Editor’s Note

As I sit here writing this column, there is thunder, lightning, wind and rain swiping the leaves from the trees. Having a bunch of oaks, you can imagine the lawn appears like a carpet of colored leaves and pine cones from the pine trees. Yes, undoubtedly the change in season is upon us, as we leave warm late fall temperature and watch the cold front moving in.

Yet, change is inevitable as seasons go through their transitions. And soon we will all be busy with holiday preparations over the next several months.

Once again, we have decided to dedicate our November issue to remembering the service of those who served our country. This year we are so honored to be highlighting two WW2 Veterans, Carl Rautio from Oulu, and Mert Warner from Gordon. Both of these gentlemen had very different experiences but were men who willingly did what was asked of them in service to the United States. Read their stories along with Ronald Gronski who served in Vietnam.

Associate Pastor Carey Vik, from Mission Covenant Church, shares with us his tribute to Veterans this month. He gave this as a sermon a couple of years ago on Veteran’s Day. Once again, we are happy to include the monthly mystery written by James Brakken, Community Notes, and our regular contributors fascinating articles.

Our December issue would like to include any anecdotes of your family’s tradition to celebrate the Holidays of Christmas, Chanukah, etc. If you have a favorite recipe to share for the holidays, we would love to share those with our readers. One thing I know for sure, recipes are tried out that are printed here. I was in Solon Springs, and a woman asked for the magazine as I was distributing to the location. She said, “I used that caramel cake recipe for my husband’s birthday.” Her husband turned to me and smiled approvingly. So, feel free to share one of yours by sending them to Christie. His division’s deployment was cancelled.

MERTON WARNER

Merton Warner - World War II

Meeting Merton Warner is like getting a fresh breath of air. At age 94, Mert (as he is called by most) is the one person that can put joy in life even if having a bad day. What is remarkable, is Mert had seen combat during WW2, and was subject to some horrific experiences.

Mert’s father, Charlie, signed up to enter the Wisconsin National Guard, at age 24. In 1916 the Third Division was called to service for the Mexican Border Crisis which lasted into 1917. Along with other divisions throughout the US, the sole purpose was to capture Poncho Villa. Just as the division was demobilized, Charlie’s unit was re-activated to create the 32nd Division or known as the “Red Arrow” and sent to France in 1918 to serve in WW1. He saw battle fronts in France until the war ended. He then became part of the Army of Occupation until the end of war in May 1919.

Merton and his twin brother Berton were born to Charlie and Gertrude Warner. Merton spent the first 10 years in Clear Lake on the family farm before moving to Barnes 1934. The move was due to his father’s ill health attributed to having been gassed during WWI. Mert was a sophomore in high school when Pearl Harbor was attacked. He remembers his Dad told he and his brother, “You are no different than other boys. You should go and serve your country.”

You see, Merton had a deferment because he was still in high school. Nevertheless, he and his brother enlisted. Mert’s service was as a medic. In his book, “My Nickel’s Journey”, he describes in detail the many experiences of treating the wounded and dying soldiers. His detail found the death camps and buildings filled with the dead bodies of Jews killed by the German Military.

Mert recounts that as part of the Geneva Convention, medics were to treat the most seriously injured first whether American or German. He says, “I remember one instance where two soldiers arrived, one German, the other American.

They had shot each other. The German was seriously injured, and I had to treat him first. In times like this, American soldiers were not happy the enemy received care before them.”

He also describes the surprise when a German walked into the first aid tent and surrendered to me. Quite frankly, he thought he was going to be shot. Instead the German’s hands were up, Mert took the patch from jacket and turned him over as a prisoner of war. Medics were not allowed to be armed. Later another medic had been killed in another unit, and for the next 24 hours the www.forestandlakesmonthly.com

order came down that no prisoners would be taken.

He describes his experiences as “leapfrogging” from location to location in the war theater. The war ended on May 8,1945. After serving in several other locations. He was discharged on his mother’s birthday April 18, 1946. While on leave, in Switzerland he managed to purchase a music box for her.

