Flavored With Memories The sharing of a recipe can mean so much more than simply making a meal. When I think about my Great Grandma Rohde’s recipe box, currently in the possession of my aunt, I think about not just dozens of cards with ingredients and instructions, but dozens of shared memories of making and eating dishes from those little cards adorned with scalloped edges and my great-grandmother’s cursive. Around this time of year, I am reminded of those sweet memories when my husband and I make Pfeffernüse, one of Great Grandma Rohde’s all-time specialties. That idea inspired this month’s cover feature, “South Texas Classic Recipes.” Just in time for the holiday season — a time when nostalgia and food are almost synonymous — we called in local recipe developers Kayla Butts and Vianney Rodriguez to share six quintessentially South Texas recipes. There was truly no one better for the job, as both women have been preparing and sharing recipes in this region for quite some time. The time-honored dishes they have prepared, from King Ranch Chicken Casserole to homemade pork tamales, serve as a beautiful

reminder of the kitchens that came before us. Though they might not all have been invented here, each dish surely has a special place in every South Texan’s heart. To this day, though my family is scattered across the country and Great Grandma Rohde passed long ago, we all continue the special tradition of homemade Pfeffernüse in our own kitchens. Just as Butts and Rodriguez added their own twists to each recipe in this month’s cover feature beginning on page 38, each generation of my family has seemingly added their own touch to my great-grandmother’s original recipe. Staying true to the theme of good food shared with good people, we’ve gathered a list of 14 mobile eateries showcasing a wide range of innovative and classic flavors in the Coastal Bend. Starting on page 52, Managing Editor Alexa Rodriguez provides just a taste of the tantalizing local food truck scene. Also inside this month’s issue, readers will hear from Corpus Christi native and fashion designer Nicó Lee as they reflect on their recent New York Fashion Week debut (pg. 14), gain inspiration for creating a swoon-worthy holiday table setting (pg. 64), savor the flavors of Rockport’s newest fine dining restaurant rooted in familial dreams and serving Spanish-inspired seafood dishes (pg. 76), learn the origin story of local interview show “South Texas Leaders” as its fifth season airs on PBS (pg. 134) and so much more. As we enter a season of giving thanks, I’d like to share a bit of gratitude for our Coastal Bend community. The Bend’s 10-year anniversary is quickly approaching come April 2024, and it serves as an excellent reminder to pause, look around and take stock of all the reasons we’re thankful for the way you continue to embrace and support our steadfast dream of sharing your stories.

When asked to think back on the origins of their affinity for fashion and design, Nicó Lee reflects on their roots. “Growing up in South Texas, like many young brown boys and girls who admire beauty, my first memory of falling in love with fashion was centered on Selena,” the founder and creative director of the brand NICÓ shared. “I always felt she embodied the essence of a perfect woman.” Lee’s sights were set on building a fashion brand in their early teen years. With a fierce vision, supportive parents encouraging the pursuit of dreams and an older sister always willing to stand in as a dress model, the young artist began forging their own path. Now, as the designer approaches their 10th anniversary of working in the industry, we catch up with the Corpus Christi native to discuss their recent New York Fashion Week (NYFW) debut, how South Texas continues to inspire their designs and more. 14 The Bend

KC: What was the inspiration behind the collection? NL: I aimed to create a collection that, first and foremost, embodied the core of the brand. If NYFW audiences were seeing the line for the first time, I wanted them to grasp the brand’s visual essence. Coming from humble beginnings, like I did, often means you make them yourself. This collection serves as a testament to what emerges when femininity is stripped away and how one might discover and piece it back in fragments. In “La Doña de la Casa,” my vision was garments appearing as though we’ve gathered the finest fabric fragments, assembling them on bodies to step into a world of glamour. I also wanted to make it the essence of South Texas. The fabric shreds look as if they’ve been grazed by mesquite thorns, and I opted for lighter materials to counter the region’s humidity. It’s an artistic representation of femininity, viewed through the lens of a South Texas native. KC: It seems as though South Texas is still very much a part of your inspiration. How are your roots incorporated into the brand as a whole? NL: I always envision a specific woman when I design, and it’s always a South Texas woman. Each of my designs displays a balance. Like South Texas, [my designs are] delicate, yet gritty; tough, yet gentle;

KC: You made your NYFW debut with your SS24 collection titled “La Doña de la Casa.” What was that experience like? NL: It was a wonderful experience for my team and me. Our debut felt like an introduction, giving a glimpse of what our brand’s future seasons will look like. There were learning moments, both positive and negative. However, I’m glad it took place and pleased with how well it was received. My focus was making sure the garments looked amazing and the team did amazing, and we achieved both despite the chaos and challenges during the process — like with all productions, things can go awry. Yet, something beautiful emerges from the chaos, much like a diamond under pressure. I feel proud and confident in my team; they’re not afraid of challenges and genuinely support the brand’s journey and legacy. Seeing their dedication and effort was truly special.


