HELLO AND WELCOME

Hello and Welcome, Dear Reader!

This month has flown by and here we are again. I hope you are doing well and gearing up for the holidays. Amazing to think that Thanksgiving is just a few short days away, and Christmas will be just around the corner! The cold has started to arrive here in the forest, which makes me glad. During the period between fall and winter when the weather fluctuates, I always feel a little bit uncomfortable. But once the cold settles in, my mind and body accept the fact that winter is indeed here, and off we go.

This month’s features were a lot of fun to put together. I visited with Rick and Deneen at Velo Café. It really is a great asset to the community of Cable, and I hope you can stop in and see them. The breakfast sandwich is amazing and be sure to try their whiskey spirited blend of coffee! In honor of Veteran’s Day on the 11th, I wanted to learn more about the VFW. We always see them at various locations around Memorial Day with the poppy flowers, but that was all that I knew about the organization and was certain there was more to it than that. Indeed, my assumptions were true. The VFW organization does quite a lot for the Veteran’s of foreign wars, their families, and within their communities. I hope you enjoy learning more about them as I did. The Poppy flower certainly takes on a whole new meaning for me!

Again, we have our wonderful columnists that are so generous to share their wealth’s of knowledge, and skill with us. I love reading each column as I place it in the layout each month. This month, Yulia is sharing the nuances of horseradish. Emily is teaching us about willows. Author James Tindell is sharing an excerpt from his White Vixen Series. Mary is taking us on an adventure in the Great Outdoors of Wisconsin. Outdoor enthusiast, John Weber is sharing a tale of a Lost Legend. There are many more great pieces throughout the edition, and I hope you enjoy them as much as I did.

I sat down with Rick and Deneen at Velo Café in Cable, Wisconsin this past Saturday, and must share that I have found yet another local gem nestled here in the forest. Velo Cafe is located at 13425 County Highway M in Cable, Wisconsin.

As I walked in the door, a sign greeted me saying, “Inhale Coffee, Exhale Negativity” and I knew I was in the right place. The décor is reminiscent of an urban coffee shop with a cooler color palette, clean lines, and modern décor, but with a Northwoods twist that is pulled in by the building’s original hardwood flooring, and side door. The glass fireplace was glowing with leather chairs next to it welcoming guests to come in and relax and enjoy a warm cup of coffee on this cool, early winter day. I had to remind myself that I was indeed still here in the Northwoods of Wisconsin, and not up in Duluth or downtown Minneapolis.

I was welcomed by Rick and Deneen, as we sat at the high-top table overlooking the café. They are so friendly and warm, knowing their customers by name as they come in. This synergy of this wonderful couple really makes Velo café what it is, and they are passionate about what they do. Each of them contributing to Velo in such a way that the balance is perfect.

So, what is Velo Café? It is really a wonderful addition to the various eating establishments that we have in Cable. It offers something that is unique and different in and unto itself, while welcoming guests of all walks inside its doors. As their sign suggests, they offer Coffee, Greens, and Protein. However, it is so much more than your average leafy greens, black coffee, and run of the mill tofu.

As I listened to Deneen share the products available, I was really impressed. Their menu includes coffees – hot, cold, and expressos, smoothies, breakfast sandwiches, breakfast burgers, salads and bakery items that are baked fresh every day. Velo offers a wide variety of delicious organic and plantbased protein options for breakfast, brunch, and lunch (or any time of day) that would please anyone’s tastes.

When asked what their best seller is on the menu, the answer was the Gourmet Breakfast Sandwich. Let me say, that it is amazing. It is a delicious English muffin served with organic eggs, fresh greens, homemade aioli, with a sausage, ham, or walnut patty (I tried the walnut patty), and your choice of cheese, and is served with a delicious side salad full of tasty goodies. I have to say, it was delicious! I do eat meat and love a good veggie burger, but this was in a whole new league for me, and I loved it!

Rick shared all the various kinds of coffees that are available at Velo- from cold brew, to pour over, even their whiskey spirited blend that is aged in whiskey barrels! (It is wonderful!) Just as Deneen was with the menu and food side of the house, it was very clear that Rick was very well versed in the ins and outs of making the perfect cup of coffee from the right water temperature, to pouring time, to bean blends, and roasting times. Rick knew all the nuances that make your morning cup of coffee perfect.

But Velo is so much more than just a place to grab a quick bite and a great cup of coffee. They have also organized an organic buying club. The choices change with the seasons, and all produce is organic. Deneen emails those on the buying list on Sundays. Responses are due in by Tuesday and pick up is Thursday. Who would have thought that buying organic would be so easy and convenient right here in the forest!

They have also launched a new dining program called “Dine by 5.” The program is geared to help you put a full meal for four people – protein, carb, salad, and dessert, on the table by 5:00pm. You pick up the premade meal, warm and ready to go at 4:00pm, and are eating a full meal, set and on the table, by 5:00pm. It is first come, first served, so be sure to reserve your meal early in the week. Keep in mind, this isn’t just a quick microwave something or other – Dine by 5 menu items thus far have included roasted chicken and rosemary potatoes, and cheese stuffed manicotti with a large side salad and lemon bars. It really is an amazing meal they put together.

Velo also offers fitness programs in the updated garage next to the café called “The Lab”. It offers a wide variety of fitness options and classes that is always expanding. You can see the schedule of events at their Facebook page – velocafewi.

Velo Café is a wonderful addition to Cable, Wisconsin, It really was my pleasure to meet Rick and Deneen, and I hope that you take a few minutes and stop in and say hello. They are open Monday – Saturday from 7:00am – 3:00pm, and Sunday from 8:00am – 2:00pm. They are closed on Tuesdays. Many are familiar with the red poppy that is handed out outside of local establishments by VFW members around Memorial Day, but what is the history behind the organization? Where did it begin, and what is it accomplishing today for Veterans, their families, and communities?

