HAUNTED PIZZA

TAKES: 30 mins SERVES: 2

Ingredients • 200ml (1/3oz) passata • 1 tbsp olive oil • 1 x 145g pack pizza base mix • 4 salami slices, cut into bat shapes • 7 pitted black olives, halved • 125g (4oz) ball mozzarella, torn into pieces Simply double (or even triple) the quantities if you have a large gang of trick-or-treaters to feed.

1 Preheat the oven to gas 7, 220°C, fan 200°C. Put the passata and olive oil in a pan and bring to the boil. Reduce the heat and simmer for 5 minutes, or until thickened.

2 Empty the pizza base mix into a bowl and stir in 100ml (3 1/2fl oz) warm water.

Mix to a soft dough, then tip out onto a lightly floured surface and knead for 5 minutes, or until smooth. Roll out the dough to roughly 24cm (9 1/2in) in diameter. Transfer to a large, greased baking sheet and turn up the edge of the base for a crust. Leave to stand in a warm place for 10 minutes.

3 Meanwhile, thinly slice 8 olive halves

4 Spread the passata over the base, allowing a 1cm (1/2in) border. Top with the salami and arrange the torn mozzarella in ghost shapes (with room to spread).

Position the remaining olives, cut-side down, and arrange 4 spidery legs on either side.

5 Cook the pizza for 15-18 minutes, until bubbling and golden. Remove from the oven and leave to cool for 1 minute, before adding the reserved olive eyes to each melted mozzarella ghost. Serve immediately.

GHOULISH GOULASH STEW Ingredients • 2 tbsp olive oil • 600g (1lb) diced lamb leg • 1 large onion, finely chopped • 2 large garlic cloves, finely chopped1/2 • 1 red chilli, deseeded and finely chopped •1 tsp smoked paprika • 1 1/2 tsp cumin seeds • 1 x 400g tin chopped tomatoes • 750ml (1 1/4pt) lamb or vegetable stock • 2 medium beetroot, peeled250g • (8oz) butternut squash, peeled, de-seeded and chopped • 1 large red pepper, de-seeded and sliced • 10 Pimento stuffed olives, halved • handful parsley or chives, finely chopped • soured cream/crusty bread, to serve

This ghoulishly good stew, complete with creepy eyeballs made from stuffed olives, is packed with succulent lamb and flavoured with chilli and paprika for a warming, spicy kick. The perfect Halloween recipe to tuck into after a night of trick or treating.

SPICY PUMPKIN CRISPS

PUMPKIN SEED PESTO

Slice pumpkin as fine as possible and toss with oil and cumin, season and bake in a medium oven for 20 minutes or until crisp.

Toss pumpkin seeds with oil, season and toast in the oven until golden. Blend with lemon juice, cumin, garlic, oil and coriander until smooth.

YOU WILL NEED A Pumpkin with a flat base • A marker pen • A small serrated knife • A large spoon • A tea towel or newspaper • Tea Lights

1. Place Pumpkin on tea towel or newspaper and cut a circle around the top, (wide enough to put your fist into). Remove the “lid” and put it aside.

2. Use a large spoon to scoop out the seeds and flesh.

3. Draw a face on to the Pumkin.

Then cut it out, making sure you always cut away from you.

4. Carefully position a couple of tea lights inside the pumpkin and put back on the lid.

ROASTED PUMPKIN WEDGES WITH FETA AND THYME

A quick and easy recipe for warming pumpkin wedges that make a delicious side dish.

Ingredients • 1kg (2lb) pumpkin, cut into wedges • 2 tbsp olive oil • pinch chilli flakes • 1 garlic bulb • 4 sprigs fresh thyme, leaves picked • 150g (5oz) fresh feta, crumbled

1 Preheat the oven to gas 6, 200°C, fan 180°C. Arrange the pumpkin in a large, shallow baking dish. Drizzle with the olive oil and scatter over the chilli flakes. Break the garlic bulb into cloves and nestle them, unpeeled, around the pumpkin. Season well and scatter over the thyme leaves.