feminine, yet masculine; hurtful, but kind. The designs relay that same message — a gown might be crafted from the most delicate chiffon but feature raw hems and unfinished flowers. Or a luxurious silk evening gown might showcase exposed boning, reminiscent of getting caught on a mesquite thorn. All these facets of South Texas blend into the brand because South Texas is just that: It’s a juxtaposition of ideas. And I think the area I grew up in is just as much of a design factor as the fabrics I use. KC: Okay, you first started your brand in 2017. What do you think 2017 Nicó would say about where you and your brand are today? NL: I frequently discuss my journey with my best friend, Frankie. Frankie often provides a grounded perspective, offers solace during challenging times and encourages me during moments of doubt. Reflecting on a recent chat before Fashion Week, he made me realize that I’ve grown into the person the younger me needed. So, I believe that the 2017 Nicó would have greatly benefited from the guidance and experience of 2023 Nicó. I think they would be very excited about our progress and how their dreams have come to fruition. It’s full circle to compare my aspirations at 25 to those that younger me had. KC: Can you give us a sneak peek into what’s next for your brand? NL: We’re in the process of planning a hometown show in Corpus, and it’s been about five years since our last runway event. Now, as I near the 10th year of working on my craft, doing Fashion Week and then celebrating with a show in Corpus, where everything started, felt poetic. Of course, we’re always working on our next collections, and we’re always a season ahead in our planning. We hope for more fashion shows and perhaps another moment at NYFW. A Face-to-Face Experience CARING FOR THE CAREGIVER WITH RESPITE, RESOURCES, EDUCATION AND COMMUNITY BY: DEBRA YOUNG HATCH

C

aring for someone suffering from dementia is challenging, complex and often heartbreaking on many levels. And in many cases, the caregiver ends up needing more care than the patient themselves — a fact that psychiatrist Dr. Nestor Praderio, founder of the local non-profit Face to Face, knows all too well. “Your family member or friend has begun to forget how to do daily tasks,” explained Praderio, “and by the flip of a coin, you as the daughter, son, sister, brother or friend have become their caregiver. You often don’t even realize you have slipped into that role; it is just what you do every day. Eventually, it becomes emotionally and physically exhausting, and completely overwhelming. That is why I started Face to Face: to support the caregiver.” Praderio, a native Argentinian who came to the U.S. in 1983 via a refugee program created during the Carter administration, has been a practicing psychiatrist in the Coastal Bend for over 30 years. Originally a surgeon in his home country, Praderio spent four years in a military concentration camp during Argentina’s Dirty War (1976-1983) before making his way to Corpus Christi in 1994. “When I arrived in Corpus Christi,” recalled Praderio, “having switched from being a surgeon to a psychiatrist and completing my residency at Yale University, I found a city with a beautiful bayfront, excellent physicians and a profound need to help dementia patients and their caregivers. Dementia is a devastating disease for the patient, the family and the caregivers — a disease for which there is currently no cure. All we can do right now is slow its progression.” With an aging population, the needs of Alzheimer’s patients and caregivers are expected to increase dramatically over the next 30 years. According to the Alzheimer’s Association, currently, there are 11.5 million family caregivers supporting an estimated 6 million U.S. citizens living with Alzheimer’s. Our mission at Face to Face is first to provide respite, education, support and resources for caregivers of family members with Alzheimer’s and other dementias in the Coastal Bend. hen I started “What Amy’s Eyeing,” formerly known as “At Home With ABK,” I had no idea where it would go or what I would end up enjoying most. What I did know is that I had a passion and I had to get it started no matter what. My passion stems from a desire to help others in any way that I can. As a former HR representative and teacher and current stay-at-home mom, everything I love revolves around people. For as long as I can remember, I have enjoyed creativity and all things fashion and beauty. I love fashion for the memories it can become. To me, finding pieces that are unique and work together is a true joy for many reasons. I love that pieces become memory-makers and that they can be worn during the most special times and passed down for generations. I knew I had to turn this passion into a platform where I could create fellowship with others and share my ideas in a way that I aspire to be positive, helpful and uplifting. What I mostly want you to take away is that if you have a passion, fight for it. Enable others to see you through what you do best and help others be confident in who they are through the passion you share with them. Encouraging each other through the highs and the lows of everyday life can help create lasting impressions that go far beyond your imagination. As a mom, it is very important to me that I am helping instill healthy habits for my children, and part of that is a healthy skincare routine. It has also been equally important to me that I am using high-quality beauty products and maintaining a healthy level of self-care. I also prioritize using SPF, drinking water, exercising and sleeping. Most days are busy, and even just 30 minutes of moving or getting outside can change the entire day.

hen Jo Ann Garza learned she had rheumatoid arthritis, she began exploring alternative approaches for healing that went beyond conventional Western medicine. She stumbled upon Pilates, a practice characterized by weight-bearing, controlled movements. After one class, she was convinced the human body possessed healing capabilities, inspiring her to pursue a career in teaching Pilates to share its transformative power with others. WHERE TO PLAY There is no shortage of things to do in Branson. In fact, one could attend a play, show, amusement park, adventure zone, museum, cave tour, etc. every single day for many months if not years without having to consider repeating an activity. To get the most out of Branson, we recommend carving out a full day for one or both of the major theme parks, White Water and Silver Dollar City, the latter of which remains a great American staple and wonderfully frozen in time. Every inch of its seven districts feels like an 1880s Ozark mountain town. The extensive rides (both thrilling and chilling), to the shows, to the dining stay faithful to the bluegrass heritage vibe. The highlight of the experience is the insane Marvel Cave, which takes the brave deeper into the earth than most people will ever go. Its history combined with its mind-blowing size is

truly unforgettable. As far as shows are concerned, longtime favorites include Dolly Parton’s Stampede, the Haygoods and several Hughes Brothers variety shows. We remain stunned by Sight and Sound’s Queen Esther, which features a mammoth of a three-wall interactive set design that broke records with its size and dazzles the audience with its costumes, songs and large selection of live animals. When filling the time, don’t forget to jump on one of the many blazing mountain coasters and ziplines.