Here is a look into an organization that has been helping Veterans and their families for over a century.

How the VFW began

The Core Values of the VFW are: •Always put the interests of our members first •Treat donors as partners in our cause •Promote patriotism •Honor military service •Ensure the care of veterans and their families •Serve our communities •Promote a positive image of the VFW •Respect the diversity of veteran opinions

The Veterans of Foreign Wars organization is the Nation’s oldest war Programs and Key Priorities of the VFW: Veteran’s Organization. In 1899, the American Veterans of Foreign Service based in Columbus, Ohio and the National Society of the Army Programs: of the Philippines in Denver, Colorado organized to secure rights and Youth Scholarship Programs benefits for veterans of the Spanish-American War (1898) and the • Voice of Democracy Philippines War (1899-1902). These two organizations merged in 1914, • Scout of the Year creating the Veterans of Foreign Wars of the United States. HORSERADISH WITH YULIA

Horseradish - Two Spoons of Horseradish a Day

We all know ordinary horseradish, right?

I grew up eating lots of it. My dad likes to spread it on a sourdough bread and eat it with his soup.

I always followed his example. It is commonly served with meat dishes, to help digest a fatty meal.

Then I forgot about it. But every time I go back home, there it is again, on the table.

This fall it was really talking to me. Some friends from Siberia mentioned that your body will tell you when you have had enough, and it was on.

I have been trying to grow it, and despite the fact that it is easy to propagate and the nature of how it loves to spread, my numerous horseradish plantings never took. This year was a different story, it grew, and looked wonderful. I left the root in the ground to make sure it can multiply and spread next year. It is usually harvested in late fall after the leaves freeze and wilt, all the energy is in the root, or it the early spring, before leaves really come up. For now I use plain store-bought ground up horseradish with vinegar (I buy a simple one with the least amount of ingredients).

Horseradish is in the cabbage family, with mustard being its relative. It has been used as a culinary spice for hundreds of years, and as medicine - much earlier then that. The root is pretty amazing. It has 5 times more vitamin C then citrus fruit, and is rich in folic acid, retinol (vitamin A), carotene, riboflavin (vitamin B2 - prevents migraines), thiamin (vitamin B1), pantothenic acid (vitamin B5 - prevents muscle cramps and insomnia). Pyridoxine (vitamin B6 - prevention of neurological symptoms and neuropathy). Do you see all those B vitamins? No wonder it gives us lot of energy!

It is minerally rich in calcium, potassium, sodium, sulfur, iron, copper, phosphorus, zinc and manganese. Both root and leaves have phytoncides - natural antibiotics, mustard oils, lysozyme (antimicrobial protein enzyme), sinigrin (natural component of brassica family, like broccoli and Brussels sprouts). Horseradish also has amino acids (proteins), fiber and starch.

Eat a teaspoon of horseradish twice a day (morning and afternoon) if you have a cold or a flu, or a loss of voice, and use it daily for prevention to support your immune system. Do not dilute, you will have a brain burn, and it is excellent for your sinuses - that is my favorite sensation. You can also mix one part ground horseradish, with one part grated lemon and 1/2 part honey. Keep the mix in the fridge and take spoonful daily.

Sometimes I just mix horseradish and honey. It helps with white blood cells production, does not let the cells mutate, and is anti cancer (rectal, colon, lung, etc...) according to a Cornell University study. This spicy plant contains significant amount of glucosinolates - compounds that help liver to detoxify carcinogens. Many studies praise the same components in broccoli (it’s sprouts especially), but horseradish contains 10 times more of them!!!

Regular use of root activates the stomach and intestines, in case of sluggishness or bloating. It supports gall bladder and therefore eases the elimination. It is great as anemia prevention and supports both male and female potency. Also helpful in cases of vaginitis, odors or itching. It works like a natural antibiotic for uti and it is officially used in Germany as such, as it increases the kidney secretions, so infections are quickly removed from the body.

The Russian study found that horseradish protects from the environmental toxins, having anti-mutagenic properties. It lowers cholesterol, balances the blood pressure, nourishes the heart muscles with potassium.

Horseradish regenerates the disk tissues of the vertebras, removes arthritic and gout inflammation of the joints. I can really feel like it is repairing some spots in my body, particularly my foot that got ran over by the yard tractor’s wheel one time some years ago. So if it makes you ache, be glad, it is repairing the tissues.

The vegetable is rubefacient, agent that stimulates the blood flow below and to the surface of the skin. So the mentioned earlier sinigrin relives the symptoms of water retention, due to its stimulating effect on the blood capillaries. In Russia we use the green leaves of horseradish as a spice for pickles, I think it gives them crunch and a little heat. The leaves can be used in salads too.

If you have stomach ulcer, please be careful and watch the horseradish use, dilute it and discontinue if it makes your symptoms worse. Very light to no use during pregnancy and lactation. It is great in case of hyperthyroid, but go light if you have a hypo condition.

The Russian word “хрен” (“hren” or horseradish) is actually widely used for number of occasions. How are things? Horseradish! (Meaning not so good. Go to horseradish - sends annoying person away. When things aren’t making sense - Horseradish knows.

The Japanese green version of horseradish is wasabi, has had similar uses and history. It is traditionally used with raw sushi or sashimi as an agent of preventing the food poisoning from the unprocessed seafood. It is hard to grow, so the price is steep - $125 per pound.

“What do you miss the most about Alaska?” is a common question for me these days. It comes up so frequently in fact, that I added my answer to the end of the “Adventures in Alaska” slideshow I’ve been presenting at local venues. The answer? Avens.

