CASSEROLE BREAKFAST
Instructions:
Cracked Out Tater Tot Breakfast Casserole
Servings
Yields: 8 people
Ingredients:
2 lbs bacon
1 (30-32oz) bag frozen tater tots
1 (1-oz) package ranch dressing mix
2 cups shredded cheddar cheese
8 large eggs
2 cups milk
1.Preheat oven to 350° F. Lightly spray a 9x13-inch baking dish with cooking spray.
2.In a large skillet, cook bacon. Chop the cooked bacon into pieces.
3.In a large bowl, toss together tater tots, cooked bacon, and cheeses. Pour into prepared baking dish.
4.Whisk together eggs, Ranch mix, and milk. Pour over tater tot mixture.
5.** Cover and refrigerate at this point if baking later.**
6.Bake for 50-60 minutes, or until eggs are set.
Notes:
Can substitute turkey bacon.
Can make casserole in advance and refrigerate or freeze for later.
To bake after freezing, thaw completely and bake as directed above.
To reheat after freezing, thaw completely. Cover with aluminum foil and bake at 350° F for 30 to 40 minutes.
Fresh Southern Peach Cobbler
Servings 4 Servings
Ingredients:
8 fresh peaches - peeled, pitted and sliced into thin wedges
1/4 cup white sugar
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
1 cup all-purpose flour
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
6 tablespoons unsalted butter, chilled and cut into small pieces
¼ cup boiling water
3 tablespoons white sugar
1 teaspoon ground cinnamon
Instructions:
1. Gather all ingredients.
2. Preheat the oven to 425 degrees F (220 degrees C).
3. Combine peaches, ¼ cup white sugar, ¼ cup brown sugar, ¼ teaspoon cinnamon, nutmeg, lemon juice, and cornstarch in a large bowl; toss to coat evenly, and pour into a 2-quart baking dish. Bake in preheated oven for 10 minutes.
4. Meanwhile, combine flour, ¼ cup white sugar, ¼ cup brown sugar, baking powder, and salt in a large bowl. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse meal. Stir in water until just combined.
5. Remove peaches from oven, and drop spoonfuls of topping over them.
6. Mix 3 tablespoons white sugar and 1 teaspoon cinnamon together in a small bowl; sprinkle over entire cobbler.
7. Bake in the preheated oven until topping is golden, about 30 minutes.

Community Improvements
Despite the rising summer temperatures, our hardworking maintenance team is staying on top of essential projects around the community. Recent efforts include landscaping clean-up, routine pressure washing, and detailed cleaning of all signage.
They’re also making important repairs to several boat slips and we had a vendor addressing uneven areas on the pool deck by leveling pavers for improved safety and appearance. To boost community visibility, eye-catching marketing balloons have been added at the entrance welcoming residents and guests with a vibrant touch.
Thanks to their dedication, the community continues to look great and operate smoothly all summer long!