WHERE TO EAT Fresh produce enthusiasts and vegans might be left longing after a few days in Branson. But what the city does boast are Americana buffets, fried food aplenty and roll-tossing experiences. Yes, a few restaurants will literally throw a yummy, hot-off-the-stove roll across the

restaurant into your open hands. The highlight of dining experiences included Little Hacienda, a bright and bustling Mexican restaurant with a modern and satisfying menu and creative and classic cocktail list, as well as Florentina’s Ristorante Italiano, which has lines out the door and constant waitlists for good reason. The traditional Italian options from the caesar salad to the lasagna are rich and flavorful.

WHERE TO DRINK Given that much of Branson is faith-based in some form, many of its experiences, both shows and parks, are dry. So those craving a wine or craft beer flight will have to deep dive. One of the most beautiful aspects of food is the history it can hold. One simple recipe card contains not just a list of ingredients and step-by-step instructions but a collection of memories from the kitchens that came before us. The sharing of recipes is so much more than making food to eat–it creates a tangible (and tasty) legacy to be passed from one generation to the next. Just in time for the holiday season – a time when nostalgia and food go hand-in-hand – we connected with local recipe developers Kayla Butts and Vianney Rodriguez to share six quintessentially South Texas recipes that have been served at dinner tables in this region for decades. From King Ranch Chicken to homemade pork tamales, Butts and Rodriguez gave their own contemporary twist to each recipe to bring these historic flavors into your modern-day kitchens, adding a touch of their own legacy and tradition.

KAYLA BUTTS

KING RANCH CHICKEN CASSEROLE Less than an hour’s drive from Corpus Christi, The King Ranch in Kingsville reigns as the largest ranch in the United States. The ranch is known for Brahman cattle, its famous running W brand and contributions to the community. What it does not claim, however, is any relation to the culinary dish of the same name. King Ranch Casserole became a South Texas potluck staple in the 1950s, when postWorld War II women embraced canned soup and microwaves for easier food preparation. The casserole recipe began to pop up in Junior League cookbooks and regional cooking contests, but no single individual has been credited with its creation. While its origin remains a mystery, the creamy comfort of King Ranch Casserole is undisputed. Our contemporary version skips the canned soup, but still saves time by using rotisserie chicken.

RECIPE

Serves 12 PREP TIME 35 MINS COOK TIME 30 MINS INGREDIENTS

1 prepared rotisserie chicken (about 4-5 cups) 1 stick (8 tbsp) unsalted butter 1 sweet yellow onion, diced 1 bell pepper, seeded and diced 1 poblano pepper, seeded and diced 1 tsp salt 4 cloves garlic 1 1/2 tsp chili powder 1 tsp cumin 6 tbsp all-purpose flour 1 cup sour cream 1 cup heavy whipping cream 14.5 oz can diced tomatoes 1 lime, juiced 1/2 cup fresh cilantro, chopped 12 corn tortillas 1 1/2 cups cheddar cheese, grated 1 1/2 cups Monterrey jack cheese, grated

DIRECTIONS

Preheat oven to 350°F. Shred chicken and reserve bones for broth or another use. Melt the butter in a large skillet over medium heat. Add onion, peppers and salt. Continue to cook, stirring frequently, until onions are translucent. Add garlic, chili powder and cumin and sauté for an additional minute. Spoon flour over mixture and cook for another 2-3 minutes, until flour begins to brown. Fold shredded chicken, sour cream, whipping cream, diced tomatoes, lime juice and cilantro into the onion mixture. Remove mixture from heat. Working in batches of 2-3 tortillas, tear the tortillas into 6-8 pieces. Place 1/3 of the torn tortillas in the bottom of a 9 x 13-inch casserole dish. Spread 1/3 of the chicken mixture evenly on top of the tortillas. Layer 1/3 of the grated cheeses on top of the chicken. Repeat the process two more times. Bake the casserole for 30 minutes, until the cheese is melted and the casserole filling is bubbling. Serve hot with additional sour cream, cilantro and lime wedges.

FRIED OYSTERS ROCKEFELLER Raw, steamed, grilled or Rockefeller, oysters have been a mainstay of the Coastal Bend’s food culture for centuries. Karankawa natives survived year-round on oysters and other shellfish. Fast forward a few hundred years and both bygone eateries like Ship Ahoy and current mainstays like Nolan’s feature fried oysters. Most regional fried oysters are dredged in a cornmeal batter, a notably Southern practice. Soaking oysters in buttermilk prior to dredging helps the batter adhere and diffuses bitter, metallic notes. Oysters Rockefeller is a classic oyster dish with an impressive presentation. The dish is based on a French preparation of escargot, and was created out of desperation during a snail shortage, but the haute couture hors d’oeuvres continue to pop up at parties and fundraisers over 100 years later. Combining the best of both worlds, this recipe swaps stale bread crumbs for a crispy fried oyster to top our spinachfilled oyster shells. Fried Oysters Rockefeller are a clever marriage of two local food darlings.