Mountain avens, entire leaf avens, and yellow dryas are all flowers in the genus Dryas whom I encountered frequently throughout Alaska. Their flowers are beautiful, with silky white or yellow petals and sunny yellow centers, and their habitats on tundra slopes and fields of glacial gravel are fun to explore. It’s their seed heads that captured my heart and my imagination, though.

Like an elegant dandelion, each of their many, small, dry, seeds comes with its own fuzzy parasol. As the seeds are maturing, those feathery styles spiral from silky, pink swirls into shimmering white fairy puffs. Truffula trees from Dr. Seuss’s The Lorax spring to mind immediately, and the fuzzy tufts also conjure images of Einstein’s signature hairdo. I delighted in taking photos of these amusing little beauties throughout my summer. Rain or shine, they brought me joy.

I didn’t start out to tell you all about avens, though. That just slipped in. This is actually a story about a mystery plant that a Museum member brought me a photo of last week. Taken of the shrubs in a soggy road ditch, her focus was on some curious, spikey clusters that decorated the slender twigs. “Avens tree,” she had labeled the photos, and wanted not only and identification, but to feed my obsession clearly evident above.

The photo confused me. Avens doesn’t grow in Wisconsin. The only Dryas here was the Younger Dryas, a period of colder temperatures 12,900 to 11,700 years before present. It was the last hurrah of the glaciers, and it’s named after the abundance of Dryas flowers preserved in Scandinavian lake sediments of that age.

Insect galls? Clematis? What could these be? But when Vivianne brought a sample into the Museum, one look at the slender, orangey twig and single, dark purplish scale covering each bud told me it was a willow. The fluffy, avens-like baubles she’d noticed are simply their dried out catkins with fuzzy seeds still clinging on. Of course. The willow family—Salicaceae—also contains cottonwoods.

We can easily imagine willows being fuzzy in the spring, as their catkins expand and the fine, gray hairs protecting their emerging flowers form the phenomenon we think of as pussy willows. After bees have pollinated those flowers while greedily making use of one of the earliest sources of pollen and nectar, the plant begins to develop seeds.

Cottonwoods use wind instead of bees to pollinate their flowers, but the result is very similar: both cottonwoods and willows produce Lilliputian seeds attended by downy, flight-ready fluff. Cottonwood seeds—and the related aspen and poplar seeds, too—are hard to miss when they create summer snowdrifts on your lawn. While many allergy sufferers grumble during this phase, the fluff is not the cause of allergies—the pollen that created those seeds was the problem.

I’m not sure why we so rarely notice the second fuzzy stage of willows around here. My standard response to having missed any late spring or early summer phenomenon is that it must have happened during mosquito season, when I don’t spend much time walking slowly through the woods.

Happily, since my summer in Alaska lacked both mosquitoes and a bicycle, I had ample opportunity to hike among wildflowers in all their stages of development. Willows are common on the tundra, and several of the fourteen Salix species that grow in Denali National Park are delightfully tiny, easy to observe at eye-level if you’re willing to belly-crawl (which, of course, I am). For example, netleaf willow grows as a creeping shrub.

Its deeply embossed leaves are a normal size, but it doesn’t grow more than a few inches high. Its catkins are actually larger than those of pussy willows, and stick jauntily upright.

By late August when I traveled up to the tundra on the North Slope of Alaska, I was able to enjoy both the lemony yellow fall colors of willow leaves as well as the fuzzy fingers of their catkins gone to seed.

A few of Vivianne’s funny little willow catkins are still floating around my office, and they’re reminding me that avens-like delight can be found right here at home.

It is quite certain that you have probably heard someone mention Blockchain, maybe among friends, in the news, or in tech conversations in general.

The problem is, you may have no idea what Blockchain is. You are probably thinking,

“Wait… I know what this is, you talked about BitCoin a few months ago.

Why are you talking about it again?”

You see, that is one of the big problems with Blockchain. Everyone automatically assumes that when you mention Blockchain, you are talking about bitcoin. It may or may not make you feel any better, but many IT guys do not really know what Blockchain is either!

Blockchain is BitCoin, right! No. Blockchain is the programmatic basis for cryptocurrency. Right now, BitCoin is the most popular cryptocurrency though in reality it is only one of many.

Blockchain can only be used in Cryptocurrency. No, wrong again, sorry.

Blockchain is being looked at for many different kinds of applications including Software Defined Networking (We will talk about this in a different Tech Talk), and high security cloud storage.

So how does it work exactly?

Blockchain has actually been around for a long time. It was originally proposed back in the early nineties as a method to secure pictures and documents so that they could not be tampered with. It was not until just the last 10 years or so that it became the standard for Cryptocurrency.

Blockchain has been described as a distributed ledger (Those familiar with accounting are familiar with ledgers). So, how does this ledger work exactly?

Let’s look at each block in the chain. Each “block” in a Blockchain is made up of three basic bits, or pieces, of information, the data, the hash, and the hash of the previous block.

The “data” is what you would expect, the information being stored.

The “hash” is the fingerprint of the particular block. Just like your fingerprint is unique to you, the hash of a block is unique to that block and its data at a particular moment. If you change any data in the block, you change the hash of the block.

The last bit of information is the “hash of the previous block”. This piece is what makes the “chain” and it is what makes blockchain secure. If you change data in a block you change the hash of the block and if the hash does not match with the next block in the chain, the chain is broken until the data can be verified.

This is a VERY simple explanation of Blockchain, it is of course, orders of magnitude more complex than this very brief explanation can provide but it does begin to lay the groundwork for us to elaborate on how blockchain is used currently and how it might be used in the future.