2 Roast for 25-30 minutes, or until tender and lightly charred.

Add the feta for the last 5 minutes of cooking. Serve the wedges with the Pulled pork wraps.

SPICED PUMPKIN TOFFEE APPLE CAKE Serves 16. Takes 1 hr 55 mins.

Ingredients

For the icing

4 eggs 200g dark brown soft sugar 150ml groundnut oil 100g raisins 100g desiccated coconut ½ tsp mixed spice 200g wholemeal self-raising flour 375g pumpkin peeled and grated

275g unsalted butter, softened 300g icing sugar, sifted 75g cocoa powder, sifted

For the Toffee Apples 3 small apples 200g caster sugar ½ tsp white wine vinegar 2 tbsp golden syrup 2 tbsp double cream 50g dried apricots, finely chopped 150g shelled pistachios, finely chopped 3 chocolate sticks

For the salted caramel 1 x 397g tin condensed milk caramel 1/2 tsp salt 65g dark chocolate

For the spun sugar (optional) 50g caster sugar

1 Preheat the oven to gas 5, 190°C, fan 170°C. Grease the base and sides of 2 x 19cm round tins, then line with nonstick baking paper.

2 To make the cake, whisk together the eggs and sugar in a large bowl.

Gradually pour in the oil, whisking as you go. Fold in the remaining cake ingredients, then divide between the tins.

Bake for 30-35 minutes, until risen and springy.

Cool for 2 minutes before removing from the tin, then transfer to a rack and leave to cool completely.

3 Meanwhile, make the toffee apples. Wash the apples in hot water to remove the waxy coating, then put on a sheet of nonstick baking paper and spear each with a skewer.

Heat the sugar in a small pan with 50ml water until dissolved. Stir in the vinegar and golden syrup and bring to the boil.

Cook for 10-12 minutes, until a drop sets when drizzled into a glass of cold water. Stir in the cream and cook for 1-2 minutes, then turn down the heat.

4 Toss the apricots and 50g pistachios together on a plate. Swirl each apple in the toffee to coat, then dip into the pistachio and apricot mixture. Transfer to the baking paper to set.

Remove the skewers and replace with the chocolate sticks, to give each apple a ‘stalk’. (See Top tip, right.)

5 To make the icing, beat 250g of the softened butter together with the icing sugar and cocoa powder. For the salted caramel, put the remaining butter in a small pan with the condensed milk caramel and heat together, stirring, until you have a smooth sauce.

Remove from the heat, stir in the salt and leave to cool while you ice the cake.

6 Put one half of the cake on a plate and spread 2-3 tbsp of the icing over the top. Sprinkle with 50g pistachios. Top with the other half, then spread the remaining butter icing over the top and sides of the cake.

7 Pour over half of the salted caramel and spread to the edges so it runs

down the sides. Chop 15g of the dark chocolate and stir into the remaining caramel until melted; pour over the cake and allow to run down the sides, creating a distinct second layer.

8 Arrange the toffee apples carefully on the top of the cake, stalks pointing upwards, and sprinkle with the remaining pistachios. Melt the remaining chocolate in a heatproof bowl over a pan of simmering water and drizzle over the apples and cake.

9 If decorating with spun sugar, melt the sugar in a small pan, without stirring, over a medium heat.

Remove from the heat when the sugar turns golden brown and leave to cool a little. Then hold the pan above the cake and, using a fork, flick the caramel over the cake and toffee apples.

Tesco colleagues supporting local charity COPE Galway

Ireland generates over 1 million tonnes of food waste each year; a staggering amount considering the number of people still living in food poverty in Ireland and the struggle that charities have to provide food to those who need it most.

In 2014, Tesco became the first large retailer in Ireland to partner with social enterprise FoodCloud, introducing

app our stores link with local groups to let them know what surplus food we have at the end of each day which the group can then come and collect to either use or redistribute to those who need it most.

A simple idea that’s making a big difference.