Upon leaving the military, Mert received medal and commendations including the Bronze Star Medal, Good Conduct Medal, American Campaign Medal, (European-African-Middle Easter Campaign Medal (2 Bronze stars.), WW2 Victory Medal, Army of Occupation Medal, Combat Medical Badge, and The Honorable Service Medal. Coming home, like many WW2 veterans, the men began to regain their lives. Mert married the love of his life, June.The team of Mert and June lived a life of family, love, music, and adventures for 57 years.

At 94, Mert’s outlook on life is one of giving back. He plays piano, having learned to do so by ear. What a treat to watch him belt out some great tunes.

He also makes wooden toy trucks. His assembly line is now in the kitchen. He smiles as he says, “June would never permit this when she was here.” His son has taken over the duties of sawing the materials, ensuring he has enough to work with. What does he do with all those wood truck with working wheels?

They are gifted to many including, children’s causes and new friends he meets.

He published his book in October 2016. An accomplishment he feels tells his story. Reading it, becomes a testament to a life well lived with the optimism and joy despite some of his experiences of war. In 2013, Merton says he was blessed to part of the WW2 Honor Flight to Washington DC. His son Chuck accompanied him on this flight. He toured many memorials to past wars, visited Arlington Cemetery, and visited the various memorials to past presidents.

When asked how he has remained so full of optimism despite this period of our history, war experience, and being slowed down with aging, he responds, he is happy to have good family and friends. He loves meeting new people and sharing his gifts of music, storytelling, and creative projects. He said, “I enjoy every day and I try to make it a happy day, EVERY day. I thank the Lord for giving me a wonderful life.” And that he does, you can’t leave his presence with a lighter heart, and wanting to take that joy of everyday home with you.

ADVENTURES IN LIVING - SOMEONE ELSE

Adventures in Living - Someone Else Submitted by Maralene Strom

It has been my personal experience in this life I live, while quite unconventional at this stage of living, has provided me with the opportunity of gaining understanding and insight. While probably not all that profound, it has helped me grasp and share this understanding professionally and personally with others. The mother (with Alzheimer’s) and daughter had a long history of interactive heated dynamics. Now the roles have been reversed. In that reversal both are dealing with issues from their relationship which are now exacerbated by the mother’s failure to accurately relate to the issues between them. It is not so unusual for familial relationships to have such baggage. It does not necessarily preclude the love existing between them. I had the opportunity to view the Mother from a perspective that carries no baggage. In my professional career, time and time again I have seen the issues between parents and children inhibit the visions of both when the later years encroach and roles reverse.

What I hope to have offering to the reader is a perspective that should their own lives be moving in this direction to take a second look at the individuals involved...themselves and the other. It is NOT easy to forget or even forgive injustices of our past between parent and child. And perhaps, it is not meant to be...however, growing in our emotional lives also takes leaving the garbage out on the curb, and letting it lay in the dumpster to be taken away. Life is way too short to continue looking behind us. Yes, it encroaches us unsuspectingly. I’ve always told my children, since they were able to speak themselves, to always make sure they look at the situation by taking a breath and moving twenty steps backwards in their minds to see the whole landscape. Then our perspectives can take in more than the moment.

You and I all have things that have wounded us from our upbringing. Some more traumatic than others are. Some seemingly unforgivable towards the other or ourselves. I looked at this woman in her moment of life in those days I spent with her. Her life is never going to be the same, age and disease is taking her away from what she once knew. Each day is even taking away memories of her successes and failures. She can no longer be expected to say the very words her children may want to hear to get those hurts they’ve hung onto for all those years acknowledged.

They don’t reside in her memory anymore. In many ways, she’s “someone else.”