Dance! Dance! Dance! (Part II)

“Every day brings a chance for you to draw in a breath, kick off your shoes, and dance.” – Oprah Winfrey Part 1: Dance! Dance! Dance! We learned about the comforts of living in a small community, dance instructor Sarah Bole’s journey to study dance in our region, her vision to share the health benefits of this phenomenal aerobic art form while building a community of dancers who support a healthy life style.

Part 2: Focuses on the health benefits of dance for children, interviews two retired k -12 teachers: Kerry Myhra and Jane Mandli of Hayward, and the building of a dance community.

According to the National Dance Education Organization (NDEO), “Dance is a natural method of learning and a basic form of cultural expression. Children learn movement patterns as readily as they learn language. Just as all societies create forms of visual representation or organize sounds into music, all cultures organize movement and rhythm into one or more forms of dance. Yet while our educational systems for early childhood include drawing and singing, they often neglect to include dance. It is essential that education provide our children with the developmental benefits of and unique learning opportunities that come from organizing movement into the aesthetic experience of dance.”

Some of the benefits of childhood dancing include physical, emotional, social and cognitive. Physical: Develops motion, balance, coordination, flexibility, strength, stamina, muscle tone, posture, and improves overall cardiovascular health.

Emotional: Psychological health and maturity through expressing emotions and becoming aware of themselves and others. According to IDance Academy, “Self-respect, joy and excitement are the most profound emotional benefits

Social: Nurtures encounters, interactions, and cooperation within a group. The “Family Talk” Magazine believes, “Dancing will help children improve their social and communication skills, learn how to work as part of a team, develop a greater sense of trust and cooperation and make new friends. Dance can also help alleviate fears related to performing in front of an audience.”

Cognitive: The IDance Academy asserts, “Dancing in a structured dance class encourages calculation and planning; sequential learning; patterns; spatial development; increased motivation to learn, achieving and reaching milestones; mental flexibility and mastery; problem solving skills; holistic thinking (right and left brain inclusion); improved academic performance; and memory.

With support from the National Endowment of the Arts, NDEO published Evidence: A Report on the Impact of Dance in the K-12 Setting in July 2013. “Studies reveal that dance classes can have a positive impact on student achievement, teacher satisfaction, and school culture.” For a teacher’s perspective on dance, I interviewed Kerry Myhra who taught dance in elementary and high school. She has a k-12 teaching degree in Physical Education, Health Education, and Adaptive Physical Education. Kerry stated, “I learned not only the names of every muscle, bone, nerve, but learned how/why they all chemically/physically move and work together. We studied movement, balance, kinetic awareness up down and sideways by watching, videotaping, and learning the relationship of body parts!” Through her education Kerry learned many forms of dance, and reflected: “Learning dance steps takes in all of the senses, and all of the learning styles as do other forms of discipline. Some students are visual learners, some only need the auditory, others need to feel the movement, and some learn by a combination of some or all, in order to comprehend what they are learning.” She continued, “Once I had the fundamentals, a concrete base from my education, I developed my own method of teaching various dances, choose age appropriate, injected humor to disguise the learning into fun!”

Kerry’s interest in dance blossomed when she took ballet classes as a child. There she learned discipline, special awareness, and explored how her body moved. She stated:

“Throughout my life I am a person who cannot sit still when I hear music, with either a toe tapping, hand tapping on my thigh, pencil tapping on the table. Music/dance brings me joy, and a whole range of emotions depending upon what song it is.”

How many of us have experienced similar feelings and thoughts from music and dancing? Her thoughtful description reveals: “There was the song from high school dancing with my first crush, a song from my grandmothers wedding, dance/music evokes the memory when we hear a particular piece.” These are powerful emotional moments that are remembered in the fiber of our being. Kerry continued: “When I would clean my house, rocked babies, I put music on and danced around, for the pure joy of it! Dance has taught me balance, both physically and how to balance and manage my time.”

One of the many benefits of dance is that you can do it socially, or in the privacy of your own home as Kerry has done throughout her life.

Adults are no different than children when it comes to learning styles. Dance gives us permission to integrate the senses through movement and music. According to Miriam Berger, a dance professor and dance therapist at New York University: “You can change your internal state through external movement.”

Jane Mandli, who lives in Hayward, is another teacher with experience in dance. Jane has her Bachelor of Science in Physical Education and Math. She stated: “When I started at Germantown high school in 1977, there was a very strong dance program in place. Every year of PE had at least one three week course: Square dancing, folk dancing, modern dance, and social dance. But things changed and each year there was more emphasis on lifetime sports. High school students didn’t like to admit they liked to dance and most of the courses were dropped. I managed to hang onto the social dance for juniors through 2006.” Jane also reflects on the positive attributes of social dancing that research is now affirming.

She stated: “It was required but I graded totally on participation and attitude. If you were nice to your partners and cooperative, you got an “A”.

We rotated partners every dance. It was probably my favorite part of my 35 years of teaching. It was amazing to watch their dancing and social skills develop in three weeks.”

Since moving to Hayward, Jane and Kerry have teamed up as volunteers to teach dance at the Hayward K-12 School. According to Kerry: “Professionally, I have taught square dance, jitter bug, and ballroom, to thousands of middle school kids. Jane and I taught the Irish jig to students from Hayward High for their Snow Daze week. We taught, dressed, and had judges for a group of five students from each class. This was very quick as it was much like the amazing race.” Jane stated: “Teaching the Hayward students has been a highlight of living here. They are so into the competition of Snow Daze and will try anything! And they have been surprisingly good at Irish Dance in just a few minutes of lessons.” Kerry and Jane are helping to build a young community of dancers by volunteering at the Hayward School district.

