opportunity for them to succeed.” Access is important to Rogers, which is why each season is priced low so cost is not a barrier. “The cost for each season is only $30. This includes the court fees, tennis balls, a shirt, and appetizers at the restaurant during the social time.” Sets and Sangria is meant to bring together community residents, and also ignite a love for the sport. In fact, many members of previous seasons have gone on to further their passion

of tennis by joining USTA adult leagues as well as playing in tournaments across the state. The always fun get-together after playing is a key part of the group’s success, and even when team members advance to other groups, they keep in contact with the friends made in Sets and Sangria. “We’ve become more than a team, or a club. We’re a family,” Rogers says. Each Sets and Sangria season lasts 6 weeks, and members of the club often gather during its off season to catch up with each other, sign up for other leagues, and participate in charity events. p on entrance into the home, the tall ceilings, winding staircase, hanging orb encircled chandelier, and bouquets of eucalyptus create a perfect marriage of the antique and the modern—which have become the themes that shape the identity of the home. From modern paintings, religious sculptures, original cabinetry, and everything in between, the spacious house sitting on a 1 1/2-acre lot on Hewitt drive is a reflection of the style of the Moore family and especially Terri herself. When meeting Terri, it does not take long for her love of art and decor to come to the surface. Every room in the house has been thoughtfully
curated to be a reflection of their own personal style, and it sure does not disappoint. Each room, though different in its own way, never fails to bring together old and new in the most beautiful way.
“It was just a simple painting we got at Pier 1, but now it is one of my favorite pieces, and so its memorable to look at all of the signatures of the people who have come through our home,” Terri recalls.
One thing emphasized by Terri is her desire to buy “real art,” that is, art bought directly from the artist. For example, two abstract pieces hanging on each side of the mantle, painted by Amanda Flores, serve as a focal point of the room. The family room is filled with some of their most meaningful pieces, including, but not limited to, an end table and two chairs belonging to her grandmother and a simple piece of art that the Moore’s have used as a sort of guest book for their home.
The informal dining room, with large French doors, looks out onto the spacious patio and yard complete with a large rectangular swimming pool and 3 eucalyptus trees. A large round chandelier hangs above a round table with live moss planted in the middle, giving the room an airy and organic feel. The original slate grey tile floors combined with the large round, modern chandelier hanging above, give the simple light filled room a certain kind of elegance. The flooring follows

There is a bell on the floor at the head of the table that used to be used as a notification to the butler to bring out the next course. “We found it while renovating the floors and thought it was such a cool representation of what life used to be like,” Terri says. Although the dinner bell, along with a closet specifically for silver, is no longer utilized for their original purposes, “it is a cool way to remember how houses and life used to be so different” Terri says. The Moore family, and Terri specifically, have always had a love for

quirky, old things. She repeatedly states that if “I don’t find the right thing, I just keep looking." She believes quality pieces will last a lifetime, which is why she is so fond of the carefully picked decor in their house. “We kept a neutral color palette so I can go all out with decor,” Terri recalls about their renovation decisions. Much like her local shop, Wildflowers, her home has become a place for vintage pieces to be revitalized. When speaking about the house, the idea of purchasing pieces reflective of a personal style and making decisions according to what you really like is the most important—such as her decision to paint their guest bathroom all black with metallic wallpaper for the ceiling. Although the house has taken on a whole new identity since it was built in 1952, the original features keep their initial integrity all while being transformed into a house reflective of the Moore family and Terri’s love for “all things beautiful.”

arrots are one of the most distinctive of the garden vegetables—long, slender, orange, and sweet. But carrots did not always look that way. The original carrots, native to the mountains of Afghanistan, were stubby, fat, purple, and bitter.
Afghanistan sits at the volatile crossroads of East and West. The Greeks, Mongols, Persians, British, and Russians have all seen war there. For the last fifteen years, the warriors of America have fought with unparalleled skill along the same treacherous slopes where Alexander the Great once led his troops. The soldiers from those ancient armies carried Afghan carrot seeds home to their distant lands, where they improved its cultivation. Finally, in the 1700s, a sweet orange carrot was bred in the Netherlands. This new carrot, called the Long Orange, is the source of all modern carrots. You can grow carrots easily and well in your garden. Carrots like a wide bed of loose, well-turned, well-drained soil.