When I worked as an Social Worker/Activity Coordinator in a nursing home I was approached by a family member who tearfully explained to me her reasons for not wanting to return to see her mother. She said, “I can’t find my mother laying in that bed anymore. She doesn’t know me or recognize any one anymore.” My heart ached for her loss at that moment. However, as I looked at her mother everyday, I also recognized that though she’d become someone else to her family, she was still there. Her humanity still recognized the quality of touch and care. With that recognition, I asked her to reconsider by reflecting how the kinds of touch that she herself responded to. While staff could give her the touch of clinical care, only she and the people who loved this woman in her final stages of living, could offer her the tangible touch of their love. No one else in the facility had that capacity no matter how much staff cared. It is my unscientific belief that tangible touches from people who had the vested interest in these loved ones were the only ones who could deliver the comfort they so deserved.

I got to know someone else...and if we have parents, siblings, or friends becoming “someone else” before our eyes we need to take the time to get to know them before it’s too late. It is during this progression we discover things we never considered as part of their character, however, mostly we discover our own character and level of compassion. It takes real compassion to handle with love the person who becomes someone we never saw before, especially if they become combative. It is then, we must remember fear has entered their consciousness as they lose more and more control of their own world. We too would lose our sense of safety. Perhaps, it is a unique point of living, to become “someone else” just long enough for those around us to see the other side of who we are as well, but didn’t have time to let anyone see. More so to be the vehicle of transforming others into caring, compassionate people who recognize their own ability to carry the tangible touch of love in one of the most critical aspects of human transitions.

FIREWEED WITH YULIA

Fireweed - Russian Ancient Traditions in Your Tea Cup.

I love when I start seeing beautiful pinkish-purple flower tops of blooming fireweed in August.

Fireweed is a narrow alternate leaf plant from Evening primrose family, Epilobium Angustifolium. It loves to grow in burnt or logged areas in slightly acidic soil in full sun. Sometimes you see it close to streams and rivers.

The history of fireweed tea goes back to XII century. It is said that it used to be more valuable then gold or fur. It was called Russian tea and was exported to England, Denmark, Germany and France.

People used the fresh young leaves in salads, and dried leaves were part of bread dough. People came up with the idea of fermenting the plant. It is done by crushing the leaves until they juice, and leaving them overnight to ferment. Then they are quickly dried in the oven or sun.

The fermentation helps to intensify all the biologically active ingredients.

Europe used thousands of pounds of fireweed tea, also called Ivan-chai or Koporye tea. There was a fireweed tea lab in famous Koporye village

by St.Petersburg, Russia. That place produced numerous fireweed extracts and formulas.

The leaf contains flavonoids, mucilage, sugars, starches, quercetine, pectin, tannins, vitamin C and calcium salts. The vitamin C content is several times higher then in lemons. Native Americans used the fireweed much the same way as Russians. In Alaska fireweed jellies, syrups, candies and ice-cream are made, along with fireweed honey. Fireweed is even a floral emblem of Yukon.

The modern research shows fireweed suppressing inflammation more effectively then cortisone. It calms diarrhea and colics, it is antimicrobial and astringent. In the 20th century is was introduced as help for swollen prostate with thousands of wonderful results. Therefore, it also is great as supporting bladder, kidney, urinary tract health in both men and women.

In Russia it is also called a warrior tea, as it provides stamina and energy. It works as balancer of will power and anger, helps to master the the will. Wild and overactive kids are calmed, and the shy children are strengthened. It balances our moods, if our bodies need rest, it will relax us, and if we need a little pick me up, then we feel energized due to a little protein and minerals in the leaves.

The tea is high in iron, copper, potassium, calcium. It supports the lungs, immune system, lowers blood pressure and is great during fevers.

Antioxidants are very high in fireweed as well, they help burn fat, restore metabolism, and clean out toxins and heavy metals. Ivan chai also helps to quit smoking and alcohol addiction.

NATURAL CONNECTIONS

Natural Connections - Fun Guys in the Fen Submitted by Emily Stone, a Naturalist/Education Director at the Cable Natural History Museum None of us had rubber boots handy, so when we came to the log bridge across the moat we took off our shoes and went barefoot. I enjoyed the firm roughness of the decorticated log on my soles, and then the cool squish of the sphagnum moss in the floating mat as I stepped into the magical world of the fen.