The setting: November 1981. U.S. Air Force Special Operations officer Jo Ann Geary, a Korean-American martial artist and linguist, goes undercover to a Chinese island. Her mission is to penetrate a Chinese military base and free a captured British MI6 agent, Brian Jamison, before he can be flown to the mainland. With the help of Taiwanese and British marines, Jo hopes to guide Jamison to a Royal Navy destroyer waiting offshore and from there to the protection of British-held Hong Kong.

Jamison was panting when they started out down the road, walking quickly but resisting the urge to run. Jo could tell his reserves, depleted by the confinement and beatings, were fading fast. “Hang on,” she said. “A half klick to the village. The truck should be waiting for us.” He nodded, too tired even to speak.

“I have two men waiting with the truck, plus a native woman we have to extract,” she said. “Two more men at the boat.”

“We’re…slightly outnumbered, then,” he gasped.

“If we can make the boat, we’ll be in international waters in five minutes. Help will be waiting for us.” So much depended now on how long it would take for an alarm to be raised over the escape, and how efficiently the Chinese responded. In their planning, the allied force had allowed for at least ten minutes of safety after making it through the gates. Jo thought it had been about five already and there was the truck.

A siren started wailing behind them. They wouldn’t get that extra five minutes now. “Run!” she shouted, pulling out the pistol.

In the twilight she saw two figures near the truck. One jumped into the cab and started the engine. There was a grinding cough and then it thrummed to life. Another figure stood near the back of the truck, a submachine gun held ready.

A hundred meters from the truck, Jo shouted the password in Mandarin: “Pelican rising!” The man with the submachine gun, a Republic of China Marine Corps sergeant, shouted back: “Nest is waiting!” He waved them forward.

Jo and the MI6 man leaped into the bed of the truck. They had barely hit the hard metal bed when the driver jammed the accelerator, throwing them backward as the vehicle lurched ahead, rear wheels spitting gravel. The truck’s tailgate had disappeared long ago, and Jo scrambled to find a grip on something to keep from sliding out. Hands grabbed her by the shoulders, pulling her until she managed to find a wooden slat and steady herself. Her left shoulder throbbed where she’d landed on it. Sitting up, she fought the swaying motion of the truck. It was old, probably a Sovietmade model dating back thirty years, but it was solidly built with wooden slats extending the side walls an extra three feet up, giving them precious cover. She saw Jamison crouching near the tailgate, his rifle at the ready.

“Any pursuit?” Jo yelled over the roar of the engine.

“Not yet,” he said. He looked back at her. “Who are they?”

For the first time, Jo looked at the two other figures crouching on the bed of the truck, their backs to the cab. One was Madame Zhi, the other a boy of about sixteen. “Who is he?” Jo asked Zhi in Cantonese.

“My nephew,” she said. “He is my only relation in the village. They will execute him because of me. I had to bring him.”

The boy was trembling, clearly frightened nearly out of his mind. “All right,” Jo said. To Jamison, she yelled, “They’re friends.”

The Taiwanese marines were in the cab, and one of them shouted back through the glass-free rear window: “One more kilometer!” The driver fought the wheel, trying to avoid the chuckholes, sometimes succeeding. In the back, Jo had the pistol out but was desperately hanging on as the truck rocked and jolted.

“Helos taking off from the base!” Jamison yelled. Risking a look, Jo clambered up one side of the box to peek over the edge of the wooden wall.

Off in the distance, she saw one—no, two sets of lights rise up into the dusk. These wouldn’t be the Super Frelon, which was unarmed, but smaller and faster H-5s. Her briefing had told her there would be half a dozen or so on the base at any given time, with perhaps three or four ready for quick deployment. The Chinese-made version of the Soviet Mi-4 all-purpose light helicopter, code-named “Hound” by NATO, the helo could serve as a troop carrier or light attack aircraft. It was no match for British or American gunships, but wouldn’t have much trouble with an old pickup truck.

Their only advantage now was that the Chinese didn’t know exactly where they were. The helicopters would have to deploy in a quick search pattern. Sure enough, Jo saw them split up, one heading away from them, toward the north, and the other turning toward the village. Once that pilot gained a little altitude he would spot the truck and be after them. Jo figured they had half a minute or so before that would happen. Maybe enough time to get to the boat, maybe not.

Jamison had the Type 56 ready. Jo hoped they wouldn’t have to rely on it against the Hound. “You said two men at the boat?” he yelled, his eyes never leaving the nearer helicopter as it scuttled toward the village, climbing to about three hundred feet.

“Yes,” Jo answered, crouching next to him. “Both SBS.” “Good,” Jamison said, doubtless giving thanks that the troopers were Special Boat Squadron commandos, members of the Royal Marines’ elite Special Forces unit. It had been a tough go just to get this operation off the ground at all, given that the British commander in Hong Kong received only two days’ notice. Was it only three days ago she was on the beach in Singapore, enjoying a much-deserved leave? Jo forced those much more pleasant thoughts aside and kept her eye on the Hound. It was turning toward them.

“The bugger’s spotted us,” Jamison growled, bringing the rifle up. “How much longer to the boat?”

“Any second now.”

“Hope those lads are prepared,” he said, tracking the incoming chopper. “Joe Chinaman up there’ll make short work of us if they’re not.”

The truck was starting to slow as it rounded a curve. The shoreline here was rocky and barren, but the road led down to a small cove that was occasionally used by fishermen for relief from squalls. The Hound was closing on them, and Jo saw something winking from its port side pylon.

“Incoming!” she shouted. To their terrified passengers, she yelled in Cantonese, “Get down!”

