MANAGER’S CORNER

Hello everyone,

Thank you to everyone who has stopped by and said hi! I am so happy to have been able to do the little things I have been able to do to help this community.

We were able to get the weeds under control. We are finally getting the new heater installed and up and running on the pool. We are finally getting back into the community events and Coffee and Donuts is back on Saturdays.

I am so grateful for everyone and their patience with me during this cleanup and revamp period. Also, Mrs. Olivia and I a completely open to suggestions on clubs and meetings you would like to see in our park. Please don’t hesitate to call or email us with any suggestions you may have.

Here’s to another wonderful month at Mesa Sunset RV Resort.

Recipe of the Month

Ingredients

• 2 to 3 slices sourdough bread, torn into pieces

• 1 tablespoon unsalted butter

• 10 to 12 cups chopped romaine lettuce

• kosher salt and pepper

• 1/3 cup finely grated parmesan cheese

• 1/3 cup shaved parmesan cheese

• 12 ounces cheese tortellini, cooked

GREEK YOGURT CAESAR DRESSING:

• 4 garlic cloves, minced

• 3 tablespoons greek yogurt

• 2 tablespoons parmesan cheese

• 1 tablespoon dijon mustard

• 2 teaspoons red wine vinegar

• 1 teaspoon anchovy paste

• 1/2 lemon, juiced

• kosher salt and pepper

• 1/3 cup olive oil

Cheese Tortellini Caesar Salad

Yield: 4 | Prep Time: 45 minutes | Total Time: 45 minutes

This cheese tortellini caesar salad is irresistible! Crisp romaine lettuce, greek yogurt caesar dressing, shaved parmesan and crunchy croutons are tossed with tender cheese tortellini. It’s a perfect side dish or base for your favorite protein!

Instructions

1. Heat the butter in a skillet over medium heat. Add in the sourdough pieces with a pinch of salt. Cook, tossing often, until they are golden and toasty and crisp. Turn off the heat.

2. Place the romaine in a large bowl and toss with a big pinch of salt and pepper. Drizzle with a few tablespoons of the caesar dressing. Add in the finely grated parmesan. Toss the lettuce well so everything is coated. Add in the cooked tortellini and gently toss so the pasta doesn’t get smashed, adding more dressing if you would like. Toss until everything is combined and well coated.

3. Top with the shaved parmesan and the sourdough croutons. Serve with extra dressing and more parmesan cheese. You can use this as a base salad for chicken, steak, salmon, chickpeas, etc.

4. To make the dressing, add the garlic, yogurt, parmesan, mustard, vinegar, anchovy paste, lemon juice, salt and pepper to a food processor or blender and blend until pureed. With the processor still on, stream in the olive oil until a creamy dressing forms. (This may make more dressing than needed, but you can store it sealed in the fridge for about 3 to 4 days and stir well before using.)

Recipe of the Month

Strawberry Cheesecake Dip

Prep time is about 10 minutes. Serves 8

Ingredients

• 8 oz cream cheese, at room temperature

• 1 ¼ cups confectioners’ sugar

• ½ cup sour cream

Directions

• ¾ teaspoon vanilla extract

• Zest of 1 lemon

• 1 cup strawberry preserves

• Graham crackers for dipping

1. Cream the cream cheese with the confectioners’ sugar until light and fluffy.

2. Add the sour cream, vanilla extract, and lemon zest, and mix to combine.

3. Transfer the mixture into a serving bowl and gently stir in the preserves so they are swirled throughout.

4. Serve immediately with graham crackers for dipping. Store leftovers in airtight container in the refrigerator for up to 3 days.

Free Neuropathy Lunch and Learn

"Let me tell you my story: I suffered with neuropathy for over with neuropathy for years walked across the street to welcome us back. The amazing thing was, she walked over without her walker. I had never seen her without her walker. I asked her what she had done, and she walked back to her house and came back with a card for the doctor she had seen after we left last year. I gave his office a call to make an appointment, it was on a Thursday, his office was closed, but the doctor answered the phone. He explained he would like me to attend one of his free workshops before coming in, it would answer all questions and if I still wanted to come in, I could make an appointment then. His workshop was informative, he explained things unlike any doctor I had seen up to that time, how neuropathy started, what is done for most people, why he does what he does. I was mostly impressed that he was straight forward, told the pros and cons. I’ll bet 85 to 90 percent of the other patients I talked to in his office were getting good results, like I did. My pain decreased by at least 50% in the first 3 weeks. I would highly recommend anyone with peripheral neuropathy, go to this workshop, I know you will be glad you did."