Carrot seeds are tiny (Danver’s Half-Long and Red Core Chanteney are favorite varieties). To make planting easier, sow radishes along with your carrots by mixing the carrot and radish seeds together into a cup of clean sand. Broadcast the sand/seed mixture evenly across your garden bed, then gently rake the bed to cover the seeds. Or, draw parallel lines four inches apart across the row with your finger and sprinkle the sand/seed mixture down each line. Cover the seeds with ¼ inch of soil (don’t bury too deeply). Carrots require three long weeks just to sprout, but your radishes will be fully mature within twenty to thirty days and ready to pull. Pulling the mature radishes from the bed will help thin your carrots and give them plenty of space to grow into maturity. Thin your carrots to final spacing of two inches. If you plant your carrots now, the green tops will grow thick and lush by spring. On March 1st, plant your tomato transplants directly into the center of the bed of mature carrots. Tomatoes and carrots are perfect garden companions. The carrots will serve as living (and edible!) mulch for the tomatoes, and the tomatoes vines will offer much-needed shade to the carrots. By using these companion planting techniques, you can harvest radishes, carrots, and tomatoes in succession, all from a small space, and keep your winter garden growing all the way into summer.

How a 20-somethingyear -old turned her passion for style into a business

R
efined, chic, and effortless. Those are just a few words that come to mind when you think of Jenna Pilsner, the 24-year-old mastermind behind the ingenious Instagram shop, Blood Orange Vintage. She’s soft-spoken and her presence is gentle, but her savvy business woman approach to her shop and her passion for style are uncanny. Blood Orange Vintage, Pilsner’s precious child, came about almost on a whim. She had been selling clothes and accessories through a mobile marketplace app called Depop for a while when she was approached by a local store, Wildflowers, to participate in a pop-up shop. Pilsner’s wheels began turning in her head and she knew an opportunity had presented itself. “It kind of opened my mind to the idea of doing something more with my passion,” she says, “a refined version of what I had already been doing, but with my own rules.” And so Blood Orange Vintage was born. The shop can be best described as an online store where you can find both vintage and modern clothing and accessories. Each of the items are carefully handpicked by Pilsner herself right here in Corpus Christi. Her ability to walk into a resale shop, sift through hundreds of articles of clothing, 102 The Bend
and find the perfect pieces that, together, curate her unique inventory, is truly astounding. “Basically I have a few favorite spots around town where I thrift—sometimes for hours at a time,” Pilsner says in regards to her process of finding her inventory. “I devote quite a bit of time to shopping for the perfect garments that best represent my brand and style.” Although Blood Orange hasn’t been in existence for very long, Pilsner’s passion for thrifting has been with her for quite some time. “When I was in middle school I was definitely…odd,” she says with a laugh, “I had super low self-confidence.” She reminisces to a time when all she wanted was an obnoxious teal Abercrombie hoodie because that’s what all the ‘cool girls’ were wearing. The desire for acceptance from the popular girls is a common theme amongst 13 year old girls sometimes, but Pilsner realized being different, or the odd one out, wasn’t necessarily a bad thing. “I was a confused mess, but I’m glad I have found my way since then,” she says. She began thrifting in high school as an attempt to dress the way she wanted to while also being on a budget. She started pairing items like raw hemmed skirts with t-shirts, and in turn, discovered herself

and her style. “Starting this vintage brand reminded me just how far back my love for thrifting and experimenting went, and it all kind of makes sense now,” she says. Subscribing to the fast-fashion track is nowhere near the top of Pilsner’s priority list. Her brand is simple: minimal, clean lines, mixing oversized and fitted shapes, neutrals with subtle pops of color, and the occasional sprinkle of sparkle. She has incorporated her personal style into her business and has found that others have a liking towards it. Her hope for Blood Orange Vintage is for it to serve as an awakening for people in regards to style. “I hope my little shop opens minds to where people can take their personal style,” she says. “I feel like sometimes people here might be afraid to be different—and I feel that. Getting attention for dressing differently than everyone else is scary, but there is also something so satisfying about wearing an outfit that isn’t expected.” For now, you can shop Pilsner’s items through Instagram or at various local pop-up shops around town. As for what the future holds for Blood Orange Vintage, the possibilities are endless; but we’re sure the path ahead is filled with clothing racks packed with unique and creative pieces.