RECIPE

Yields 2 dozen Oysters PREP TIME 30 MINS COOK TIME 45 MINS INGREDIENTS

1 pint shucked, raw oysters 2 cups buttermilk 1 quart peanut or vegetable oil 1 cup self-rising flour 1 cup fine yellow cornmeal 1 tbsp creole seasoning 1 tsp salt 4 tbsp unsalted butter 1 shallot, minced 2 cloves garlic, minced 2 tbsp dry white wine 1/2 tsp salt 10 oz frozen spinach, thawed and strained 1 cup heavy cream 1/2 cup pecorino romano cheese 24 empty oyster shells, scrubbed clean For serving: rock salt, hot sauce and lemon wedges

DIRECTIONS

Preheat oven to 375°F. Place oysters in a colander and rinse with water to remove any sand. Transfer strained oysters to a large bowl and cover with buttermilk. Let oysters rest in the buttermilk for 15 minutes while you continue on with the next steps. Preheat oil to 370°F in a large, deep-sided skillet or deep fryer. In a wide, shallow bowl, combine flour, cornmeal, creole seasoning and salt and whisk until combined. In a large sauté pan, melt butter over medium heat. Sauté shallots for 3 minutes, stirring frequently to ensure even cooking and prevent burning. Add garlic and cook an additional 30 seconds. Stir white wine, salt, spinach, cream and romano cheese into the mixture. Bring to a boil then remove from heat. Spread oyster shells, open side facing up, on 1-2 rimmed sheet pans. Spoon 1 heaping tablespoon of the prepared spinach mixture into each oyster shell. Bake for 15 minutes. Now, working with one oyster at a time, dredge the oysters in the prepared cornmeal mixture. Fry 5-7 oysters at a time, making sure to adjust the heat to maintain the oil temperature during the cooking process. Fry each batch of oysters for about 3 minutes, until golden brown. Transfer fried oysters to a clean cooling rack with a paper-towel-lined baking sheet under it to catch any oil drippings. To serve, spread a bed of rock salt on your serving platter. Arrange the spinach-filled oyster shells on top of the rock salt bedding. Top each oyster shell with a fried oyster. Serve immediately, with lemon wedges and hot sauce.

VIANNEY RODRIGUEZ

FROZEN MARGARTIAS The first documented margarita recipe comes from a Juarez-native bartender in El Paso in 1942. It’s possible this is the drink that truly put tequila on the map, as the agave-based spirit has been imported from Mexico in mass quantities ever since. Though Pancho Morales originally created the drink named for his wife on the rocks, we South Texans have been enjoying batches of the frozen version for decades, and it’s now practically synonymous with happy hour around these parts. Not to be confused with the syrupy, artificialtasting kind, this recipe uses only the best tequila blanco, fresh lime juice, Cointreau and a dash of agave nectar for sweetness. The tangy beverage’s frozen form makes it all the more relaxing to sip on any time of year when hosting a get-together with loved ones. This recipe is for margarita purists everywhere, which just might be everyone in South Texas.

RECIPE

Serves 4 PREP TIME 10 MINS INGREDIENTS

1 cup tequila blanco 1 cup freshly squeezed lime juice 1/2 cup Cointreau or triple sec 2 tablespoons agave 10 cups ice For serving: kosher salt 1 lime directions

Spread salt on plate. Zest lime over salt, stir to combine. Slice zested lime in half, run around glasses and dip them into prepared salt. To a blender add tequila, lime juice, Cointreau or triple sec and agave. Add ice to fill blender. Blend until slushy consistency, adding more ice if needed. Pour into prepared glasses, sprinkle with additional lime salt, garnish with lime slice and serve.

CHILE CON QUESO

What better to serve with the perfect batch of frozen margaritas than a delicious dip? This chile con queso from Sweet Life Bake is sure to be a match made in heaven.

INGREDIENTS

1/2 medium onion, finely diced 1/2 poblano, finely diced (remove seeds for less heat) 2 tablespoons of butter 2 tablespoons of flour 1 to 2 cups of milk 6 cups of shredded cheese (I use queso Chihuahua) 15 oz diced tomatoes, drained 1/2 cup of cilantro, chopped Salt and pepper Optional: 12 oz pkg of chorizo

In a large saucepan over medium-high heat, cook chorizo until fully cooked (if using). With a slotted spoon remove cooked chorizo and place on paper lined plate to drain. Wipe saucepan clean with a paper towel, return pan to medium-high heat and add butter. Add onions and poblano and cook until translucent, about 5 minutes. Add flour to vegetables and stir to combine. Cook an additional 45 seconds. Add the milk and continue to cook on medium, whisking until sauce is thick, about five minutes. Reduce heat and slowly begin adding cheese to sauce. Stir to combine until the cheese melts and repeat until all cheese is added. Stir in tomatoes and cooked chorizo. Season with salt and pepper. Garnish with cilantro. If queso thickens add milk as needed until desired consistency. Serve warm with tortilla chips.