The Chinese helicopter was perhaps half a kilometer behind them when it started firing. Jo couldn’t hear the sound of its gun over the roar of the truck engine, but she saw the dirt of the road tattooed as the shells traced their path, getting closer, closer. Jamison held his fire; the Type 56 would be useless unless the chopper got within a hundred meters or so, and by then…

The truck lurched violently to the right as the chopper’s gunner stitched the road right up to where they’d been an instant before. Jamison squeezed off a burst just before the truck sideswiped a boulder on its left. There was a screech of torn metal, screams from the Chinese woman and her nephew, and the wooden half-wall above Jo shattered to splinters. Covering her head, she caught a glimpse of the helicopter roaring overhead and peeling off to its right, preparing to come around for another run. The truck shuddered to a stop.

“Everybody out!” One of the Taiwanese marines was leaning over the buckled sidewall of the truck, grabbing at Madame Zhi. Jo looked back and saw that the other marine was slumped over the steering wheel.

Jamison was firing at the chopper, and Jo saw blinks of ricochets on its metal side as the agent found his target. Jo helped Madame Zhi over the side, then her nephew. “Here he comes!” Jamison shouted over the chattering of his weapon. www.forestandlakesmonthly.com

EXPLORING WISCONSIN WITH MARY

With over a million and a half acres in northern Wisconsin, the Chequamegon-Nicolet National Forest (CNNF) provides an incredible opportunity to get out and explore different habitats and ecosystems or just get out and enjoy the sights, sounds and smells of the outdoors.

North of US Hwy 2, the Moquah Pine Barrens is a unique ecosystem that is globally threatened.

The Barrens are part of the 1842 Treaty Ceded Territory and ancestral home to the Ojibwe people. The Red Cliff Band of Lake Superior Chippewa provided staff assistance in the recent restoration efforts by helping with native seed collection. If you enjoy birding, the Moquah Barrens is an important stopping point for migratory birds and is an Audubon “Important Bird Area” where Sharp-tailed Grouse, Vesper Sparrows and a variety of warblers can be found. This unique habitat is managed with fire as a tool to replicate the natural process that allows native plants and animals to thrive there. A paved road winds through the Pine Barrens and makes it a great place for a drive through the forest with different seasons showcasing different species of plants, wildflowers and wildlife. The sandy soil here is perfect for wild blueberries so keep that in mind next summer.

Another interesting feature found in the national forest is the “Great Divide” - the place where on one side water flows to the Gulf of Mexico and on the other it flows to Lake Superior and ultimately the Atlantic Ocean. The sign marker makes a good photo opportunity!

The North Country National Scenic Trail traverses the Rainbow Lake Wilderness Area in the CNNF and depending on how far you want to hike, takes you through some beautiful hidden spots with lots of lakeside views.

There are also hundreds of miles of motorized trails throughout the national forest which connect with trails and routes on county forest, state land and private land. There aren’t many places like this where you can ride all day and not see the same thing twice.

It’s time to get out the skis and snowshoes and fortunately there are also lots of great places for those activities in the forest, too.

Have you ever cut down your own Christmas tree? For just $5.00 you can get a permit and a map that shows you where you can cut a tree in the national forest. A great way to make some memories for those with a spirit of adventure and a saw!

Navigating the Trenches - Just Breathe, You’ll Be Ok.

Thanksgiving is just around the corner, and Christmas will be here before we know it. If you are like me, the holidays have floated around in your periphery for the past 6 weeks or so, and you are trying in vain to come up with a plan, and fit everything else in. By everything else, I mean life - daily life, and the hiccups in between. I do this every year, telling myself that this is enough, and that next year will be different. Next year will be the year that I get my ducks in a row. Well, having said that last year, here we are, and quite frankly, the ducks aren’t even in the building. In fact, as I type this, I just received a text from my husband asking me if I had any lunch plans for today, and my reply was, “No plans, just wing it, my darling.”

The pressure that the holidays bring affects us all in some way or another. It’s different for everyone. For some, it may be family issues, for others, being alone over the holidays, for me, it’s the pressure (albeit self- induced) to make the perfect Pinterest memories for my kiddos. I love the idea of the holidays - the tradition, making memories, going to candle light service on Christmas eve, baking cookies, decorating Photo Courtesty of www.shenows.com the tree, all of that. The execution, at least in our household, is a lot different than the ideal. Everyone’s schedules are busy. We all find ourselves running from thing to thing, as I am sure do all of you reading this. It just gets nuts!

So, with that being said, how do we survive the season, and keep our collective sanities, while making lasting memories with our kids?

Step away from Pinterest. I know that may not be a popular thing to say, because you either love Pinterest, or loathe it, but honestly, close the app on your phone, click the little X on the window on your laptop – Just. Walk. Away. Though the platform is wonderful for idea gathering, it may or may not be a realistic guide, and may be contributing to holiday stress. If you can pull off a Pinterest holiday, more power to you, but for me, we’re going for attainable this year. What do I mean by attainable? I want our holiday to be relaxed, fun, and memorable. Honestly, my kids won’t remember the color scheme I decorated with 10 years from now, or that I put blue bulbs on the tree with white glitter ribbon for garland, but they will remember the time we shared together. Which brings me to my next point.

Spend time together. Turn off the television, put down the phones, and unplug. Some of my favorite memories as a child, and even as an adult, have been times that we have just spent time interacting with one another. For me, it was playing Canasta with Leo’s Grandmother – and losing terribly, coloring with Isaac and Noah, playing this terrible card game called Mao that no one could really figure out with Tessa and Emma, and sitting in the quiet stillness of the house with Leo - after all of the kids had gone to bed, while the cat tried to climb the Christmas tree. So, just try to take some time to be together and appreciate one another. (Yes, the kids will find something to fight about, and if your boys are like mine, someone will be hitting the other, and well, you get the idea…), but just give it a shot.

Involve everyone in the family.