Kennedy is an associate profesPhoto by Emily Stone. sor at the University of Minnesota, and had just given a talk called “Knee deep in peatland fungi: Mycorrhizal community diversity and composition in fens and bogs of the Northwoods.” He’d already been to one nearby bog as part of the North American Mycological Association’s annual foray, held this year at Lakewoods Resort near Cable, but when I offered to show him a giant fen as well, his eyes lit up.

As I gave some final instructions to my volunteers at the information desk, and prepared to play hooky from the foray for a couple hours, Michael Beug walked up with his camera. Michael is a professor at Evergreen State College in Olympia, Washington. Back in the day, he teamed with the college’s ornithologist to study the impact of DDT on calcium transport in birds, and this work played a major role in getting the pesticide banned. He and Peter met during Peter’s undergraduate studies. They started chatting, and soon Michael went off to grab his camera so he could join us.

So there I was, ankle deep in cold, wet sphagnum with two PhDs who were talking a mile a minute about shared experiences and recent news, with occasional breaks to point out neat things in the fen.

Waving his hand over a patch of dead sphagnum moss, which looked bleached and scraggly compared to the velvety-red living moss beside it, Michael informed me that it was killed by a fungus. He poked around for a bit, hoping to find the delicate, pink mini-mushroom forms of Roseodiscus sp. No luck.

I offered up the impressive fact that my previous explorations had revealed this fen to be over 40 feet deep, with the bottom still out of reach of our current tools. We also found pitcher plant leaves, a tiny frog, a few late-blooming bog laurel flowers, a couple of red-orange waxy cap mushrooms, and a tiny white pine seedling growing out of a sphagnum hummock.

Without hesitation, Peter dove elbow-deep in the moss, following the white pine’s stem down to its roots, and out to the fine roots to look for mycelia. Tree roots aren’t actually that great at directly acquiring the water and nutrients they need. Most, but not all, plants have instead cultivated a symbiotic relationship with fungi in the soil. web of thread-like fungal mycelia connects with the tree’s roots to bring it water, minerals, nitrogen, phosphorus, and even protection from pathogens. In return, the tree feeds the fungi sugars it produces through photosynthesis. As Peter described in his talk, this mycorrhizal (fungus-root) relationship is important in bogs and fens because they are especially challenging, low-nutrient environments.

We replanted the tree (although lack of mycelia suggested it didn’t have much of a chance), and wandered some more.

We were almost back at the bridge when things got even better. I pointed out a little black spruce grove where orchids bloomed in July.

We wandered in. Michael plunged his hand into the sphagnum, and brought up a handful of wiry black spruce roots—their finest tips neatly capped by a white sheath of fungal mycelia. These trees were thriving with the help of mycorrhizal fungi.

Then the guys spotted some big brown mushrooms. “Hebelomas,” Michael called them. “They’re boring mushrooms nobody looks at,” Michael told me, but his friend Henry Beker from the University of London just finished the monograph on the European Hebelomas, so Michael wanted to help him document the ones here, too. They may be mycorrhizal, which makes them interesting to me.

As Michael was stooped over his tripod getting the drab, brown mushrooms in focus, Peter happened to see something else between his feet.

I couldn’t even begin to understand what they were exclaiming over until Peter brought up a small clump of sphagnum moss for me to see closer. Clusters of miniature mushrooms bejeweled the mess, and their white bodies glowed in the sunlight like frosted glass ornaments.

Neocudoniella radicella: this little mushroom is found in sphagnum bogs where black spruce rootlets turn up out of the soggy mat to get air. It was a “lifer” for Michael, a mushroom he’d never seen before.

“The fact that I knew it existed in a place that is incredibly beautiful and magical made it an object of desire,” he later told me.

A little handful of the gems went into Peter’s collecting basket, and eventually made its way through the vouchering process in the basement of Lakewoods. One last hurrah came that evening during announcements. Our tiny gems had been chosen by the mycologists as the “find of the day”!