POBLANO SOUP In 1974, the El Paso Junior League published a recipe for Green Chile Chowder in its cookbook Seasoned with Sun, with a note that people would buy the cookbook for that recipe alone. Now El Paso might not be in the Coastal Bend, but the reach of poblano peppers is vast across South Texas regions, as they grow in abundance in a warm climate. Locally, plenty of people are familiar with the famed poblano soup from Nuevo Cafe, a restaurant that has since shut its doors. Although that recipe is under lock and key and the Junior League recipe added potatoes to contribute to the thick, creamy texture, this recipe keeps it simple by combining blistered poblanos with aromatics for flavor, heavy cream to temper the heat and tortilla strips and queso panela for a variety of flavorful textures.

RECIPE

Serves 6 PREP TIME 15-20 MINS COOK TIME 20 MINS INGREDIENTS

4 poblano peppers 4 tablespoons butter 1 onion, chopped 4 garlic cloves, minced 3 tablespoons flour 4 cups chicken broth 2 teaspoons Mexican oregano 1 teaspoon cumin 2 teaspoons salt 1 teaspoon freshly ground black pepper 1/4 cup heavy cream For the garnish: Tortilla strips Cubed queso panela Mexican crema (or heavy cream) Hot sauce Freshly ground black pepper

DIRECTIONS

Preheat broiler. Place poblanos on a baking sheet, broil for 5 minutes, turn and broil an additional 5 minutes, or until skin is charred on both sides. Remove from oven, cover with foil or a kitchen towel. Allow to steam for 5 minutes. Peel or rub off charred skin from poblanos. Remove stems and seeds and roughly chop. Heat butter in a saucepan over medium-high heat. Add onion, sauté until light and translucent then add garlic, continue to sauté an additional minute. Stir in flour, cook an additional minute stirring continuously. Add broth, oregano, cumin, salt, pepper and poblanos. Reduce heat and simmer for 5 minutes. Carefully ladle into blender. Blend until smooth. Return to the saucepan, stir in heavy cream and simmer for 5-10 minutes. Taste, adjust seasoning, serve warm garnished with tortilla chips and queso panela.

TEXAS SHEET CAKE WITH PECANS The most popular plus-one at housewarmings, bunco parties and funerals is the Texas Sheet Cake. The rich chocolate dessert became a fixture at get-togethers after making its debut in The Galveston Daily News in 1936. “Texas Funeral Cake” assumed its ominous moniker thanks to decades of prominence at wakes and memorial services in the Lone Star State. Baked in a jelly roll pan, Texas Sheet Cake is thinner than most sponges and takes less time to prepare. The sticky frosting is usually studded with toasted pecans akin to German chocolate cake. To bring a contemporary twist to an old favorite, this recipe adds deeper flavor notes with coffee and brown butter, and a dash of cinnamon and Mexican vanilla pay homage to our area’s culture. Equally delicious served warm or at room temperature the next day, Texas Sheet Cake is good anytime, all the time.

RECIPE

Yields one 10x 15"Cake PREP TIME 20 MINS COOK TIME 15-20 MINS INGREDIENTS

Sponge: 2 cups all-purpose flour 1 cup granulated sugar 1 cup brown sugar 1 1/2 tsp baking soda 1/2 tsp salt 1/4 tsp cinnamon 2 eggs 1/2 cup sour cream 2 tsp Mexican vanilla extract 1 cup butter 1 cup brewed coffee 1/2 cup cocoa powder, plus extra for dusting pan Icing: 1/2 cup butter, cubed 8 oz semisweet chocolate 6 tbsp heavy whipping cream 1 cup confectioner’s sugar, sifted 1 tsp Mexican vanilla extract 1/4 tsp salt Topping: 1 cup chopped pecans

DIRECTIONS

Preheat oven to 350°F. Butter a 10x15 inch jelly roll pan and dust it with sifted cocoa powder. Toast pecans in a skillet over medium heat for 3-4 minutes, stirring constantly. For sponge: Whisk flour, sugars, baking soda, salt and cinnamon in a large bowl until combined. In another bowl, beat eggs, sour cream and vanilla extract until mixed. Melt butter in a saucepan over medium heat. Stir in coffee and cocoa powder and bring to a boil. Remove mixture from heat and whisk into wet ingredients. Add egg mixture to batter and whisk until smooth. Transfer the batter to the prepared pan and level off with a spatula. Bake for 15-20 minutes, until the center of the cake is set. For icing: Meanwhile, prepare the icing by cooking butter in a small saucepan over medium heat. Stirring occasionally, cook the butter until it develops brown sediment at the bottom of the pan and a nutty flavor. Remove butter from the heat and whisk in the remaining icing ingredients. The final product should be a thin icing, more like ganache than buttercream. Pour icing over warm cake. Use a spatula to evenly distribute the icing over the entire cake surface. Dot the cake with toasted pecan pieces and serve warm or at room temperature.

HOMEMADE PORK TAMALES Though the history is tricky to nail down due to the lack of written words in prehistoric times, cave drawings of women making tamales can be traced back to the Toltecs as early as 950 A.D. Their delicious preparation has truly stood the test of time to make tamales a South Texas staple in modern-day kitchens, especially around the holidays. They exude warmth in both spirit and flavor. Perhaps it is the inventive nature of the dish, which uses everything from the corn husk to the kernels, or the reward of enjoying a long labor of love after slow-cooking the pork and delicately enveloping it in the masa, that makes it a meal embraced by the masses. Regardless, this tamale recipe is a classic savory version using simple, local ingredients and timeless techniques.