Yes, I do mean everyone. Dad, kids, even the holiday company that will be coming. I tend to take on the, “Just get out of the way! It will be quicker if I do it” attitude, and I tend to twitch a bit if its not just as I would have it done. (I’m working on that, but that is another topic for another month.) Then I get overwhelmed, start freaking out, and everything goes down hill from there. By involving everyone, not only are you adding more hands to carry the load and reduce your stress, you are allowing everyone to participate and take pride in creating the holiday atmosphere. Everyone can help get the house ready for company – yes, kids can fold laundry, and Dad does know how to work the vacuum (again another topic for another day, but I digress.) This year, Emma has been helping put together the garland strings. Isaac and Noah will be stringing popcorn and cranberries for the tree after Thanksgiving, and we are all going to work together as a family on Christmass tree and cookie decorating.

Take some time to breathe.

When you start to get wound up, and a little hot around the collar, go take a break. Walk away and find a quiet spot to sit and breathe. It’s ok to stop and take a break in our “GO, GO, GO!” kind of world. Take 15 minutes to close your eyes and rest. Sit in a dark room or turn on some soothing music. Maybe meditate or do some stretches, go for a short walk, anything to turn yourself down. After all, we do it with our kids, why should we not do it for ourselves. It really helps – My kids know that when Mommy says, “I need to take a time out,” she means it, and it’s time to quiet things down for a bit. Don’t feel guilty about it either, because it makes you feel better, so you can be better and love those around you better.

What is the take away?

Ownership, partnership, cooperation, with a little self care mixed in, they all work together to reduce holiday stress. Setting realistic goals, and not overdoing go along way to making the holidays “Merry and Bright.” So, as we prepare to kick off the holiday season with Thanksgiving on Thursday, I hope that you will find these humble suggestions helpful in making wonderful memories with your families. I too, will be taking my own advice.

Lost Legend

“So what year was this?” I was sitting in the Outback Bar staring out the window as the rain continued to ruin a perfectly good October afternoon. Punce Alder was cooped up with me reliving the past. Punce was in his mid eighties. Hunter, fisherman, trapper, a living legend around the area, Punce could keep an audience captivated for hours. Even an audience of one, which is what he had here.

“Mid to late sixties,” he replied. “We’d had a string of bad winters, lost a pile of deer. Hunting was tough.”

He shook his head and took a sip of beer. “Winters were always cold back then, always long too.” He set his glass back on the bar. “You know back then the scientists thought that pollution was going to cause a new ice age? Particles blocking the sun, hole in the ozone letting the heat out, don’t remember the exact reason,” he chuckled taking a can of snooze out of his pocket.

How times change. I didn’t say anything. I didn’t know how Punce viewed climate change and didn’t really Photo Courtesy of www.imgkid.com want to get into it. He was talking deer hunting now and that’s where I wanted to keep the conversation going. I sipped on my beer waiting for Punce to get the golf ball size wad of snooze situated before I did a little prodding.

“So you were two miles from the road in a blinding snow storm with darkness approaching fast.” That’s where we were in the story when I’d asked what year this all took place. Punce had been trailing a big buck in two inches of fresh snow for the better part of a day near the Ounce River, east of highway 27. He’d seen the buck twice but couldn’t get a shot. The good news was that the buck didn’t know he was being trailed, and a light snow had started falling to help cover Punce’s movements. The bad news came when the snow picked up in intensity as darkness approached.

“Yep,” Punce nodded, wiping his sleeve across his chin and soaking up the trickle of tobacco juice oozing from his lip. “I’d stayed with that buck as long as I dared. Was getting dark and snowing harder, had no choice but to head back to the truck. I wasn’t worried though, I was young, knew the country well, plus I had my tracks to follow out. I’d been slow-footin’ it following the buck, getting out before dark wouldn’t be a problem if I hoofed it.”

But it soon became a problem as the snow intensified and Punce’s tracks began to disappear. “You know there’s a lot of iron in the rocks in that country. Iron can play hell with a compass sometimes. Can lead a man to walk in circles. Least that’s the excuse I’m going with for getting turned around so bad after the snow covered my tracks.” He smiled shaking his head. “I was lost. I mean ‘where the hell on God’s green earth am I’ lost.

Couldn’t trust my compass, or maybe wouldn’t trust it. I was pretty stubborn back then. Plus I couldn’t recognize any landmarks in the snow.

And the snow was piling up; up over my ankles in no time.”

“Finally I had no choice but to hope my compass could lead me in a straight line. Any straight line. Three out of four directions would bring me out. North took me to the river, turn left and follow it to 27. South takes me to the 43 road, take a right there, it’s a damn long walk but it was a way out. West leads me right to 27. Only east wouldn’t get me out of the woods. I had a flashlight but after a half hour the batteries went dead. I’d been walking what the compass said was west, but I had a feeling was north.” He finished his beer and set it on the bar.

I motioned for Steve the bartender to set us up a couple more. “So how long had you been walking?” I asked when the beers came and Steve took my money.

“Didn’t know, didn’t have a watch. Seemed like hours. It was dark; black dark. And the wind was hollowing. Snow was falling out of the trees. I couldn’t see anything. I just put my head down and started plowing forward, hoping I was going in a straight line. When I hit my half-covered tracks a few hundred yards later, I knew I wasn’t. And that I was in deep do-do.”

“You have matches?”

“Yep, smoked back then, had both matches and a lighter, but it was a bear getting a fire started. Everything was wet and snow covered. My old red and black wool coat was covered with snow and must have weighed a hundred pounds. I knew if I didn’t get a fire started, I’d never last the night. Wasn’t married at the time, nobody would be looking for me, plus nobody knew where I was, no sense shooting in the air looking for help.

Probably wouldn’t have been able to hear the shots in the wind anyway.”