That was nice, of course, but there was nowhere to write on the voucher form that the fen where these mushrooms grew was filled with bare toes squishing the sphagnum, joy bubbling up in the sunshine, old friends reconnecting their bonds, and new friends sharing an adventure. The fen is filled with treasure!

No Greater Love than This.

While crossing the Rhine River in Germany during WW II, in a boat with 7 fellow soldiers of the 3rd infantry division, Dale Jewell was hit in the leg by a mortar shell. The boat they were in was sunk, the men swam for shore. Dale barely made it as his leg was twisted and torn. Medics immediately descended upon him, stabilized him and got him to a medical facility. He would lose his leg just above the knee, forever changing his life, and the lives of his family. He was 20 years old, with a young bride waiting anxiously back in Ohio for his safe return. Dale Jewell is my wife Jennifer’s grandfather. Like the hundreds of thousands of veterans before and after him, he risked his life for the freedom of others. Had that mortar shell not been a dud and exploded on impact, he and his companions would have paid the ultimate price for their country that day. Today, we gather to remember and honor those who have loved their country and countrymen with a selfless love. We are thankful and hold in highest regard those who have garnered this freedom we enjoy! We esteem those who have placed their lives on the line, risking everything so others might have it all. I heard an interview this morning with a soldier in Iraq, who stated something to this effect; “it’s not very often one man will give his life for another man, but these guys are ready and willing to die for the safety of their fellow soldiers.”

In John 15:13 Jesus said to His disciples, “Greater love has no one than this, that he lay down his life for his friends.” Jesus went on to demonstrate this self-sacrificing love when He gave His life on the cross to pay the price for sin, opening the way for us to enjoy freedom; to experience peace and forgiveness of God, and to have hope for the future. In Romans 5 Paul writes, “You see at just the right time, when we were still powerless, Christ died for the ungodly. Very rarely will anyone die for a righteous man, though for a good man someone might possibly dare to die. But God demonstrates His love for us in this: While we were yet sinners, Christ died for us.” Jesus chose to love us even though we don’t deserve it. He put our needs over His own comfort and well being, and selflessly gave his life so that we could have life. This is an incredible love! I struggle to comprehend the ability and willingness of someone to put themselves in the place of death for another. It would be so much easier to just say, “Someone else will do it.” But today we are here because men and women of valor have been and continue to be willing to do what is not easy; to seek the benefit for others by selflessly giving themselves to the cause of freedom, to being an American.

Grandpa Dale’s life was forever changed as a result of his willingness to love others by fighting for his country. He faced many struggles both physically and emotionally upon his return home. I am not sure which was more difficult; the horrors of war or the after affects. But my life is changed too! Because of Dale Jewell, and all the men and women of our armed services past and present, I enjoy freedom as a result of their sacrifice! I must choose to embrace this freedom. In the same that way, we must choose to receive and embrace the freedom that Christ offers to us through the cross. We who are here today must choose to make the most of the opportunities afforded to us in this great country. We are not entitled or deserving of such blessing, we are privileged! To all of you who are veterans and soldiers today, to those who have gone before us, and to the families of those who have given their lives, Thank you! Thank you for your willingness to protect and defend the freedoms we enjoy! Thank you for the opportunity to raise our families without fear, to worship freely, to work, and to pursue happiness.

In closing I would like to read the final paragraph of a letter penned by George Washington to the governors of the 13 states on the occasion of his retirement from command of the Continental Army and public life. In the letter, Washington said that he wanted the governors to convey his words to their legislatures, hoping it would be regarded as coming from someone who always wished to be useful to his country and who in the shade of retirement would not fail to “implore divine benediction upon it.” The final paragraph contains these words of his benediction: “I now make it my earnest prayer, that God would have you, and the State over which you preside, in his holy protection, that he would incline the hearts of the Citizens to (1) cultivate a spirit of subordination and obedience to Government, (2) to entertain a brotherly affection and love for one another, for their fellow Citizens of the United States at large, and particularly for their brethren who have served in the Field, and finally, that he would most graciously be pleased (3) to dispose us all, to do Justice, to love mercy, and to demean ourselves with that Charity, humility and pacific temper of mind, which were the Characteristics of the Divine Author of our blessed Religion, and without an humble imitation of whose example in these things, we can never hope to be a happy Nation.” I would suggest today that we heed these words of wisdom. That we would cultivate a spirit of subordination and obedience to our government, especially by praying for those who lead. And that we would learn to love each other regardless of the myriad of ways we are different from each other, especially honoring our veterans who have served in the field; and third, that we would each ask God to help us to act justly, to appreciate and show mercy, and to imitate the character and charity of our God who is the reason we exist and enjoy freedom today.