otton is more than the fabric of our lives, it’s king in these parts. Families for generations have grown cotton and children have been raised in cotton fields. The Scogins family from Lyford, Texas had reason to celebrate more than bumper crops this season. Their daughter Bailey was chosen as The Queen of the 64th Algodon Court. To celebrate her reign as Queen of Cotton, her family held an Official Court Dinner at their home. The backyard overlooked the fields Bailey was raised on and the family farm encompassed the event. A casual evening with family and friends started as guests arrived. They were welcomed by a generations old cotton cart that was turned into a cotton themed display. It held mini cotton bales for guests to take with tags that included a heartfelt thank you from Bailey herself. Tables and copper chairs were set for guests and oversized copper vessels filled with bountiful greens and raw cotton from the fields decorated the tables. Guests were made several signature drinks, The Cotton Gin, gin and berry infused juice and The Cotton Blossom, champagne with a cloud of white cotton candy on top. Food stations were set offering delicious steak, baked potato salad, grilled veggies, and salad greens with apples and granola. For dessert an array of fresh made pies were on display for guests to eat. Antique pie cupboards were used to showcase the pies on the lawn. As the sun faded, the lights set the mood under the evening stars as family and friends celebrated The Queen of Cotton and her Court.

n America, we have always been crazy about pumpkins. There is something particularly lovely, and distinctly American, about a pumpkin—the beauty, the flavor, the weight, the plain old wholesome goodness. Pumpkins are the perfect symbol of autumn from the forests of New England to the glittering shores of South Texas. Native Americans featured pumpkins in fall festivals a thousand years before Europeans landed at Plymouth Rock. Native Americans passed their love of pumpkins to the newly-arrived Pilgrim colonists. The Pilgrims, if possible, loved pumpkins even more than their Indian friends. Pumpkin quickly became the most commonly served food at the Thanksgiving table. The Pilgrims made pumpkins into bread, butter, sugar, sauce,

and syrup. Pumpkin was even brewed into beer. Our fall recipes feature roasted pumpkin and toasted seeds, the oldest and simplest preparations of all. Plus, for a Thanksgiving twist, we also feature pumpkin risotto and pumpkin cinnamon rolls! As a home chef, never be intimidated by a large or irregularly shaped pumpkin. You can easily break down a big pumpkin by cutting it in half, saving the seeds, and slicing the halves into thick strips. Roasting a pumpkin is simple and will yield a bounty of sweet flesh with limitless uses. The toasted seeds are one of the signature treats of autumn. Pumpkin risotto is a perfect Thanksgiving dish for your vegetarian friends, or just an elegant side on your Thanksgiving table. This risotto is rich, creamy, and savory—a great use for your roasted pumpkin.