RECIPE

Yields 4-5 Dozen PREP TIME 4 HRS 20 MINS COOK TIME 2 HRS 30 MINS INGREDIENTS

1 package dried corn husks For chile sauce: 5 dried ancho chiles, stems and seeds removed 2 garlic cloves 1/2 teaspoon ground cumin 2 cups reserved water from boiling chiles 2 tablespoons pork lard For Pork: 2 1/2 pounds boneless pork butt 1 bay leaf 4 garlic cloves 2 teaspoons salt 2 teaspoons ground pepper 1 teaspoon ground cumin 1 cup red chile sauce For Masa: 4 cups masa harina (Maseca) 1 teaspoon salt 1 tablespoon baking powder 1 1/4 cups lard 2 1/2 to 3 cups pork broth 1/4 cups red chile sauce

DIRECTIONS

For Corn Husks: Soak dried corn husks in a bowl of hot water. Use a molcajete to keep them submerged for at least 2 hours or overnight. For Chile Sauce: In a large saucepan, place chiles and cover with water. Boil until softened, about 10 minutes. Drain, reserve the water. Place the chiles, garlic cloves, ground cumin and 2 cups reserved cooking water into blender. Blend until smooth. Heat lard in a saucepan over medium high heat, add chile sauce, reduce heat to low and cook over low heat for 10 minutes, stirring occasionally. Remove from heat, reserve chile sauce for masa and pork. For Pork: Place pork butt in stock pot. Add the bay leaf, garlic, salt, pepper and cumin. Cover with water. Bring to a boil, then reduce heat and simmer for 2-3 hours, or until pork is fork tender. Remove pork from the broth, reserving broth. Shred pork and mix with 1 cup of the chile sauce. For Masa: Mix masa, salt, baking powder, lard and 2 cups pork broth until the batter is light and fluffy, adding additional broth if needed. Stir in chile sauce, mix well. To Assemble Tamales: Place a corn husk smooth side up on the palm of your hand. Place a heaping tablespoon of masa onto middle of husk. Using the back of spoon, spread masa over husk creating a rectangle shape, leaving the top end empty. Add heaping spoon of pork filling over masa. Fold one side of the corn husk over the filling, then fold in the other long side, overlapping the first. Fold the bottom of the husk up. Place on baking sheet, cover with damp paper towels. Repeat this process until all tamales are assembled. Prepare steamer: Fill bottom of the steamer with water, then cover with steamer insert. Place the tamales standing upright, with their open end up, leaning tamales against each other so they do not fall over. Place leftover soaked corn husk over tamales and cover. Bring to a boil, reduce heat and simmer for 2-2 1/2 hours, or until tamales begin to pull away from husks, adding additional water if needed. estled in the beachside community of Port Aransas, where the gentle lull of the Gulf of Mexico meets the vibrant spirit of coastal living, is the vacation home of Yvonne “Bonnie” Garcia. When approaching the entrance of Garcia’s home, an architecture enthusiast might recognize notes of Philadelphia’s famed Vanna Venturi House with the leading lines in the sloped rooves, as this lovely home aims to celebrate mid-century and postmodern detail. As you step into Garcia’s abode, it’s difficult not to notice the architectural inspiration from an era of nostalgic design with traditional coastal accents. Especially notable are the wide floor plate accentuating its placement on the site, expansive windows lining the public areas and vaulted ceilings to create a space of grandeur.

The heart of the house is the open concept living and dining area, with a striking aqua kitchen delineated with a wall to provide some privacy. The living room offers a welcoming space where families can create lasting memories. The living room, adorned with furniture plucked from estate sales, whispers of a time when “retro cool” was the name of the game. Every piece, from the lamps to the side chairs, has been lovingly curated to pay homage to that mid-century/ post-modern vibe. Garcia’s favorite finds? Unique shelving units and side tables, their original stains transformed with a fresh coat of white paint. It’s as if the past has been transported into the present and feels like home. However, Garcia’s passion for design goes beyond the curation of furniture. She enjoys making

unique spaces with the help of striking color palettes. Recognizing most coastal homes tend to lean toward warm pastels and traditional coastal hues, Garcia said she wanted to “pump up the volume on traditional beachy colors” and provide an eclectic selection. “The ambiance I wanted to create can best be described as ‘Retro Funky Coastal Cool,’” she said. Bright aqua takes center stage on the front door and kitchen. Greens, corals and sunny yellows burst forth as accent walls, driving each bedroom’s choice of furnishings and decorative touches. Garcia demonstrates her desire to make each room distinct as a palpable scheme highlights her intentionality with her home. “I’m a very visual person, so I take each room and create mood boards for each where it is laid in

selected colors, furniture options and decorative items at times tied to a theme,” Garcia said. Her home is a testament to her passion for design and her innate ability to blend the past with the present in a truly captivating way. “Retro Funky Coastal Cool” indeed, her house is a vibrant canvas where fun and family thrive and where every corner provides an unrivaled experience. But what’s a house without the perfect location? Garcia’s home sits on a double corner lot, a mere stone’s throw from the beach, with quick access to restaurants, boutiques and all the necessities of life. A Coastal Bend Fall Favorite PLANTING, HARVESTING AND USING CABBAGE FROM YOUR FALL GARDEN BY: NICK OTTENSMAN