Tech Talk - Voice Control Battle Royal!

For those of you that like to read the ending first, at the end of the voice control battle, you will find that both devices come out evenly matched.

The Amazon Echo has a few different features and a bit higher price and the Google Home has Blue tooth capability but overall, they are pretty even. You will always have fans of one device over the other but the reality is that they are both pretty cool!

Both devices do a couple things very well, they control smart devices like light bulbs and thermostats. They also can create shopping lists and send them to your phone or play music from Pandora.

They can be very handy devices, but there is some controversy that surrounds them as well. For instance, they are always listening. Yes, always listening. Supposedly they are only listening for their key words, but critics feel that because they are constantly analyzing the sound in the room, they pose serious privacy concerns. These critics are probably not wrong, but I personally think that we will need to get over this or figure out how to deal with it because voice control is coming. You could, of course, get rid of all tech in your home, but where would the fun be in that?!

The reality is, that it’s too late for that, because it is here already. It is currently available in some of the newer TVs and it will eventually be in larger appliances like refrigerators, washers, and other devices. As manufacturers embrace voice control, more and more of the sounds happening inside of our homes will be recorded. Yes, this is a scary thought and it is something to really consider and to think on. But, if you get the opportunity to play with one of these devices I highly recommend it. They are a lot of fun and they can certainly be helpful in many ways.

My wife, for example, loves that when she is cooking and needs to add something to our shopping list, from the kitchen, all she has to do is say, “Alexa, (the Amazon Echo) add potatoes to the shopping list.” Alexa dutifully responds with, “I have added potatoes to the shopping list”. No pen or paper needed. No please and thank you. My wife didn’t even need to stop cooking. When we are at Walmart later that evening, there potatoes are, right on our phone’s shopping list. Alexa even tells jokes! My kids love it when Alexa tells them a joke, even when the joke is a really bad one – of which she has many - but, man, it’s just great to hear them laugh!

Sailboats have launched a lot of adventures, along with the books recounting those adventures as well. Now comes Mary Dougherty’s story about how sailing from Duluth, Minnesota to Bayfield launched a cooking adventure and the book that followed: “Life in a northern town: Cooking, Eating, and Other Adventures along Lake Superior.”

Dougherty, who will be signing and reading that book on Saturday, Nov. 4 from 3:30 to 5 p.m. at Redbery Books in Cable, recognized the allure of cooking in her teens, the first time she cooked a meal for her then-boyfriend, now-husband, Ted. That meal of chicken fajitas led to a marriage, five children, four dogs, a 30-foot sailboat named Isle of Skye and a house on Rittenhouse Avenue in Bayfield.

Her 187-page, hardcover cookbook is filled with colored photographs of both food and scenery from around Lake Superior’s Apostle Islands, the Bayfield Peninsula and the Chequamegon Bay—all laced together with local ingredients, nature, sustainably grown food and a philosophy about food and community that reaches far beyond just people.

In her own words, Mary Dougherty says, “Gathering people around my table is a constant theme for me, as are the places, friends, dogs, food and family who contribute to the cauldron of my good inspiration. I follow the breadcrumb trail of that inspiration to my local farm stands, beaches, or waterfalls—or into the unknown. Sometimes I end up in a stand of hemlocks in the middle of nowhere, and other times I end up with a pig’s head boiling on the stove for headcheese. I never know where the inspiration will take me, and frankly, knowing would take the joy out of it for me. These recipes are my way-markers on a spectacular journey.”