You can also use your roasted pumpkin to make cinnamon rolls. These decadent treats will become an instant family favorite, your newest Thanksgiving tradition for breakfast. Get your fall pumpkins now, while you can. Look for heirloom varieties from local farms: New England Sugar Pie, Rouge Vif D’ Etampes, Connecticut Field Pumpkin, or the lovely Galeux D’ Eysines. You can also use any winter squash in these recipes, from Butternut to Acorn to Blue Hubbard. When you serve pumpkin at your Thanksgiving table, you are celebrating one of the most cherished traditions in America, and with these recipes, you will love your pumpkins more than ever. We want to extend a thank you to Wildflowers, for providing us with the beautiful table setting.
2 ¼ tsp (1 packet) instant yeast 1 cup roasted pumpkin, pureed 3 ½ cups all-purpose flour 1 tsp pumpkin spice ½ tsp cinnamon ¼ tsp salt Ingredients for Filling: 1 cup brown sugar 1/3 cup roasted pumpkin, pureed 2 tbsp melted butter 2 tsp cinnamon Ingredients for frosting: 4 oz cream cheese at room temperature 1 cup confectioner’s sugar 2 tbsp whole milk 1 tsp vanilla extract Pinch salt Directions: Combine milk, butter, and sugar in a large saucepan over medium heat until warm to the touch, about 120°F. Add yeast to milk mixture and stir to combine. Let stand for 5 minutes, until foamy. Stir pumpkin into yeast starter. In a separate bowl, combine dry ingredients. Stir dry ingredients into yeast mixture until well incorporated. Knead dough by hand or in a standing mixer for about 7 minutes, until a smooth elastic dough is formed. Let dough sit in a warm place for at least an hour, or until doubled in size.
Roasted Pumpkin Cook time: About 35-45 minutes Ingredients:
In a medium-sized bowl, combine ingredients for the filling. Once dough has doubled, tip it onto a floured work surface. Roll dough out to about a 12”x15” rectangle. Brush on filling until entire surface is covered. Starting with the longer side, roll the dough tightly, in the style of a jelly roll. Using dental floss, cut the roll into 9-12 sections. Place pieces cut side down into a 9x13” pan and cover with a kitchen towel. Let proof an additional 30-60 minutes.
Pumpkin or large squash (3-20 lbs) Directions: Preheat oven to 375°F. Cut the pumpkin or squash in half and scrape out the seeds and pith. Reserve seeds for roasting at a later time. If pumpkin is larger than 5 lbs, cut into eighths to reduce cooking time. Place squash flesh side down on a baking sheet and add 1 cup of water to the bottom of the pan. Check squash after 20 minutes and add more water if necessary. Cook until fork tender.
Pumpkin Risotto Serves: 4 Prep time: 15 minutes Cook time: 30 minutes Ingredients: 2 tbsp olive oil 2 shallots, chopped 2 cloves garlic, minced 1 ½ cups aborino rice ½ cup dry white wine (recommend: vermouth or your favorite pino grigio) 4-5 cups homemade or high-quality chicken or vegetable broth 1 tsp salt ½ tsp freshly ground black pepper ½ tsp poultry seasoning ¼ tsp nutmeg (or about 4 grates of a fresh nutmeg) 1 lb roasted pumpkin, diced 1 cup grated Pecorino cheese Directions: In a medium saucepan, heat stock until it begins to simmer. Reduce heat so that stock remains hot.
In a large, cast-iron or heavy-bottomed pan, heat olive oil over medium heat. Sauté shallots for 2 minutes. Add garlic and rice, stirring frequently, and sauté until the rice begins to release a nutty flavor. Add wine to the pan, stirring to incorporate the ingredients until the liquid has mostly absorbed (for about 5 minutes). Ladle in ½ cup broth, stirring with a non-reactive spoon until moisture is absorbed. Add another ½ cup broth and repeat process, letting broth become absorbed until rice becomes creamy but rice still has a small amount of bite to it. Remove from heat and stir in remaining ingredients. Serve 1/3 cup for a side portion, and 2/3 cup for a meal portion.
Pumpkin Cinnamon Rolls Makes: 1 dozen rolls Prep time:: 20 minutes Inactive prep time: 1 ½ hours Cook time: 25 minutes Ingredients for dough: 1 cup whole milk 6 tbsp butter 1/3 cup sugar

Remove towel and bake for 20-25 minutes, or until the center has set. Cool on a wire rack Combine ingredients for frosting in a large bowl or standing mixer and beat until smooth.
Roasted Pumpkin Seeds Prep time: 5 minutes Cook time: 40 minutes Ingredients: Pumpkin seeds and/or large squash seeds, rinsed with pith removed 1-2 tbsp olive oil Sea salt to taste Directions: Preheat oven to 250°F. Spread seeds evenly on a baking sheet. Drizzle seeds with olive oil and sprinkle generously with salt. Hand toss to distribute seasoning. Cook for about 40 minutes, stirring the seeds every ten minutes to prevent burning. Seeds are done when they are golden brown, crisp, and have a nutty fragrance.