A

s the intense heat of the summer winds down, it’s now time to plant your fall garden. This is an especially welcome change of seasons, as the Coastal Bend saw record temperatures this summer with little rain to offer relief. Cabbage is a popular choice for fall gardens in the Coastal Bend region. There are several varieties that do well here, with the Copenhagen variety among the most popular. One of the easiest ways to use your autumn harvest is to make a batch of sauerkraut. You will need a large bowl, a mason jar, an airlock lid and a mallet. Ingredients include cabbage, sea salt and — if you like — caraway seeds. Directions: 1. Chop cabbage into thin strips and place into a large bowl. 2. Add salt at approximately 1.5 tbsp per pound of cabbage and mix together. 3. Pound cabbage to release the juice and let sit for at least 1 hour. 4. Add caraway seeds (approximately 1 tbsp per 3 lbs. of cabbage). 5. Pack cabbage into mason jars about 2/3 full, making sure the chopped cabbage is completely submerged in the brine. 6. Place airlock lid on the jar and store in a cool, dark place. 7. Taste sauerkraut weekly or as often as you would like to measure against your desired texture and level of tanginess. 8. If extra brine is needed, mix 2 tsp of salt in 1/2 cup of water and add so the cabbage is completely submerged.

Early November is the best time to plant cabbage in the Coastal Bend region. Choose a spot in your garden that receives full sun in well-drained and heavily composted soil. Space approximately 12-18” and water with a drip line when possible to ensure deep root growth. Your cabbage should be ready to harvest at around 70 days. Rabbits and deer love fall gardens, especially cabbage, so be mindful of these critters and make sure to secure your produce.

The variety of cabbage that you choose to grow will determine when to harvest, but it will generally be anywhere from two to three months from the time you plant. Cabbage can be stored in the refrigerator for up to two weeks when wrapped in plastic. Those out there with access to a root cellar, or who are able to mimic the environment of one, can store cabbage for up to three months.

Fresh, raw cabbage offers the expected healthy benefits of eating leafy greens. However, when you add in the fermentation process, it becomes a powerhouse superfood. Consuming sauerkraut in moderation will add fiber to assist with digestion and plenty of probiotics to benefit your overall gut health. It’s also low in calories and high in fiber, leaving you feeling full longer.

Themed signature drinks also fit seamlessly into the horror-inspired brand identity, and the couple’s process for menu curation perfectly marries unique flavor, a hint of nostalgia and a sprinkle of spookiness. ara Humpal is a vivacious 22-year-old who lights up the room. Like many college grads, Humpal opted to move back to her hometown after receiving her bachelor’s degree. But she has an important distinction from most of her peers: She’s the owner and operator of Gabriela’s Seafood + Tapas, the latest restaurant sensation bringing Spanish-inspired tapas to the Rockport area. Humpal didn’t set out to be a restaurateur. She was following in her father’s footsteps by studying physical therapy when she realized she was meant to forge her own path. Throughout the process of opening a restaurant, she tried to channel her mother’s style and joie de vivre. Gabriela Humpal, the restaurant’s namesake, passed away when Sara was only 11 years old. The feathers that adorn the walls of Gabriela’s and appear in its logo pay homage to the nickname Humpal’s mom gave her as a young girl, “Plumita.” Gabriela talked about opening up her own place before she passed; now, over a decade later, Humpal has brought that dream to life in the form of Rockport’s newest eatery centered around creating memorable experiences with loved ones. The charming boathouse was previously home to the popular restaurant GLOW; Humpal has transformed the space to reflect a 76 The Bend

fine dining experience and expanded the dining room overlooking the bay. She imagines the space will be a unique venue for parties, weddings and events. The second story has retractable blinds to let in the breeze and take advantage of the beautiful views of Little Bay, and Humpal anticipates that an already planned expansion, which will increase the restaurant’s capacity to 100+ diners, will be completed by the end of the year. As for the food, Chef Adam Gonzalez has created a collective menu of fusion dishes that celebrate local seafood and explosive flavor. Chef Gonzalez works with local seafood vendor Alby’s to provide fresh seafood for his chili-infused shrimp and decadent coconut curry mussels. “I wanted to lean toward healthy options that are also delicious,” Humpal


said as she reflected on narrowing down the menu. Her personal favorite is the Ahi Tuna Tostada, made from sushi-grade tuna marinated and topped with avocado, pickled red onions, jalapenos and spicy mayo on a crisp tortilla. The Ahi Tuna Watermelon salad is a refreshing plate, balanced with sweet watermelon and umami tuna on a bed of watercress. And the Miguelitos, featuring Spanish puff pastry filled with creamy goat cheese whipped with strawberry puree, is also a must-have. Gabriela’s is quickly becoming the talk of the town. After enjoying their meal, patrons frequently approach Humpal with words of congratulations and thanks. She teared up as she recalled their often-repeated words: “Your mom would be so proud of you.”