Dougherty’s recipe of Wild Rice Blueberry Buttermilk Pancakes opens the book, along with a paragraph or two about wild rice—what the Ojibwe called “manoomin.”

Her Herb-Marinated Goat Cheese—suggested as an appetizer on crackers or a sliced baguette—is simple and elegant with fresh thyme, oregano, rosemary, garlic and lemon zest mixed with olive oil and poured over goat cheese.

Whitefish in Foil is a recipe inspired by a fish fry in Bayfield and the fresh whitefish she and Ted came home with that night that led to their own campfire dinner on the beach near Cornucopia.

A Vietnamese Beef Stew recipe with a red wine-infused broth flavored with cinnamon, ginger, and star anise will send you flying to the market for the shiitake mushrooms, beef chuck, potatoes and carrots—as will the Roasted Beef Marrow with Parsley and Caper Pesto.

From her cookbook, Dougherty says her family’s favorites are Mrs. Pitt’s Sugar Cookies, Gnocchi, and the Grilled Moroccan Chicken Kebabs— also a favorite of their fellow boaters. Think garlic, thyme, coriander, cumin, and turmeric with a lemon yogurt sauce.

Throughout the book, Dougherty shares photos and vignettes about Northernmost Sugarbush, Spring Camp Falls, Sassy Nanny (goat) Birthing Day, Olympia Sport Village near Hurley, Lake Superior’s Icebergs, Summer in Bayfield, Growing Up among the Apostle Islands, the Magic of Houghton Falls, and Ice Caves and Ice Roads.

Mary Dougherty is as much in love with the wonders of nature as she is with the bounty of food. In fact, they cannot be separated.

“Food is my connection to the world. It’s how I make friends, how I nourish my family, and how I define myself,” she said.

What’s next on Mary Dougherty’s menu in life: in the spring of 2018 she plans to open a cooking school in her kitchen and continue her work helping communities protect themselves from factory farming with Socially Responsible Agricultural Project.

Recipe Corner - Warm & Hearty Soups for Fall!

Spicy Pork Pozole

Ingredients:

12 oz. beer or non alchololic alternative 1 tbsp. low-sodium chicken bouillon base (we used Better than Bouillon) 2 tsp. ground cumin Kosher salt and pepper 12 oz. tomatillos, cut into 1/2” pieces 4 cloves garlic, finely chopped 1 Onion, finely chopped 1 4-oz. can roasted diced green chiles, drained 1 1/2 lb. boneless pork butt or shoulder, cut into 4” pieces 1 c. fresh cilantro (stems included), plus more for serving 1 28-oz. can hominy, rinsed 1/4 c. fresh lime juice Diced avocado and sliced radishes, for serving

In a 5- to 6-quart slow cooker, combine the beer, bouillon base, cumin, 2 cups water, and 1⁄2 teaspoon each salt and pepper.

Ingredients:

1 carton (32 ounces) reduced-sodium chicken broth 1 can (28 oz) diced tomatoes undrained 3 fully cooked spicy chicken sausage links, cut into slices 1 cup dried lentils, rinsed 1 medium onion, chopped 1 medium carrot, chopped 1 celery rib, chopped 2 garlic cloves, minced 1/2 teaspoon dried thyme

Directions:

In a 4- or 5-qt. slow cooker, combine all ingredients. Cover and cook on low for 8-10 hours or until lentils are tender

Candy Apple Crush

Ingredients:

Add the tomatillos, garlic, onion, chiles, pork and cilantro and mix to combine. Cook, covered, until the pork is tender and easily pulls apart, 7 to 8 hours on low or 5 to 6 hours on high.

1 small orange, halved 8 cups apple cider or juice 1 tablespoon honey

Remove and discard the cilantro from the slow cooker, then using two forks, break the pork into smaller pieces.