Originally serving as a taste of familiarity, it has since grown into a breakfast and lunch favorite for a lot of families on the South Side. While they are most known for their strudels, they have recently introduced a new mouthwatering special that is quickly becoming one of their best sellers. The aptly named “The Big One” is an explosion of delicious flavors within in giant bun. The inside of the bun consists of roasted chicken, sautéed tomatoes, bell peppers, onions, mushrooms, Swiss cheese, and gravy. This unique sandwich boasts of

a perfectly crafted mix of different types of savory tastes that will leave your mouth watering. Another must-try on their menu is their schnitzel. Schnitzel, which is breaded pork fried on a flat griddle, is one of Germany’s signature meals—and Strudel Mania definitely does it justice. The outside is crisped to perfection, with a little sweetness to the breading. The inside is tender and juicy. Lemon slices are served on the side for an additional twist of citrus flavors. At Strudel Mania, people come for the strudel and stay for, well, pretty much everything else!

n more ways than one, 2017 has been the year of resurgence for Downtown Corpus Christi. With exciting new businesses opening up, more events taking place, and just a general overall change in look, downtown has managed to revamp its style and image successfully. As the year creeps up to a close, a hip new spot is joining in on the fun, with a concept that is sure to solidify their place in the revival of downtown. Insert The Gold Fish. Transforming the old Peerless Cleaners location on the corner of Taylor and Mesquite Street into an outdoor biergarten style bar, The Gold Fish converged old-time, hometown culture and the new age of locality into one beautiful location. The bar sets out to serve the best drinks and help bring life back to the area. The owners are Robert Cooper, Jessica Gignac, and Justin Gainan, and they sure do make the perfect trio. (Cooper owns a bar in the Republic of Georgia and Gignac is the owner of local favorite, Eleanor’s Coffee Bar + Market), the masterminds of The Gold Fish are no stranger to running successful businesses. From the beginning, they had a vision for the location and specifically wanted it to be downtown. They chose this particular building for its character and history—two things they knew they wanted The Gold Fish to have. The building, which has been around since the 1930s, served as a gas station back then. Besides some infrastructure work and some accent marks around the place, they kept the building the same. Adding a ton of lush greenery, all-glass French doors, and a whole lot of natural light to it, they’ve created a rustic and old-school feel that can’t be found in most places in town. They will also have an area in their outdoor patio for local music acts to perform.

“The building is a time capsule. Who doesn’t want to go back in time for a night?” Cooper mused. The Gold Fish, a full service bar, serves all types of beer, wine, classic cocktails, and some tasty drinks that are completely new to the Coastal Bend— drink spinoffs with influences from all over the world, like Mexico and Eastern Germany. Jacob McClain, one of Corpus Christi’s bests behind the bar and also The Gold Fish’s general manager, created their unique and delicious menu. As if that weren’t enticing enough, all their ingredients are also fresh, high quality, and locally sourced whenever possible—something the owners all envisioned to do early on in the process. With a concept grounded on history and character and drinks designed to spotlight the best our city has to offer, The Gold Fish is both a welcomed and relaxing breath of fresh air.

History | Looking Back

here’s no segregation here. There are troops who fought on both sides. Men, women, children, babies. Slaves and their owners. The rich and the poor. All together, for eternity.
Old Bayview Cemetery began with soldiers who died while half of the U.S. Army was occupying Corpus Christi in 1845. While no battle was fought here, this land was chosen as a burial ground, overlooking Nueces Bay and Corpus Christi Bay, for men who fell to disease and accidents, including a steamboat explosion. When the soldiers left, the cemetery became the community burial ground, with no concern for race or creed of those laid within. Walking through Old Bayview’s three and a half acres is a walk through the

foundations on which Corpus Christi stands. They were from over a dozen countries and 26 different states. They served as mayors, sheriffs, teachers, and postmasters. They fought in six different wars, dating all the way back to the War of 1812. They fell to the dangers of frontier life, including Yellow Fever, smallpox, tropical storms, and raids by bandits…while others survived until a ripe old age without the help of 21st century medicine. Cemeteries aren’t meant to be uncomfortable or scary. They’re welcoming places of remembrance for all those who went before us. On November 4th from 10am-2pm, all are welcome to hear these rich stories of Corpus Christi’s beginnings told by dozens of storytellers at the cemetery. Or stop by anytime. Their stories are waiting..