“Well, you must have got a fire going.” Steve had been listening to the story since bringing my change and was the first to state the obvious.

“Oh yeah, I got a blaze roaring. It took a while. I broke every pine bough within arms reach for fifty yards around. Shook all the snow off them.

Piled them under a root ball out of the weather, while I kicked around in the snow looking for something substantial to burn. Fell down a half a dozen times, lost my rifle a couple times. Sliced my finger making kindling. But I got it going next to that root ball with just enough room for me to squeeze in against the ball, close to the fire and out of the snow. Within twenties minutes I was warm and figuring I might have a chance to make it till morning.”

“I’ll bet that was a long night.” I looked towards Steve and he nodded in agreement.

“Not as long as you might think,” Punce smiled, after taking a long drink from his beer. “The wind was really blowing. Shaking the trees and making all kinds of strange sounds. In the distance I thought I heard metal on metal. Then I heard it again. The metal roof of a cabin blowing in the wind. The only cabins in the area were to the east. Miles to the east. I couldn’t believe I could have walked that far in the wrong direction. I was pissed and a little embarrassed.

“Yeah, but at least you where close to a cabin.”

Punce lowered his head and gave it a slight shake. “Not really. When I heard the sound again it seemed closer. Thought I could hear an engine, maybe a generator. Made sense anyway, and then I saw the light.”

“Lights from the cabin?” Steve and I asked in unison.

No, lights from a logging truck that crested the hill on my right,” Punce said sheepishly. “Turned out I staked my claim thirty yards off of the highway. Truck driver stopped when he saw the flames. Thought there’d been an accident; a car burning in the woods. When he saw I was okay he said there was a snow-covered truck parked about three hundred yards from where we were standing. Mine of course,” Punce said as he stood and headed for the bathroom. At the door he paused and looked back, “When the trucker asked what my name was, I gave him the name of the local game warden. Guy fined me once for shooting a deer in August. Figured making him the brunt of a joke would be good payback. Warden figured it was me though,” he continued shrugging his shoulders. “Gave me a compass for a Christmas present, and a lecture on hunting past shooting hours,” he laughed as the bathroom door slowly closed behind him.

Steve watched the door close and gave me a grin. “Guess you can’t be a living legend if you can’t tell a good story.” I nodded in agreement and ordered another round.

Recipe Corner - Cozy Comforts Cozy Farro Stew

Courtesy of: www.tastykitchen.com Ingredients: 1 White Or Yellow Onion, Diced 2 Large Carrots, Diced 3 stalks Celery, Diced 1 bunch Kale (or 4 Cups Spinach) 4 whole Chicken Sausage Links 4 Tablespoons Olive Oil

2 cloves Garlic, Minced 1 cup Farro (can Substitute Barley) 1 Tablespoon Chopped Fresh Thyme 1 Tablespoon Chopped Fresh Marjoram 1 leaf Bay Leaf Âź teaspoons Celery Seed

14 ounces, fluid Canned Diced Tomatoes 6 cups Chicken Stock Grated Parmesan Cheese 14 ounces, fluid Canned Diced Tomatoes 6 cups Chicken Stock Salt and Pepper

Directions: Prep vegetables according to details in the above list. If using kale, remove the woody stems and chop leaves into bite sized pieces. Remove casings from links and discard. Heat 2 tablespoon of olive oil in a Dutch oven over medium heat. Add onion and cook until soft and translucent, about 4-5 minutes. Turn heat down slightly and add garlic. Stir constantly to avoid burning and cook until garlic becomes fragrant. In a separate pan, heat 2 tablespoons of olive oil and crumble sausage links into small pieces, cooking until browned over medium heat. Into the Dutch oven, add carrots, celery, farro, sausage, all of the herbs and seasonings, tomatoes and stock. Bring to a boil then turn heat down to a simmer, put the lid on and cook for 35-40 minutes or until farro is cooked to a slightly chewy texture. Stir occasionally. Add kale or spinach and stir to wilt it into the stew. Serve with grated fresh Parmesan cheese and crusty bread.

Cozy Cavatappi Pasta

Courtesy of: www.frugalmomeh.com Ingredients: 2 Italian Sausages 1 tbsp (15 mL) butter 1 medium onion, diced 14 oz (398) can diced tomatoes 1 roasted red pepper, cut crosswise into 1/2-inch (1 cm) thin strips 12 oz (375 g) cavatappi or scoobi doo pasta, about 4 cups (1 L) 2 tbsp (30 mL) all-purpose flour 1 tsp (5 mL) dried oregano leaves 1/4 tsp (1 mL) nutmeg 1 cup (250 mL) milk

Cozy Apple Cider

Courtesy of: www.cooking.nytimes.com Ingredients: 1 ½ quarts unfiltered sweet cider 2 sticks cinnamon, 12 whole cloves 12 allspice berries Directions: Place all ingredients in a saucepan and heat o just below a boil. Let steep 5 minutes. Remove berries and serve warm.

Directions: Bring a large pot of salted water to a boil.

Using a sharp knife, slit each sausage down the side. Remove meat and place in a large ovenproof skillet. Add butter and onion. Set over medium heat. Stir to keep meat crumbly and cook until no longer pink, about 5 min. Add tomatoes and red pepper. Cook, stirring, for 3 min to soften tomatoes slightly.

Add pasta to boiling water and cook according to package directions or until al dente, about 8 min. Meanwhile, sprinkle flour, oregano and nutmeg over sausage mixture. Stir to combine. Gradually stir in milk. Stir until mixture boils and thickens, about 3 min.

Stir in parsley, Ricotta and half the Parmesan. Remove from heat.

Preheat broiler. Drain pasta very well. Stir into sausage mixture.

Sprinkle with Parmesan. Broil until top is bubbly.