Higher Education Texas A&M University-Corpus Christi Islanders Athletics enters the 2023-24 season riding a wave of momentum, following a historic 2022-23 year. Along with a team of producers at local public radio station KEDT, Averyt sought to provide a different medium of storytelling, holding hopes of cultivating a new sense of empathetic listening in local media. Originally the brainchild of KEDT producers Don Dunlap and Jeff Felts, “South Texas Leaders,” now in its fifth season, was always a vision of programming with Averyt ideally at the helm. “I had served on the KEDT Board and it’s a small town when it comes to media, so we all knew each other,” Averyt said, revisiting the first conversations on what was then an aspirational concept for programming. “They asked me if I'd be willing to host a show on leadership.” Between balancing a full-time job as an editor at the Caller-Times and raising two young children, Averyt passed on the hosting gig. Nearly a decade later, the stars would align anyway. A five-camera studio production, “South Texas Leaders” is a traditional, no-frills interview-focused program centered on conversations between Averyt and various community figures who create a positive impact in and around the Coastal Bend. in, you’ll find Averyt seated across from her guest against a black backdrop, distraction-free and designed to lend focus to the subjects themselves as they delve deep into what makes an individual a leader. While for some, this might mean where they went to university or where they began their careers, for Averyt often it means asking about family figures who brought leaders to where they are, friendships and ideas that have sustained them or even moments of doubt that brought a change in perspective. “We want it to feel real,” Averyt said of the experience conducting these in-depth interviews, spanning over 60 guests since the pilot in 2019. “As local journalism has changed, we’re filling the gap of extended storytelling. We try to pick leaders who might surprise you a little bit. I want to tell the viewers that a leader doesn’t fit a certain cookie-cutter mold.” The list of guests has run the gamut from elected officials to nonprofit leaders to educators of all ages, backgrounds and disciplines. The goal of the interview stays consistent: human connection. “It is important to show as much compassion for each other as we can,” Averyt said, touching on her desire to reach across aisles, to get to the heart of what makes us all similar and valuable. “People get too swept up in positions, but we’re all just here to do the best we can. Everyone likes to be treated as a person.” For those looking to treat themselves to a publicly funded master class in leadership and storytelling, “South Texas Leaders” streams on KEDT through the PBS app, or live on Fridays at 7:30 p.m. during their regular season.

A

mid the glistening sea and the gentle coastal winds, a building woven into the tapestry of Corpus Christi’s history stands tall and proud. The iconic Furman Plaza is on the verge of a remarkable transformation, soon to emerge as a vibrant multi-use development known as The Foundry. The Furman Plaza has played many roles throughout its storied existence. From its humble beginnings as a trading post and role as a bastion of civil defense during wartime to evolving into one of the city’s earliest pharmacies, it has mirrored the ebbs and flows of Corpus Christi’s dynamic past. The roaring 1920s ushered in a period of unprecedented prosperity, prompting the Furman Plaza to expand and welcome the bustling commerce of a burgeoning port. It gracefully transformed into a serene refuge as the city aged, and has seemingly been frozen in the sands of time since the 1980s. Enter Stephen Rybak of MDR Advertising, the brains behind this grand revitalization. “This is a personal project of mine, but it serves two purposes,” he said. “It solidifies a more permanent home for MDR [Advertising] as we continue to grow, allowing us to be part of the resurgence of downtown. We’ll be right in the middle of everything we love about our city.” It also, he went on to say, aligns seamlessly with the broader vision of downtown revitalization. As Corpus Christi’s downtown gains momentum, the adaptive reuse of historic buildings takes on a newfound significance. The Foundry remains committed to preserving and enhancing the original architectural elements of the building’s exterior, and a modern façade will complement the building’s charm, 136 The Bend

ensuring historic architectural details remain. The project aims to foster business synergy and add to the growing downtown ecosystem. Rybak acknowledges the Downtown Management District team’s vital role in maintaining a safe, clean and active downtown. The Foundry’s overall success is also contingent upon a mix of existing and new tenants, including MDR’s relocation, bringing vitality and life to the building and its surroundings. Plans are underway for a coffee shop/ restaurant on the atrium’s lower level, and discussions with prospective retail tenants are ongoing. The transformation from the Furman Plaza to The Foundry is a longterm project to restore a piece of the city’s history, invigorate the local economy and breathe new life into the heart of downtown Corpus Christi.

For 58 years, the Donigan Building stood at Mesquite and Starr Streets, on the site of the parking lot across from House of Rock. The structure was built in 1907 by Armenian immigrant V.M. Donigan as the State Hotel. The first modern hotel in Corpus Christi, the hotel had 30 rooms and many had private baths, a rarity at the time. Those rooms cost $1.50 per night, versus the typical 75¢. The Donigan Building ground level held businesses like the State Hotel Coffee Shop — which operated 24 hours a day — and a café, as well as a confectionary and a drug store. A chiropractor saw patients in his office there for nearly four decades, and it served as La Retama Library from 1921 to 1926 after the damage of the 1919 hurricane. It even hosted the Texas Rangers when they came to town to 138 The Bend

investigate a murder, including the man who tracked down Bonnie and Clyde years later. With the hotel’s success came growth, and a fourth floor was added in 1916. A 1926 addition doubled the size of the hotel to 100 rooms, leading to the rebranding as the New State Hotel. After a battle over Donigan’s estate, it was leased to Mr. Charles V. Walker, Donigan’s son-inlaw, who called it the Town House Hotel. Improvements to modernize the hotel never came, and the building was condemned prior to its demolition in 1965. Gone but not forgotten are the contributions the State Hotel, its tenants and its visitors made to the growth of Corpus Christi in the first half of the century.