Directions:

4 cups cranberry juice 6 inches stick cinnamon

In a 4- to 6-quart Dutch oven, combine cider, cranberry juice and honey. Add clove-studded orange halves and stick cinnamon. Bring to boiling; reduce heat. Simmer, covered, for 10 minutes. Discard orange halves and cinnamon sticks before serving.

Perry’s Prize

Like most amateur photographers, he’d load his Kodak with a new roll of film, take a snapshot or two, then let the camera sit on the shelf for weeks on end. By the time the roll was finished, dropped off at the corner drug store, developed in some faraway factory and returned, Perry often could not recall where the photo was taken or, for that matter, why. But everything changed in ’55 on his thirty-third birthday when his wife gave him the latest in instantaneous innovations, an instrument invented to impart immediate gratification to amateur photogs—the Polaroid Land Camera.

Within minutes of opening the gift, the ecstatic birthday boy began a whole new hobby. It started with the first snap-click of the shutter, followed by a one-minute wait that took an eternity. Predictably, when Perry peeled the patented protective paper from his print, he was hooked, addicted, obsessed with Dr. Edwin Land’s clever contraption.

For weeks, Perry’s Polaroid produced picture after picture of this, that and the other. But wildlife interested him most, each fascinating Finstead four-by-five photograph finding its way into the family photo album. Finches at the feeder. A peanut-munching mouse. Chipmunks with cheeks chock-full. Deer, ducks, geese, butterflies, raccoons, he snapped them all until the family photo album featured creature after creature on one page or another—admittedly an amazing assemblage for Finstead, our amateur photographer.

One evening, a lightning bolt struck Perry—figuratively speaking, of course. Within minutes, he’d created quite a clever contraption made of strong string strung through eye screws screwed into the top of his picnic table. After securing his camera in an upturned peach crate, he attached one end of the string to the camera’s shutter release. The other end he secured to a plump, fried pork chop he’d found in the fridge.

Content with his invention, he went inside to watch from the window, waiting for his largest wild game, a bear blamed for bashing trashcans up and down the road in search of midnight snacks.

Comfortable in his easy chair, Perry listened as the clock ticked the time away. An hour slipped by. Then another. Then … a noise. Perry peered out, inaudibly begging for a bruin to appear. The string shifted. The shutter snapped. The camera flashed.

“Damn you, masked bandits!” shouted Perry.

The same six raccoons he’d caught on film chewing on cobs of corn a day before were back for more. Out scurried Perry, pounding together a pot and a pan as the terrified family of mother and kits scrambled from table to lawn before disappearing into the darkness.

Perry processed the print, pleased with the Polaroid’s prompt product.

Now confident his camera could capture an image of the neighborhood bruin, Perry re-rigged his clever contraption. Again he went inside to watch from the window. Again the clock ticked. Again an hour slipped by. Then another. Then Perry dozed off.

With a start, the early morning sunlight streaming through the windowpane woke Perry. He looked at the clock. He stood. He stretched. He stared out the window.

No pork chop!

No string!

No peach crate!

No Polaroid!

“No Polaroid?” Perry screamed as he scurried out, praying his peach-crated camera survived the night.

He found the string first. The peach crate next. And finally his precious Polaroid, its case crushed and lens dangling, damaged by deep dents that could only be made by the bite of a big black bear that had enjoyed a midnight snack of a plump pork chop, prior to sampling Perry’s prized Polaroid Land Camera.

Perry pried apart the Polaroid, pulling out the picture. He patiently processed the print, hoping for a portrait of the trashcan-bashing rascal that smashed his camera. Second by second the one-minute wait crept by before Perry painstakingly peeled the protective paper from the Polaroid print.

And there sat the bear. Eyes wide. Face brightly lit by the camera’s flash. And there, firmly clamped in the creature’s mouth, the plump pork chop, secured with a strong string—perhaps too strong a string— tightly tethered to the shutter at one end and the jaws of the brawny bruin at the other.

There the story ends, except to mention that Perry’s final photo, his prized Polaroid picture of a bear’s midnight snack interrupted, went into the Finstead family photo album that June morning. ©2017 James Brakken www.forestandlakesmonthly.com
